Abstract
The ability of foodborne pathogens to grow in food products increases the associated food safety risks. Listeria monocytogenes (Lm) is a highly adaptable pathogen that can survive and grow under a wide range of environmental circumstances, including otherwise inhibitory conditions, such as restrictive cold temperatures. It can also survive long periods under adverse environmental conditions. This review examines the experimental evidence available for the survival and growth of Lm on fresh vegetables and ready-to-eat vegetable salads. Published data indicate that, depending on certain intrinsic (e.g., nutrient composition) and extrinsic factors (e.g., storage temperature, packaging atmosphere), Lm can survive on and in a wide variety of vegetables and fresh-cut minimally processed vegetable salads. Studies have shown that temperature, modified atmosphere packaging, relative humidity, pH, water activity, background microbiota of vegetables, microbial strain peculiarities, and nutrient type and availability can significantly impact the fate of Lm in vegetables and vegetable salads. The influence of these factors can either promote its growth or decline. For example, some studies have shown that background microbiota inhibit the growth of Lm in vegetables and minimally processed vegetable salads, but others have reported a promoting, neutral, or insignificant effect on the growth of Lm. A review of relevant literature also indicated that the impact of most influencing factors is related to or interacts with other intrinsic or extrinsic factors. This literature synthesis contributes to the body of knowledge on possible strategies for improving food safety measures to minimize the risk of Lm-associated foodborne outbreaks involving vegetables and vegetable salads.

Abstract
Introduction Wildlife feces can contaminate vegetables when enteric bacteria are released by rain and splashed onto crops. Regulations require growers to identify and not harvest produce that is likely contaminated, but U.S. federal standards do not define dimensions for no-harvest zones. Moreover, mulching, used to retain soil moisture and maximize crop yield may impact rain-mediated bacterial dispersal from feces. Methods To assess Escherichia coli dissemination from a fecal point source to lettuce grown on various mulches, lettuce cv. 'Magenta' was transplanted into raised beds with plastic, biodegradable plastic, straw, or left uncovered at field sites in Maryland and Georgia. Eleven days post-transplant, 10 g of rabbit manure spiked with ~8 log CFU g-1 E. coli were deposited in each bed. One day following natural or simulated rain events, lettuce was sampled along 1.5 m transects on either side of fecal deposits. Lettuce-associated E. coli was semi-quantified with an MPN assay and dependence on fecal age (stale or fresh), lettuce age (baby leaf or mature head), distance from point source, mulch and post-rain days were statistically evaluated. Results Distance (p<0.001), fecal age (p<0.001) and mulch (p<0.01) were factors for E. coli transfer from point source to lettuce. The highest and lowest E. coli estimates were measured from lettuce grown on biodegradable plastic and straw, respectively, with a 2-log MPN difference (p<0.001). Mulch and distance were also significant factors in E. coli recovery 3 days post-rain (both p<0.001), where plastic mulches differed from bare ground and straw (p<0.01). For all treatments, fewer E. coli were retrieved from lettuce at 0.3 m, 3 days post-rain compared to 1 day (p<0.001). Fitting the data to a Weibull Model predicated that a 7-log reduction in E. coli from fecal levels would be achieved at 1.2-1.4 m from the point source on plastic mulches, 0.75 m on bare soil (p<0.05) and 0.43 m on straw (p<0.01). Discussion Straw and bare ground limited rain-mediated E. coli dispersal from feces to lettuce compared to plastic mulches. Fecal age was negatively associated with E. coli dispersal. These findings can inform harvesting recommendations for measures related to animal intrusion in vegetable production areas.

Abstract
Mulches are used to block light and retain soil moisture which may affect the survival of bacterial pathogens on soil. This study examined the effectiveness of different types of mulches to minimize microbial risk from contaminated water used for irrigation of cucumbers. A production bed of 120 ft2 with 18 beds (30 ft long) covered with five different types of mulch (paper, paper with fertilizer incorporated (PF), maize-based mulch, biodegradable plastic covering, and conventional plastic) including three beds with no cover was planted with Dasher 2 Variety cucumber. Soil samples from each bed were collected for the first five weeks to examine natural E. coli and coliforms. Well water contaminated with or without nalidixic acid-resistant mutant of E. coli (8 Log CFU/mL) was used for drip irrigation for 7 days before harvesting. Prior to irrigation with contaminated water, naturally present E. coli and coliform in the soil samples with or without mulch were in the range of 3.45-3.78 Log CFU/g and 4.18-5.31 Log CFU/g, respectively. E. coli levels on cucumbers harvested from mulched beds and irrigated with contaminated irrigation water had significantly higher (P < 0.05) levels of E. coli as compared with samples from similar beds irrigated with noncontaminated water. However, Cucumber, harvested within each irrigation water quality were not significantly different regardless of the type of mulch with E. coli levels from 1.72 to 3.30 Log CFU/cm2 (contaminated water) and 0.28-1.86 Log CFU/cm2 (noncontaminated water). A significant die-off of inoculated E. coli was observed on cucumber within 3 days (>1.17 Log CFU/cm2) and >1.38 Log CFU/cm2 after 4 days. Beds with maize mulch were effective on minimizing E. coli contamination on cucumber from contaminated irrigation water.

Abstract
Mulching is a common agricultural practice that benefits crop production through soil moisture retention, weed suppression, and soil temperature regulation. However, little is known about the effect of mulch on foodborne pathogens present in soil. In this study, the influence of polyethylene plastic, biodegradable corn-based plastic, paper, and straw mulches on Escherichia coli O157:H7, Listeria monocytogenes, and Salmonella enterica Newport populations in soil was investigated. Silt loam soil in troughs was inoculated with a cocktail of the pathogens and covered with mulch or left bare, then incubated for 21 days, during which bacteria were enumerated and environmental parameters monitored. Bacterial counts declined in all treatments over time (p < 0.001) but persisted at 21 days at 0.8-0.95 log CFU/g. Pathogens also declined as a factor of mulch cover (p < 0.01). An exponential decay with asymptote model fit to the data revealed slower rates of decline in soil under mulches for all pathogens (p < 0.05) relative to bare soil. Compared to the average for all treatments, rates of decay in bare soil were 0.60 (p < 0.001), 0.45 (p < 0.05), and 0.63 (p < 0.001) log CFU/g/d for E. coli O157:H7, L. monocytogenes, and Salmonella, respectively. Linear multiple regression revealed that soil hydrological parameters were positively correlated (p < 0.05) with bacterial counts, while day soil temperatures were negatively correlated (p < 0.001), suggesting that higher day temperatures and lower moisture content of bare soil contributed to the faster decline of pathogens compared to mulched soil. A microcosm experiment using field soil from lettuce cultivation suggested no influence of prior mulch treatment on pathogens. In summary, pathogen decline in soil was modified by the soil microclimate created under mulch covers, but the effect appeared was restricted to the time of soil cover. Slower decline rates of pathogens in mulched soil may pose a risk for contamination of fresh market produce crops.

Abstract
The application of mulch films for preserving soil moisture and preventing weed growth has been a part of agricultural practice for decades. Different materials have been used as mulch films, but polyethylene plastic has been considered most effective due to its excellent mechanical strength, low cost and ability to act as a barrier for sunlight and water. However, its use carries a risk of plastic pollution and health hazards, hence new laws have been passed to replace it completely with other materials over the next few years. Research to find out about new biodegradable polymers for this purpose has gained impetus in the past few years, driven by regulations and the United Nations Organization's Sustainable Development Goals. The primary requisite for these polymers is biodegradability under natural climatic conditions without the production of any toxic residual compounds. Therefore, biodegradable polymers developed from fossil fuels, microorganisms, animals and plants are viable options for using as mulching material. However, the solution is not as simple since each polymer has different mechanical properties and a compromise has to be made in terms of strength, cost and biodegradability of the polymer for its use as mulch film. This review discusses the history of mulching materials, the gradual evolution in the choice of materials, the process of biodegradation of mulch films, the regulations passed regarding material to be used, types of polymers that can be explored as potential mulch films and the future prospects in the area.

Abstract
AIMS To evaluate the safety of irrigation water sources based on phenotypic antimicrobial resistance (AMR) in Enterococcus spp., a potential environmental reservoir for AMR determinants. METHODS AND RESULTS Eleven sites representing fresh and brackish water rivers, ponds and reclaimed water, were sampled over two years. Samples (n=333) yielded 198 unique isolates of E. faecalis and E. faecium which were tested for antimicrobial susceptibility by microbroth dilution. Species distribution was influenced by water type and season. E. faecalis was more likely found in freshwater rivers and in summer, and E. faecium in reclaimed water and in spring. Only 11% of isolates were pansusceptible, while 48.5% and 26.3% were single (SDR) and multidrug resistant (MDR), respectively. MDR was more likely detected in E. faecium than E. faecalis. Winter isolates were more likely than summer isolates to exhibit MDR than SDR. CONCLUSIONS E. faecalis and E. faecium in surface and reclaimed water exhibited diverse phenotypic AMR and a low-level resistance to clinically important antimicrobials such as ampicillin, vancomycin and linezolid. SIGNIFICANCE AND IMPACT OF THE STUDY Single and multidrug resistance in E. faecalis and E. faecium varied by season but not water type. AMR prevalence can assist decisions on the safety of irrigation water sources for fresh produce crops.

Abstract
ABSTRACT The Produce Safety Rule of the Food Safety Modernization Act (FSMA) sets forth minimum standards for fruit and vegetable production in the United States. One provision states that growers must not harvest dropped produce because damage or ground contact may contaminate produce. In an unpublished survey of 2020 food safety inspections conducted by the Northeast Center to Advance Food Safety, handling of dropped produce covered by the FSMA was a common misunderstood and noncompliance issue among growers in the Northeast. In consideration of this provision's on-farm practicality, this review was conducted to evaluate the risks associated with dropped and drooping produce, to guide growers in making informed risk management decisions, and to answer the following questions: (i) what are the risk factors that influence transferability of pathogens from touching the ground to produce and (ii) what are the risks associated with harvesting dropped or drooping produce covered under the Produce Safety Rule? A search of online databases revealed 12 relevant publications, which highlighted moisture, contact time, and crop features as affecting contamination rates from a ground surface to a crop surface. Soil and mulch posed a differential risk, with bare soil generally presenting a lower risk than plastic mulch. The effects of other mulch types are unclear. Mulches may promote pathogen persistence in soil, although they may also protect produce from contaminated soils. These studies were limited in their scope and applicability and most did not directly address dropped produce. Research is needed to clarify the various effects of dropped and drooping produce, the impact of ground surface type on pathogen survivability and transfer, soil and crop features that facilitate contamination, and postharvest risks of harvesting dropped or drooping produce. A comprehensive understanding of these issues will guide growers in implementing preventive measures and better managing risk in a way practicable to each farm's unique conditions. HIGHLIGHTS

Abstract
Biological soil amendments of animal origin (BSAAO) increase nutrient levels in soils to support the production of fruits and vegetables. BSAAOs may introduce or extend the survival of bacterial pathogens which can be transferred to fruits and vegetables to cause foodborne illness. Escherichia coli survival over 120 days in soil plots (3 m2) covered with (mulched) or without plastic mulch (not mulched), amended with either poultry litter, composted poultry litter, heat-treated poultry pellets, or chemical fertilizer, and transfer to cucumbers in 2 years (2018 and 2019) were evaluated. Plots were inoculated with E. coli (8.5 log CFU/m2) and planted with cucumber seedlings (Supremo). The number of days needed to reduce E. coli levels by 4 log CFU (dpi4log) was determined using a sigmoidal decline model. Random forest regression and one-way analysis of variance (ANOVA; P < 0.05) identified predictors (soil properties, nutrients, and weather factors) of dpi4log of E. coli and transfer to cucumbers. The combination of year, amendment, and mulch (25.0% increase in the mean square error [IncMSE]) and year (9.75% IncMSE) were the most prominent predictors of dpi4log and transfer to cucumbers, respectively. Nitrate levels at 30 days and soil moisture at 40 days were also impactful predictors of dpi4log. Differing rainfall amounts in 2018 (24.9 in.) and 2019 (12.6 in.) affected E. coli survival in soils and transfer to cucumbers. Salmonella spp. were recovered sporadically from various plots but were not recovered from cucumbers in either year. Greater transfer of E. coli to cucumbers was also shown to be partially dependent on dpi4log of E. coli in plots containing BSAAO.IMPORTANCE Poultry litter and other biological soil amendments are commonly used fertilizers in fruit and vegetable production and can introduce enteric pathogens such as Escherichia coli O157:H7 or Salmonella previously associated with outbreaks of illness linked to contaminated produce. E. coli survival duration in soils covered with plastic mulch or uncovered and containing poultry litter or heat-treated poultry litter pellets were evaluated. Nitrate levels on day 30 and moisture content in soils on day 40 on specific days were good predictors of E. coli survival in soils; however, the combination of year, amendment, and mulch type was a better predictor. Different cumulative rainfall totals from year to year most likely affected the transfer of E. coli from soils to cucumbers and survival durations in soil. E. coli survival in soils can be extended by the addition of several poultry litter-based soil amendments commonly used in organic production of fruits and vegetables and is highly dependent on temporal variation in rainfall.

Abstract
Although many studies have investigated foodborne pathogen prevalence in conventional produce production environments, relatively few have investigated prevalence in aquaponics and hydroponics systems. This study sought to address this knowledge gap by enumerating total coliform and generic E. coli levels, and testing for Salmonella presence in circulating water samples collected from five hydroponic systems and three aquaponic systems (No. of samples = 79). While total coliform levels ranged between 6.3 Most Probable Number (MPN)/100-mL and the upper limit of detection (2496 MPN/100-mL), only three samples had detectable levels of E. coli and no samples had detectable levels of Salmonella. Of the three E. coli positive samples, two samples had just one MPN of E. coli/100-mL while the third had 53.9 MPN of E. coli/100-mL. While the sample size reported here was small and site selection was not randomized, this study adds key data on the microbial quality of aquaponics and hydroponics systems to the literature. Moreover, these data suggest that contamination in these systems occurs at relatively low-levels, and that future studies are needed to more fully explore when and how microbial contamination of aquaponics and hydroponic systems is likely to occur.

Abstract
Understanding weather-related drivers of crop plant-microbiome relationships is important for food security and food safety in the face of a changing climate. Cucumber and tomato are commercially important commodities that are susceptible to plant disease and have been implicated in foodborne disease outbreaks. To investigate the influence of precipitation on plant-associated microbiomes, epiphytically associated bacterial communities of cucumber and tomato samples were profiled by 16 S rRNA gene sequencing (V1-V3) in the days surrounding two rain events over a 17-day period. Following rain, α (within-sample) diversity measured on cucumber and tomato fruit surfaces, but not tomato leaf surfaces, increased significantly and remained elevated for several days. Bacterial β (between-sample) diversity on cucumber and tomato fruit responded to precipitation. In the cucumber fruit surface (carpoplane), notable shifts in the families Xanthomonadaceae, Oxalobacteriaceae, Sphingobacteriaceae and Comamonadaceae were detected following precipitation. In the tomato carpoplane, shifts were detected in the families Enterobacteriaceae and Xanthomonadaceae following the first rain event, and in the Pseudomonadaceae and Oxalobacteriaceae following the second rain event. Few taxonomic shifts were detected in the tomato leaf surface (phylloplane). Exploring rain-induced shifts in plant microbiomes is highly relevant to crop protection, food safety and agroecology, and can aid in devising ways to enhance crop resilience to stresses and climate fluctuations.

Abstract
Pre-harvest contamination of produce has been a major food safety focus. Insight into the behavior of enteric pathogens on produce in pre-harvest conditions will aid in developing pre-harvest and post-harvest risk management strategies. In this study, the attachment strength (SR) and die-off rate of E. coli on the surface of watermelon fruits and the efficacy of aqueous chlorine treatment against strongly attached E. coli population were investigated. Watermelon seedlings were transplanted into eighteen plots. Prior to harvesting, a cocktail of generic E. coli (ATCC 23716, 25922 and 11775) was inoculated on the surface of the watermelon fruits (n = 162) and the attachment strength (SR) values and the daily die-off rates were examined up to 6 days by attachment assay. After 120 h, watermelon samples were treated with aqueous chlorine (150 ppm free chlorine for 3 min). The SR value of the E. coli cells on watermelon surfaces significantly increased (P<0.05) from 0.04 to 0.99 in the first 24 h, which was primarily due to the decrease in loosely attached population, given that the population of strongly attached cells was constant. Thereafter, there was no significant change in SR values, up to 120 h. The daily die-off rate of E. coli ranged from -0.12 to 1.3 log CFU/cm2. The chlorine treatment reduced the E. coli level by 4.2 log CFU/cm2 (initial level 5.6 log CFU/cm2) and 0.62 log CFU/cm2 (initial level 1.8 log CFU/cm2), on the watermelons that had an attachment time of 30 min and 120 h respectively. Overall, our findings revealed that the population of E. coli on watermelon surfaces declined over time in an agricultural environment. Microbial contamination during pre-harvest stages may promote the formation of strongly attached cells on the produce surfaces, which could influence the efficacy of post-harvest washing and sanitation techniques.

Identifying and modeling meteorological risk factors associated with pre-harvest contamination of Listeria species in a mixed produce and dairy farm. Food Res Int 2017; 102:355-363. Abstract
This study sought to investigate the prevalence of Listeria species (including L. monocytogenes) in a mixed produce and dairy farm and to identify specific meteorological factors affecting Listeria spp. presence. Environmental samples were collected monthly from locations within the mixed farm over 14months and were analyzed for Listeria spp. Meteorological factors were evaluated for their association with the presence of Listeria spp. by using logistic regression (LR) and random forest (RF). The developed LR model identified wind speed and precipitation as significant risk factors (P<0.05), indicating higher wind speed at day 2 prior to sampling and higher average precipitation over the previous 25days before sampling increased the probability of isolation of Listeria spp. from the mixed farm. Results from RF revealed that average wind speed at day 2 prior to sampling and average precipitation in the previous 25days before sampling were the most important factors influencing the presence of Listeria spp., which supported the findings from LR. These findings indicate that the occurrence of Listeria spp. was influenced by wind speed and precipitation, suggesting run-off and wind-driven dust might be possible routes of pathogen transmission in mixed farms. The developed LR and RF models, with robust predictive performances as measured by the area under the receiver operating characteristic curves, can be used to predict Listeria spp. contamination risk in a mixed farm under different weather conditions and can help with the evaluation of farm management practices and the development of control strategies aimed at reducing pre-harvest microbial contamination in a mixed farming system.

Abstract
Although wildlife intrusion and untreated manure have been associated with microbial contamination of produce, relatively few studies have examined the survival of Escherichia coli on produce under field conditions following contamination (e.g., via splash from wildlife feces). This experimental study was performed to estimate the die-off rate of E. coli on preharvest lettuce following contamination with a fecal slurry. During August 2015, field-grown lettuce was inoculated via pipette with a fecal slurry that was spiked with a three-strain cocktail of rifampin-resistant nonpathogenic E. coli. Ten lettuce heads were harvested at each of 13 time points following inoculation (0, 2.5, 5, and 24 h after inoculation and every 24 h thereafter until day 10). The most probable number (MPN) of E. coli on each lettuce head was determined, and die-off rates were estimated. The relationship between sample time and the log MPN of E. coli per head was modeled using a segmented linear model. This model had a breakpoint at 106 h (95% confidence interval = 69, 142 h) after inoculation, with a daily decrease of 0.70 and 0.19 log MPN for 0 to 106 h and 106 to 240 h following inoculation, respectively. These findings are consistent with die-off rates obtained in similar studies that assessed E. coli survival on produce following irrigation. Overall, these findings provide die-off rates for E. coli on lettuce that can be used in future quantitative risk assessments.

Abstract
No data exist on the impact of cultivation practices on food safety risks associated with cucumber. Cucumbers are typically grown horizontally over a mulch cover, with fruit touching the ground, but this vining plant grows well in vertical systems. To assess whether production system affects bacterial dispersal onto plants, field trials were conducted over 2 years. Cucumber cultivar 'Marketmore 76' was grown horizontally on plastic, straw, or bare ground or vertically on trellises installed on bare ground in soil previously amended with raw dairy manure. Fruit, flower, leaf, and soil samples were collected to quantify Escherichia coli , thermotolerant coliforms, and enterococci by direct plating. E. coli isolates were characterized by BOX-PCR to evaluate relatedness among strains. Although thermotolerant coliforms and enterococci were significantly less abundant on fruit in year 1 (P < 0.05), this result was not seen in year 2 when more rain was recorded. Instead, fruit from straw-mulched beds had higher levels of enterococci compared with fruit grown on bare ground (P < 0.05). Leaves on bare ground occasionally had more bacteria than did leaves on plastic mulch beds (P < 0.05). Production system did not impact flower-associated bacterial levels. E. coli isolates (n =127) were genotyped, generating 21 distinct fingerprints. Vertical production did not appear to be a barrier for E. coli dispersal to the crop, as suggested by numerous related isolates from soil and flowers on bare ground, straw-mulched, and trellised beds (subcluster B1). None of the isolates from soil and flowers in this subcluster were related to isolates recovered from fruit, showing that flower colonization does not necessarily lead to fruit colonization. One cluster of isolates contained those from flowers and fruits but not soil, indicating a source other than manure-amended soil. Straw may be a source of E. coli ; a number of closely related E. coli isolates were retrieved from soil and fruits from straw-mulched beds. Our approach revealed E. coli dispersal patterns and could be used to assess bacterial transmission in other production systems.
