Abstract
Water deficit poses significant environmental stress that adversely affects the growth and productivity of durum wheat. Moreover, projections of climate change suggest an increase in the frequency and severity of droughts, particularly in arid regions. Consequently, there is an urgent need to develop drought-tolerant and high-yielding genotypes to ensure sustained production and global food security in response to population growth. This study aimed to explore the genetic diversity among local and exotic durum wheat genotypes using simple sequence repeat (SSR) markers and, additionally, to explore the combining ability and agronomic performance of assessed durum wheat genotypes and their 28 F1 crosses under normal and drought stress conditions. The investigated SSRs highlighted and confirmed the high genetic variation among the evaluated parental durum wheat genotypes. These diverse eight parental genotypes were consequently used to develop 28 F1s through a diallel mating design. The parental durum genotypes and their developed 28 F1s were assessed under normal and drought stress conditions. The evaluated genotypes were analyzed for their general and specific combining abilities as well as heterosis for agronomic traits under both conditions. The local cultivar Bani-Suef-7 (P8) is maintained as an effective combiner for developing shortened genotypes and improving earliness. Moreover, the local cultivars Bani-Suef-5 (P7) and Bani-Suef-7 (P8) along with the exotic line W1520 (P6) demonstrated excellent general combining ability for improving grain yield and its components under drought stress conditions. Furthermore, valuable specific hybrid combinations, W988 × W994 (P1 × P2), W996 × W1518 (P3 × P5), W1011 × W1520 (P4 × P6), and Bani-Suef-5 × Bani-Suef-7 (P7 × P8), were identified for grain yield and its components under drought stress conditions. The assessed 36 genotypes were grouped according to tolerance indices into five clusters varying from highly drought-sensitive genotypes (group E) to highly drought-tolerant (group A). The genotypes in cluster A (two crosses) followed by thirteen crosses in cluster B displayed higher drought tolerance compared to the other crosses and their parental genotypes. Subsequently, these hybrids could be considered valuable candidates in future durum wheat breeding programs to develop desired segregants under water-deficit conditions. Strong positive relationships were observed between grain yield and number of grains per spike, plant height, and 1000-grain weight under water-deficit conditions. These results highlight the significance of these traits for indirect selection under drought stress conditions, particularly in the early stages of breeding, owing to their convenient measurability.

Abstract
Wheat (Triticum aestivum L.) is one of the most important crops worldwide, and, as a resilient cereal, it grows in various climatic zones. Due to changing climatic conditions and naturally occurring environmental fluctuations, the priority problem in the cultivation of wheat is to improve the quality of the crop. Biotic and abiotic stressors are known factors leading to the deterioration of wheat grain quality and to crop yield reduction. The current state of knowledge on wheat genetics shows significant progress in the analysis of gluten, starch, and lipid genes responsible for the synthesis of the main nutrients in the endosperm of common wheat grain. By identifying these genes through transcriptomics, proteomics, and metabolomics studies, we influence the creation of high-quality wheat. In this review, previous works were assessed to investigate the significance of genes, puroindolines, starches, lipids, and the impact of environmental factors, as well as their effects on the wheat grain quality.

Abstract
In China, water-saving irrigation is playing important roles in ensuring food security, and improving wheat quality. A barrel experiment was conducted with three winter wheat (Triticum aestivum L.) genotypes and two irrigation pattens to examine the effects of regulated deficit irrigation (RDI) on wheat grain yield, water-use efficiency (WUE), and grain quality. In order to accurately control the soil water content, wheat was planted in the iron barrels set under a rainproof shelter, and the soil water content in the iron barrel was controlled by gravity method. The mechanisms whereby water management influences the end-use functional properties of wheat grain were also investigated. The results revealed that RDI improved the end-use functional properties of wheat and WUE, without significant yield loss (less than 3%). Moderate water deficit (60% to 65% field capacity) before jointing and during the late grain-filling stage combined with a slight water deficit (65% to 70% field capacity) from jointing to booting increased grain quality and WUE. The observed non-significant reduction in wheat yield associated with RDI may be attributed to higher rate of photosynthesis during the early stage of grain development and higher rate of transfer of carbohydrates from vegetative organs to grains during the later stage. By triggering an earlier rapid transfer of nitrogen deposited in vegetative organs, RDI enhances grain nitrogen content, which in turn could enhance dough elasticity, given the positive correlation between grain nitrogen content and dough midline peak value. Our results also indicate that the effects of RDI on grain quality are genotype dependent. Therefore, the grain end-use quality of some specific wheat genotypes may be enhanced without incurring yield loss by an optimal water management.

Abstract
The effects of prolonged heat and drought stress and cool growing conditions on dough mixing quality traits of spring wheat (Triticum aestivum L.) were studied in fifty-six genotypes grown in 2017 and 2018 in southern Sweden. The mixing parameters evaluated by mixograph and the gluten protein characteristics studied by size exclusion high-performance liquid chromatography (SE-HPLC) in dough were compared between the two growing seasons which were very different in length, temperature and precipitation. The genotypes varying in gluten strength between the growing seasons (≤5%, ≤12%, and ≤17%) from three groups (stable (S), moderately stable (MS), and of varying stability (VS)) were studied. The results indicate that most of the mixing parameters were more strongly impacted by the interaction between the group, genotype, and year than by their individual contribution. The excessive prolonged heat and drought did not impact the buildup and mixing time expressed as peak time and time 1-2. The gluten polymeric proteins (unextractable, %UPP; total unextractable, TOTU) and large unextractable monomeric proteins (%LUMP) were closely associated with buildup and water absorption in dough. Major significant differences were found in the dough mixing parameters between the years within each group. In Groups S and MS, the majority of genotypes showed the smallest variation in the dough mixing parameters responsible for the gluten strength and dough development between the years. The mixing parameters such as time 1-2, buildup, and peak time (which were not affected by prolonged heat and drought stress) together with the selected gluten protein parameters (%UPP, TOTU, and %LUMP) are essential components to be used in future screening of dough mixing quality in wheat in severe growing environments.

Abstract
Heat stress during the grain-filling period is the main abiotic stress factor limiting grain yield and quality in wheat (Triticum aestivum L.). In this study, 64 wheat genotypes were exposed to heat stress during reproduction caused by delayed sowing in two growing seasons. Grain yield, 1000 grain weight (GW), grain hardness (GH), and grain-quality related traits were investigated. Heat stress caused a significant decrease in GW through reducing starch content (SC) and a non-compensating rise in protein content (PC), and thereby resulted in lower yield. In addition, significant increases in flour water absorption (WA), Zeleny sedimentation volume (ZT), ash content (AC), lipid content (LC), loaf volume (LV), wet gluten content (WG), dry gluten content (DG), gluten index (GI), and amylopectin content (APC) were found following heat stress. In contrast, decreases in grain moisture content (MC) and amylose content (AMC) induced by heat stress were observed. The heat-tolerant genotypes were superior in grain yield, GW, SC, AMC, and MC. While the sensitive genotypes contained higher PC, LV, GI and AMP. A group of wheat genotypes characterized with a higher yield, AMC, GW, and SC as well as lower PC, WA, GH, ZT, and LV; and was found to be the most heat tolerant by principal component analysis. Lighter weight and smaller grains produce a smaller starchy endosperm with lower quality (less amylose) and higher grain protein content in heat stress compared to normal conditions. Heat stress caused by delayed sowing improves some of the baking-quality related traits.

Abstract
Water scarcity is a major environmental stress that adversatively impacts wheat growth, production, and quality. Furthermore, drought is predicted to be more frequent and severe as a result of climate change, particularly in arid regions. Hence, breeding for drought-tolerant and high-yielding wheat genotypes has become more decisive to sustain its production and ensure global food security with continuing population growth. The present study aimed at evaluating different parental bread wheat genotypes (exotic and local) and their hybrids under normal and drought stress conditions. Gene action controlling physiological, agronomic, and quality traits through half-diallel analysis was applied. The results showed that water-deficit stress substantially decreased chlorophyll content, photosynthetic efficiency (FV/Fm), relative water content, grain yield, and yield attributes. On the other hand, proline content, antioxidant enzyme activities (CAT, POD, and SOD), grain protein content, wet gluten content, and dry gluten content were significantly increased compared to well-watered conditions. The 36 evaluated genotypes were classified based on drought tolerance indices into 5 groups varying from highly drought-tolerant (group A) to highly drought-sensitive genotypes (group E). The parental genotypes P3 and P8 were identified as good combiners to increase chlorophyll b, total chlorophyll content, relative water content, grain yield, and yield components under water deficit conditions. Additionally, the cross combinations P2 × P4, P3 × P5, P3 × P8, and P6 × P7 were the most promising combinations to increase yield traits and multiple physiological parameters under water deficit conditions. Furthermore, P1, P2, and P5 were recognized as promising parents to improve grain protein content and wet and dry gluten contents under drought stress. In addition, the crosses P1 × P4, P2 × P3, P2 × P5, P2 × P6, P4 × P7, P5 × P7, P5 × P8, P6 × P8, and P7 × P8 were the best combinations to improve grain protein content under water-stressed and non-stressed conditions. Certain physiological traits displayed highly positive associations with grain yield and its contributing traits under drought stress such as chlorophyll a, chlorophyll b, total chlorophyll content, photosynthetic efficiency (Fv/Fm), proline content, and relative water content, which suggest their importance for indirect selection under water deficit conditions. Otherwise, grain protein content was negatively correlated with grain yield, indicating that selection for higher grain yield could reduce grain protein content under drought stress conditions.

Major factors, including elevated CO2 concentration ([CO2]), elevated temperature, and drought stress, have been identified as affecting C3 crop production and quality. A meta-analysis of existing literature was performed to study the impact of these three environmental factors on the yield and nutritional traits of C3 cereals. Elevated [CO2] stimulates grain production (through larger grain numbers) and starch accumulation but negatively affects nutritional traits such as protein and mineral content. In contrast to [CO2], increased temperature and drought cause significant grain yield loss, with stronger effects observed from the latter. Elevated temperature decreases grain yield by decreasing the thousand grain weight (TGW). Nutritional quality is also negatively influenced by the changing climate, which will impact human health. Similar to drought, heat stress decreases starch content but increases grain protein and mineral concentrations. Despite the positive effect of elevated [CO2], increases to grain yield seem to be counterbalanced by heat and drought stress. Regarding grain nutritional value and within the three environmental factors, the increase in [CO2] is possibly the more detrimental to face because it will affect cereal quality independently of the region.

Abstract
Wheat is one of the most important staple foods in temperate regions and is in increasing demand in urbanizing and industrializing countries such as China. Enhancing yield potential to meet the population explosion around the world and maintaining grain quality in wheat plants under climate change are crucial for food security and human nutrition. Global warming resulting from greenhouse effect has led to more frequent occurrence of extreme climatic events. Elevated atmospheric CO2 concentration (eCO2) along with rising temperature has a huge impact on ecosystems, agriculture and human health. There are numerous studies investigating the eCO2 and heatwaves effects on wheat growth and productivity, and the mechanisms behind. This review outlines the state-of-the-art knowledge regarding the effects of eCO2 and heat stress, individually and combined, on grain yield and grain quality in wheat crop. Strategies to enhance the resilience of wheat to future warmer and CO2-enriched environment are discussed.

Abstract
Temperature across the globe is increasing continuously at the rate of 0.15–0.17 °C per decade since the industrial revolution. It is influencing agricultural crop productivity. Therefore, thermotolerance strategies are needed to have sustainability in crop yield under higher temperature. However, improving thermotolerance in the crop is a challenging task for crop scientists. Therefore, this review work was conducted with the aim of providing information on the wheat response in three research areas, i.e., physiology, breeding, and advances in genetics, which could assist the researchers in improving thermotolerance. The optimum temperature for wheat growth at the heading, anthesis, and grain filling duration is 16 ± 2.3 °C, 23 ± 1.75 °C, and 26 ± 1.53 °C, respectively. The high temperature adversely influences the crop phenology, growth, and development. The pre-anthesis high temperature retards the pollen viability, seed formation, and embryo development. The post-anthesis high temperature declines the starch granules accumulation, stem reserve carbohydrates, and translocation of photosynthates into grains. A high temperature above 40 °C inhibits the photosynthesis by damaging the photosystem-II, electron transport chain, and photosystem-I. Our review work highlighted that genotypes which can maintain a higher accumulation of proline, glycine betaine, expression of heat shock proteins, stay green and antioxidant enzymes activity viz., catalase, peroxidase, super oxide dismutase, and glutathione reductase can tolerate high temperature efficiently through sustaining cellular physiology. Similarly, the pre-anthesis acclimation with heat treatment, inorganic fertilizer such as nitrogen, potassium nitrate and potassium chloride, mulches with rice husk, early sowing, presoaking of a 6.6 mM solution of thiourea, foliar application of 50 ppm dithiothreitol, 10 mg per kg of silicon at heading and zinc ameliorate the crop against the high temperature. Finally, it has been suggested that modern genomics and omics techniques should be used to develop thermotolerance in wheat.

Abstract
The physicochemical and functional characteristics of grain, meal and flour of timely sown wheat (TSW) and delayed sown wheat (DSW) were compared to see the effects of heat stress (HS). TSW and DSW of different lines were sown as per the approved timings. DSW experienced higher temperature during flowering and had shorter vegetative and maturation period than TSW. Pasting and dough rheological properties were measured using Rapid Visco-Analyser and Farinograph, respectively, while gliadins and glutenins profiling was done by SDS-PAGE. Delayed sowing decreased grain yield and diameter while increased protein and all categories of gliadins and high molecular weight glutenins. DSW showed higher peak viscosity, breakdown-viscosity and dough stability and lower setback viscosity, damaged starch, arabinoxylans and water absorption than TSW. HS in DSW appeared to lower starch synthesis causing proportionate increase in grain hardness and proteins content leading to changes in milling and rheological characteristics.

Abstract
Thirteen wheat genotypes were grown in four regions in Brazil: Cachoeira do Sul (CDS), Santo Augusto (STA), São Gabriel (SAG), and Vacaria (VAC). The principal component analysis explained between 88.3% and 99% of the growing location separation, depending on genotype. Among the 13 genotypes analyzed, TW ranged from 73.75 to 79.83 kg/hL. Final viscosity, gluten strength, extensibility, and falling number exhibited the highest influence on growing region discrimination. STA wheat was selected for the second stage of the study to evaluate the quality of cooked grains. The genotype TBIO Toruk had the longest cooking time of 36.92 min. For most of the studied genotypes, the yellowness reduced after cooking. Damaged grains exhibited values varying from 3.6% to 25.29%. At the end of in vitro digestion, the genotypes were divided into two groups: five genotypes had digestibility in the range of 51.93-58.13%, and eight presented 72.74-84.54% of starch hydrolysis.

Abstract
Plant breeders have long sought to develop lines that combine outstanding performance with high and stable quality in different environments. The high-arabinoxylan (AX) Chinese variety Yumai-34 was crossed with three Central European wheat varieties (Lupus, Mv-Mambo, Ukrainka) and 31 selected high-AX lines were compared for physical (hectolitre weight, thousand grain weight, flour yield), compositional (protein content, gluten content, pentosan) and processing quality traits (gluten index, Zeleny sedimentation, Farinograph parameters) in a three-year experiment (2013–2015) in the F7-F9 generations. The stability and heritability of different traits, including the relative effects of the genotype (G) and environment (E), were determined focusing on grain composition. The contents of total and water-soluble pentosans were significantly affected by G, E and G × E interactions, but the heritability of total (TOT)-pentosan was significantly lower (0.341) than that of water-extractable (WE)-pentosan (0.825). The main component of the pentosans, the amount and composition (arabinose:xylose ratio) of the arabinoxylan (AX), was primarily determined by the environment and, accordingly, the broader heritability of these parameters were 0.516 and 0.772. However, genotype significantly affected the amount of water-soluble arabinoxylan and its composition and thus the heritability of these traits was also significant (0.840 and 0.721). The genotypes exhibiting higher stability of content of TOT-pentosan also showed more stable contents of WE-pentosan. There was a positive correlation between the stability of contents of WE-pentosan and WE-AX, while the stability of the WE-AX content and AX composition were also strongly correlated. Water absorption was strongly genetically determined with a heritability of 0.829 with the genotype determining 38.67% of the total variance. Many lines were grouped in the GGE biplot, indicating that they did not significantly differ stability.

Abstract
Wild relatives of wheat, such as Aegilops spp. are potential sources of genes conferring tolerance to drought stress. As drought stress affects seed composition, the main goal of the present study was to determine the effects of drought stress on the content and composition of the grain storage protein (gliadin (Gli), glutenin (Glu), unextractable polymeric proteins (UPP%) and dietary fiber (arabinoxylan, β-glucan) components of hexaploid bread wheat (T. aestivum) lines containing added chromosomes from Ae. biuncialis or Ae. geniculata. Both Aegilops parents have higher contents of protein and β-glucan and higher proportions of water-soluble arabinoxylans (determined as pentosans) than wheat when grown under both well-watered and drought stress conditions. In general, drought stress resulted in increased contents of protein and total pentosans in the addition lines, while the β-glucan content decreased in many of the addition lines. The differences found between the wheat/Aegilops addition lines and wheat parents under well-watered conditions were also manifested under drought stress conditions: Namely, elevated β-glucan content was found in addition lines containing chromosomes 5Ug, 7Ug and 7Mb, while chromosomes 1Ub and 1Mg affected the proportion of polymeric proteins (determined as Glu/Gli and UPP%, respectively) under both well-watered and drought stress conditions. Furthermore, the addition of chromosome 6Mg decreased the WE-pentosan content under both conditions. The grain composition of the Aegilops accessions was more stable under drought stress than that of wheat, and wheat lines with the added Aegilops chromosomes 2Mg and 5Mg also had more stable grain protein and pentosan contents. The negative effects of drought stress on both the physical and compositional properties of wheat were also reduced by the addition of these. These results suggest that the stability of the grain composition could be improved under drought stress conditions by the intraspecific hybridization of wheat with its wild relatives.

Abstract
Salicylic acid (SA) induced drought tolerance can be a key trait for increasing and stabilizing wheat production. These SA induced traits were studied in two Triticum aestivum L. varieties; drought tolerant, Kundan and drought sensitive, Lok1 under two different water deficit regimes: and rehydration at vegetative and flowering stages. SA alleviated the negative effects of water stress on photosynthesis more in Kundan. SA induced defense responses against drought by increasing antioxidative enzymes and osmolytes (proline and total soluble sugars). Differential proteomics revealed major role of carbon metabolism and signal transduction in enhancing drought tolerance in Kundan which was shifted towards defense, energy production and protection in Lok1. Thioredoxins played important role between SA and redox signaling in activating defense responses. SA showed substantial impact on physiology and carbon assimilation in tolerant variety for better growth under drought. Lok1 exhibited SA induced drought tolerance through enhanced defense system and energy metabolism. Plants after rehydration showed complete recovery of physiological functions under SA treatment. SA mediated constitutive defense against water stress did not compromise yield. These results suggest that exogenously applied SA under drought stress confer growth promoting and stress priming effects on wheat plants thus alleviating yield limitation. BIOLOGICAL SIGNIFICANCE Studies have shown morphological, physiological and biochemical aspects associated with the SA mediated drought tolerance in wheat while understanding of molecular mechanism is limited. Herein, proteomics approach has identified significantly changed proteins and their potential relevance to SA mediated drought stress responses in drought tolerant and sensitive wheat varieties. SA regulates wide range of processes such as photosynthesis, carbon assimilation, protein metabolism, amino acid and energy metabolism, redox homeostasis and signal transduction under drought. Proteome response to SA during vegetative and reproductive growth gave an insight on mechanism related water stress acclimation for growth and development to attain potential yield under drought. The knowledge gained can be potentially applied to provide fundamental basis for new strategies aiming towards improved crop drought tolerance and productivity.

Abstract
To meet the increased demand for wheat consumption, wheat cultivation in Sudan expanded southward to latitudes lower than 15°N, entering a new and warmer environment. Consequently, wheat breeders developed several wheat genotypes with high yields under these environmental conditions; however, the evaluation of the end-use quality of these genotypes is scarce. In this study, we assessed the end-use quality attributes of 20 wheat genotypes grown in three different environments in the Sudan (Wad Medani, Hudeiba, and Dongola). The results showed significant differences (P ≤ 0.01) in all quality tests among environments, genotypes and genotypes Versus environments. The findings obtained, covered wide ranges of test weight (TW, 76.6-85.25 kg/hL), thousand kernel weight (TKW, 28.70-48.48 g), protein (PC, 9.96-14.06%), wet gluten (WG, 28.63-46.53%), gluten index (GI, 36.36-92.77%), water holding capacity (WHC, 168.42-219.32%), falling number (FN, 508.00-974.67 sec), and sedimentation value (SV, 19.00-40.00 mL). Analysis of the traits, genotypes, and traits versus genotypes showed varied correlations in the three growing environments. The genotype G3 grown in either one or all of the three environments exhibits worthy performance and stability for most of the tested quality traits. The crossing of this genotype with high yield genotypes could produce cultivars with sufficient quality and marketability.

Abstract
High temperatures during grain filling can reduce the yield of wheat and affect its grain protein concentration. The Gpc-B1 locus of wheat also affects grain protein concentration, but it is not known whether its effects interact with those of heat. The aim of this study was to investigate the effects of high temperature in lines with and without functional (high-protein) alleles at Gpc-B1. A highly replicated experiment was conducted in a glasshouse under control conditions (24/18°C, 14/10h day/night), with half of the plants of each line or cultivar put into a heat chamber (37/27°C, 14/10h day/night) at 15 days after anthesis for 3 days. Backcross derivatives with the Gpc-B1 introgression segment differed from their recurrent parents more than those without that segment. In some respects, the effects of the Gpc-B1 introgression were similar to those of the heat treatment: both could accelerate peduncle senescence, increase grain protein content and increase the percentage of unextractable polymeric protein. Unlike the heat treatment, Gpc-B1 did not reduce grain weight, indicating that factors that hasten senescence do not necessarily limit grain size. The presence of the Gpc-B1 segment did not exacerbate the effects of heat stress on any trait.

Abstract
In the present study water extractable arabinoxylans (WEAX) from a Mexican spring wheat flour (cv. Tacupeto F2001) were isolated, characterized and gelled and the gel rheological properties and microstructure were investigated. These WEAX presented an arabinose to xylose ratio of 0.66, a ferulic acid and diferulic acid content of 0.526 and 0.036 µg/mg WEAX, respectively and a Fourier Transform Infra-Red (FT-IR) spectrum typical of arabinoxylans. The intrinsic viscosity and viscosimetric molecular weight values for WEAX were 3.5 dL/g and 504 kDa, respectively. WEAX solution at 2% (w/v) formed gels induced by a laccase as cross-linking agent. Cured WEAX gels registered storage (G') and loss (G'') modulus values of 31 and 5 Pa, respectively and a diferulic acid content of 0.12 µg/mg WEAX, only traces of triferulic acid were detected. Scanning electron microscopy analysis of the lyophilized WEAX gels showed that this material resembles that of an imperfect honeycomb.
