Abstract
Cow's milk is currently the most consumed product worldwide. However, due to various direct and indirect contamination sources, different chemical and microbiological contaminants have been found in cow's milk. This review details the main contaminants found in cow's milk, referring to the sources of contamination and their impact on human health. A comparative approach highlights the poor efficacy and effects of the pasteurization process with other methods used in the treatment of cow's milk. Despite pasteurization and related techniques being the most widely applied to date, they have not demonstrated efficacy in eliminating contaminants. New technologies have appeared as alternative treatments to pasteurization. However, in addition to causing physicochemical changes in the raw material, their efficacy is not total in eliminating chemical contaminants, suggesting the need for new research to find a solution that contributes to improving food safety.

Abstract
The aim of the study was to comparatively analyze the interrelationships among iron (Fe), manganese (Mn), zinc (Zn), copper (Cu), lead (Pb), cadmium (Cd), chromium (Cr) and total hydrocarbons (THCs) in the gills, intestines and muscles of Clarias gariepinus collected from Osse River, Nigeria, between the periods of April, 2013 to September, 2014. The trace metals in the fish tissues were analyzed using Atomic Absorption Spectrophotometer (AAS, Philips model PU 9100), while total hydrocarbons were analyzed using High Performance Liquid Chromatograph (HPLC,Prominence Dual brand from HGE) equipped with a detector Shimadzu UV-Visible (UV-Vis Prominence SPD 20 A). The concentrations of trace metals and THCs in the tissues were subjected to principal component analysis (PCA), in conjunction with hierarchical cluster analysis (HCA), backed up by correlation analysis (CA). In the most prioritized component among the hierarchies of contaminants, characterized as principal component 1, results of communality extractions and rotated component matrices revealed the order of contaminants was Mn > Cu > Zn > Fe > Cr in the intestines, Cr > Cu > THCs > Mn > Fe in the muscle, while Pb > Cr > Fe > Mn was the order in the gills of the fish. Iron inhibited accumulation of the other trace metals in the gills, where its threshold of essentiality was maximal. Noteworthy is the fact that Mn and Cu were the most active components in the muscle and concurrently of excess concentrations in the tissue, which is the major edible part of fish, and constitutes its main body weight, hence holds its nutritional and economic values. High level of variability which occurred in the toxicant profile across the tissues of C. gariepinus is a function of uptake route, varied organ functions and specificity of tissue permeability of the compared organs. The study demonstrated variability in organ accumulation capacity and toxicant's competitiveness irrespective of bioavailability. The study provides data useful for future ecotoxicological studies and safety of consumers of the fish.

Abstract
We analyzed the concentrations of 17 elements including arsenic (As), lead (Pb), cadmium (Cd), chromium (Cr), copper (Cu), nickel (Ni), zinc (Zn), strontium (Sr), tin (Sn), aluminum (Al), potassium (K), calcium (Ca), magnesium (Mg), iron (Fe), manganese (Mn), sodium (Na), and selenium (Se) in cow, goat, buffalo, yak, and camel milk in China using inductively coupled plasma mass spectrometry. The concentrations of the elements varied and depended on the milk type. K, Ca, Na, and Mg were the most abundant elements. Fe and Zn concentrations ranged from 1 to 6 μg g−1, while Cu, Al, and Mn concentrations ranged from 0.1 to 1 μg g−1. Trace elements, especially toxic trace elements, were present at very low concentrations; however, Pb concentrations in cow milk reached the MRLs established by the Codex Alimentarius Commission. Data were analyzed by chemometrics to evaluate the correlations between elements in the milk samples. PCA and factor analysis highlighted the relationship between element distribution and milk type. The LDA model correctly identified most milk types. Element analysis combined with chemometrics can be used to distinguish milk types. 17 elements in cow, goat, buffalo, yak, and camel milk were determined by ICP-MS; element analysis combined with chemometrics can be used to distinguish milk types.![]()

Abstract
Background In many developing countries, milk chilling facilities are not available on the farm where milk is produced, rather these are located at the distance of 10–12 km. After milking, it takes about 2–3 h to reach milk to the chilling facilities. The milk is then chilled and transported to the milk processing plants for thermal processing and value addition. In developing countries, shelf life of pasteurized milk is only 3 days, as compared to 7–10 days in developed countries. The factors which are responsible for the shorter shelf life of pasteurized milk should be discovered for the improvement of dairy sectors of these countries. The magnitude of chemical changes which takes place in un-chilled milk and their effect on fatty acids profile, antioxidant status and lipid oxidation is not previously studied. Methods Raw milk samples of the same farm were either rapidly chilled to 4 °C immediately or held at room temperature (35 ± 2 °C) for 2 h followed by rapid chilling to 4 °C. Immediately and delayed chilled raw milk samples were stored at 4 °C for 72 h. Both milk samples were pasteurized at 65 °C, filled in 250 ml transparent PET bottles and stored at 4 °C for 6 days. Fatty acid profile, selenium, zinc, total antioxidant capacity, total flavonoid content and 1, 1-diphenyl-2-picrylhydrazyl (DPPH) free radical scavenging activity, free fatty acids, peroxide value and anisidine value were determined at different stages of the experiment. This experiment was repeated with milk of same farm for at least five times. Results Storing raw milk at ambient temperature (35 ± 2 °C) significantly influenced the pH and lactose content of milk. The loss of short-chain fatty acids in delayed chilled milk was 1.19%, 3.27% and 1.60%, as compared to immediately chilled raw milk. In delayed chilled milk, loss of C18:1 and C18:2 after 3 days of storage period was 6.67% and 01.22. In delayed chilled milk after 6 days of storage, loss of C18:1 and C18:2 was 7.7% and 1.39%, respectively. In immediately chilled milk loss of C18:1 and C18:2 after 3 days of storage was 3.48% and 0.64%. In immediately chilled milk loss of C18:1 and C18:2 after 6 days of storage was 4.57% and 0.9%. Almost 41% vitamin E was lost when raw milk was stored at ambient temperature for 2 hrs. About 21% and 7% vitamin E was lost in delayed and immediately chilled milk, when samples were analyzed immediately after pasteurization. Loss of selenium and zinc contents after 2 h of ambient storage of raw milk were 0.43 and 224 μg/100 g. After 2 h of storage of milk at ambient temperature, free fatty acids increased by 0.03% (p < 0.05). After 6 days of storage, rise of free fatty acids in immediately and delayed chilled milk was 0.06% and 0.14%, respecitively. Rise of 0.13(MeqO2/kg) was recorded, when un-chilled raw milk was stored at ambient temperature for 2 h. After 3 and 6 days of storage, peroxide value of pasteurized milk (delayed chilled) was 0.88 and 1.56 (MeqO2/kg). After 3 and 6 days of storage, peroxide value of pasteurized (immediately chilled) was 0.39 and 0.42(MeqO2/kg). After 2 hrs of ambient storage, 18.41% flavonoids were lost. After 2 hrs of ambient storage of raw milk, loss of total antioxidant capacity and DPPH free radical scavenging activity was 29.31% and 44.53%. After 6 days of pasteurization, loss of total antioxidant capacity and DPPH free radical scavenging activity in delayed chilled raw milk was 72.1% and 89.57%. Conclusions The findings of this investigation showed that delayed chilling of raw milk leads to several undesirable chemical changes in lipid fraction of milk.

Abstract
Effects of lactation period and feed on essential minerals composition of mare's milk were studied. Average Ca, P, Na and Mg concentrations in feed DM were 0.66, 4.30, 0.13 and 2.21 g.kg-1 of DM (dry matter), respectively. In regard to milk all elements concentrations were not similar to each other due to the changes of the lactation day differences. Average Ca, P, Na and Mg concentrations (in DM) caused by breed differences and lactation days were 1.95, 1.08, 0.53 and 0.22 g.kg-1, respectively. During the milk period, a high-quality feed were maintaining the major mineral composition of mare's milk in 1.5 - 2 times higher amount than milk of mare fed with pasture and a low-quality feed. The colostrum stage of mare was much shorter than other animals, the mare's milk on the 2nd day of lactation showed properties of initial milk in which its composition, particularly in minerals, were two times higher when compare to that on milk periods that was started from 5th day after parturition. It seemed that some factors, except well physiological conditions, such as mare's age, number of foaling, sex of foal etc. did not affect milk nutrient composition.

Abstract
Abstract Concentrations of ten elements (Cd, Cr, Cu, Fe, Ni, Pb, Se, Sr, V and Zn) were determinate in muscle tissues of 13 fish species from Aratu Bay, Bahia, Brazil by inductively coupled plasma optical emission spectrometry. The accuracy and precision of our results were checked by using two certified reference materials: BCR-422 cod muscle and SRM 1566b oyster tissue. The average trace element concentrations in the fish species varied in the following ranges, in μg g–1: 0.03-0.8 for Cr; 2.0-33.7 for Cu, 2.4-135.1 for Fe, 1.6-25.6 for Se; 1.6-35.1 for Sr; and 2.8-40.5 for Zn. The Diaptereus rhombeus (carapeba) specie presented the highest concentrations of Se, Cu and Fe. Chromium and Se were present at levels above the limit of tolerance allowed by the National Agency of Sanitary Vigilance (ANVISA). The results were also evaluated using the multivariate analysis techniques: principal component analysis (PCA) and hierarchical cluster analysis (HCA).
