Abstract
The objective of this experiment was to evaluate the effects of orally administered Megasphaera elsdenii NCIMB 41125 as a microbial supplement in steers abruptly transitioned from a receiving diet with 4% dietary starch (dry matter [DM] basis) to a growing diet with 38% dietary starch (DM basis). Steers (n = 192; initial shrunk body weight [SBW] = 309 ± 20.6 kg) were assigned to microbial supplement treatment in a randomized complete block design. Treatments were control (CON): no microbial supplement prior to diet transition, and (DFM): microbial supplement orally administered prior to diet transition (20 mL of microbial supplement [Lactipro NXT, Axiota Animal Health, Fort Collins, CO] containing 1 × 1010 colony forming units Megasphaera elsdenii NCIMB 41125). Steers were sourced from a previously conducted 49 d feedlot receiving period experiment and abruptly transitioned from a receiving diet including soybean hulls and wheatlage containing 4% dietary starch (DM basis) to a growing diet including high-moisture ear corn, dry-rolled corn, and wheatlage containing 38% dietary starch (DM basis). Diets were switched on an equal DM intake basis to achieve the abrupt change and steers were fed the 38% starch diet for 49 d until experiment completion. Prior to experiment initiation, steers (n = 72; n = 3/pen) were fitted with wireless rumination tags to track daily activity and rumination time. No differences (P ≥ 0.20) were observed between treatments for final SBW, average daily gain, DM intake, feed efficiency, calculated net energy (NE) for maintenance and gain, or observed-to-expected ratio of NE for maintenance and gain. Additionally, no treatment × day or treatment differences (P ≥ 0.12) were observed for activity or rumination measures. Minutes ruminating and active both differed (P < 0.01) for the main effect of day. Compared to non-supplemented steers, oral administration of Megasphaera elsdenii NCIMB 41125 did not improve growth performance or efficiency of dietary NE utilization in steers transitioned from a receiving diet containing 4% starch (DM basis) to a growing diet containing 38% starch (DM basis).

Abstract
Sorting behaviour is a common phenomenon observed in ruminants when they are provided with a total mixed ration, which contributes to variations in the severity of subacute ruminal acidosis (SARA). Pelleted total mixed ration (PTMR) reduces sorting, but high-grain content increases acidosis risk. However, whether the variability in the severity of SARA exists in sheep fed the same high-grain PTMR is less understood. This study aimed to investigate SARA variability among individual sheep offered a high-grain PTMR, considering chewing activity, ruminal fermentation, bacterial communities and nutrient digestibility. Twenty ruminally cannulated male Hu sheep were individually housed in cages and fed a PTMR comprising 80% concentrate mix and 20% roughage. A 14-day adaptation period to the diet and facilities was provided before a 10-day sample collection period. Continuous monitoring of ruminal pH was conducted for 48 h, during which time chewing activity was also recorded. Ruminal fluid samples were collected for analysis of volatile fatty acid and microbial DNA extraction. Faecal samples were collected to measure nutrient digestibility. Based on their acidosis index, the sheep were classified into two groups: SARA-susceptible group (n = 6) and SARA-tolerant group (n = 6). The SARA-susceptible sheep exhibited a lower ruminal mean pH and minimum pH than the SARA-tolerant sheep (P < 0.05). Additionally, the SARA-susceptible group increased the acidosis index, duration and areas of pH below 5.8 and 5.6 compared to the SARA-tolerant group (P < 0.05). The SARA-susceptible group also exhibited a longer ruminating time than the SARA-tolerant group (P < 0.05). The SARA-susceptible group exhibited a tendency to increase the relative abundance of Firmicutes (P = 0.089), while simultaneously decreasing the copy number of Fibrobacter succinogenes in the rumen, as well as the digestibility of NDF and ADF compared to the SARA-tolerant group (P < 0.05). The acidosis index was found to be positively correlated with ruminating time (min/kg DM intake (DMI)) and total chewing time (min/kg DMI), but negatively correlated with the copy number of Fibrobacter succinogenes and Ruminococcus albus in the rumen. These findings indicate that there exists variability in the SARA severity among sheep when fed a high-grain PTMR, as evidenced by varied chewing activity, bacterial communities and nutrient digestibility. Ruminating time, total chewing time per kilogram of DMI as well as the copy number of Fibrobacter succinogenes and Ruminococcus albus in the rumen hold potential as indicators for assessing the severity of SARA.

Abstract
Dairy cows increase heat loads when the temperature-humidity index (THI) value is elevated in the ambient environments. This condition often occurs in the tropical areas due to a higher THI rate throughout seasons. The major objective of the study was to investigate the different responses in milk yield and composition, chewing activities, and health parameters in dairy cows under the dry and wet seasons of tropical climate zone in Indonesia. Twenty mid-lactating Indonesian Holstein-Friesian cows (139.3 ± 24.63 DIM; 10 primiparous and 10 multiparous; 441 ± 21.5 kg BW) were randomly subjected to 2 groups, dairy cows under dry (n = 10) and wet season (n = 10). Both groups received the same diets throughout the experiment. To determine the heat stress condition, the THI values were recorded daily. Overall, a higher number of THI was more pronounced in wet season. A lower dry matter intake (DMI) and milk yield were observed in wet season group. A tendency towards higher milk protein contents was found in dairy cows under dry season compared to cows under wet season. The other milk compositions such as fat, lactose, and SNF remained unchanged in both dry and wet season groups. The comparison between both groups at several time points of eating and ruminating time revealed significantly higher in cows under dry season. Overall, a higher chewing per bolus was observed in cows under dry season than their counterparts. Furthermore, a tendential greater extent rectal temperature pointed in the wet season group compared to the dry season group relatively. Data suggest that a stronger heat stress condition in wet season was more pronounced compared to dry season, with adversely affecting stronger declined DMI, milk yield, and chewing activities of dairy cows.

Abstract
Phytogenic compounds may influence salivation or salivary properties. However, their effects on the bovine salivary proteome have not been evaluated. We investigated changes in the bovine salivary proteome due to transition from forage to high-concentrate diet, with and without supplementation with a phytogenic feed additive. Eight non-lactating cows were fed forage, then transitioned to a 65% concentrate diet (DM basis) over a week. Cows were control (n = 4, CON) or supplemented with a phytogenic feed additive (n = 4, PHY). Proteomic analysis was conducted using liquid chromatography coupled with mass spectrometry. We identified 1233 proteins; 878 were bovine proteins, 189 corresponded to bacteria, and 166 were plant proteins. Between forage and high-concentrate, 139 proteins were differentially abundant (P < 0.05), with 48 proteins having a log2FC difference > |2|. The salivary proteome reflected shifts in processes involving nutrient utilization, body tissue accretion, and immune response. Between PHY and CON, 195 proteins were differently abundant (P < 0.05), with 37 having a log2FC difference > |2|; 86 proteins were increased by PHY, including proteins involved in smell recognition. Many differentially abundant proteins correlated (r > |0.70|) with salivary bicarbonate, total mucins or pH. Results provide novel insights into the bovine salivary proteome using a non-invasive approach, and the association of specific proteins with major salivary properties influencing rumen homeostasis. SIGNIFICANCE: Phytogenic compounds may stimulate salivation due to their olfactory properties, but their effects on the salivary proteome have not been investigated. We investigated the effect of high-concentrate diets and supplementation with a phytogenic additive on the salivary proteome of cows. We show that analysis of cows' saliva can be a non-invasive approach to detect effects occurring not only in the gut, but also systemically including indications for gut health and immune response. Thus, results provide unique insights into the bovine salivary proteome, and will have a crucial contribution to further understand animal response in terms of nutrient utilization and immune activity due to the change from forage to a high-energy diet. Additionally, our findings reveal changes due to supplementation with a phytogenic feed additive with regard to health and olfactory stimulation. Furthermore, findings suggest an association between salivary proteins and other components like bicarbonate content.

Abstract
In the high-producing dairy cow, providing an adequate supply of digestible energy is essential. One strategy to meet this need is to provide fermentable starch from cereal grains or silages like corn, barley, or wheat. Unfortunately, excess dietary starch increases the risk of rumen acidosis. Rumen acidosis challenge models using high-grain diets, particularly with wheat and barley, have demonstrated that a sudden change in starch concentration or digestibility leads to the breakdown of the rumen epithelial barrier. As a result, increases in circulating lipopolysaccharide (a marker of bacterial translocation) and acute phase proteins (APP) have been observed. Feeding increasing amounts of starch in chronic feeding studies does not appear to consistently modulate inflammation in early-lactation cows that already experience inflammation. In mid- and late-lactation cows, increasing starch above 30% may increase APP, but the response is inconsistent and has not been investigated using different grains or differently processed starch sources. Abomasal starch infusion experiments indicate that increasing the intestinal starch supply consistently reduces fecal pH but does not lead to an APP response or changes in gut integrity. Increasing intestinal starch supply increases fecal butyrate concentrations, and butyrate has had positive effects on gut health and integrity in other species and experimental models. More chronic feeding experiments are needed to investigate how starch concentrations, sources, processing methods, and interactions affect inflammation and gut integrity. There is a paucity of data investigating the role that carbohydrate concentrations and sources play on ruminant hindgut health, integrity, function, structure, or microbiome. Currently, data indicate that feeding diets with less than 30% starch to lactating dairy cows does not contribute to systemic inflammation.

Abstract
Because of its high crude protein (CP) content, dietary inclusion of corn dried distillers' grains with solubles (DDGS) in finishing cattle diets can increase the ruminal loss of ammonia-nitrogen (NH3-N), which ends up excreted as urine urea-N (UUN). Increasing dietary fermentable energy supply can enhance ruminal use of N; however, it could also lead to acidotic conditions that compromise digestive function and animal performance. We evaluated the effects of partially replacing dietary corn grain with 20% or 40% (dry matter [DM] basis) wheat grain in finishing diets containing 15% corn DDGS on N utilization, ruminal pH, and digestive function. Nutrient intake and digestion, ruminal fermentation characteristics, microbial protein synthesis, route of N excretion, and blood metabolites were measured. Six ruminally fistulated crossbred beef heifers (initial body weight ± SD; 797 ± 58.8 kg) were used in a replicated 3 × 3 Latin square design with 28-d periods. Dietary treatments were either corn (73% of diet DM; CON), 53:20 corn:wheat blend (20W), or 33:40 corn:wheat blend (40W) as the major fermentable energy source. Dry matter intake (DMI) tended to be lower for heifers fed the 40W than CON and 20W diets. Feeding diets containing wheat grain led to an increase (P = 0.04) in neutral detergent fiber (NDF) intake. However, there was no diet effect (P ≥ 0.60) on apparent total tract DM and NDF digestibility. Feeding wheat grain led to a decrease (P ≤ 0.03) in mean and minimum pH, an increase (P = 0.04) in pH < 5.8 duration, and a tendency for an increase in the area and acidosis index for pH < 5.8 and 5.5. Nitrogen intake, which was lower (P = 0.04) for 40W than 20W heifers did not differ between CON and 20W heifers. There was no diet effect (P = 0.80) on ruminal NH3-N concentration and estimated microbial N flow. However, feeding diets containing wheat grain led to a decrease (P = 0.045) in UUN excretion (% total urine N). Fecal and total N excretion (% of N intake) increased (P < 0.01) following the addition of wheat grain to the diet. Apparent N retention was lower (P = 0.03) for 40W than CON and 20W heifers. In summary, although it led to a desirable decrease in UUN excretion, feeding wheat grain in corn DDGS-containing diets increased acidotic conditions in the rumen, which possibly led to the tendency for a decrease in DMI. The negative apparent N retention at the 40% wheat grain inclusion also suggests a decrease in nutrient supply, which could compromise feedlot performance.

Abstract
Saliva facilitates feed ingestion, nutrient circulation, and represents an important pH buffer for ruminants, especially for cattle fed high-concentrate diets that promote rumen acidification. This experiment evaluated the short-term effects of nine phytogenic compounds on salivation, saliva physico-chemical composition as well as ingested feed boli characteristics in cattle. A total of nine ruminally cannulated Holstein cows were used. Each compound was tested in four of these cows as part of a high-concentrate meal (2.5 kg of total mixed ration in dry matter basis for 4 h) in low or high dose, and was compared to a control meal without compound. Saliva was sampled orally (unstimulated saliva) for physico-chemical composition analysis. Composition of the ingested saliva (stimulated saliva), salivation and feed boli characteristics were assessed from ingesta collected at the cardia during the first 30 min of the meal. Analysis of unstimulated saliva showed that supplementation with capsaicin and thyme oil increased buffer capacity, while supplementation with thymol, L-menthol and gentian root decreased saliva pH. In addition, supplementing angelica root decreased saliva osmolality. Regression analysis on unstimulated saliva showed negative associations between mucins and bicarbonate as well as with phosphate when garlic oil, thyme oil or angelica root was supplemented. Analysis of stimulated saliva demonstrated that supplementation with garlic oil increased phosphate concentration, thyme oil tended to increase osmolality, capsaicin and thymol increased buffer capacity, and ginger increased phosphate content. Furthermore, salivation rate increased with ginger and thymol, and tended to increase with garlic oil, capsaicin, L-menthol and mint oil. Feed ensalivation increased with capsaicin. A positive association was found between feed bolus size and salivation rate when any of the phytogenic compounds was supplemented. Overall, our results demonstrate positive short-term effects of several phytogenic compounds on unstimulated and stimulated saliva physico-chemical properties, salivation or feed boli characteristics. Thus, the phytogenic compounds enhancing salivary physico-chemical composition have the potential to contribute to maintain or improve ruminal health in cattle fed concentrate-rich rations.

Abstract
Composting is an environmentally friendly way to turn plant and animal wastes into organic fertilizers. However, it is unclear to what extent the source of animal waste products (such as manure) affects the physicochemical and microbiological properties of compost. Here, we experimentally tested how the type of livestock manure of herbivores (sheep and cattle) and omnivores (pig and chicken) influences the bacterial and fungal communities and physicochemical properties of compost. Higher pH, NO3-N, Total carbon (TC) content and C/N were found in sheep and cattle manure composts, while higher EC, NH4-N, Total nitrogen (TN) and total phosphorus (TP) content were measured in pig and chicken manure composts. Paired clustering between herbivore and omnivore manure compost metataxonomy composition was also observed at both initial and final phases of composting. Despite this clear clustering, all communities changed drastically during the composting leading to reduced bacterial and fungal diversity and large shifts in community composition and species dominance. While Proteobacteria and Chloroflexi were the major phyla in sheep and cattle manure composts, Firmicutes dominated in pig and chicken manure composts. Together, our results indicate that feeding habits of livestock can determine the biochemical and biological properties of manures, having predictable effects on microbial community composition and assembly during composting. Manure metataxonomy profiles could thus potentially be used to steer and manage composting processes.

Abstract
Cattle need physically effective fiber to promote rumination and maintain rumen health, but economics favor the use of low-roughage feedlot diets. The study investigated the optimum barley silage proportion in barley-based finishing diets. Apparent total-tract digestibility (4-d total fecal collection), chewing behavior (6-d video recording), ruminal pH (6-d indwelling pH recording), and fermentation (1 day, sampling 0, 3, 6, 12, and 18 h postfeeding), short-chain fatty acid (SCFA) absorption (washed reticulo-rumen technique), gastrointestinal tract barrier function (marker infusion), and blood variables (catheters) were measured. Eight ruminally fistulated crossbred beef heifers (653 ± 44.2 kg; mean starting body weight [BW] ± SD) were used in a replicated 4 × 4 Latin square design with 28-d periods. Dietary treatments were 0%, 4%, 8%, and 12% of dietary dry matter (DM) as barley silage, with diets containing 80%, 76%, 72%, and 68% barley grain, respectively. Increasing silage proportion decreased dietary starch content from 49.0% to 43.1% DM, while neutral detergent content increased from 22.7% to 25.1% DM. Silage proportion had no effect on DM intake, but apparent DM digestibility decreased quadratically (86.0%, 82.1%, 81.1%, 79.5% for the four diets, respectively; P < 0.001). Although, silage proportion had no effect on eating activity, rumination time increased quadratically (246, 289, 302, 316 min/d; P = 0.04). Increased silage proportion increased minimum (5.07, 5.27, 5.29, 5.41; quadratic, P = 0.011) and mean (5.61, 5.87, 5.93, 5.95; quadratic, P = 0.007) ruminal pH, and there was a quadratic (P ≤ 0.047) decrease in duration and area under the pH acidosis threshold curves of 5.8, 5.5, and 5.2. Although increasing silage proportion decreased ruminal acidosis, it was not completely eliminated even with a diet containing 12% silage DM. SCFA concentration in ruminal fluid was not affected by diet, but silage proportion quadratically (P ≤ 0.088) increased ruminal acetate:propionate. There was no effect of diet on absolute or fractional rates of absorption of acetate, propionate, butyrate or total SCFA, and no effect on gastrointestinal barrier function or blood measurements. In conclusion, responses to roughage level were mostly quadratic with greatest improvements in acidosis variables between 0% and 4% barley silage, with incremental improvements with further increases in silage levels. The study showed a trade-off between maximizing digestibility and energy intake to promote animal performance and minimizing the risk of acidosis.

Abstract
The main challenge in dairy cattle feeding is to find a balance between the energy and physically effective fibre (peNDF), required to maintain rumen health. In an attempt to regulate the balance between energy intake and rumen buffering, we hypothesized that the content of peNDF in the diet modifies eating and feed sorting patterns of the cows. Sixteen lactating Simmental cows were switched from a diet high in peNDF, with which they were fed for one week, to a diet moderate in peNDF for four weeks. Data showed that during the moderate peNDF feeding the cows increased sorting for medium-sized particles and avoided both long and very fine particles. In addition, cows decreased their eating time per meal, but increased the number of meals per day, obviously attempting to decrease the amount of fermentable substrate per time unit while maintaining high levels of nutrient/energy intake. Although these changes during the moderate peNDF feeding went along with a lower diurnal variation of ruminal pH, feeding of the latter diet did not prevent ruminal pH drop and increased the level of all liver enzymes, indicating liver tissue damage. In conclusion, the altered eating, chewing, and sorting behaviour of the cows during the moderate peNDF feeding could not alleviate the deficiency in peNDF, which resulted in ruminal pH depression and impairment of liver health variables.

Abstract
The aim of this study was to assess the roles of bacteria in degrading protein and carbohydrate during chicken and bovine manures composting. The results showed that protein and carbohydrate degraded greatly, especially during the thermophilic phase of composting. This was mainly caused by the abundant bacteria communities that related with protein and carbohydrate transformation in the thermophilic phase, which identified by the network analysis. Besides, the microbial degradation of nutrient substances performed specificity and universality. "Specificity" and "Universality" meant protein and carbohydrate degraded by certain bacteria and diverse groups of bacteria, respectively. "Specific" bacteria transformed protein and carbohydrate during chicken manure composting, whereas the transformation characteristic of bacteria to protein and carbohydrate in bovine manure was "universality". Structural equation models also verified these results, and they showed that more than 79% of protein and carbohydrate changes were transformed by bacteria.

Abstract
Video recordings of behavioral activities including eating, ruminating, drinking, standing, and lying were monitored to determine the minimum number of sampling days and sampling frequency required to obtain reliable estimates of these behaviors. Eight continental crossbred heifers, individually housed in a tie-stall barn with total mixed ration provided once per day, were divided by BW into two blocks and assigned to each of the two dietary treatments in a crossover design: high-forage diet (HF, forage:concentrate ratio 70:30) and low-forage diet (LF, forage:concentrate ratio 30:70). The cows were monitored continuously using a digital video recording system for 6 d in each of the two periods and a trained observer manually recorded the behavioral activities by minute. Mean time spent performing each behavior for 6 d with instantaneous samples of 1 min was compared with those obtained using fewer sampling days (1, 2, 3, 4, and 5 d) and less frequent scanning (2, 3, 4, 5, 10, 15, 30, and 60 min) using linear regression analysis, and the minimum number of sampling days or frequency was determined. Diet did not affect the accuracy and precision of predicting behavior from video recordings of the cows. When sampling days and scanning intervals were combined, the minimum recommended sampling frequency for accurately estimating a specific set of behaviors of beef heifers in tie stalls was: eating, 2 d with 4-min intervals; ruminating, 3 d with 4-min intervals; drinking, 2 d with 3-min intervals; and standing and lying, 2 d with 15-min intervals. Increasing sampling frequency beyond these minimums further enhanced the accuracy and precision of predictions. The total time of each behavioral activity was different between cows fed HF and LF diets with eating, ruminating, total chewing, and standing of heifers fed the HF diet greater (P < 0.01), but the lying (P < 0.01) and drinking time (P = 0.028) of heifers fed the LF diet greater. Meal patterns were different (P < 0.05) between the treatments except when meal size (kg) was expressed as DM or OM intake. For rumination patterns, the mean or maximum bout length (min/bout) was greater, but the maximum or minimum length of time heifers took to ruminate after eating was lower for the HF diet. From a practical standpoint, it is recommended to use 3 days of observations scanned at an interval of 4 min to reliably estimate the behavior of cows. If the focus is only lying and standing time, then 2 days with 15 min intervals can be used.

Abstract
Objective Wheat bran (WB) and rice bran (RB) are the agricultural by-products used as poultry feed in many developing countries. However, their use for poultry feed is limited due to high fiber and the presence of anti-nutritional substances (e.g. β-glucans). The objective of this study was to develop a method to improve the quality of those brans by reducing the fiber content. Methods A two-step fermentation method was developed where the second fermentation of first fermented dry bran was carried out. Fermentation was performed at a controlled environment for 3 h and 6 h (n = 6). The composition of brans, buffer solution and rumen liquor was maintained in a ratio of 1:2:3, respectively. Brans were analyzed for dry matter, crude fiber (CF), acid detergent fiber (ADF), neutral detergent fiber (NDF), and acid detergent lignin (ADL) content. Celluloses and hemicelluloses were calculated from the difference of ADF-ADL and NDF-ADF, respectively. Samples were compared by two-factor analysis of variance followed by Tukey’s multiple comparison tests (p<0.05). Results CF %, ADF % and cellulose tended to decrease and NDF % and hemicellulose content was reduced significantly (p<0.05). After the 1st fermentation step, NDF decreased 10.7%± 0.55% after 3 h vs 17.0%±0.78% after 6 h in case of WB. Whereas, these values were 2.3%± 0.30% (3 h) and 7.5%±0.69% (6 h) in case of RB. However, after the 2nd fermentation step, the decrease in the NDF content amounted to 9.1%±0.72% (3 h), 17.4%±1.13% (6 h) and 9.3%±0.46% (3 h), 10.0%±0.68% (6 h) in WB and RB, respectively. Cellulose and hemicellulose content was reduced up to 15.6%±0.85% (WB), 15.8%±2.20% (RB) and 36.6%±2.42% (WB), 15.9%±3.53% (RB), respectively after 2nd fermentation of 6 h. Conclusion Two-step fermentation process improved the quality of the brans for their use in poultry feed.

Abstract
Rumen health is of vital importance in ensuring healthy and efficient dairy cattle production. Current feeding programs for cattle recommend concentrate-rich diets to meet the high nutritional needs of cows during lactation and enhance cost-efficiency. These diets, however, can impair rumen health. The term "subacute ruminal acidosis" (SARA) is often used as a synonym for poor rumen health. In this review, we first describe the physiological demands of cattle for dietary physically effective fiber. We also provide background information on the importance of enhancing salivary secretions and short-chain fatty acid absorption across the stratified squamous epithelium of the rumen; thus, preventing the disruption of the ruminal acid-base balance, a process that paves the way for acidification of the rumen. On-farm evaluation of dietary fiber adequacy is challenging for both nutritionists and veterinarians; therefore, this review provides practical recommendations on how to evaluate the physical effectiveness of the diet based on differences in particle size distribution, fiber content, and the type of concentrate fed, both when the latter is part of total mixed ration and when it is supplemented in partial mixed rations. Besides considering the absolute amount of physically effective fiber and starch types in the diet, we highlight the role of several feeding management factors that affect rumen health and should be considered to control and mitigate SARA. Most importantly, transitional feeding to ensure gradual adaptation of the ruminal epithelium and microbiota; monitoring and careful management of particle size distribution; controlling feed sorting, meal size, and meal frequency; and paying special attention to primiparous cows are some of the feeding management tools that can help in sustaining rumen health in high-producing dairy herds. Supplementation of feed additives including yeast products, phytogenic compounds, and buffers may help attenuate SARA, especially during stress periods when the risk of a deficiency of physically effective fiber in the diet is high, such as during early lactation. However, the usage of feed additives cannot fully compensate for suboptimal feeding management.

Abstract
The aim of this study was to determine the time course for adaptation of the reticulo-rumen, omasum, abomasum, and small intestine in response to an abrupt increase in the proportion of grain in the diet. Adaptive responses include tissue and digesta mass, small intestinal length, and brush border enzyme activity in the duodenum, proximal jejunum, and ileum. Twenty-five Holstein steers (213 ± 23 kg; 5 to 7 mo of age) were blocked by body weight, and within block were randomly assigned to 1 of 5 treatments: the control diet (CTRL; 92% chopped grass hay and 8% mineral and vitamin supplement on a dry matter basis) or a moderate grain diet (MGD; 50% chopped grass hay, 42% rolled barley grain, and 8% mineral and vitamin supplement) that was fed for 3 (MGD3), 7 (MGD7), 14 (MGD14), or 21 d (MGD21). Dry matter intake was limited to 2.25% of body weight to ensure that changes in dry matter intake did not confound the results. On the last day of the dietary exposure, steers were slaughtered 2 h after feeding. Reticulo-rumen tissue mass and ruminal epithelium mass in the ventral sac of the rumen were not affected by the MGD. Wet reticulo-ruminal digesta mass decreased from CTRL to MGD7 and then increased, but reticulo-ruminal digesta dry matter mass did not differ between treatments. Omasal mass, omasal tissue mass, and omasum digesta mass decreased linearly with the number of days fed MGD, but abomasal tissue mass tended to increase linearly. Duodenal tissue mass tended to increase linearly, and ileal length increased linearly with the number of days fed MGD. Lactase activity in the proximal jejunum increased linearly and maltase activity in duodenum tended to increase linearly with days fed MGD. Aminopeptidase N activity in the proximal jejunum increased cubically with days fed MGD, and dipeptidylpeptidase IV activity in ileum tended to decrease from CTRL to MGD14 and then tended to increase. Adaptation to a diet with a greater proportion of concentrate involves changes in the mass and length of regions of the gastrointestinal tract and brush border enzyme activity. These changes take place gradually over at least 3 wk.
