Abstract
In the study, the physical characteristics, nutritional composition, mineral elements, volatile substances, and serum biochemistry of common carp (Cyprinus carpio) after rearing for two months were compared and analyzed to reveal the differences in muscle nutritional quality and serum biochemical indices between fish raised in traditional ponds (TP) and land-based container recirculating aquaculture systems (C-RAS). One hundred fish were selected from each aquaculture mode for the following experiments. Results show that: in terms of physical properties, C-RAS frozen seepage rate was significantly lower than that in TP (P < 0.05), the chewiness, gumminess, springiness, resilience, adhesiveness, cohesiveness, and shearing of C-RAS group were significantly higher than in TP (P < 0.01). Regarding muscle nutrients, the moisture, the crude lipid contents of C-RAS group were significantly lower than that of the TP group (P < 0.05), and the crude protein content of C-RAS group was extremely significantly higher than that in TP (P < 0.01). The saturated fatty acids (ΣSFA) and polyunsaturated fatty acids (ΣPUFA) in the muscle of C-RAS were significantly higher than that in TP (P < 0.01), and monounsaturated fatty acids (ΣMUFA) of C-RAS were significantly lower than that in TP (P < 0.01). Methionine content in C-RAS was significantly higher than that in TP (P < 0.05). In terms of mineral elements, the contents of K and Se in C-RAS were significantly higher than those in TP, and the content of Zn in C-RAS was significantly lower than that in TP (P < 0.05). In terms of volatile substances, nonanal, octanal, and benzaldehyde in C-RAS were significantly lower than those in TP(P < 0.01), 2,3-diethyl-5-methylpyrazine, ethyl 3-methylpentanoate, butyl formate were significantly higher than those in TP (P < 0.01). In terms of serum biochemistry, the glucose index in C-RAS was extremely significantly lower than that in TP group, total protein, albumin, alkaline phosphatase, and triglyceride were extremely significantly higher than those in TP (P < 0.01). Experiments show that the aquaculture mode has a large impact on the physical properties of the common carp, nutrients, mineral elements, volatile matter, and serum biochemical. In conclusion, the common carp cultured in C-RAS systems had better muscle nutritional quality, which provides a reference for future regulation of fish nutritional quality by C-RAS.

Abstract
Methylmercury is an organic form of mercury that is well recognized for its bioaccumulation in aquatic species. Consumption of fish contaminated with methylmercury poses a toxicological health risk to both humans and animals. Salmon is an increasingly common ingredient in commercial pet foods because of manufacturers' interest in unconventional protein sources and inclusion of omega-3 polyunsaturated fatty acids. Previous studies have measured total mercury, but not methylmercury, in commercial pet foods. The purpose of this study was to evaluate total mercury and methylmercury concentrations in commercially available salmon-containing and nonsalmon-containing canine diets and to estimate risk of chronic exposure in dogs fed these diets long term. Total mercury was detected in 3 of 24 diets evaluated (12.5%), 2 of which did not contain any ingredients from fish. The single salmon-containing diet that contained total mercury was the lowest of the 3 but was also the only sample positive for methylmercury. None of the 3 mercury-containing diets contained fish oil. Concentrations of total mercury were similar to most data previously reported for pet foods. Using expected calorie intake for dogs of 2 body weights, the mercury concentrations determined in this study were applied to theoretical chronic exposure calculations to assess risk of toxicosis to dogs. Total mercury and methylmercury were uncommonly identified in the commercially available canine diets sampled in this study and were found in concentrations unlikely to pose risk to healthy adult dogs. Common sources of mercury in pet foods remain unknown and are not reliably of seafood origin.

Abstract
Contaminants and fatty acid levels in farmed- versus wild Atlantic salmon have been a hot topic of debate in terms of food safety. The present study determined dioxins (polychlorinated dibenzo-p-dioxin and dibenzofuran), polychlorinated biphenyls (PCBs), polybrominated diphenyl ethers (PBDEs), organochlorine pesticides (OCPs), metals and fatty acids in wild and farmed Atlantic salmon. Contaminant levels of dioxins, PCBs, OCPs (DDT, dieldrin, lindane, chlordane, Mirex, and toxaphene), and mercury were higher in wild salmon than in farmed salmon, as were the concentrations of the essential elements selenium, copper, zinc and iron, and the marine omega-3 fatty acid docosahexaenoic acid (DHA). PBDE, endosulfan, pentachlorobenzene, hexachlorobenzene, cadmium and lead levels were low and comparable in both wild and farmed fish, and there was no significant difference in the marine omega-3 fatty acid eicosapentaenoic acid (EPA) concentration. The total fat content was significantly higher in farmed than wild salmon due to a higher content of both saturated and monounsaturated fatty acids, as well as a higher content of omega-6 fatty acids. The omega-3 to omega-6 fatty acid ratio was considerably lower in farmed than wild salmon due to the high level of omega-6 fatty acids. Contaminant concentrations in Atlantic salmon were well below maximum levels applicable in the European Union. Atlantic salmon, both farmed and wild, is a good source of EPA and DHA with a 200g portion per week contributing 3.2g or 2.8g respectively, being almost twice the intake considered adequate for adults by the European Food Safety Authority (i.e. 250mg/day or 1.75g/week).

Abstract
Bioaccumulation and trophic transfer of mercury (Hg) both in the natural marine ecosystem and the mariculture ecosystem were studied at Daya Bay, a subtropical bay in Southern China. Averaged Hg concentrations in sediment, phytoplankton, macrophyte, shrimp, crab, shellfish, planktivorous fish, carnivorous fish, farmed pompano, farmed snapper, compound feed and trash fish were 0.074, 0.054, 0.044, 0.098, 0.116, 0.171, 0.088, 0.121, 0.210, 0.125, 0.038 and 0.106 μg g(-1) dw, respectively. These Hg levels were at the low-middle ends of the global range. Positive correlation between Hg concentrations in farmed fish and fish weights/sizes was observed, whereas no clear correlation between Hg concentrations and lipid contents was found. Hg concentrations followed macrophyte < phytoplankton < sediment < planktivorous fish < shrimp < crab < carnivorous fish < shellfish, and commercial feed < trash fish < farmed fish. Hg was biomagnified along the marine food chain in the ecosystem of Daya Bay. Hg levels in the farmed fish were higher than those in the wild fish primarily because of the higher Hg level in fish feed and the smaller size of marine wild fish.

Abstract
We collected two subspecies of masu salmon: Oncorhynchus masou masou from four localities (southern Sea of Japan northward to Hokkaido) and O. masou ishikawae from upstream from Ise Bay close to a heavy industrial area. All 209 PCB congeners were analyzed using HRGC/HRMS. PCA ordination of congener concentrations divided data into three groups: (i) ssp. masou from Hokkaido, (ii) ssp. masou from the other regions and (iii) ssp. ishikawae. The highest ∑ PCB concentration (40.39 ng/wet wt) was in ssp. ishikawae followed by ssp. masou from southern waters; however the TEQdioxin-like PCBs was highest in ssp. masou from southern water (1.96 pg-TEQdioxin-like PCBs/g wet wt.) due to the high proportion of congener #126 in its complement (#126 has the highest toxic equivalency factor among congeners). There is likely a contamination source offshore in the southern Sea of Japan and/or along the migratory route of ssp. masou.

Abstract
Nearly half of all seafood consumed globally comes from aquaculture, a method of food production that has expanded rapidly in recent years. Increasing seafood consumption has been proposed as part of a strategy to combat the current non-communicable disease (NCD) pandemic, but public health, environmental, social, and production challenges related to certain types of aquaculture production must be addressed. Resolving these complicated human health and ecologic trade-offs requires systems thinking and collaboration across many fields; the One Health concept is an integrative approach that brings veterinary and human health experts together to combat zoonotic disease. We propose applying and expanding the One Health approach to facilitate collaboration among stakeholders focused on increasing consumption of seafood and expanding aquaculture production, using methods that minimize risks to public health, animal health, and ecology. This expanded application of One Health may also have relevance to other complex systems with similar trade-offs.

Nutritional quality of salmon products available from major retailers in the UK: content and composition of n-3 long-chain PUFA. Br J Nutr 2014; 112:964-75. Abstract
In the present study, salmon products available from UK retailers were analysed to determine the levels of n-3 long-chain PUFA (LC-PUFA), a key determinant of nutritional quality. There was a wide variation in the proportions and absolute contents of EPA and DHA in the products. Relatively high contents of 18 : 1n-9, 18 : 2n-6 and 18 : 3n-3, characteristic of vegetable oils (VO), were found in several farmed salmon products, which also had generally lower proportions of EPA and DHA. In contrast, farmed salmon products with higher levels of 16 : 0 and 22 : 1, characteristic of fish oil (FO), had higher proportions of EPA and DHA. Therefore, there was a clear correlation between the levels of VO and FO in feeds and the proportions of n-3 LC-PUFA in products. Although wild salmon products were characterised by higher proportions of n-3 LC-PUFA (20-40%) compared with farmed fish (9-26%), they contained lower total lipid contents (1-6% compared with 7-17% in farmed salmon products). As a result, farmed salmon products invariably had higher levels of n-3 LC-PUFA in absolute terms (g/100 g fillet) and, therefore, delivered a higher 'dose' of EPA and DHA per portion. Overall, despite the finite and limiting supply of FO and increasing use of VO, farmed salmon continue to be an excellent source of and delivery system for n-3 LC-PUFA to consumers.

Abstract
The present study characterizes the uptake and loss of persistent organic pollutants (POPs) in grizzly bears (Ursus arctos horribilis) by sampling and analyzing their terrestrial and marine foods and fecal material from a remote coastal watershed in British Columbia, Canada. The authors estimate that grizzly bears consume 341 to 1,120 µg of polychlorinated biphenyls (PCBs) and 3.9 to 33 µg of polybrominated diphenyl ethers daily in the fall when they have access to an abundant supply of returning salmon. The authors also estimate that POP elimination by grizzly bears through defecation is very low following salmon consumption (typically <2% of intake) but surprisingly high following plant consumption (>100% for PCBs and organochlorine pesticides). Excretion of individual POPs is largely driven by a combination of fugacity (differences between bear and food concentrations) and the digestibility of the food. The results of the present study are substantiated by a principal components analysis, which also demonstrates a strong role for log KOW in governing the excretion of different POPs in grizzly bears. Collectively, the present study's results reveal that grizzly bears experience a vegetation-associated drawdown of POPs previously acquired through the consumption of salmon, to such an extent that net biomagnification is reduced.

Abstract
In 2011, as part of an update to its state water quality standards (WQS) for protection of human health, the State of Oregon adopted a fish consumption rate of 175 g/day for freshwater and estuarine finfish and shellfish, including anadromous species. WQS for the protection of human health whose derivation is based in part on anadromous fish, create the expectation that implementation of these WQS will lead to lower contaminant levels in returning adult fish. Whether this expectation can be met is likely a function of where and when such fish are exposed. Various exposure scenarios have been advanced to explain acquisition of bioaccumulative contaminants by Pacific salmonids. This study examined 16 different scenarios with bioenergetics and toxicokinetic models to identify those where WQS might be effective in reducing polychlorinated biphenyls (PCBs)--a representative bioaccumulative contaminant--in returning adult Fall chinook salmon, a representative salmonid. Model estimates of tissue concentrations and body burdens in juveniles and adults were corroborated with observations reported in the literature. Model results suggest that WQS may effect limited (< approximately 2 ×) reductions in PCB levels in adults who were resident in a confined marine water body or who transited a highly contaminated estuary as out-migrating juveniles. In all other scenarios examined, WQS would have little effect on PCB levels in returning adults. Although the results of any modeling study must be interpreted with caution and are not necessarily applicable to all salmonid species, they do suggest that the ability of WQS to meet the expectation of reducing contaminant loadings in anadromous species is limited.

Abstract
BACKGROUND Populations of Coilia nasus, an anadromous fish, have declined dramatically in the Yangtze River estuary and its associated lakes owing to excessive fishing and changes in aquatic ecology. Recently, the success of artificial breeding programmes and advanced methods of propagation have allowed great increases in production of this species. Thus, to gain a better understanding of the flesh quality of C. nasus, muscle cellularity and quality parameters of the flesh were studied in wild and farmed specimens. RESULTS Muscle cellularity was different between wild and farmed fish. Muscle fibre density was significantly higher in farmed specimens, while muscle fibre diameter was higher in wild specimens. Farmed fish had higher moisture, hydroxyproline and collagen contents and a lower fat content compared with wild fish. No significant differences in textural parameters were found between the two groups. Saturated (SFA), polyunsaturated (PUFA) and total n-6 fatty acid contents were significantly higher in farmed fish, but monounsaturated fatty acid (MUPA) content was higher in wild fish. CONCLUSION The variation in the studied parameters determined significant differences in the flesh quality of wild and farmed C. nasus. Depending on muscle cellularity and fatty acid composition, farmed fish could be more suitable for human consumption than wild fish.

Abstract
How chronic exposure to aquatic pollution affects reproductive traits was assessed in nesting wild-caught plainfin midshipman Porichthys notatus in areas with low and high contaminant exposure on Vancouver Island, British Columbia. Males in high-exposure areas had a greater degree of testicular asymmetry, sperm with shorter heads and fewer live eggs in their nests. The results of this study provide important insights into the potential consequences of contaminant exposure on the reproductive physiology of wild-caught fishes.

Abstract
Organochlorine pesticides (HCB, HCH with α-, β-, and γ isomers, heptachlor, cis-heptachlor epoxyde, trans-heptachlor epoxyde, endosulfan with α- and β isomers, sulfate endosulfan, o,p'-DDT, p,p'-DDT, o,p'-DDE, p,p'-DDE, o,p'-DDD, p,p'-DDD, chlorothalonil, alachlor, aldrin, dieldrin, methoxychlor, oxychlordane, chlordane with α- and γ isomers, p,p'-dicofol and o,p'-dicofol) and indicators PCBs (IUPAC nos. 28, 52, 101, 118, 138, 153, and 180) were studied both in sediments and muscles of farmed fish species (Cyprinus carpio and Perca fluviatilis). Samples were collected from fish ponds located in the hydrographic basin of the Moselle River (Lorraine Region, France). OCPs and PCBs were present at low concentrations both in sediments and fish muscles. Concerning sediments, ∑DDTs revealed concentrations ranging from 0.2 to 2.30 ng g(-1) dw and ∑PCBs ranged from 0.3 to 3.5 ng g(-1) dw. Concerning fish muscles, the highest concentrations in OCPs were those of p,p'-DDE, with average concentrations of 0.57±0.44 ng g(-1) ww for carp and 0.58±0.29 ng g(-1) ww for perch. The contamination profiles proved to be different depending on the fish species. Indeed, HCH-isomers, HCB, and dieldrin were detected only for the carp and always at low concentrations. For example, the highest concentration of HCHs was observed for β-HCH with a mean value of 0.64±0.15 ng g(-1) ww for carp. As for PCBs, the levels of ∑PCBs ranged from 0.3 to 6.4 ng g(-1) ww in carp muscles and from 0.90 to 5.60 ng g(-1) ww in perch muscles.

Abstract
The present study reports measured levels of organochlorine pesticides (OCPs) in commercial salmon feed (n = 8) and farmed Atlantic, coho, and chinook salmon (n = 110), as well as wild coho, chinook, chum, sockeye, and pink salmon (n = 91). Flesh residue concentrations (ng/g wet weight) of dichlorodiphenyltrichloroethanes (DDTs), hexachlorocyclohexanes (HCHs), chlordanes, chlorobenzenes (CBz) and cyclodiene pesticides (e.g., dieldrin, mirex) were 2 to 11 times higher (p < 0.05) in farmed salmon compared with wild salmon. Concentrations were positively correlated with flesh lipid levels. Farmed Atlantic salmon (12-15% lipid) typically exhibited the greatest OCP burdens compared with other salmon species. However, when expressed on a lipid weight basis, concentrations of OCPs (ng/g lipid weight) in wild salmon, in many cases, exceeded those levels in farmed salmon. Observed interspecies and site-specific variations of OCP concentrations in farmed and wild salmon may be attributed to divergent life history, prey/feed characteristics and composition, bioenergetics, or ambient environmental concentrations. Calculated biomagnification factors (BMF = C(F)/C(D), lipid wt) of OCPs in farmed salmon typically ranged between two and five. Biomagnification of chemicals such as DDTs, chlordanes, and mirex was anticipated, because those compounds tend to exhibit high dietary uptake and slow depuration rates in fish because of relatively high octanol-water partition coefficients (K(OW)s > 10⁵). Surprisingly, less hydrophobic pesticides such as hexachlorocyclohexanes and endosulfans (K(OW) s < 10⁵) consistently exhibited a high degree of biomagnification in farmed salmon species (BMFs > 5). This is contrary to previous laboratory and field observations demonstrating fish BMFs less than 1 for low K(OW) chemicals, because of efficient respiratory elimination of those compounds via gills. The results suggest that ambient seawater concentrations and bioconcentration-driven accumulation may play a key role in the bioaccumulation of these relatively more water-soluble contaminants in farmed salmon. Finally, OCP exposure through consumption of British Columbian salmon is found to be low relative to United States national average per capita total exposure levels and provisional tolerable daily intakes.

Abstract
Veterinary drugs are used to treat or prevent a wide array of production-related diseases in aquaculture. Residues of these drugs in seafood products may pose risks to consumers, prompting governments to set drug residue tolerance levels and inspect seafood for violations of these standards. This study characterizes veterinary drug inspection policies and violations among four inspecting bodies (European Union (E.U.), United States (U.S.), Canada, and Japan), using government-collected veterinary drug violation data from 2000 to 2009. Most veterinary drug violations were detected in species that are commonly farm-raised. Asian seafood products, including shrimp and prawns, catfish (or fish sold as catfish), crab, tilapia, eel, and Chilean salmon were most frequently in violation of veterinary drug residue standards. Vietnam had the greatest number of violations among exporting countries. Concentrations of most veterinary drugs in seafood found in violation did not differ between inspecting bodies that reported drug concentrations. Transparency in seafood inspection reporting varied widely among inspecting bodies. Estimation of violations in the untested fraction of seafood was precluded by a lack of information from inspecting bodies regarding the distinction between targeted and random sampling. Increased transparency could facilitate a more rigorous characterization of public health risks from consuming imported seafood.

Abstract
In the flesh (skinless fillet) of chinook, chum, coho, pink, and sockeye salmon (Oncorhynchus tshawytscha, O. keta, O. kisutch, O. gorbuscha, and O. nerka, respectively), sablefish (Anoplopoma fimbria) and walleye pollock (Theragra chalcogramma) from several sites in the northeast Pacific sampled between 2002 and 2008, tetra- and pentabrominated diphenyl ethers (BDEs) (BDE 47, 49, 99, and 100) dominated the congener distribution. Chinook and sablefish contained the highest concentrations, followed by sockeye, coho, and pink salmon, and pollock. In sockeye from the Bering Sea - Aleutians and from the Gulf of Alaska, total tri- to hepta-BDE concentrations fell significantly between 2002 and 2005; in sablefish from Gulf of Alaska, there was a steady but statistically nonsignificant decline in BDE concentrations between 2002 and 2008. Relative proportions of the main BDE congeners did not change appreciably over time, within species or location. All species except sockeye salmon showed a clear southeastward increase in BDE concentrations, implying an increasing gradient in general ecosystem contamination. In chinook, coho, and sablefish, especially, the southeastward trend in increasing total concentrations was associated with increasing proportions of BDEs 47 and 100. Chinook returning to western North American natal streams appeared to accumulate most of their PBDE burden towards the end of their migration. Fish from more northern sampling sites often had higher proportions of more highly brominated congeners than those from more southern sites, perhaps reflecting contamination from Asian sources where higher-brominated commercial PBDE formulations are used. In sablefish and pollock, the relative proportions of BDEs 99 and 47 varied inversely in almost a 1:1 ratio, implying debromination of BDE 99 to 47.

Abstract
PURPOSE This paper analyses the presence of polychlorinated biphenyls (PCBs) in escaped: farmed and wild salmons in southern Chile, analysing their concentrations and congener profiles in two species (Oncorhynchus kisutch and Oncorhynchus mykiss). METHODS Muscle samples from both farmed and escaped fish of two species, O. mykiss (rainbow trout) and O. kisutch (coho salmon), were analysed for PCBs (42 congeners). To differentiate between the wild salmon and the salmon that have escaped from fish farms, the astaxanthin content in the muscular tissue was analysed with a high-performance liquid chromatography -diode array detector method. PCBs were measured by gas chromatography with an electron capture detector. RESULTS The levels of astaxanthin can be used to differentiate between farmed, escaped and wild-borne salmons with statistically different concentrations. When comparing the total PCB concentrations for both trout and salmon samples, it can be determined that a separate analysis for farmed, escaped and wild-borne fish more accurately describes the real differences in the concentrations; these differences are hidden when separate analyses are not performed. The congener profiles are similar in both trout and coho salmon, where the tri-, tetra- and penta-CB congeners are the most abundant. CONCLUSION This study is the first report of PCBs in wild-borne, farmed and escaped salmons for the Southern Hemisphere, considering that Chile is actually one of the principal world producers of salmon.

Abstract
Polychlorinated biphenyl (PCB) congener patterns based on full congener PCB analyses of three farmed and five wild species of salmon from coastal British Columbia, Canada are compared using principal components analysis (PCA) and the best fit linear decomposition of the observed PCB composition in terms of Aroclor 1242, 1254, and 1260 end-members. The two complementary analysis methods are used to investigate congener composition pattern differences between species, trophic levels, feeding preferences, and farmed or wild feeding regimes, with the intent of better understanding PCB processes in both salmon and salmon consumers. PCA supports classification of PCB congeners into nine groups based on a) structure activity groups (SAG) related to the bioaccumulation potential in fish-eating mammals, b) Cl number, and c) the numbers of vicinal meta- and para-H. All three factors are needed to interpret congener distributions since SAGs by themselves do not fully explain PCB distributions. Farmed salmon exhibit very similar congener patterns that overlap the PCA and Aroclor composition of their food, while wild salmon separate into two distinct groups, with chinook and "coastal" coho having higher proportions of the higher chlorinated, Aroclor 1260 type, nonmetabolizable congeners, and chum, pink, sockeye, and "remote" coho having higher proportions of the lower chlorinated, more volatile and metabolizable Aroclor 1242 type, congeners. Wild chinook have the highest PCB and toxic equivalent (TEQ) concentrations, and the highest proportions of A1254 A1260, and PCB congeners in the most refractory SAG. Because both "coastal" and "remote" coho groups are likely to be consuming prey of similar size and trophic level, the PCB delivery mechanism (e.g., atmosphere vs runoff) apparently has more influence on the salmon PCB profile than biotransformation, suggesting that the wild chinook PCB profile is determined by feeding preference. Overall, wild salmon distributions primarily relate to trophic level, feeding preferences, and longevity, while metabolism appears at most a minor factor. The new classification protocol takes better advantage of individual congener PCB analyses and provides a better framework for understanding the PCB distributions in salmon and, potentially, the movement of individual PCB congeners through marine food chains than previous classification schemes.

Abstract
We report measured concentrations of organohalogens and trace elements in muscle and eggs of returning wild Pacific sockeye and chinook salmon during their 2007 migration through the Fraser River watershed in Canada. Chemical analyses revealed the presence of ppb to ppm levels of a wide variety of contaminants in these fish, including polychlorinated biphenyls (PCBs); polychlorinated dibenzo-p-dioxins (PCDDs); polychlorinated dibenzofurans (PCDFs); polybrominated diphenyl ethers (PBDEs); organochlorine pesticides (OCPs) such as DDTs, hexachlorocyclohexanes (HCHs), octachlorostyrene, and cyclodienes; and Hg, As, Cd, Pb, and several other trace elements. Body weights and flesh lipid contents declined during upstream migration, resulting in significantly higher (p < 0.05) lipid-normalized concentrations of lipophilic organohalogens (PCBs, PCDD/Fs, pesticides) in those spawning salmon. Postmigration magnification factors (MFs) of organohalogens (0.1-10) were comparable to previous observations and model predictions. MFs generally increased with increasing hydrophobicity (K(OW)). For example, MFs of tetra- and pentachlorobenzenes and HCH isomers (log K(OW) range: 3.8-5) were relatively low (between 0.1 and 1.7) compared with those of more lipophilic compounds (log K(OW) > 6) such as PCBs, DDTs, and mirex (MFs between 5 and 10). Lipid-normalized muscle:egg ratios in female salmon, which varied between 0.1 and 8, also exhibited a positive relationship with chemical K(OW). The results indicate that lipophilic compounds (K(OW) > 10(6)) can be magnified in flesh lipids of Pacific salmon during spawning migration, but maternal transfer kinetics (deposition to eggs) of those chemicals are relatively slow compared with less hydrophobic compounds. 2,3,7,8-TCDD toxic equivalents (ΣTEQs) in eggs of these spawning salmon, calculated using WHO toxic equivalency factors (WHO-TEFs) for fish health, in some cases exceeded the 0.3 pg·g(-1) threshold level associated with 30% salmonid egg mortality, indicating the potential for reproductive impacts in Fraser River salmon populations.

Abstract
The health and physiological condition of anadromous salmon is of concern as their upriver migration requires navigation of human-impacted waterways and metabolism of stored energy reserves containing anthropogenic contaminants. Such factors may affect reproductive success of fish stocks. This study investigates chemical contaminant burdens and select gene expression profiles in Pacific Sockeye (Oncorhynchus nerka) and Chinook (Oncorhynchus tshawytscha) salmon which traverse the Fraser River watershed during their spawning migration. Chemical analyses of muscle tissue and eggs of salmon collected from the lower Fraser River (pre-migration) and from upstream spawning grounds (post-migration) during the 2007 migration revealed the presence of numerous chemical contaminants, including PCBs, dioxins/furans, pesticides, and heavy metals. However, muscle tissue residue concentrations were well below human health consumption guidelines and 2,3,7,8 TCDD toxic equivalents (SigmaTEQs) in salmon eggs, calculated using WHO toxic equivalency factors (WHO-TEFs) for fish health, did not exceed the 0.3pgg(-1) wet weight toxicological threshold level previously associated with 30% egg mortality in salmon populations. Quantitative real-time PCR probes were generated and used to assess differences in abundance of key mRNA transcripts encoding nine gene products associated with reproduction, stress, metal toxicity, and exposure to environmental contaminants. Gene expression profiles were characterized in liver and muscle tissue of pre- and post-migration Sockeye and Chinook salmon. The results of stock-matched animals indicate that dynamic changes in mRNA levels occur for a number of genes in both species during migration and suggest that Sockeye salmon exhibit a greater level of biological stress compared to the Chinook salmon population. Using a male-specific genotypic marker, we found that out of the 154 animals examined, one Sockeye was genotypically male but phenotypically female. This individual's gene expression profile in liver and muscle was reminiscent of, but not identical to, the female expression profile. These studies provide the first glimpse of the dynamic yet common nature of changes in the transcriptome that are shared between species during in-migration and highlight differences that may relate to population success. Abstract
The health benefits of seafood are well documented and based on the unique supply ofn-3 highly unsaturated fatty acids (HUFA). Aquaculture now contributes about 50 % of food-grade seafood globally and Atlantic salmon (Salmo salar) is a rich source ofn-3 HUFA. However, salmon and other oily fish can accumulate lipophilic persistent organic pollutants (POP), including dioxins (PCDD/F), polychlorinated biphenyls (PCB) and polybrominated diphenyl ethers (PBDE), derived largely from feed. In the present study, triplicate groups of salmon, of initial weight 0·78 kg, were fed one of three experimental diets for 11 weeks. The diets were coated with either a northern fish oil (FO) with a high POP content (cNFO), the same oil that had been decontaminated (deNFO) or a blend of southern fish oil, rapeseed and soyabean oils (SFO/RO/SO). Dietary PCDD/F+dioxin-like PCB (DL-PCB) concentrations were 17·36, 0·45 and 0·53 ng toxic equivalents (TEQ)/kg, respectively. After 11 weeks, the flesh concentrations in fish fed the cNFO, deNFO and SFO/RO/SO diets were 6·42, 0·34 and 0·41 ng TEQ/kg, respectively. There were no differences in flesh EPA and DHA between fish fed the cNFO or deNFO diets although EPA and DHA were reduced by 50 and 30 %, respectively, in fish fed the SFO/RO/SO diet. Thus, decontaminated FO can be used to produce salmon high inn-3 HUFA and low in POP. Salmon produced using deNFO would be of high nutritional value and very low in POP and would utilise valuable fish oils that would otherwise be destroyed due to their high pollutant concentrations.

Abstract
Recently, we reported on the analysis of polychlorinated biphenyls (PCBs) and chlorinated pesticides in farmed Atlantic salmon (Salmo salar) from Maine, eastern Canada, and Norway, and wild Alaskan Chinook salmon (Oncorhynchus tshawytscha). In this paper, we extend the analysis to polybrominated diphenyl ethers (PBDEs) in these samples. Total PBDE concentrations in the farmed salmon (0.4-1.4ng/g, wet weight, ww) were not significantly different from those in the wild Alaskan Chinook samples (0.4-1.2ng/g, ww), nor were significant differences found among regions. However, significant intra-regional variations in concentrations of total PBDEs and tetra-BDE 47 were observed in the salmon from the Canadian farms (p<0.01). Congener profiles were dominated by BDE-47, followed by the penta-BDEs 99 and 100. PBDE concentrations in the Canadian samples were lower than those reported two years earlier. Removal of skin resulted in no overall reduction in PBDE concentrations in our farmed salmon, and in some cases, PBDE concentrations were higher in skin-off samples. PBDEs were correlated with lipids only in the skinned samples, suggesting that there is greater accumulation and retention of PBDEs in muscle lipids than in skin-associated fat. In skin-on samples, modest correlations were observed between concentrations of PBDEs and PCBs (R(2)=0.47) and mono-ortho PCBs (R(2)=0.50), whereas PBDEs were not correlated with non-ortho PCBs.

Abstract
Exposure to persistent organic pollutants, such as polychlorinated biphenyls (PCBs) can cause endothelial cell (EC) activation by inducing pro-inflammatory signaling pathways. Our previous studies indicated that linoleic acid (LA, 18:2), a major omega-6 unsaturated fatty acid in the American diet, can potentiate PCB77-mediated inflammatory responses in EC. In addition, omega-3 fatty acids (such as alpha-linolenic acid, ALA and 18:3) are known for their anti-inflammatory properties. We tested the hypothesis that mechanisms of PCB-induced endothelial cell activation and inflammation can be modified by different ratios of omega-6 to omega-3 fatty acids. EC were pretreated with LA, ALA, or different ratios of these fatty acids, followed by exposure to PCB77. PCB77-induced oxidative stress and activation of the oxidative stress sensitive transcription factor nuclear factor kappaB (NF-kappaB) were markedly increased in the presence of LA and diminished by increasing the relative amount of ALA to LA. Similar protective effects by increasing ALA were observed by measuring NF-kappaB-responsive genes, such as vascular cell adhesion molecule-1 (VCAM-1) and cyclooxygenase-2 (COX-2). COX-2 catalyzes the rate limiting step of the biosynthesis of prostaglandin E(2) (PGE(2)). PCB77 exposure also increased PGE(2) levels, which were down-regulated with relative increasing amounts of ALA to LA. The present studies suggest that NF-kappaB is a critical player in the regulation of PCB-induced inflammatory markers as modulated by omega-6 and omega-3 fatty acids.

Abstract
In recent years, a number of studies have clearly remarked the nutritional benefits of fish consumption: proteins, vitamins, minerals, and especially omega-3 polyunsaturated fatty acids (PUFAs), which may protect against several adverse health effects, including coronary heart disease mortality and stroke. However, some concerns about potential health risks derived from the environmental contaminants found in fish have been also raised. Therefore, balancing adequately the risks and benefits of fish consumption is currently a nutritional/environmental health key issue. In this paper, the most recent available scientific information concerning this issue is reviewed. It is concluded that although it seems evident that fish must be an important part of a balanced diet, to choose the most suitable species in terms of levels of PUFAs and pollutants, the frequency of consumption, and the meal size are essential aspects to balance benefits and risks of a regular consumption.
