Effects of Temperature During Rearing and Crating on Stress Parameters and Meat Quality of Broilers

Research Note: Carcass yield and meat quality in high- and low-water efficient broiler lines exposed to heat stress

Heat stress (HS) and water scarcity are significant challenges to sustainable poultry production worldwide. It is, therefore, critical to identify effective strategies to prevent, withstand, or adapt to these challenges. After four generations of divergent selection for water efficiency, the present study was undertaken to determine the effect of HS on meat quality and muscle myopathy incidences in high (HWE)- and low (LWE)-water efficient broilers. Day-old male chicks (240 chicks/line) were allotted randomly by line and body weight-matched groups to 12 controlled-environmental chambers (2 pens/chamber). At d29, birds were exposed to 2 environmental conditions (thermoneutral (TN), 25°C; or cyclic HS, 36°C, 9h/d) in a 2 × 2 factorial design. On d49, birds were processed, carcass parts were weighed, meat quality and muscle myopathy incidence were assessed. Processing data were analyzed by Two-way ANOVA and Tukey's HSD multiple comparison test, and frequency of muscle myopathy score between groups was determined using Chi-square and Fisher's exact test. Significance was set at P < 0.05. As no significant environment by line interaction was discerned, the 2 main factors were analyzed separately. High water efficient birds had significantly higher tender- and leg quarter (LQ)-weight as well as carcass without giblet (WOG), chilled carcass WOG (CWOG), wing, LQ, and rack yields compared to their LWE counterparts. Both abdominal fat content and yields were significantly greater in LWE than HWE chickens. Chronic HS exposure significantly decreased dock, WOG, fat, CWOG, breast, tender, wing, and LQ weights as well as breast yield. HWE chickens had a significantly lower b* value compared to the LWE birds and HS significantly reduced the drip loss and the b* value compared to TN condition. Compared to LWE, HWE birds had higher and lower incidence of severe woody breast (WB) and white striping (WS) under TN and HS, respectively. HS reduced the incidence of both myopathies in both lines. In conclusion, the genetic selection for water efficiency seems to improve carcass yield, reduce fat content, and decrease the breast b* value. HWE birds had higher incidences of WB and WS under TN, which is reversed under HS conditions.

Chronic heat stress inhibits glycogen synthesis through gga-miR-212-5p/GYS1 axis in the breast muscle of broilers

Studies have demonstrated that chronic heat stress can accelerate glycolysis, decrease glycogen content in muscle, and affect muscle quality. However, the consequences of chronic heat stress on glycogen synthesis, miRNA expression in pectoralis major (PM) muscle, and its regulatory functions remain unknown. In this study, high-throughput sequencing and cell experiments were used to explore the effects of chronic heat stress on miRNA expression profiles and the regulatory mechanisms of miRNAs in glycogen synthesis under chronic heat stress. In total, 144 cocks were allocated into 3 groups: the normal control (NC) group, the heat stress (HS) group, and the pair-fed (PF) group. In total, 30 differently expressed (DE) miRNAs were screened after excluding the effect of feed intake, which were mainly related to metabolism, signal transduction, cell growth and death. Furthermore, the gga-miR-212-5p/GYS1 axis was predicted to participate in glycogen synthesis through the miRNA-mRNA analysis, and a dual-luciferase reporter test assay confirmed the target relationship. Mechanistically, chronic heat stress up-regulated gga-miR-212-5p, which could inhibit the expression of GYS1 in the PM muscle. Knocking down gga-miR-212-5p alleviates the reduction of glycogen content caused by chronic heat stress; overexpression of gga-miR-212-5p can reduce glycogen content. This study provided another important mechanism for the decreased glycogen contents within the PM muscle of broilers under heat stress, which might contribute to impaired meat quality.

Thermal impacts on transcriptome of Pectoralis major muscle collected from commercial broilers, Thai native chickens and its crossbreeds

OBJECTIVE

The main objective of this study was to define molecular mechanisms associated with thermal stress responses of chickens from commercial broilers (BR, Ross 308), Thai native chickens (NT) and crossbreeds between BR×NT (H75).

METHODS

Twenty days before reaching specific market age, chickens from each breed were divided into control and thermal-stressed groups. The stressed groups were exposed to a cyclic thermal challenge (35°C±1°C for 6 h, followed by 26°C±1°C for 18 h) for 20 days. Control group was raised under a constant temperature of 26°C±1°C. Pectoralis major (n = 4) from each group was collected for transcriptome analysis using HiSeq Illumina and analysis of glycogen and lactate. Gene expression patterns between control and thermalstressed groups were compared within the same breeds.

RESULTS

Differentially expressed transcripts of 65, 59, and 246 transcripts for BR, NT, and H75, respectively, were revealed by RNA-Seq and recognized by Kyoto encyclopedia of genes and genomes database. Pathway analysis underlined altered glucose homeostasis and protein metabolisms in all breeds. The signals centered around phosphatidylinositol 3-kinase (PI3K)/Akt signaling, focal adhesion, and MAPK signaling in all breeds with slight differences in molecular signal transduction patterns among the breeds. An extensive apoptosis was underlined for BR. Roles of AMPK, MAPK signaling and regulation of actin cytoskeleton in adaptive response were suggested for H75 and NT chickens. Lower glycogen content was observed in the breast muscles of BR and NT (p<0.01) compared to their control counterparts. Only BR muscle exhibited increased lactate (p<0.01) upon exposure to the stress.

CONCLUSION

The results provided a better comprehension regarding the associated biological pathways in response to the cyclic thermal stress in each breed and in chickens with different growth rates.

N-acetyl-L-cysteine improves the performance of chronic cyclic heat-stressed finisher broilers but has no effect on tissue glutathione levels

1. It was hypothesised that dietary N-acetyl-L-cysteine (NAC) in feed, as a source of cysteine, could improve the performance of heat-stressed finisher broilers by fostering glutathione (GSH) synthesis. GSH is the most abundant intracellular antioxidant for which the sulphur amino acid cysteine is rate limiting for its synthesis.2. In the first experiment, four levels of NAC: 0, 500, 1000 and 2000 mg/kg were added to a diet with a suboptimal level of sulphur amino acids in the finisher phase. In the second experiment, NAC was compared to other sulphur amino acid sources at equal molar amounts of digestible sulphur amino acids. Birds were allocated to four groups: control, 2000 mg/kg NAC, 1479 mg/kg L-cystine, and 2168 mg/kg Ca-salt of 2-hydroxy-4-(methylthio)butanoic acid. A chronic cyclic heat stress model (temperature was increased to 34°C for 7 h daily) was initiated at 28 d of age.3. In the first experiment, growth performance and feed efficiency in the finisher phase were significantly improved by graded NAC. ADG was 88.9, 92.2, 93.7 and 97.7 g/d, and the feed-to-gain ratio was 2.18, 1.91, 1.85 and 1.81 for the 0, 500, 1000 and 2000 mg/kg NAC treatments, respectively. However, liver and heart GSH levels were not affected by NAC. On d 29, liver gene transcript of cystathionine-beta-synthase like was reduced by NAC, which suggested reduced trans-sulphuration activity. The second experiment showed that L-cystine and Ca-salt of 2-hydroxy-4-(methylthio) butanoic acid were more effective in improving performance than NAC.4. In conclusion, N-acetyl-L-cysteine improved dose-dependently growth and feed efficiency in heat-stressed finishing broilers. However, this was not associated with changes in tissue GSH levels, but more likely worked by sparing methionine and/or NAC's and cysteine's direct antioxidant properties.

Impact of chronic heat stress on behavior, oxidative status and meat quality traits of fast-growing broiler chickens

This research aimed to investigate, through a multifactorial approach, the relationship among some in-vivo parameters (i.e., behavior and blood traits) in broilers exposed to chronic HS, and their implications on proximate composition, technological properties, and oxidative stability of breast meat. A total of 300 Ross 308 male chickens were exposed, from 35 to 41 days of age, to either thermoneutral conditions (TNT group: 20°C; six replicates of 25 birds/each) or elevated ambient temperature (HS group: 24 h/d at 30°C; six replicates of 25 birds/each). In order to deal with thermal stress, HS chickens firstly varied the frequency of some behaviors that are normally expressed also in physiological conditions (i.e., increasing "drinking" and decreasing "feeding") and then exhibited a behavioral pattern finalized at dissipating heat, primarily represented by "roosting," "panting" and "elevating wings." Such modifications become evident when the temperature reached 25°C, while the behavioral frequencies tended to stabilize at 27°C with no further substantial changes over the 6 days of thermal challenge. The multifactorial approach highlighted that these behavioral changes were associated with oxidative and inflammatory status as indicated by lower blood γ-tocopherol and higher carbonyls level (0.38 vs. 0.18 nmol/mL, and 2.39 vs. 7.19 nmol/mg proteins, respectively for TNT and HS; p < 0.001). HS affected breast meat quality by reducing the moisture:protein ratio (3.17 vs. 3.01, respectively for TNT and HS; p < 0.05) as well as the muscular acidification (ultimate pH = 5.81 vs. 6.00, respectively; p < 0.01), resulting in meat with higher holding capacity and tenderness. HS conditions reduced thiobarbituric acid reactive substances (TBARS) concentration in the breast meat while increased protein oxidation. Overall results evidenced a dynamic response of broiler chickens to HS exposure that induced behavioral and physiological modifications strictly linked to alterations of blood parameters and meat quality characteristics.

Seasonal variation in molecular and physiological stress markers in Asian elephants

Free-living species exhibit seasonal variation in various life history traits, including vital rates such as birth and death patterns. Different physiological mechanisms are thought to underlie the expression of life history traits that contribute to lifetime fitness. However, although the broad impacts of seasonality on life history traits and trade-offs is well established in many systems, the exact physiological mechanisms responsible for driving differences within and between individuals are poorly understood. Among them, molecular and physiological stress pathways, such as stress hypothalamic-pituitary-adrenal axis and oxidative stress, have potential to mediate relationships between individual survival, reproduction and environmental seasonality. Here, we determine how different physiological markers of stress including faecal cortisol metabolites (FCMs), heterophils/lymphocytes (H/L) ratio, two markers indicating oxidative balance including a marker of oxidative damage (reactive oxygen metabolites, ROM) and a marker of antioxidant defences (superoxide dismutase, SOD) and body weight vary in a large semi-captive population of Asian elephants (Elephas maximus) exposed to extreme seasonality (e.g. elevated temperatures). Individuals showed higher FCM levels and H/L ratios during cold season, indicating increased stress, and the lowest FCM levels during monsoon season and H/L ratios during hot and dry season, but we found no pattern in oxidative stress (ROM and SOD) levels. Hot season also associated with a decline in body weight. The present study shows how different physiological parameters (FCM levels and H/L ratio), molecular (oxidative stress) and body condition vary with seasonal changes, and how these parameters might allow individuals to adapt to such variations. Our results on an endangered long-lived species are crucial in indicating the most productive timing for conservation efforts, predicting how individuals cope with environmental changes, and allow for a more accurate representation of how animal physiology operates in nature.

Physicochemical Properties, Antioxidant Markers, and Meat Quality as Affected by Heat Stress: A Review

Heat stress is one of the most stressful events in livestock life, negatively impacting animal health, productivity, and product quality. Moreover, the negative impact of heat stress on animal product quality has recently attracted increasing public awareness and concern. The purpose of this review is to discuss the effects of heat stress on the quality and the physicochemical component of meat in ruminants, pigs, rabbits, and poultry. Based on PRISMA guidelines, research articles were identified, screened, and summarized based on inclusion criteria for heat stress on meat safety and quality. Data were obtained from the Web of Science. Many studies reported the increased incidences of heat stress on animal welfare and meat quality. Although heat stress impacts can be variable depending on the severity and duration, the exposure of animals to heat stress (HS) can affect meat quality. Recent studies have shown that HS not only causes physiological and metabolic disturbances in living animals but also alters the rate and extent of glycolysis in postmortem muscles, resulting in changes in pH values that affect carcasses and meat. It has been shown to have a plausible effect on quality and antioxidant activity. Acute heat stress just before slaughter stimulates muscle glycogenolysis and can result in pale, tender, and exudative (PSE) meat characterized by low water-holding capacity (WHC). The enzymatic antioxidants such as superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPx) act by scavenging both intracellular and extracellular superoxide radicals and preventing the lipid peroxidation of the plasma membrane. Therefore, understanding and controlling environmental conditions is crucial to successful animal production and product safety. The objective of this review was to investigate the effects of HS on meat quality and antioxidant status.

Betaine and nano-emulsified vegetable oil supplementation for improving carcass and meat quality characteristics of broiler chickens under heat stress conditions

Introduction

This research aimed to examine the effects of water-added betaine (BET) and/or nano-emulsified vegetable oil (MAGO) on carcass and meat quality characteristics of broilers raised under thermoneutral (TN) and heat stress (HS) conditions.

Methods

On day 21, 640 birds (Ross 308) were randomly assigned to one of two thermal conditions (thermoneutral 22 ± 1°C and heat stress 32 ± 1°C) each containing four treatment groups: Control, BET, MAGO, and a mixture of both (BETMAGO) in a 2 × 4 factorial arrangement (eight groups). Each group has eight replicates, with ten birds each. The birds' carcass and meat quality characteristics were evaluated at 35 days.

Results and discussion

The dressing percentage, breast, leg, wing, heart, initial pH, color change, cooking loss (CL), water-holding capacity (WHC), shear force (SF), and texture profile with exception of springiness significantly affected by the treatments. The results showed that HS had negative effects on carcass weight and relative weights of the breast, spleen, and heart. Moreover, HS increased dressing percentage, wing, initial pH, final core temperature, initial lightness, WHC, and hardness. Significant differences in interactions between treatments and temperature were observed in the spleen, WHC, and SF.

Conclusion

Water supplemented with BET effectively improved carcass dressing percentage, breast weight, and meat quality in terms of water-holding capacity and tenderness under HS conditions. More studies on the use of BET and/or MAGO at different levels were recommended.

Dietary Methionine Level Impacts the Growth, Nutrient Metabolism, Antioxidant Capacity and Immunity of the Chinese Mitten Crab (Eriocheir sinensis) under Chronic Heat Stress

This study examined whether diets with high dietary methionine levels could alleviate chronic heat stress in Chinese mitten crab Eriocheir sinensis. Crabs were fed three dietary methionine levels of 0.49%, 1.29% and 2.09% for six weeks. The analyzed methionine concentration of diets was 0.48%, 1.05% and 1.72%, respectively. Crabs were fed three different supplemental concentrations of dietary methionine at 24 °C and 30 °C, respectively. The trial was divided into six groups with five replicates in each group, and 40 juvenile crabs (initial average weight 0.71 ± 0.01 g) in each replicate. During the trial, crabs were fed twice daily (the diet of 4% of the body weight was delivered daily). The effects of dietary methionine level on nutrient metabolism, antioxidant capacity, apoptosis factors and immunity were evaluated at a normal water temperature of 24 °C and high temperature of 30 °C. Feed conversion ratio decreased under chronic heat stress. Chronic heat stress increased weight gain, specific growth rate, molting frequency, and protein efficiency ratio. The survival of crabs decreased under chronic heat stress, whereas a high level of dietary methionine significantly improved survival. Chronic heat stress induced lipid accumulation and protein content reduction. The high-methionine diet decreased lipid in the body and hepatopancreas, but increased protein in the body, muscle and hepatopancreas under chronic heat stress. Simultaneously, the high dietary methionine levels mitigated oxidative stress by reducing lipid peroxidation, restoring the antioxidant enzyme system, decreasing apoptosis and activating immune function under chronic heat stress. This study suggests that supplementing 1.72% dietary methionine could alleviate the adverse effects of a high water temperature in E. sinensis farming.

Effects of cumin (Cuminum cyminum L.) essential oil and chronic heat stress on growth performance, carcass characteristics, serum biochemistry, antioxidant enzyme activity, and intestinal microbiology in broiler chickens

This study was conducted on 600 one-day-old male broiler chicks, using a 2 × 6 factorial design (ambient temperature, A x feed additive, F), for a period of 42 days. The chicks assigned to different groups were exposed to thermoneutral (TN, 24 ± 1 °C) and constant heat stress (HT, 36 ± 1 °C) conditions, and were only fed on a basal diet, and a basal diet supplemented with either 100 mg/kg chloramphenicol, 50 IU/kg α-tocopherol, or 200, 400, and 600 mg/kg of cumin essential oil (CEO). The results showed that heat stress adversely affected performance and carcass characteristics, and increased both the mortality rate and footpad lesions. Moreover, constant chronic heat stress showed negative effects on serum biochemistry and the intestinal microbiota, increased antioxidant activity in both the plasma and breast meat, and increased counts of the pathogenic microorganisms in the small intestine. On the other hand, dietary CEO supplementation positively affected these parameters. CEO had a slight effect on performance, carcass characteristics, mortality rate and the incidence of footpad lesions. When compared to the control group, it was determined that CEO generally had a positive effect on lipid peroxidation in the plasma and tissues and decreased antioxidant enzyme activity. Furthermore, CEO positively affected serum biochemistry and counts of beneficial microorganisms in the small intestine.

Impact of dietary supplementation of unsaturated and saturated fatty acids on bone strength, fatty acids profile of thigh muscle and immune responses in broiler chickens under heat stress

BACKGROUND

There have been some reports that supplementation of fat could alleviate the negative effects of heat stress on performance in broilers. However, information regarding compensation for the adverse effects of heat stress with diets differing in fatty acids source on immune system, bone strength and carcass quality of heat-distressed broilers is limited.

OBJECTIVES

The objective of this study was to investigate the effects of diets differing in fat source on performance, immune system, bone strength, and carcass quality of heat-distressed broilers.

METHODS

In a completely randomized design with 4 × 2 factorial arrangement of the treatments, 320 24-day-old Ross 308 chickens, with average initial weight of 1220 ± 10 g were divided into eight treatments included sesame oil, tallow, sunflower oil and palm oil in either 22 or 32 degree of centigrade temperature. The broiler performance of each fat source-treated group was not different in this experiment and decreased significantly in heat stress condition.

RESULTS

Heat stress showed a significant increase on fat, energy and ash content of thigh muscle. Tibia absolute length, width, ash and bone breaking strength were affected by fat source and increased when sesame and sunflower oil were used. Data analysis revealed that hot temperature decreased tibia weight, length, width, ash and bone breaking strength. Heat stress led to decrease of immune system parameters.

CONCLUSION

Results suggest that there is no beneficial effect of broiler performance due to adding different sources of fat in broiler chicken diet under hot condition. Furthermore, the unsaturated fatty acids could improve the profile of fatty acids in thigh and enhance immune responses in broiler chickens.

Effects of N-Acetyl-L-Cysteine on Serum Indices and Hypothalamic AMPK-Related Gene Expression Under Chronic Heat Stress

This study aims to investigate the effect of heat stress on the physiological metabolism of young laying hens and whether N-acetyl-l-cysteine (NAC) can effectively alleviate heat stress. 120 Hy-Line Brown laying hens aged 12 weeks were randomly divided into four groups: the control group (fed on basal diet under thermal neutral condition), HS group (fed on basal diet under heat stress condition), CN group (fed on the basic meal supplemented with 1,000 mg NAC per kg under thermal neutral condition), and HS+N group (fed on the basic meal was supplemented with 1000 mg NAC per kg under heat stress condition). The HS and HS+N groups were exposed to 36 ± 1°C for 10 h/day. The effects of NAC on the changes of serum concentrations of T3, T4, and CORT and hypothalamic gene and protein expressions induced by heat stress were measured. Results showed that heat stress upregulated the contents of T3, T4, and CORT, while NAC reduced the contents of T3, T4, and CORT. In addition, NAC downregulated AgRP expression, while upregulated the expression of POMC. Moreover, the expressions of AMPKα1, LKB1, and CPT1 were inhibited by NAC, while the expressions of AKT1, ACC, GPAT, and PPARα were increased after NAC treatment, and HMGR did not change significantly. Western blot and comprehensive immunofluorescence section of AMPK in the hypothalamus showed that NAC attenuated the activity of AMPK. In conclusion, NAC can enhance the resistance of laying hens to heat stress by alleviating the metabolic disorders of serum T3, T4, and CORT induced by heat stress, inhibiting the activation of the AMPK pathway and regulating the expression of appetite-related genes in the hypothalamus.

Influences of Thermal Stress During Three Weeks Before Market Age on Histology and Expression of Genes Associated With Adipose Infiltration and Inflammation in Commercial Broilers, Native Chickens, and Crossbreeds

The objectives of this study were to examine the effects of cyclic thermal stress on histological characteristics of breast muscle and gene expression regarding adipose infiltration and inflammation in breast muscles collected from different breeds of chickens. The birds, from commercial broilers (CB, Ross 308, 3 weeks), native (NT, 100% Thai native Chee, 9 weeks), H75 (crossbred; 75% broiler and 25% NT, 5 weeks), and H50 (crossbred; 50% broiler and 50% NT, 7 weeks), were equally assigned into control or treatment groups. The control samples were reared under a constant temperature of 26 ± 1°C, while the treatment groups were exposed to 35 ± 1°C (6 h per day). After a 20-day thermal challenge, 12 male birds per treatment group were randomly collected for determination of live body weight, breast weight, numbers of growth-related myopathies, and breast meat chemical composition. Histological lesions were evaluated in the pectoralis major muscle immediately collected within 20 min postmortem based on hematoxylin and eosin staining. The results indicated that despite interaction between thermal stress and breed effects, thermal challenge significantly reduced feed intake, live body weight, and breast weight of the birds and increased moisture content in breast meat (p < 0.05). An interaction between the two main factors was found for protein content (p < 0.05) for which control CB showed less protein than the other groups. Heat stress decreased histological scores for adipose infiltration in CB (p < 0.05), but it did not significantly influence such scores in the other groups. CB received histological scores for adipose tissue at greater extent than those for the other groups. Differential absolute abundance of CD36, FABP4, LITAF, PDGFRA, PLIN1, PPARG, POSTN, SCD1, and TGFB1 in the muscle samples well-agreed with the trend of histological scores, suggesting potential involvement of dysregulated fibro-adipogenic progenitors together with imbalanced lipid storage and utilization in the breast muscle. The findings demonstrated that the cyclic thermal challenge restricted growth performance and breast mass of the birds, but such effects attenuated infiltration of adipose tissue and inflammatory cells in the CB breast muscle.

An association of CEP78, MEF2C, VPS13A and ARRDC3 genes with survivability to heat stress in an F2 chicken population

Heat stress is a serious problem in the poultry industry. An effective tool for improving heat tolerance can be genomic selection based on single nucleotide polymorphisms. This study was performed to identify genomic regions controlling survivability to heat stress in a population of F₂ chickens that accidentally experienced acute heat stress, using Illumina 60K Chicken SNP Bead Chip. After quality control in markers, 47,730 SNPs remained for genome-wide association study (GWAS). The GWAS results indicated that markers Gga_rs16111480 (p = 8.503e-08), GGaluGA354375 (p = 5.99e-07) and Gga_rs14748694 (p = 7.085e-07) located on Z chromosome showed significant association with heat stress tolerance trait. The Gga_rs16111480 marker was located inside the CEP78 gene. The marker GGaluGA354375 was located inside the LOC101752071 gene and next to the MEF2C gene. The Gga_rs14748694 marker was adjacent to LOC101752071 and MEF2C genes. Moreover, the SNP maker of Gga_rs16111480 was located on 243 kb downstream of the VPS13A gene, and the GGaluGA354375 and Gga_rs14748694 SNPs were located on 947 kb and 888 kb downstream of the ARRDC3 gene, respectively. The results of this study suggest that apart from the gene LOC101752071, which its function was unknown, each of the two MEF2C and CEP78 genes were found to be closely related to heat stress resistance in bird.

Effect of Heat Stress, Dietary Electrolytes, and Vitamins E and C on Growth Performance and Blood Biochemistry of the Broiler Chicken

Environmental heat stress creates a detriment to the welfare and performance in broiler chickens. While there are some dietary mineral and vitamin supplements that mitigate this condition, a rapid, plasma-based detection method would improve management response and broaden the scientific understanding of heat stress. A total of 960 broilers were used to determine the effect of heat stress and dietary electrolyte balance on blood biochemistry. Sex sorted chicks were allocated to 48 pens with 20 chicks per pen creating 6 treatments (3 diets x 2 house environments) with eight replicates and fed one of three dietary treatments: a control containing primarily sodium chloride (NaCl), a heat stress formulation containing bicarbonate (NaHCO3), or heat stress fortified with 200 ppm vitamin C and E (NaHCO3 Fortified). Birds were housed in two different temperature-controlled environments either a thermoneutral (Control) or heat stressed (Heat Stress) environment. At day 28, 35 and 42 venous blood was collected and analyzed using rapid detection methods followed by post-mortem veterinary evaluations. Performance was measured at weekly intervals. Mortality was significantly higher in broilers exposed to heat stress as compared to thermoneutral, while broilers that received dietary sodium chloride also had higher mortality than bicarbonate fed birds. Heat stress significantly impacted potassium, hematocrit, uric acid, total protein, globulin, hematocrit, lymphocytes, sodium, and glucose. This study demonstrates that blood biochemistry of broiler chickens is influenced by dietary intervention and changing environmental conditions. This pattern suggests a blood biomarker footprint of sub-optimal nutrition or poor environmental conditions that may provide valuable information into physiological changes in response to dietary electrolytes, vitamins, and heat stress. Furthermore, this footprint may potentiate the development of diagnostic tools, combining biomarkers to determine nutrition and health status of individual broiler flocks, for nutritionists, veterinarians, and live production managers to manage flocks for environmental, humane, and productive purposes.

Effects of Selenium as a Dietary Source on Performance, Inflammation, Cell Damage, and Reproduction of Livestock Induced by Heat Stress: A Review

Heat stress as a result of global warming has harmful consequences for livestock and is thus becoming an urgent issue for animal husbandry worldwide. Ruminants, growing pigs, and poultry are very susceptible to heat stress because of their fast growth, rapid metabolism, high production levels, and sensitivity to temperature. Heat stress compromises the efficiency of animal husbandry by affecting performance, gastrointestinal health, reproductive physiology, and causing cell damage. Selenium (Se) is an essential nutritional trace element for livestock production, which acts as a structural component in at least 25 selenoproteins (SELs); it is involved in thyroid hormone synthesis, and plays a key role in the antioxidant defense system. Dietary Se supplementation has been confirmed to support gastrointestinal health, production performance, and reproductive physiology under conditions of heat stress. The underlying mechanisms include the regulation of nutrient digestibility influenced by gastrointestinal microorganisms, antioxidant status, and immunocompetence. Moreover, heat stress damage to the gastrointestinal and mammary barrier is closely related to cell physiological functions, such as the fluidity and stability of cellular membranes, and the inhibition of receptors as well as transmembrane transport protein function. Se also plays an important role in inhibiting cell apoptosis and reducing cell inflammatory response induced by heat stress. This review highlights the progress of research regarding the dietary supplementation of Se in the mitigation of heat stress, addressing its mechanism and explaining the effect of Se on cell damage caused by heat stress, in order to provide a theoretical reference for the use of Se to mitigate heat stress in livestock.

Effect of heat stress on ileal microbial community of indigenous yellow-feather broilers based on 16S rRNA gene sequencing

Objectives

The broiler chickens are susceptible to heat stress (HS), including the indigenous broilers raised in tropical and subtropical regions. HS caused intestinal dysfunction and disrupted the gut microbiota. However, the researches about the effects of HS on ileal microbiome of indigenous broilers are limited. Therefore, this experiment used 16S rRNA sequencing to analyse the ileal microbial community in indigenous yellow‐feather broilers under HS.

Material and methods

The single factor completely random design was used in the present study, and forty 8‐week‐old Chinese indigenous yellow‐feather broilers (Huaixiang chickens) were randomly divided into two treatments: normal temperature (NT) group and HS group. There are five replications with four broilers per replicate in each group. The broilers in NT group were raised at 21.3 ± 1.2°C during the whole experimental period, the broilers in HS group were exposed to 32.5 ± 1.4°C for 8 h/day from 9:00 am to 17:00 pm and the temperature of rest time is consistent with NT group. The experiment lasted for 4 weeks.

Results

The results showed that HS exposure had no significant effects on the alpha diversity index of ileal microflora of broilers, including the Shannon, Simpson, Chao1 and ACE indexes (p > 0.05). At the genus level, HS significantly reduced the relative abundance of Campylobacter (p < 0.05), and increased the abundance of Delftia (p < 0.05). In addition, prediction of microbial community function indicated that HS significantly enhanced the abundance of the microflora related to lipid metabolism, carbohydrate metabolism and xenobiotics biodegradation and metabolism and reduced the abundance of the microflora related to nucleotide metabolism and amino acid metabolism.

Conclusions

Taken together, the present study revealed that chronic HS (4 weeks) exposure changes the abundance of the ileal microflora of broilers. These findings provided new insights into the role of HS in influencing ileal microbial community in indigenous broilers.

Effects of methionine as free amino acid and dipeptide on productive efficiency and meat quality of broilers under acute and chronic heat stress

Context Methionine in the form of free amino acid has been widely studied in broilers challenged by heat stress (HS). However, the effects of methionine dipeptide in broilers subjected to HS are not known. Aims To evaluate the effects of methionine as free amino acid and dipeptide on the performance, oxidative status, plasma parameters and meat quality of broilers subjected to acute and chronic HS. Methods Broilers were evaluated at the following three experimental periods: 24 h of evaluation (21–22 days of age); 10 days of evaluation (22–32 days of age); and 20 days of evaluation (22–42 days of age). Broilers were divided into two groups; one group was raised in thermal comfort, and the other group was raised in continuous HS of 30°C. In both groups, animals received a diet without methionine supplementation (MD), with supplementation of methionine as free amino acid (dl-M), and with supplementation of methionine as dipeptide (dl-MM). Key results HS reduced body weight gain after 10 and 20 days of evaluation. Broilers under HS condition fed the MD diet had the highest concentrations of thiobarbituric acid reactive substances (TBARS) at 22 days of age and carbonylated proteins (CP) at 32 days of age. At 42 days of age, broilers fed the MD diet had higher concentrations of TBARS and CP. At 32 days of age, broilers under HS had lower high-density lipoprotein and higher low-density lipoprotein concentrations. In breast meat, broilers in thermal comfort fed the dl-M or dl-MM diets had a lower cooking loss. Broilers in HS fed the dl-M diet had the lowest cooking loss. HS reduced the pH of the meat of legs. Conclusions The acute and chronic HS affect the broiler performance in different ways. Methionine supplementation contributes to reduce the effects of HS. There were no notable differences between the supplementation of dl-M or dl-MM. Implications Productivity and the quality of the chicken meat are the most important attributes of the production. The ambient temperature can influence these parameters. The methionine in its most varied forms, due to its direct and indirect antioxidant function, has been shown to be an effective source of protection for the animal in adverse conditions such as during HS.

Effects of Cyclic Thermal Stress at Later Age on Production Performance and Meat Quality of Fast-Growing, Medium-Growing and Thai Native Chickens

The present study aimed at assessing the impact of cyclic thermal stress on production performance and meat quality of commercial broilers (BRs), Thai native chickens (NT) and the hybrids between BR and NT (H75; crossbreed 25% NT). At the age of 3, 5 and 9 weeks for BR, H75 and NT, respectively, each strain was equally divided (n = 50) into control and treatment groups. The controls were raised at a constant 26 ± 1 °C, while the treatments were subjected to thermal stress (35 ± 1 °C, 6 h daily) for 3 weeks. The results indicated that final weight and average daily gain of BR and NT treated groups were significantly lower than those of their control counterparts. Reduced body weight gain of BR and H75, as well as feed intake of H75, was observed in the treatment groups (p < 0.05). The stressed BR breasts showed decreased moisture, fat and carbohydrate, accompanied by increased protein, ash, L *-value, b*-value and shear force (p < 0.05). No significant effects (p ≥ 0.05) of the thermal stress on meat quality indices were found for H75 and NT breast samples. Pectoral myopathies were observed in BR and H75 chickens, but the numbers of cases were decreased in the thermally treated groups.

Effects of L-arginine and L-citrulline supplementation in reduced protein diets for broilers under normal and cyclic warm temperature

Heat stress causes significant economic losses in the broiler industry. Dietary supplementation of arginine (Arg) and citrulline (Cit) might increase the performance of broilers raised under warm temperature due to vasodilation effects. This study investigated the effects of L-Arg or L-Cit supplementation in broilers fed a reduced protein wheat-based diet deficient in Arg under thermoneutral (NT) and cyclic warm temperature (WT). Ross 308 cockerels (n = 720) were randomly allocated to 4 dietary treatments with 12 replicates of 15 birds per pen from d 7 to 21. The 4 treatments were: normal protein (NP), i.e., 22.3% and 20.9% crude protein in grower and finisher, respectively; reduced protein (RP), i.e., 2.5% lower protein and deficient in Arg; and RP supplemented with 0.28% Arg (RP-Arg) or 0.28% Cit (RP-Cit). A factorial arrangement of treatments was applied during the finisher phase (21 to 35 d). Factors were: diet (4 diets above); and temperature, NT (24 °C) or cyclic WT (33 ± 1 °C for 6 h per day) with 6 replicate pens per treatment. During 7 to 35 d and 21 to 35 d, the birds fed the RP diet had lower body weight gain (BWG) and higher FCR compared to the NP diet (P < 0.01). The addition of Arg or Cit to RP decreased FCR compared to RP (P < 0.01). During 21 to 35 d, the birds exposed to WT had lower feed intake (FI), lower BWG (P < 0.001) but similar FCR (P > 0.05) compared to birds exposed to NT. Diet by temperature interactions were not observed for performance parameters during the period of WT (P > 0.05). On d 35, the RP-fed birds had a lower yield of thigh and drumstick, higher fat pad, lower femur ash, and breaking strength but similar serum uric acid level and higher nitrogen digestibility on d 21 compared to those offered NP (P < 0.05). Supplementation of Arg or Cit to RP resulted in increased femur ash on d 35 (P < 0.05). Thus, feeding the NP diets is necessary to maintain growth performance in broilers regardless of the temperature conditions.

Effects of Herbal Adaptogen Feed-Additive on Growth Performance, Carcass Parameters, and Muscle Amino Acid Profile in Heat-Stressed Modern Broilers

Heat stress has strong adverse effects on poultry production and, thereby, threats its sustainability, which energized scientists to search for innovative and effective solutions. Here, we undertook this study to evaluate the effects of in-feed herbal adaptogen (stress response modifier) supplementation on growth performances, meat quality, and breast amino acid profile in chronic cyclic heat-stressed broilers. Day-old male Cobb 500 chicks (n = 720) were randomly assigned, in environmental chambers (n = 12, 24 pens), to three diet-treatments: a three-phase corn-soybean based diet fed as such (Control, C), or supplemented with the herbal adaptogen at 500 g/1000 kg control diet (NR-PHY-500) or at 1 kg/1000 kg control diet (NR-PHY-1000). From d29 to d42, birds from 9 chambers were exposed to cyclic heat stress (HS, 35°C from 9:30 am-5:30 pm), however, the rest of the chamber were maintained at thermoneutral conditions (24°C, TN), which creates 4 experimental groups: C-TN, C-HS, NR-PHY-500HS, and NR-PHY-1000HS (6 pens/group, 168 birds/group). HS altered growth performance via depression of feed intake and body weight. Adaptogen supplementation stimulated feed intake and averaged 65.95 and 83.25 g better body weight and 5 and 10 points better FCR at low and high dose, respectively, compared to heat-stressed birds. This increase in body weight was mirrored in enhanced weights of body parts (breast, tender, wings, and legs). Adaptogen supplementation modulated also breast amino acid profile, pH, color, and quality. Together, these data suggested that adaptogen supplementation could be a promising solution to alleviate heat stress, however further in-depth investigation for its mode of action and its underlying mechanisms are warranted.

The effects of intermittent feeding and cold water on welfare status and meat quality in broiler chickens reared under daily heat stress

This study was aimed to determine the effects of feeding type (ad libitum: AF and intermittent: IF) and water temperature (normal: NW and cold: CW) treatments on welfare status and meat quality in fast-growing broiler chickens reared under daily heat stress between 22 and 42 days of age. The chickens' panting rate and rectal temperature were determined at 4, 5, and 6 weeks of age and twice a week in 3 female and 3 male chickens in each pen. Welfare traits such as foot pad dermatitis (FPD), hock burn (HB), breast burn (BB), and leg problems (LP) were examined individually at 42 days of age. At day 43, 3 male and 3 female chickens per pen were randomly selected and slaughtered after an 8-h fasting period; pH and color (lightness (L*), redness (a*), and yellowness (b*)) of breast and thigh meat were determined. AF × C W chickens had significantly higher panting rates at all ages than the other groups (P < 0.05). While FPD and LP were not affected by feeding type and water temperature treatments, interaction effects on HB and BB were found significant (P < 0.05). The HB and BB levels were the lowest in AF × NW chickens (P < 0.05). While treatments did not change to any color traits in breast meat (P > 0.05), interactions significantly affected the yellowness (b*) value in the thigh (P < 0.05). In conclusion, management practices such as IF and CW in fast-growing broilers could not completely reduce the undesirable effects of heat stress on some welfare and meat quality traits, and in some cases, even caused more negativity.

Meta-analysis to predict the effects of temperature stress on meat quality of poultry

Temperature stress (TS) is a significant issue in poultry production, which has implications for animal health and welfare, productivity, and industry profitability. Temperature stress, including both hot (heat stress) and cold conditions (cold stress), is associated with increased incidence of meat quality defects such as pale, soft, and exudative (PSE) and dark, firm, and dry (DFD) meat costing poultry industries millions of dollars annually. A meta-analysis was conducted to determine the effect of ambient TS on meat quality parameters of poultry. Forty-eight publications which met specific criteria for inclusion were identified through a systematic literature review. Temperature stress was defined by extracting 2 descriptors for each treatment mean from the chosen studies: (1) temperature imposed for the experimental treatments (°C) and duration of temperature exposure. Treatment duration was categorized for analysis into acute (≤24 h) or chronic (>24 h) treatments. Meat quality parameters considered were color (L*-a*-b* scheme), pH (initial and ultimate), drip loss, cooking loss, and shear force. Linear mixed model analysis, including study as a random effect, was used to determine the effect of treatment temperature and duration on meat quality. Model evaluation was conducted by performing a k-fold cross-validation to estimate test error, and via assessment of the root mean square prediction error (RMSPE), and concordance correlation coefficient (CCC). Across both acute and chronic durations, treatment temperature was found to have a significant effect on all studied meat quality parameters. As treatment temperature increased, meat demonstrated characteristics of PSE meat and, as temperature decreased, meat demonstrated characteristics of DFD meat. The interaction between treatment temperature and duration was significant for most traits, however, the relative impact of treatment duration on the studied traits was inconsistent. Acute TS had a larger effect than chronic TS on ultimate pH, and chronic stress had a more considerable impact on color traits (L* and a*). This meta-analysis quantifies the effect of ambient TS on poultry meat quality. However, quantitative effects were generally small, and therefore may or may not be of practical significance from a processing perspective.

The Use of Artificial Intelligence in Assessing Affective States in Livestock

In order to promote the welfare of farm animals, there is a need to be able to recognize, register and monitor their affective states. Numerous studies show that just like humans, non-human animals are able to feel pain, fear and joy amongst other emotions, too. While behaviorally testing individual animals to identify positive or negative states is a time and labor consuming task to complete, artificial intelligence and machine learning open up a whole new field of science to automatize emotion recognition in production animals. By using sensors and monitoring indirect measures of changes in affective states, self-learning computational mechanisms will allow an effective categorization of emotions and consequently can help farmers to respond accordingly. Not only will this possibility be an efficient method to improve animal welfare, but early detection of stress and fear can also improve productivity and reduce the need for veterinary assistance on the farm. Whereas affective computing in human research has received increasing attention, the knowledge gained on human emotions is yet to be applied to non-human animals. Therefore, a multidisciplinary approach should be taken to combine fields such as affective computing, bioengineering and applied ethology in order to address the current theoretical and practical obstacles that are yet to be overcome.

Effects of Nano Emulsified Vegetable Oil and Betaine on Growth Traits and Meat Characteristics of Broiler Chickens Reared under Cyclic Heat Stress

The effects of nano-emulsified vegetable oil (NEVO) and betaine (BET) supplements on growth performance and meat qualities of broilers reared under cyclic heat stress (HS) were investigated. Two hundred and eighty-eight mixed-sex broilers at 21 d were randomly distributed to a 2 × 3 factorial arrangement of treatments formed by two environmental temperatures (thermoneutral (TN; 24 ± 1 °C) and cyclic high-temperature (HT; 35 ± 1 °C)) and three dietary treatments (control (CON), NEVO, and BET). The cumulative performance (21-35 d) revealed a reduction in average daily gain (ADG) (p < 0.05) in the CON compared to NEVO. NEVO and BET groups had a better feed conversion ratio (FCR) and performance efficiency factor (PEF) compared with the CON (p < 0.001, p < 0.01, respectively). The environmental temperature affected daily feed intake (DFI), ADG, FCR, and PEF. The addition of BET improved breast fillets yield, temperature, pH_15min, and pH_24hr (p < 0.05) in comparison with the CON. Moreover, the TN group had lower fillet temperature and higher pH_15min compared to the HT. Moreover, HT increased shear force (SF), hardness, springiness, cohesiveness, and chewiness of the fillets compared to TN. In conclusion, dietary supplementation with BET and NEVO could effectively improve performance parameters and meat characteristics under HS conditions.

Effects of season, genotype and rearing system on some meat quality traits for broilers raised in semi-intensive systems

We compared fast-growing and slow-growing broilers raised in extensive indoor, free-range, and traditional free-range systems in terms of meat quality in spring and summer. Five different semi-intensive broiler production applications (fast- in extensive indoor, slow- in extensive indoor, fast- in free-range, slow- in free-range and slow- in traditional free-range) were used according to EU standards. Extensive indoor and free-range birds were slaughtered at 57 days of age and traditional free-range chickens at 82 days. The higher (P < 0.05) skin yellowness (b*) values found in spring compared to summer may have been due to better pasture conditions in spring. The pH₂₄ value of breast meat during the summer period was higher (P < 0.05) than that in spring, but lightness (L*) was similar. Thawing and cooking losses were higher (P < 0.05) in breast meat samples from the summer experiment. The season affected (P < 0.05) all sensory attributes of breast meat; spring samples were appreciated more in terms of all the features discussed. Regarding the skin b* value, the highest average value was detected for slow chickens in the slow- in free-range and traditional free-range groups, most likely because slow chickens spent more time grazing. Fast- showed higher pH₂₄ values than slow- (P < 0.05) in extensive indoor and free-range groups. We did not observe differences in pH₂₄ due to grazing in fast-, but grazing slow- showed lower pH₂₄ values than their indoor counterparts. Further, in the extensive indoor system, both genotypes were similar in terms of breast meat L* and b*, whereas slow- in the free-range system showed higher (P < 0.05) averages than fast-. Based on our results, the traditional grazing system has a positive impact on meat sensory features.

Myostatin and Related Factors Are Involved in Skeletal Muscle Protein Breakdown in Growing Broilers Exposed to Constant Heat Stress

Abstract

Heat stress has an adverse effect on the development of poultry farming, which has always aroused great concern. This study was carried out to investigate the protein breakdown mechanism responsible for the suppressive effect of constant heat stress on muscle growth in growing broilers. A total of 96, 29-day-old, Arbor Acres male broilers were randomly divided into two groups, a thermoneutral control (21 ± 1 °C, TC) and a heat stress (31 ± 1 °C, HS) group, with six replicates in each group and eight birds in each replicate. The trial period lasted for 14 d, and the trial was performed at 60 ± 7% relative humidity, a wind speed of <0.5 m/s and an ammonia level of <5 ppm. The results showed that the average daily feed intake and average daily gain in the HS group were distinctly lower than those in the TC group (p < 0.05), whereas the HS group showed a significantly increased feed conversion ratio, nitrogen excretion per weight gain and nitrogen excretion per feed intake compared to the TC group (p < 0.05). In addition, the HS group showed a significantly reduced breast muscle yield and nitrogen utilization in the broilers (p < 0.05). The HS group showed an increase in the serum corticosterone level (p < 0.05) and a decrease in the thyroxine levels in the broiler chickens (p < 0.05) compared to the TC group, whereas the HS group showed no significant changes in the serum 3,5,3′-triiodothyronine levels compared to the TC group (p > 0.05). Moreover, the HS group showed increased mRNA expression levels of myostatin, Smad3, forkhead box O 4, muscle atrophy F-box and muscle ring-finger 1, but reduced mRNA expression levels of the mammalian target of rapamycin, the protein kinase B and the myogenic determination factor 1 (p < 0.05). In conclusion, the poor growth performance of birds under constant heat stress may be due to an increased protein breakdown via an mRNA expression of myostatin and related factors.

Effects of Heat Stress on Gut-Microbial Metabolites, Gastrointestinal Peptides, Glycolipid Metabolism, and Performance of Broilers

In the summer, heat stress is a main factor that causes poor performance in broilers. Broilers are more susceptible to high temperature environments than mammals due to their lack of sweat glands and being covered in feathers. Heat stress can alter the regulation of glycolipid metabolism, which is manifested by unstable levels of blood glucose, insulin, total cholesterol, and triglyceride. Heat stress also affects the structure of gut microbes and gastrointestinal peptides. However, the relationship among microbiota, gastrointestinal peptides, glycolipid metabolism, and production performance under heat stress is still unclear. Moreover, exploring these mechanisms can help in the development of strategies that alleviate the negative effects of performance by heat stress. Our results suggest that the poor production performance of broilers under heat stress may be related to short chain fatty acids fermented by intestinal microbiota involved in regulating metabolic disorders.

Abstract

This paper investigated the effects of heat stress on gut-microbial metabolites, gastrointestinal peptides, glycolipid metabolism, and performance of broilers. Thus, 132 male Arbor Acres broilers, 28-days-old, were randomly distributed to undergo two treatments: thermoneutral control (TC, 21 °C) and high temperature (HT, 31 °C). The results showed that the average daily gain (ADG), average daily feed intake (ADFI), and gastric inhibitory polypeptide (GIP) concentration in the jejunum significantly decreased the core temperature, feed conversion ratio (FCR), and ghrelin of the hypothalamus, and cholecystokinin (CCK) in jejunum, and serum significantly increased in the HT group (p < 0.05). Exploration of the structure of cecal microbes was accomplished by sequencing 16S rRNA genes. The sequencing results showed that the proportion of Christensenellaceae and Lachnospiraceae decreased significantly whereas the proportion of Peptococcaceae increased at the family level (p < 0.05). Ruminococcus and Clostridium abundances significantly increased at the genus level. Furthermore, the content of acetate in the HT group significantly increased. Biochemical parameters showed that the blood glucose concentration of the HT group significantly decreased, and the TG (serum triglycerides), TC (total cholesterol), insulin concentration, and the insulin resistance index significantly increased. Nonesterified fatty acid (NEFA) in the HT group decreased significantly. In conclusion, the results of this paper suggest that the poor production performance of broilers under heat stress may be related to short-chain fatty acids (SCFAs) fermented by intestinal microbiota involved in regulating metabolic disorders.

Algae-based antioxidant containing selenium yeast (Economase®) enhanced the growth performance, oxidative stability, and meat quality of broiler chickens

Objective

An experiment was conducted to determine the effect of algae-based antioxidant containing Se yeast (EconomasE^®) on the growth performance, visceral organ weight, meat quality, and oxidative stability of broiler chickens.

Methods

Nine hundred sixty, day-old male broiler chickens (Cobb, 43.97±0.55 g) were divided into three dietary treatments and allocated into 12 deep litter pens in a completely randomized design giving 4 replicate cages for each treatment. Three dietary treatments were: i) control (CON, basal diet with sufficient nutrient), ii) vitamin E (VitE, basal diet supplemented with 100 IU VitE), and iii) Algae-based antioxidant containing Se yeast (EcoE, basal diet supplemented with 0.2% algae-based antioxidant containing Se yeast: EconomasE^®). Maize soybean meal based basal diets were formulated to meet or exceed the nutrition requirement for broiler chickens. Chickens were fed ad-libitum experimental diets during the 42 days experiment period. On days 21 and 42, body weight and feed intake were measured to calculate the feed conversion ratio of the chickens. Intestine and visceral organs were measured together with meat quality and oxidative stability on days 14 and 42.

Results

Chickens fed with EcoE showed improved (p<0.05) growth performance, meat quality, and higher (p<0.05) oxidative stability compared to the chicken fed on CON. Moreover, broiler chickens fed with EcoE showed similar (p<0.05) growth performance with better (p<0.05) meat quality and higher oxidative stability compared to the broiler chickens fed VitE (p<0.05).

Conclusion

The algae-based antioxidant containing Se yeast can be supplemented into commercial broiler diets as a substitution of VitE while maintaining growth performance with enhancing meat quality and oxidative stability of the broiler chickens.

Performance Evaluation of Two Slow-Medium Growing Chicken Strains Maintained under Organic Production System during Different Seasons

Expected thermal variations as a consequence of climate change represent a challenge for alternative poultry production because animals graze abroad for long periods of time, where slight variations in ambient temperature may cause negative effects on their productive development. Changes in temperature have been described as factors capable of influencing the development of animals. The objective of this study was to evaluate weather conditions and strain affect the development of slow-medium growing chickens raised in an organic system. No differences were shown between both strains studied; this indicates the high similarity between the strains used. This fact would allow the farmer to include one strain or another in his farm indifferently. Better development was observed in chickens that had been raised under cooler conditions (S1) in organic systems. This fact could be justified by the greater difficulty that chickens find to dissipate heat in warmer environments, which impairs their productive development. In this way, whenever possible, it would be recommended to raise the largest number of chickens during the coldest season.

Abstract

A total of 160 1-day-old medium-growing male chicks (Gallus gallus domesticus) were raised for 120 days in a certified organic farming system. A total of two strains were studied (Coloryield, CY; RedBro, RB). Overall, two weather periods were considered based on the outdoor temperature, being S1 colder than S2. In total, 40 chicks per strain were assigned to each period (n = 80). Chickens were fed ad libitum with the same organic feeds. In the first month, chickens were kept indoors and, from day 30, they had access to the pasture. Slaughter live weight (LW), average daily gains, (ADG), the feed conversion ratio (FCR), and mortality rates did not differ between the two strains. LW was (p < 0.05) higher in the S1 and a trend (p = 0.084) was observed for ADG, which was higher in S1. No differences were found for feed intake, FCR, and mortality rates between weather periods. There were no differences for coefficient of variation (CV) between the strains studied, nevertheless, CV for LW in S2 was increased. Differences in the productive performance between these strains raised in organic production systems were slight. However, chickens raised in S1 had a better performance. It would be preferable to raise chickens in these weather conditions whenever possible.

Evaluation of Three Formulations of Essential Oils in Broiler Chickens under Cyclic Heat Stress

The objective of the present research was to assess the dietary supplementation of three formulations of essential oils (EO) in chickens under heat stress (HS). Day-of-hatch Cobb 500 chicks (n = 500) were randomly distributed into four groups: 1. HS control + control diets; 2. HS + control diets supplemented with 37 ppm EO of Lippia origanoides (LO); 3. HS + control diets supplemented with 45 ppm LO + 45 ppm EO of Rosmarinus officinalis (RO) + 300 ppm red beetroot; 4. HS + 45 ppm LO + 45 ppm RO + 300 ppm natural betaine. Chickens that received the EO showed significant (p < 0.05) improvement on BW, BWG, FI, and FCR compared to control HS chickens. Average body core temperature in group 3 and group 4 was significantly (p < 0.05) reduced compared with the HS control group and group 2. Experimental groups showed a significant reduction in FITC-d at 42 days, a significant increase in SOD at both days but a significant reduction of IFN-γ and IgA compared with HS control (p < 0.05). Bone mineralization was significantly improved by EO treatments (p < 0.05). Together these data suggest that supplemental dietary EO may reduce the harmful effects of HS.

Effects of Bile Acids on Growth Performance and Lipid Metabolism during Chronic Heat Stress in Broiler Chickens

The negative impacts of heat stress (HS) on growth performance and lipid metabolism have been reported, but there are still no effective nutritional strategies to alleviate heat stress. Bile acids are new for their antioxidative properties and regulatory effect on lipid metabolism. This study was carried out to evaluate the growth performance and lipid metabolism in chickens under heat stress when fed with bile acid supplements in their diet. The results showed that mild heat stress (32 °C) induced hepatic lipogenic gene (hepatic SREBP-1c) expressions and lipid deposition, without obvious tissue damage in broilers. Dietary supplementation of bile acid could decrease hepatic lipid deposition without affecting endogenous bile acid biosynthesis. Therefore, bile acid supplements can benefit broiler chickens during high ambient temperatures, serving as a new nutritional strategy against heat stress.

Abstract

This study aimed to investigate whether dietary bile acid (BA) supplements can improve growth performance and lipid metabolism in heat-stressed broiler chickens. A total of 288 Arbor Acres broilers were blocked by BW and then randomly allocated into 4 treatments at 21 days of age. Birds reared under 32 °C had a higher cloacal temperature (p = 0.01), faster respiratory rate (p < 0.001), and a greatly reduced average daily feed intake (ADFI, p = 0.016), average daily gain (ADG, p = 0.006), final body weight (FBW, p = 0.008), and feed conversion rate (FCR, p = 0.004). In heat stress (HS) birds, the breast muscle rate (p = 0.006) and pH 24 h postmortem (p = 0.065) were lower, and the shear force was higher (p = 0.027). Dietary BA supplements tended to increase the breast muscle rate (p = 0.075) without affecting the growth performance and serum lipids (p > 0.05). Serum total bile acid (TBA) was roughly duplicated after BA supplements (p = 0.001). In the liver, total cholesterol was lower (p = 0.046), and triglycerides were higher (p = 0.04) in the HS birds, whereas the expression of SREBP-1c showed an increasing trend (p = 0.06). In contrast, dietary BA decreased triglycerides and the expressions of hepatic SREBP-1c and FAS in the liver (p < 0.05). In summary, mild HS causes hepatic lipid accumulation without obvious tissue damages, whereas BA has positive effects on relieving abnormal lipid metabolism, indicating that BA as a nutritional strategy has a certain potential in alleviating HS.

The effects of simulated transportation conditions on the core body and extremity temperature, blood physiology, and behavior of white-strain layer pullets

Transportation of poultry is stressful. The transportation of broilers has been well studied, while the transportation of layer pullets from rearing to laying facilities has not been thoroughly evaluated. This experiment aimed to establish the effects of temperature (T)/RH combinations and duration (D) of transport, via a 5 × 2 factorial arrangement of simulated transport conditions using 5 T/RH combinations (21°C with 30% RH [21/30], 21°C with 80% RH [21/80], 30°C with 30% RH [30/30], 30°C with 80% RH [30/80], and -15°C with uncontrolled RH [-15]), and 2 exposure D (4 or 8 h). Pullets (18-19 wk; n = 240) were obtained from 3 commercial farms (N = 3 farms). Pretreatment, birds were orally administered a miniature data logger to record core body temperature (CBT), an initial blood sample was taken (5 birds/replicate), and initial foot T was recorded. Behavior during exposure was video recorded. Following exposure, a final blood sample was taken (analyzed for heterophil to lymphocyte ratio, partial pressure of CO₂, total CO₂, bicarbonate, and glucose), birds were slaughtered, and data loggers were retrieved. Data were analyzed as a randomized complete block design via Proc Mixed (SAS 9.4) and significance was declared at P ≤ 0.05. There were no interactions observed for the T/RH and D combinations throughout the study. The CBT and foot T were lowest in pullets exposed to -15 compared with all other treatments. Foot T was also highest in pullets exposed to 30/80 compared with -15, 21/30, and 21/80. There was no impact of T/RH on pullet blood physiology. Activity and thermoregulatory behaviors were impacted by the T/RH combinations. Pullets exposed to 30/30 and 30/80 spent the most time panting. Pullets exposed to 30/80 also spent the least amount of time motionless. Duration had minor impacts on pullet CBT, blood physiology, and behavior. These data indicate that as a response to thermal stress, layer pullets were successful at implementing mechanisms to maintain homeostasis.

Heat stress and poultry production: impact and amelioration

Globally, the poultry industry is gaining significant importance among the agricultural and its allied sectors. However, heat stress was found to negatively affect the poultry production particularly in the tropical regions. This review is therefore an attempt to generate information pertaining to the impacts of heat stress on poultry production and its amelioration. Heat stress reduces the growth, reproductive performance, and egg production in poultry birds. The reduction in productive potential of poultry birds on exposure to heat stress may be attributed to the deviation of energy resources from production to adaptation pathway. There are different approaches pertaining to relieving the adverse impacts of heat stress on poultry production. These approaches can be broadly categorized under genetic, management, and nutritional strategies. These approaches may reduce the negative effects of heat stress and enhance the productive performance of poultry birds. The management strategies include appropriate shelter design, providing shade, using sprinklers, implementing cooling devices, and using fans and ventilation systems. The recommended floor space for mature birds weighing 1.7 kg is 0.06 m²/bird while it is 0.13 m²/bird for the birds weighing 3.5 kg with 27.8 kg/m² bird density in either case. The nutritional interventions comprise ration balancing and providing essential micronutrients to improve the productive and reproductive performance in poultry birds. Fat, antioxidants, yeast, and electrolyte supplementations are some of the most commonly used nutritional strategies to ensure optimum production in the poultry industry. Furthermore, providing adequate water supply and disease surveillance measures may help to ensure optimum meat and egg production in the birds. The advanced biotechnological tools may aid to identify suitable genetic markers in poultry birds which might help in developing new strains of higher thermo-tolerance by designing suitable breeding program involving marker-assisted selection. These strategies may help to optimize and sustain poultry production in the changing climate scenario.

Dietary probiotics as a strategy for improving growth performance, intestinal efficacy, immunity, and antioxidant capacity of white Pekin ducks fed with different levels of CP

The potential impacts of probiotics on the performance and health status of white Pekin ducks fed with optimal or suboptimal dietary CP were evaluated during the growing period. A total of 180 male white Pekin ducks (14-day-old ducks with an initial weight of 415.65 ± 2.20 g) were randomly divided into 4 experimental groups (45 in each group of 5 replicates) in a 2 × 2 factorial design. The main factors included 2 dietary CP levels (18 or 14%) and dietary probiotic addition (with or without probiotics). The probiotic source was supplemented at 0.2 g per kilogram of diet from a blend of Lactobacillus acidophilus and Lactobacillus casei. The results showed that the diet containing 18% CP and probiotics significantly increases the final and total weight gain. Activities of intestinal enzymes (amylase, lipase, and protease), morphometrics (villus length, goblet cell count, and cryptal depth), and carcass percentage were also increased significantly. Total protein content, lysozyme activity, bactericidal activity, nitro blue tetrazolium levels, alternative complement pathway, superoxide dismutase activity, and catalase activity were significantly increased, whereas glucose, cortisol, and total cholesterol levels were decreased when treated with diet containing 18% CP and probiotics. Conversely, the group treated with diet containing 14% CP without probiotics showed the poorest performance, carcass properties, immune response, and antioxidant potential. In conclusion, probiotic addition to the 14% CP diet improved the performance of white Pekin ducks caused by reduced CP diet to performance due to the 18% CP diet without probiotic supplementation.

Heat stress alters muscle protein and amino acid metabolism and accelerates liver gluconeogenesis for energy supply in broilers

Heat stress impairs growth performance and alters body protein and amino acid metabolism. This study was investigated to explore how body protein and amino acid metabolism changed under heat stress (HS) and the stress adaptation mechanism. A total of 144 broilers (28 d old) were divided into 3 treatment groups for 1 wk: HS group (32°C), normal control group (22°C), and pair-feeding group (22°C). We found that HS elevated the feed-to-gain ratio, reduced the ADFI and ADG, decreased breast muscle mass and plasma levels of several amino acids (glycine, lysine, threonine, and tyrosine), and increased serum glutamic oxaloacetic transaminase (GOT) activity and corticosterone (CORT) level and liver GOT and glutamic pyruvic transaminase activities. Heat stress elevated muscle atrophy F-box mRNA expression and reduced mRNA expression of the 70-kD ribosomal protein S6 kinase in the breast muscle of broilers. Broilers in the HS group exhibited striking increases of mRNA expressions of solute carrier family 1 member 1, family 3 member 1, family 7 member 1, and family 7 member-like in the liver and liver gluconeogenesis genes (PCKc, PCKm, PC, and FBP1) in comparison with the other 2 groups. In conclusion, HS increased the circulating CORT level and subsequently caused muscle protein breakdown to provide amino acid substrates to liver gluconeogenesis responsible for energy supply.

Impacts of heat stress on meat quality and strategies for amelioration: a review

During the summer, high ambient temperature and humidity cause economic loss to the global livestock industry via reduced livestock productivity and increased mortality. The problem of heat stress (HS) is likely to be exacerbated by global warming and climate change. Recent research has shown that HS not only leads to physiological and metabolic perturbations in live animals but can also affect carcass and meat quality characteristics plausibly by altering the rate and extent of postmortem muscle glycolysis and resultant pH. However, these impacts of HS are not consistent across species. Higher incidence of pale soft and exudative (PSE) meat has been reported in poultry. On the contrary, higher incidence of high ultimate pH and dark firm and dry (DFD) meat or no impacts of HS have been reported in sheep and cattle. With the limited data on HS impacts on meat quality of ruminants, it is difficult to explain the exact mechanisms driving these variable impacts. However, it is hypothesized that the severity and duration of HS may lead to variable impacts due to lack of opportunity to adapdate to acute heat exposure. Longer HS exposure may allow ruminants to adapdate to heat and may not record any negative impacts on meat quality. This paper reviews the recent research on impacts of HS on meat quality characteristics and identify the key areas of further research required to better understand these negative impacts to develop strategies for amelioration. In addition, some mitigation strategies of HS have also been discussed which include both managemental and nutritional interventions.

Correlation analysis of muscle amino acid deposition and gut microbiota profile of broilers reared at different ambient temperatures

Objective

Temperature could influence protein and amino acid deposition as well as gut microbiota profile and composition. However, the specific effects of ambient temperature on amino acids deposition and gut microbiota composition remain insufficiently understood.

Methods

A total of 300 one-day-old Avian broilers were randomly divided into three groups and reared at high, medium, and low temperature (HT, MT, and LT), respectively. Breast muscle and fecal samples were collected for amino acid composition analysis and 16S rRNA gene sequence analysis.

Results

Our data showed that compared to the MT group, there was a decrease of muscle leucine and tyrosine (p<0.05), as well as an increase of methionine in the HT group (p<0.05) and a decrease of serine in the LT group. Examination of microbiota shift revealed that at genus level, the relative abundance of Turicibacter and Parabacteroides was increased in the HT group (p<0.05) and that the relative abundances of Pandoraea, Achromobacter, Prevotella, Brevundimonas, and Stenotrophomonas in the LT group were higher than those in the MT group (p<0.05). In addition, there were substantial correlations between microbes and amino acids. In the HT group. Turicibacter was negatively correlated with aspartic acid and tyrosine, whereas Parabacteroides was positively correlated with methionine (p<0.05). In the LT group, there were multiple positive correlations between Achromobacter and arginine, isoleucine or tyrosine; between Prevotella and cysteine or phenylalanine; between Brevundimonas and cysteine; and between Stenotrophomonas and cysteine as well as a negative correlation between Stenotrophomonas and serine.

Conclusion

Our findings demonstrated that amino acid content of breast muscle and intestinal microbiota profile was affected by different ambient temperatures. Under heat exposure, augmented abundance of Parabacteroides was correlated with elevated methionine. Low temperature treatment may affect muscle tyrosine content through the regulation of Achromobacter.

A Dietary Sugarcane-Derived Polyphenol Mix Reduces the Negative Effects of Cyclic Heat Exposure on Growth Performance, Blood Gas Status, and Meat Quality in Broiler Chickens

Heat stress is a main reason of systemic oxidative stress, which compromises broiler meat production and quality. To improve the productivity of poultry meat production, studies have investigated different heat stress amelioration strategies. Among these strategies, low-cost feed supplementations are introduced to potentially reduce the negative effects of heat stress. Previous studies have also investigated the effects of different antioxidants on growth performance and meat quality, while a limited number of studies have been made regarding the impacts of the polyphenols at different doses. Therefore, this study attempted to investigate the effects of different doses of polyphenols supplementation on growth performance, physiological responses, and meat quality in broiler chickens exposed to cyclic heat stress.

Abstract

Heat stress (HS) compromises growth performance and meat quality of broiler chickens by interrupting lipid and protein metabolism, resulting in increased oxidative damages. The experiment attempted to investigate whether dietary polyphenols (Polygain (POL)) could ameliorate the aforementioned adverse effects of HS on performance and meat quality. One hundred and twenty one day-old-male chicks were allocated to two temperature conditions, thermoneutral (TN) or HS, and fed with either a control diet (CON) or the CON plus four different doses of POL (2, 4, 6 and 10 g/kg). Heat stress caused respiratory alkalosis as evidenced by increased rectal temperature (p < 0.001) and respiration rate (p < 0.001) due to increased blood pH (p < 0.001). Heat stress decreased final body weight (p = 0.061) and breast muscle water content (p = 0.013) while POL improved both (p = 0.002 and p = 0.003, respectively). Heat stress amplified muscle damages, indicated by increased thiobarbituric acid reactive substances (p < 0.001) and reduced myofibril fragmentation index (p = 0.006) whereas POL improved both (p = 0.037 and p = 0.092, respectively). Heat stress impaired meat tenderness (p < 0.001) while POL improved it (p = 0.003). In conclusion, HS impaired growth performance and meat quality whereas POL ameliorated these responses in a dose-dependent manner, and effects of POL were evident under both temperature conditions.

Effects of a partially perforated flooring system on animal-based welfare indicators in broiler housing

Alternative flooring designs in broiler housing have been the subject of intensive research. Research comparing different floor types with a focus on animal-based welfare indicators might be of special interest to meet the animal's needs. This case-control study investigated the effect of a partially perforated vs. a littered flooring system on health- and behavior-based welfare indicators of fast-growing Ross 308 broilers. Furthermore, production performance was assessed. The experimental barn was partially (50%) equipped with a perforated floor directly underneath the feeders and water lines accessible by perforated ramps. Conventional wood shavings were used in the control barn, as usual in practice. There were 4 fattening periods (repetitions) of 31 to 32 D performed with 500 animals per barn (final density of 39 kg m-2). Beside the flooring system, management conditions were identical. Health- and behavior-based welfare indicators were assessed weekly. Production performance indicators were measured continuously during animal control. During the avoidance distance test, animals were less fearful on day 21 (P = 0.010) and tended to be less fearful on day 28 (P = 0.083) in the barn with the partially perforated flooring system compared to the littered control barn. More animals around the novel object were also assessed in the barn with the partially perforated flooring system during the novel object test on day 1 (P < 0.001) and a tendency was found on day 28 (P = 0.064). Results showed that the partially perforated flooring system had a positive influence on foot pad dermatitis from day 14 (all P ≤ 0.007) and hock burn on day 28 (P < 0.001). With regard to the production performance, animals showed no differences in final body weight for both floor types. In this study, the partially perforated flooring system had a positive effect on animal health and behavior as indicated by welfare indicators without a reduction in production performance.

Effects of heat stress on growth performance, selected physiological and immunological parameters, caecal microflora, and meat quality in two broiler strains

OBJECTIVE

This study was conducted to investigate the effects of normal and heat stress environments on growth performance and, selected physiological and immunological parameters, caecal microflora and meat quality in Cobb 500 and Ross 308 broilers.

METHODS

One-hundred-and-twenty male broiler chicks from each strain (one-day-old) were randomly assigned in groups of 10 to 24 battery cages. Ambient temperature on day (d) 1 was set at 32°C and gradually reduced to 23°C on d 21. From d 22 to 35, equal numbers of birds from each strain were exposed to a temperature of either 23°C throughout (normal) or 34°C for 6 h (heat stress).

RESULTS

From d 1 to 21, strain had no effect (p>0.05) on feed intake (FI), body weight gain (BWG), or the feed conversion ratio (FCR). Except for creatine kinase, no strain×temperature interactions were observed for all the parameters measured. Regardless of strain, heat exposure significantly (p<0.05) reduced FI and BWG (d 22 to 35 and 1 to 35), immunoglobulin Y (IgY) and IgM, while increased FCR (d 22 to 35 and 1 to 35) and serum levels of glucose and acute phase proteins (APPs). Regardless of temperature, the Ross 308 birds had significantly (p<0.05) lower IgA and higher finisher and overall BWG compared to Cobb 500.

CONCLUSION

The present study suggests that the detrimental effects of heat stress are consistent across commercial broiler strains because there were no significant strain×temperature interactions for growth performance, serum APPs and immunoglobulin responses, meat quality, and ceacal microflora population.

Effects of Fennel Seed Powder Supplementation on Growth Performance, Carcass Characteristics, Meat Quality, and Economic Efficiency of Broilers under Thermoneutral and Chronic Heat Stress Conditions

Nowadays, great attention has been given to phytogenic products as a growth enhancer due to their safety and eco-friendly influences on animal nutrition. Thus, this investigation looked at the use of fennel seed powder at 0, 1.6, and 3.2% as a dietary additive on the performance, carcass traits, meat quality, and efficiency of the production of broiler chickens raised under thermoneutral and chronic heat stress conditions. In essence, 3.2% fennel seed powder in the diet of broilers enhanced the growth rate under chronic heat stress and decreased breast meat redness and temperature, suggesting that 3.2% fennel seed could be used as an agent for enhancing the broiler’s tolerance during chronic heat stress (CHS) condition from 19 to 41 days of age.

Abstract

Nowadays, phytogenic products have received great attention as a growth promoter due to their safety and environmentally friendly effect as a replacement for classical growth promoters such as antibiotics in animal nutrition. Thus, this research seeks the possibility of using fennel seed powder (FSP) as a dietary additive from 19 to 41 days of age on productive performance, carcass traits, meat quality, and production efficiency of broiler chickens raised under thermoneutral and chronic heat stress conditions. Thus, 216 one-day-old Ross-308 broiler chicks were divided into two equal groups. The first group was placed in an independent temperature-controlled room at 23 ± 2 °C. The broiler chicks from the second group were placed in a heat-stressed room and exposed to chronic heat stress conditions (32 ± 2 °C) for seven hours per day from 8 a.m. to 3 p.m. The experimental design was 2 × 3 factorial including two environmental temperatures (thermoneutral vs chronic heat stress) and three experimental diets that contained 0, 1.6, and 3.2% FSP. The chickens were randomly assigned to 18-floor pens per room temperature, representing six replicates per treatment and six birds per replicate. The results showed that dietary fennel seed powder during days 19–41 of age enhanced the growth rate of broiler chickens and improved breast meat redness and reduced temperature under chronic heat stress. In conclusion, 3.2% of fennel seed powder could be used as an agent for enhancing the broiler’s tolerance during chronic heat stress condition from 19 to 41 days of age. Moreover, it is necessary to study in further detail the nitrite and nitrate contents in FSP and their impacts on muscle redness (a*) as well as muscle temperature.

Influence of Long-Distance Transportation Under Various Crating Densities on Broiler Meat Quality During Hot and Humid Weather

The objective of the study was to investigate the effect of transportation distance and crating density on broiler meat quality during hot and humid weather. Breast meat samples were collected from broilers (Ross-308) after transportation for 80, 160, and 240 km at crating densities of 10, 12, and 15 birds per crate. The broilers were transported in plastic crates of 0.91 × 0.55 × 0.31 m (length × width × height) in summer at an ambient temperature of 27.2–33.6°C and relative humidity of 52.7–62.9%. The birds were then slaughtered, and the meats' physicochemical characteristics, marination and cooking attributes were measured. Meat pH at 2 hours (h) postmortem (PM) was significantly higher in birds transported for 80 and 160 km compared to those transported for up to 240 km, while meat pH at 24 h PM was higher in birds transported for up to 160 km compared to the other treatments; however, no effect of different crating densities on meat pH and drip loss was observed. Meat losses such as drip loss, thaw loss, cooking loss in raw and marinated breast, and meat shear force were significantly higher in birds transported for up to 240 km compared to the other treatments. An increase in crating density above 12 birds per crate also increased thaw loss, whereas crating density of 12 birds per crate and higher increased cooking loss and meat shear force. Meat lightness also increased significantly with the increase in transportation distance above 160 km and crating density above 12 birds per crate. In conclusion, transportation of broilers for more than 80 km with crating density higher than 12 birds per crate during summer was associated with severe losses in yield and deterioration in physical appearance and functional characteristics of meat.

Effect of galactooligosaccharides delivered in ovo on meat quality traits of broiler chickens exposed to heat stress

A study was carried out to evaluate meat quality traits in fast-growing chickens stimulated in ovo with trans-galactoolighosaccarides (GOS) and exposed to heat stress. On day 12 of egg incubation, 3,000 fertilized eggs (Ross 308) were divided into prebiotic group (GOS) injected with 3.5 mg GOS/egg, saline group (S) injected with physiological saline, and control group (C) uninjected. After hatching, 900 male chicks (300 chicks/treatment) were reared in floor pens in either thermoneutral (TN; 6 pens/group, 25 birds/pen) or heat stress conditions (HS, 30°C from 32 to 42 D; 6 pens/group, 25 birds/pen). At 42 D of age, 15 randomly chosen birds/treatment/temperature were slaughtered and the pectoral muscle (PM) was removed for analyses. Data were analyzed by GLM in a 3 × 2 factorial design. In ovo treatment had no effect on PM weight, pH, water-holding capacity, and shear force. GOS and S birds had lighter (L*, P < 0.01) PM than C group, whereas the latter showed a higher (P < 0.05) yellowness index (b*) compared to S group. Proximate composition, cholesterol, and intramuscular collagen properties were not affected by treatment. As for fatty acid composition, only total polyunsaturated fatty acids (PUFA) content and n-6 PUFA were slightly lower in GOS group compared to S. Heat stress had a detrimental effect on PM weight (P < 0.01) and increased meat pH (P < 0.01). PM from HS chickens was darker with a higher b* index (P < 0.05) and had a higher (P < 0.01) lipid content and a lower (P < 0.05) total collagen amount. Total saturated fatty acids (SFA), monounsaturated fatty acids (MUFA), and PUFA were similar among groups. Significant interactions between factors were found for fatty acid composition: GOS decreased (P < 0.01) SFA and increased (P < 0.05) MUFA contents in HS birds. In conclusion, in ovo injection of GOS could mitigate the detrimental effect of heat stress on some meat quality traits.
