Abstract
Forty Nellore heifers were fed (73days) with different diets: with or without essential oils (clove and/or rosemary essential oil) and/or active principle blend (eugenol, thymol and vanillin). The pH, fat thickness, marbling, muscle area and water losses (thawing and drip) were evaluated 24h post mortem on the Longissimus thoracis, and the effects of aging (14days) was evaluated on the meat cooking losses, color, texture and lipid oxidation. Antioxidant activity was also evaluated. Treatments had no effect (P>0.05) on pH, fat thickness, marbling, muscle area, thawing and drip losses. However, treatments affected (P<0.05) cooking losses, color, texture and lipid oxidation. The diets with essential oil and the active principle blend reduced the lipid oxidation and reduced the color losses in relation to control diet. Aging affected (P<0.05) texture and lipid oxidation. The essential oil and active principles or its blend have potential use in animal feed aiming to maintain/improve meat quality during shelf-life.

Abstract
Tropical grasslands represent a pivotal arena for the sustainable intensification of agriculture in the coming decades. The abundant ecosystem services provided by the grasslands, coupled with the aversion to further forest destruction, makes sustainable intensification of tropical grasslands a high policy priority. In this article, we provide an inventory of agricultural initiatives that would contribute to the sustainable intensification of the tropical grassland agro-ecosystem, and we recommend a shift in the scientific priorities of animal scientists that would contribute to realization of a more agro-ecological and multi-functional agriculture in the world's tropical grasslands.

Abstract
This research aimed to evaluate the effects of zilpaterol hydrochloride (ZH; MSD Animal Health, São Paulo, SP, Brazil) on the performance, carcass traits, serum metabolites, body composition, and gain composition of nonimplanted Nellore heifers. Nellore heifers ( = 72; average BW = 267 ± 16 kg; average 18 mo of age) were maintained in a feedlot system for 118 d. Heifers were separated into 2 groups: Control and ZH. The ZH group received ZH (8.3 mg/kg diet DM) for 30 d with 3 d of withdrawal before slaughter. Heifers were allotted to 18 pens, 9 pens per treatment, and assigned to a randomized block design. The animals were weighed, blood samples were collected, and subgroups of heifers were slaughtered at the beginning of supplementation and after 20 and 33 d to evaluate performance, blood metabolites, empty BW (EBW), and EBW composition. Hot carcass and kidney-pelvic fat weights were recorded at slaughter. At 24 h postmortem, carcasses were fabricated and the 9-10-11th rib (HH) section was removed from the primal rib to analyze moisture, protein, ash, and ether extract (EE) content in empty body (EB) and gain composition. Heifers fed ZH had gains in HCW that were 19.7 kg greater than controls, reflecting the 30% increase ( < 0.01) in ADG. There was no change in DMI, resulting in a 20% greater G:F ratio ( < 0.01) for heifers fed ZH. Heifers supplemented with ZH had carcass dressing percentages that were 3% greater than controls ( < 0.01), and there was also a 19% reduction in kidney-pelvic fat ( = 0.05) in ZH-treated heifers. Zilpaterol increased serum creatinine ( < 0.01), tended to increase ( = 0.06) serum triacylglycerol, decreased serum NEFA ( = 0.04), and tended to decrease ( = 0.06) serum glucose. The EBW composition was changed after 20 d of ZH supplementation ( = 0.02), with ZH increasing the moisture, ash, and protein contents, whereas carcass fat was decreased by ZH by 14%. Consequently, the carcass CP:EE ratio after 20 d was increased ( = 0.03) by 24% with ZH supplementation. There was no change on EBW composition after 30 d of ZH supplementation ( = 0.17). Regarding carcass gain composition, ZH increased EBW gain ( = 0.02) by 842 g/d from d 0 to d 30, EB protein gain by 221 g/d ( = 0.05) from d 0 to d 20, and by 180 g/d ( = 0.01) from d 0 to d 33. In conclusion, ZH supplementation in nonimplanted Nellore heifers altered the composition of body weight gain, promoting greater lean tissue deposition and improving feed efficiency.

Abstract
Interaction between carcass quality grade and end-point cooking temperature on eating quality of Hanwoo m. longissimus was investigated. Ten (10) of steers were sampled from a commercial population; carcasses with QG 1(++) (n=5) and QG 1 (n=5) were chosen. Samples were cooked by electric oven at 60 or 82℃ and compared with uncooked control samples. The pH was not affected by cooking temperature but decreased the redness after cooking and steaks cooked at 60℃ were more reddish than steaks cooked at 82℃ in both QG groups. Higher cooking temperature greatly (p<0.05) increased the cooking loss, but there was no significant interaction between cooking temperature and QG on the cooking loss. Moisture is negatively correlated with temperature in both QG while the proportionate relationship between crude fat and end-point temperature found in QG 1(++). WBSF values were significantly (p<0.05) high for QG 1, while that was significantly (p<0.05) increased when the temperature continues to increase. The increasing quality grade of beef resulted in significant higher (p<0.01) level of TBARS and cooking temperature increased TBARS content. Fatty acid composition was not altered by cooking at both temperatures and also the amount of fat intake was not changed. The current study indicates that eating quality of beef m. longissimus was greatly influenced by end-point temperature being interacted with QG. However, the amount and composition of fat were stable regardless of end-point temperatures. These results will provide a consumer reference to determine cooking conditions and intramuscular fat content.

Abstract
Objective A whole genome association study was conducted to identify single nucleotide polymorphisms (SNPs) with additive and dominant effects for growth and carcass traits in Korean native cattle, Hanwoo. Methods The data set comprised 61 sires and their 486 Hanwoo steers that were born between spring of 2005 and fall of 2007. The steers were genotyped with the 35,968 SNPs that were embedded in the Illumina bovine SNP 50K beadchip and six growth and carcass quality traits were measured for the steers. A series of lack-of-fit tests between the models was applied to classify gene expression pattern as additive or dominant. Results A total of 18 (0), 15 (3), 12 (8), 15 (18), 11 (7), and 21 (1) SNPs were detected at the 5% chromosome (genome) - wise level for weaning weight (WWT), yearling weight (YWT), carcass weight (CWT), backfat thickness (BFT), longissimus dorsi muscle area (LMA) and marbling score, respectively. Among the significant 129 SNPs, 56 SNPs had additive effects, 20 SNPs dominance effects, and 53 SNPs both additive and dominance effects, suggesting that dominance inheritance mode be considered in genetic improvement for growth and carcass quality in Hanwoo. The significant SNPs were located at 33 quantitative trait locus (QTL) regions on 18 Bos Taurus chromosomes (i.e. BTA 3, 4, 5, 6, 7, 9, 11, 12, 13, 14, 16, 17, 18, 20, 23, 26, 28, and 29) were detected. There is strong evidence that BTA14 is the key chromosome affecting CWT. Also, BTA20 is the key chromosome for almost all traits measured (WWT, YWT, LMA). Conclusion The application of various additive and dominance SNP models enabled better characterization of SNP inheritance mode for growth and carcass quality traits in Hanwoo, and many of the detected SNPs or QTL had dominance effects, suggesting that dominance be considered for the whole-genome SNPs data and implementation of successive molecular breeding schemes in Hanwoo.

Abstract
This study determined the effects of distance travelled, lairage duration and number of stunning shots on the plasma levels of bovine heat shock protein 70 (HSPA1A), cortisol (CORT) and glucose (GLU) and their relationship with beef quality. There were positive correlations among HSPA1A, GLU, CORT, a*, b* and the HUE angle. Animals that were stunned more than once had the highest HSPA1A (13.61±2.874ng/ml) and CORT (109.36±8.373nmol/L) levels. Animals that travelled for 200<400km had lower HSPA1A expression (8.29±2.026ng/ml) than those that were transported for 400<800km (12.11±2.548ng/ml) and <200km (17.32±2.362ng/ml). Lairage duration affected (P<0.05) the expression of HSPA1A, GLU and CORT levels. Animals stunned more than once had elevated CORT and HSPA1A levels. HSPA1A, CORT and GLU were related to beef quality. Stunning of animals more than once increased the levels of blood CORT and HSPA1A.

Abstract
Delivering beef of consistent quality to the consumer is vital for consumer satisfaction and will help to ensure demand and therefore profitability within the beef industry. In Australia, this is being tackled with Meat Standards Australia (MSA), which uses carcass traits and processing factors to deliver an individual eating quality guarantee to the consumer for 135 different 'cut by cooking methods' from each carcass. The carcass traits used in the MSA model, such as ossification score, carcass weight and marbling explain the majority of the differences between breeds and sexes. Therefore, it was expected that the model would predict with eating quality of bulls and dairy breeds with good accuracy. In total, 8128 muscle samples from 482 carcasses from France, Poland, Ireland and Northern Ireland were MSA graded at slaughter then evaluated for tenderness, juiciness, flavour liking and overall liking by untrained consumers, according to MSA protocols. The scores were weighted (0.3, 0.1, 0.3, 0.3) and combined to form a global eating quality (meat quality (MQ4)) score. The carcasses were grouped into one of the three breed categories: beef breeds, dairy breeds and crosses. The difference between the actual and the MSA-predicted MQ4 scores were analysed using a linear mixed effects model including fixed effects for carcass hang method, cook type, muscle type, sex, country, breed category and postmortem ageing period, and random terms for animal identification, consumer country and kill group. Bulls had lower MQ4 scores than steers and females and were predicted less accurately by the MSA model. Beef breeds had lower eating quality scores than dairy breeds and crosses for five out of the 16 muscles tested. Beef breeds were also over predicted in comparison with the cross and dairy breeds for six out of the 16 muscles tested. Therefore, even after accounting for differences in carcass traits, bulls still differ in eating quality when compared with females and steers. Breed also influenced eating quality beyond differences in carcass traits. However, in this case, it was only for certain muscles. This should be taken into account when estimating the eating quality of meat. In addition, the coefficients used by the Australian MSA model for some muscles, marbling score and ultimate pH do not exactly reflect the influence of these factors on eating quality in this data set, and if this system was to be applied to Europe then the coefficients for these muscles and covariates would need further investigation.
