Abstract
Steers (n = 560; initial BW = 420 ± 26 kg) were selected from a pool of 1,040, using the IGENITY Profile DNA test for tenderness, sorted into 1 of 4 tenderness genotype (TG) groups [140 tough (TUF), 140 intermediate (INT), 140 tender (TEND), or 140 mixed (MXD)], and subsequently allocated into 56 pens at random, of which one-half (28 pens, 7 pens from each TG) were supplemented the β-adrenergic agonist zilpaterol hydrochloride (ZH) and the balance fed a control ration. No TG × ZH interaction (P ≥ 0.15) occurred for any measured trait. Cattle from INT TG had less (P < 0.05) DMI during pretreatment (d 0 to 118) and entire trial (d 0 to 143) periods than other TG. Cattle fed ZH had greater (P < 0.01) ADG and G:F, and decreased (P < 0.01) DMI during the treatment period (d 119 to 143). Cattle from the TEND group had greater (P < 0.01) marbling scores, increased (P < 0.02) calculated USDA yield grades (YG), and more (P < 0.02) calculated empty body fat (EBF) than TUF cattle. Cattle receiving ZH during the treatment period had increased (P < 0.01) HCW, dressed yield, and LM area. Additionally, cattle fed ZH exhibited decreased (P < 0.01) EBF, marbling, KPH, and calculated USDA YG. No difference (P > 0.06) in YG distributions were detected among TG, yet TEND cattle were represented by a greater (P < 0.01) proportion of Prime and premium Choice carcasses. Cattle fed ZH exhibited increased (P < 0.01) frequencies of YG 2 carcasses and fewer (P < 0.01) YG 3, 4, and 5 carcasses concurrent with an increase (P < 0.04) in the percentage of Select carcasses. Longissimus steaks from TUF cattle had greater (P < 0.03) Warner-Bratzler Shear Force (WBSF) values at 7 and 14 d postmortem than steaks from INT or TEND cattle. Furthermore, ZH-fed cattle had increased (P < 0.01) WBSF values for all aging periods compared with control cattle. Frequency of steaks with WBSF values <3.9 kg (certified tender) were less (P < 0.05) for the TUF group. Feeding ZH resulted in fewer longissimus steaks (P < 0.01) with WBSF values <3.0 kg (guaranteed tender) across all aging periods; however, no difference in the frequency of steaks with WBSF values <3.9 kg was found after 21 d of aging. Igenity Profile tenderness scores were correlated (P < 0.05) to carcass finish attributes and WBSF values. Commercially available tenderness panels may have the potential to allow for antemortem sorting of cattle into expected tenderness groupings, which could augment feeding management strategies and ultimately lead to increased marketing value for the beef system.

Abstract
The objective of this study was to quantify the environmental and economic impact of withdrawing growth-enhancing technologies (GET) from the U.S. beef production system. A deterministic model based on the metabolism and nutrient requirements of the beef population was used to quantify resource inputs and waste outputs per 454 × 10(6) kg of beef. Two production systems were compared: one using GET (steroid implants, in-feed ionophores, in-feed hormones, and beta-adrenergic agonists) where approved by FDA at current adoption rates and the other without GET use. Both systems were modeled using characteristic management practices, population dynamics, and production data from U.S. beef systems. The economic impact and global trade and carbon implications of GET withdrawal were calculated based on feed savings. Withdrawing GET from U.S. beef production reduced productivity (growth rate and slaughter weight) and increased the population size required to produce 454 × 10(6) kg beef by 385 × 10(3) animals. Feedstuff and land use were increased by 2,830 × 10(3) t and 265 × 10(3) ha, respectively, by GET withdrawal, with 20,139 × 10(6) more liters of water being required to maintain beef production. Manure output increased by 1,799 × 10(3) t as a result of GET withdrawal, with an increase in carbon emissions of 714,515 t/454 × 10(6) kg beef. The projected increased costs of U.S. beef produced without GET resulted in the effective implementation of an 8.2% tax on beef production, leading to reduced global trade and competitiveness. To compensate for the increase in U.S. beef prices and maintain beef supply, it would be necessary to increase beef production in other global regions, with a projected increase in carbon emissions from deforestation, particularly in Brazil. Withdrawing GET from U.S. beef production would reduce both the economic and environmental sustainability of the industry.

Simple Summary The environmental impact of three beef production systems was assessed using a deterministic model. Conventional beef production (finished in feedlots with growth-enhancing technology) required the fewest animals, and least land, water and fossil fuels to produce a set quantity of beef. The carbon footprint of conventional beef production was lower than that of either natural (feedlot finished with no growth-enhancing technology) or grass-fed (forage-fed, no growth-enhancing technology) systems. All beef production systems are potentially sustainable; yet the environmental impacts of differing systems should be communicated to consumers to allow a scientific basis for dietary choices. Abstract This study compared the environmental impact of conventional, natural and grass-fed beef production systems. A deterministic model based on the metabolism and nutrient requirements of the beef population was used to quantify resource inputs and waste outputs per 1.0 × 109 kg of hot carcass weight beef in conventional (CON), natural (NAT) and grass-fed (GFD) production systems. Production systems were modeled using characteristic management practices, population dynamics and production data from U.S. beef production systems. Increased productivity (slaughter weight and growth rate) in the CON system reduced the cattle population size required to produce 1.0 × 109 kg of beef compared to the NAT or GFD system. The CON system required 56.3% of the animals, 24.8% of the water, 55.3% of the land and 71.4% of the fossil fuel energy required to produce 1.0 × 109 kg of beef compared to the GFD system. The carbon footprint per 1.0 × 109 kg of beef was lowest in the CON system (15,989 × 103 t), intermediate in the NAT system (18,772 × 103 t) and highest in the GFD system (26,785 × 103 t). The challenge to the U.S beef industry is to communicate differences in system environmental impacts to facilitate informed dietary choice.

Abstract
The objective of this study was to quantify the effects of zilpaterol hydrochloride (ZH) on feeding performance and fabrication yield of concentrate-finished cull cows. Three hundred twenty commercial cull cows (2 to 10 yr old) were obtained from ranches in Missouri and South Dakota and assigned to 1 of 2 treatments: 1) a control diet containing no ZH and 2) a diet that contained ZH. Cows were fed for 75, 88, or 110 d, and all received the control ration until ZH treatments were initiated. Twenty-four days before slaughter, ZH feeding began for the designated treatment pens; cows were fed ZH [8.33 mg/kg (100% DM basis)] for 20 d with a 4-d withdrawal period before slaughter. No differences (P>0.05) were detected between the 2 treatment groups for initial BW or DMI. Final BW (640.5 vs. 619.1 kg), ADG for the last 24 d (2.75 vs. 2.17 kg), and G:F for the last 24 d (0.160 vs. 0.126) were greater (P<0.01) in cows fed ZH than the control cows. No differences (P > 0.05) were found for lean or skeletal maturity score, fat thickness, LM area, HCW, or calculated yield grade among the 2 treatment groups. Feeding ZH increased (P<0.01) HCW (390.1 vs. 369.2 kg), dressed carcass yield (61.01 vs. 59.45%), and LM area (93.3 vs. 86.5 cm(2)) and decreased (P<0.01) marbling score (Slight(63) vs. Slight(86)) compared with control cows. Cows fed ZH had greater (P<0.05) primal weights for chuck (mock) tender (2.63 vs. 2.28 kg), lip-on rib eye roll (13.54 vs. 12.56 kg), top sirloin butt (12.74 vs. 11.82 kg), top (inside) round (14.58 vs. 12.89 kg), and peeled knuckle (12.87 vs. 11.51 kg) while yielding a decreased percentage of mechanical knife trimmings (1.15 vs. 1.35%; P<0.01) and more top (inside) rounds (3.71 vs. 3.46%; P=0.02) than the control cows. No differences (P>0.07) were found for the remaining fabrication yield attributes. The ZH-treated cows had greater (P<0.05) fabrication dollar values for chuck (mock) tender (8.82 vs. 7.66 $/carcass), lip-on rib eye roll (64.20 vs. 59.56 $/carcass), strip loin (0 × 1; 49.13 vs. 44.75 $/carcass), top sirloin butt (35.60 vs. 33.01 $/carcass), bottom round (flat; 44.23 vs. 39.23 $/carcass), top (inside) round (60.30 vs. 53.33 $/carcass), knuckle (peeled; 44.26 vs. 39.57 $/carcass), and total salable yield (879.50 vs. 803.70 $/carcass) than control cows. These results suggest the feeding of ZH to concentrate-finished cull cows enhances production efficiencies and can add new value to the cull cow market.

Abstract
The objective of this research was to evaluate changes in the muscle conformation of subprimal top-loins (M. longissimus lumborum) from calf-fed Holstein steers fed zilpaterol hydrochloride (ZH). Top-loins (n = 100) were transversely cut into 2.54 cm-thick steaks, weighed, and objectively evaluated via image analysis software for muscle area, width, and length traits. Top-loin steaks from steers fed ZH were heavier (P< 0.01; 367 vs. 337 g) and average muscle area per steak was greater (P < 0.05; 80.9 vs. 77.2 cm(2)) as compared to steaks from control steers. Muscle width (medial-lateral) was not different (P = 0.23) between control steers and those fed ZH. However, steaks from steers fed ZH had greater (P < 0.05) depth (dorsal-ventral) than steaks from control steers throughout the top-loin. The increased muscle depth of top-loins from calf-fed Holstein steers fed ZH may improve the center-of-the-plate salability of a cut that has traditionally suffered from poor muscling.

Abstract
Simulation methods were used to generate 1,000 experiments, each with 3 treatments and 10 experimental units/treatment, in completely randomized (CRD) and randomized complete block designs. Data were counts in 3 ordered or 4 nominal categories from multinomial distributions. For the 3-category analyses, category probabilities were 0.6, 0.3, and 0.1, respectively, for 2 of the treatments, and 0.5, 0.35, and 0.15 for the third treatment. In the 4-category analysis (CRD only), probabilities were 0.3, 0.3, 0.2, and 0.2 for treatments 1 and 2 vs. 0.4, 0.4, 0.1, and 0.1 for treatment 3. The 3-category data were analyzed with generalized linear mixed models as an ordered multinomial distribution with a cumulative logit link or by regrouping the data (e.g., counts in 1 category/sum of counts in all categories), followed by analysis of single categories as binomial proportions. Similarly, the 4-category data were analyzed as a nominal multinomial distribution with a glogit link or by grouping data as binomial proportions. For the 3-category CRD analyses, empirically determined type I error rates based on pair-wise comparisons (F- and Wald chi(2) tests) did not differ between multinomial and individual binomial category analyses with 10 (P = 0.38 to 0.60) or 50 (P = 0.19 to 0.67) sampling units/experimental unit. When analyzed as binomial proportions, power estimates varied among categories, with analysis of the category with the greatest counts yielding power similar to the multinomial analysis. Agreement between methods (percentage of experiments with the same results for the overall test for treatment effects) varied considerably among categories analyzed and sampling unit scenarios for the 3-category CRD analyses. Power (F-test) was 24.3, 49.1, 66.9, 83.5, 86.8, and 99.7% for 10, 20, 30, 40, 50, and 100 sampling units/experimental unit for the 3-category multinomial CRD analyses. Results with randomized complete block design simulations were similar to those with the CRD; however, increasing the size of the random block effect decreased the power of the F-test for the treatment effect. Power of the binomial approach with 4-category nominal data (CRD with 50 sampling units/experimental unit) depended on the probability of the category used, but the type I error rate for individual binomial proportions did not differ (P > 0.43) from the multinomial rate. Overall, analyzing a single binomial category from the multinomial distribution did not affect the type I error rate; however, analyzing multinomial data as a series of binomial proportions increased the experiment-wise type I error rate, and power varied among categories. Within the ordered category probabilities we modeled, power decreased as the number of sampling units per experimental unit decreased. Thus, for variables with probabilities similar to those modeled, power to detect treatment differences in count data from research settings with a small number of animals per pen would be limited.

Abstract
Beef steers (n = 11,877) from 7 studies were fed zilpaterol hydrochloride (ZH) for 0 or 20 to 40 d before slaughter to determine the effects of ZH on subprimal weight and yield. Carcasses were selected based on mean HCW of treatment groups for fabrication into boneless, closely trimmed, or denuded subprimals, lean, fat, and bone. Data from the 7 trials were pooled for statistical analysis. Feeding ZH increased (P < 0.05) weights of all major subprimals compared with steers not supplemented with ZH. Also, subprimals from the hindquarter, including valuable cuts like the tenderloin, strip loin, and top sirloin butt, increased (P < 0.05) as a percentage of cold carcass weight from steers fed ZH. The tenderloin was 0.06 percentage units greater (P < 0.05), the strip loin was 0.08 percentage units greater (P < 0.05), and the top sirloin butt was 0.11 percentage units greater (P < 0.05) in ZH-fed steers when compared with steers not fed ZH. Supplementation of ZH greatly increased (P < 0.05) total saleable carcass yield by 1.76 percentage units, whereas ZH inclusion decreased (P < 0.05) the percentage of fat trim and bone by 0.58 and 1.10 percentage units, respectively. Therefore, ZH can be utilized by the beef industry to improve red meat yield efficiency throughout the beef production chain.

Abstract
Analyses were conducted to evaluate the ability of the USDA yield grade equation to detect differences in subprimal yield of beef-type steers and calf-fed Holstein steers that had been fed zilpaterol hydrochloride (ZH; Intervet Inc., Millsboro, DE) as well as those that had not been fed ZH. Beef-type steer (n = 801) and calf-fed Holstein steer (n = 235) carcasses were fabricated into subprimal cuts and trim. Simple correlations between calculated yield grades and total red meat yields ranged from -0.56 to -0.62 for beef-type steers. Reliable correlations from calf-fed Holstein steers were unobtainable; the probability of a type I error met or exceeded 0.39. Linear models were developed for the beef-type steers to predict total red meat yield based on calculated USDA yield grade within each ZH duration. At an average calculated USDA yield grade of 2.9, beef-type steer carcasses that had not been fed ZH had an estimated 69.4% red meat yield, whereas those fed ZH had an estimated 70.7% red meat yield. These results indicate that feeding ZH increased red meat yield by 1.3% at a constant calculated yield grade. However, these data also suggest that the calculated USDA yield grade score is a poor and variable estimator (adjusted R(2) of 0.31 to 0.38) of total red meat yield of beef-type steer carcasses, regardless of ZH feeding. Moreover, no relationship existed (adjusted R(2) of 0.00 to 0.01) for calf-fed Holstein steer carcasses, suggesting the USDA yield grade is not a valid estimate of calf-fed Holstein red meat yield.
