Abstract
Bovine subclinical mastitis can cause great harm to dairy herds because of its negative impact on milk production and quality and cow health. Improved diagnostic tools are needed to maximise the control of subclinical mastitis distribution and ensure the high quality of milk as an industrial product. Between 2015 and 2020, seventy-two dairy herds were screened for bovine subclinical mastitis causative agents to identify the relationship between seasons, lactose levels and subclinical mastitis infection. The predominant species found in the milk samples were mixed microbiota, coagulase-negative Staphylococcus and Staphylococcus aureus. Yeasts were found exclusively in autumn, while Enterococcus spp. and Escherichia coli were only found in summer and autumn. A negative correlation was detected between milk lactose and number of somatic cells in milk (-0.471; p < 0.001). The lactose levels in milk were closely associated with the prevalence (%) of subclinical mastitis pathogens, such as Streptococcus agalactiae (y = -1.8011x + 10.867, R2 = 0.9298), Staph. aureus (y = -3.5216x + 25.957, R2 = 0.8604) and other Streptococci (y = -0.5956x + 7.6179, R2 = 0.6656). These findings suggest that milk lactose may be used as a biomarker of suspected udder inflammation in modern health prevention programmes for cows to reduce the prevalence of subclinical mastitis pathogens in dairy cattle herds.

Abstract
Simple Summary Invisible (subclinical) mastitis decreases milk quality and production. Invisible mastitis is linked to an increased use of antimicrobials. The risk of the emergence of antimicrobial-resistant bacteria is a major public health concern worldwide. Therefore, early detection of infected cows is of great importance. Machine learning has opened a new avenue for early mastitis prediction based on simple and accessible milking parameters, such as milk volume, fat, protein, lactose, electrical conductivity (EC), milking time, and milking peak flow. However, farm heterogeneity is a major challenge where multiple patterns can predict mastitis. Here, we employed a classification based on associations and scaling approach for multiple pattern discovery over multiple years. The approach we have developed helps to address farm heterogeneity and generalise machine learning-based diagnosis of mastitis worldwide. Abstract Subclinical mastitis, an economically challenging disease of dairy cattle, is associated with an increased use of antimicrobials which reduces milk quantity and quality. It is more common than clinical mastitis and far more difficult to detect. Recently, much attention has been paid to the development of machine-learning expert systems for early detection of subclinical mastitis from milking features. However, differences between animals within a farm as well as between farms, particularly across multiple years, are major obstacles to the generalisation of machine learning models. Here, for the first time, we integrated scaling by quartiling with classification based on associations in a multi-year study to deal with farm heterogeneity by discovery of multiple patterns towards mastitis. The data were obtained from one farm comprising Holstein Friesian cows in Ongaonga, New Zealand, using an electronic automated monitoring system. The data collection was repeated annually over 3 consecutive years. Some discovered rules, such as when the milking peak flow is low, electrical conductivity (EC) of milk is low, milk lactose is low, milk fat is high, and milk volume is low, the cow has subclinical mastitis, reached high confidence (>70%) in multiple years. On averages, over 3 years, low level of milk lactose and high value of milk EC were part of 93% and 83.8% of all subclinical mastitis detecting rules, offering a reproducible pattern of subclinical mastitis detection. The scaled year-independent combinational rules provide an easy-to-apply and cost-effective machine-learning expert system for early detection of hidden mastitis using milking parameters.

Abstract
Objective The aim of the study was to evaluate the influence of gene polymorphisms and nongenetic factors on the somatic cell score (SCS) in the milk of Holstein (n = 148) and Simmental (n = 73) cows and their crosses (n = 6). Methods The SCS was calculated by the formula SCS = log2(SCC/100,000)+3, where SCC is the somatic cell count. Polymorphisms in the casein alpha S1 (CSN1S1), beta-casein (CSN2), kappa-casein (CSN3), beta-lactoglobulin (LGB), acyl-CoA diacylglycerol transferase 1 (DGAT1), leptin (LEP), fatty acid synthase (FASN), stearoyl CoA desaturase 1 (SCD1), and 1-acylglycerol-3-phosphate O-acyltransferase 6 (AGPAT6) genes were genotyped, and association analysis to the SCS in the cow’s milk was performed. Further, the impact of breed, farm, year, month of the year, lactation stage and parity on the SCS were analysed. Phenotype correlations among SCS and milk constituents were computed by Pearson correlation coefficients. Results Only CSN2 genotypes A1/A2 were found to have significant association with the SCS (p<0.05), and alleles of CSN1S1 and DGAT1 genes (p<0.05). Other polymorphisms were not found to be significant. SCS had significant association with the combined effect of farm and year, lactation stage and month of the year. Lactation parity and breed had not significant association with SCS. The phenotypic correlation of SCS to lactose content was negative and significant, while the correlation to protein content was positive and significant. The correlations of SCS to fat, casein, nonfat solids, urea, citric acid, acetone and ketones contents were very low and not significant. Conclusion Only CSN2 genotypes, CSN1S1 and DGAT1 alleles did show an obvious association to the SCS. The results confirmed the importance of general quality management of farms on the microbial milk quality, and effects of lactation stage and month of the year. The lactose content in milk reflects the health status of the udder.

Abstract
Simple Summary Dairy herds in alpine areas usually adopt summer grazing, mainly to reduce feeding costs. This practice is related to the maintenance of local traditions and to the manufacturing of niche dairy products. However, it is important to assess the impact of this practice on cattle health. This case study investigated how milk-related health traits vary across extensive grazing during the summer period, using data collected in a dairy herd whose cows were repeatedly controlled for individual milk samples. Although the transition from barn farming to pasture led to a reduction in milk production, proper grazing management can make dairy cows more resilient in terms of udder health and metabolic efficiency. Findings of the present research report suggested that pasture can be adopted to maintain dairy herd sustainability without impairing animal health. Abstract Extensive summer grazing is a dairy herd management practice frequently adopted in mountainous areas. Nowadays, this activity is threatened by its high labour demand, but it is fundamental for environmental, touristic and economic implications, as well as for the preservation of social and cultural traditions. Scarce information on the effects of such low-input farming systems on cattle health is available. Therefore, the present case study aimed at investigating how grazing may affect the health status of dairy cows by using milk traits routinely available from the national milk recording scheme. The research involved a dairy herd of 52 Simmental and 19 Holstein × Simmental crossbred cows. The herd had access to the pasture according to a rotational grazing scheme from late spring up to the end of summer. A total of 616 test day records collected immediately before and during the grazing season were used. Individual milk yield was registered during the milking procedure. Milk samples were analysed for composition (fat, protein, casein and lactose contents) and health-related milk indicators (electrical conductivity, urea and β-hydroxybutyrate) using mid-infrared spectroscopy. Somatic cell count (SCC) and differential SCC were also determined. Data were analysed with a linear mixed model, which included the fixed effects of the period of sampling, cow breed, stage of lactation and parity, and the random effects of cow nested within breed and the residual. The transition from barn farming to pasture had a negative effect on milk yield, together with a small deterioration of fat and protein percentages. Health-related milk indicators showed a minor deterioration of the fat to protein ratio, differential SCC and electrical conductivity, particularly towards the end of the grazing season, whereas the somatic cell score and β-hydroxybutyrate were relatively constant. Overall, the study showed that, when properly managed, pasture grazing does not have detrimental effects on dairy cows in terms of udder health and efficiency. Therefore, the proper management of cows on pasture can be a valuable solution to preserve the economic, social and environmental sustainability of small dairy farms in the alpine regions, without impairing cows’ health.

Abstract
Milk contains several important nutrients that are beneficial for human health. This review considers the nutritional qualities of essential fatty acids (FAs), especially omega-3 (ω-3) and omega-6 (ω-6) polyunsaturated fatty acids (PUFAs) present in milk from ruminant and non-ruminant species. In particular, the impact of milk fatty acids on metabolism is discussed, including its effects on the central nervous system. In addition, we presented data indicating how animal feeding—the main way to modify milk fat composition—may have a potential impact on human health, and how rearing and feeding systems strongly affect milk quality within the same animal species. Finally, we have presented the results of in vivo studies aimed at supporting the beneficial effects of milk FA intake in animal models, and the factors limiting their transferability to humans were discussed.

Abstract
Milk production systems in several countries show considerable differences between seasons. For example, in the Netherlands, cows are kept inside and fed silage in winter, whereas they are on pasture in summer. The differences between seasons affect milk yield and composition and might influence the genetic background of milk production traits. The objective of this study was to estimate phenotypic and genetic effects of season on milk production traits. For this purpose, 19,286 test-day milk production records of 1,800 first-parity Dutch Holstein-Frisian cows were available, and these cows were genotyped using a 50K SNP panel. Phenotypic effects of season were significant for all milk production traits. Effects of season were large for milk fat yield, fat content, and protein content. Genetic correlations between milk production traits in different seasons showed that genotype by season interaction effects were relatively small for most milk production traits. The genetic background of protein content and lactose content seems to be sensitive to seasonal effects. Furthermore, the genetic correlations between spring and autumn differed significantly from unity for almost all milk production traits. A genome-wide association study for genotype by season interaction identified chromosomal regions on BTA3, BTA14, BTA20, and BTA25 that showed genotype by season interaction effects, including a region containing DGAT1, which showed interaction effects for fat content and protein content.

Abstract
The aim of this study was to investigate the variation of gross composition, somatic cell count, urea content, and fatty acids (FA) composition of bulk milk from single-breed and multi-breed farms in alpine area, keeping either Brown Swiss (BS), Holstein Friesian (HF), Simmental (SI), or their combinations. Gross milk composition, urea content, and FA composition were predicted using mid-infrared spectroscopy. Observations were grouped in 7 combinations consisting of 3 singlebreed and 4 multi-breed types of herd. A mixed linear model was used for data analysis, accounting for the fixed effects of herd composition (7 combinations), month of sampling, year of sampling, and the interactions between herd composition and month of sampling, and between herd composition and year of sampling. Farm was included as random effect. Results highlighted that about two thirds of South Tyrolean farms were single-breed and herds with more than 20 lactating cows changed herd structure over time, switching from multi- to single-breed. Single-breed BS farms produced milk with greater fat, protein, casein, lactose, and FA content than single-breed HF and SI farms. Further, multi-breed herds including BS cows produced milk with greater fat, protein, casein, and polyunsaturated FA content than multi-breed HF+SI herds. Overall, single-breed SI farms produced milk with lower somatic cell count than other herd combinations. Despite the number of BS cows in South Tyrol has decreased in favor of SI in the last years, this breed is still the most interesting for alpine dairy farming to achieve optimal milk quality in both single- and multi-breed scenarios. The tendency to move to SI is mainly related to good milk performance of SI cows coupled with their robustness, high carcass value, high market value of calves, and adaptability to mountain farming system.

Abstract
Changes in milk production traits over time might be informative of the health status of cows and may contain useful information for selective breeding purposes. In particular, early indicators are useful for traits such as longevity, which become available late in the cow's life. Lactose percentage (LP) tends to decrease in the presence of udder infection and with parity. Therefore, it can be hypothesized that cows exhibiting limited changes in LP across lactations have experienced fewer udder infections in their productive life and have a higher chance to stay longer in the herd than cows with more pronounced reduction of LP across lactations. In this study, 9 descriptors of change in LP during a cow's lifetime were defined and evaluated as potential indicators for selective breeding. For the purpose of this study, test-day records of the first 44 days in milk (DIM) of each lactation were discarded, and cows were required to have at least 5 test-days/cow per lactation (≥45 DIM) over the first 3 lactations. In this study, descriptors of LP were available for 69,586 Italian Holstein cows. Changes in LP in each lactation were quantified by regressing LP on DIM; thus, β1, β2, and β3 represented the changes in LP within lactations 1, 2, and 3, respectively. Changes in LP across multiple lactations were also quantified by regressing LP on DIM (with exclusion of the first 44 DIM of each lactation); briefly, β12 was the change of LP over lactation 1 and 2, β23 was the change of LP over lactation 2 and 3, and β123 was the change of LP over lactation 1, 2, and 3. Alternatively, changes in the LP lactation means (Δ) were quantified between lactations 1 and 2 (Δ12), 2 and 3 (Δ23), and 1 and 3 (Δ13). For comparison, β and Δ were also derived for milk yield (kg/d), somatic cell score, and log-transformed total somatic cells excreted daily in milk (units). Variance components and estimated breeding values (EBV) for all β's and Δ's were estimated. In addition, EBV for bulls with at least 25 daughters were used to assess Calo's genetic correlations between descriptors of change in LP with official published EBV for functional traits. Heritabilities for β and Δ of LP ranged from 0.06 (Δ23) to 0.20 (Δ13), and differed significantly from 0. Furthermore, LP EBV for β and Δ were correlated with official EBV for functional longevity index, udder health index, udder score (mammary gland morphology) index, and milk persistency; Calo's genetic correlations of LP β123 with functional longevity and udder health index were 0.52 and 0.33, respectively. Cows with a stronger reduction of LP across lactations (i.e., stronger and negative β, and greater and positive Δ) were characterized by lower milk persistency, impaired longevity, and worse udder health and morphology than cows with smaller reduction in LP across lactations. Results highlighted that changes in milk LP have the potential to be exploited as indicators for functional traits in Italian Holstein cattle. Further research on the biological relationship between changes in LP and mastitis is recommended.

Abstract
Beef, pork, chicken and milk are considered representative protein sources in the human diet. Since the digestion of protein is important, the role of intestinal microflora is also important. Despite this, the pure effects of meat and milk intake on the microbiome are yet to be fully elucidated. To evaluate the effect of beef, pork, chicken and milk on intestinal microflora, we observed changes in the microbiome in response to different types of dietary animal proteins in vitro. Feces were collected from five 6-week-old pigs. The suspensions were pooled and inoculated into four different media containing beef, pork, chicken, or skim milk powder in distilled water. Changes in microbial communities were analyzed using 16S rRNA sequencing. The feces alone had the highest microbial alpha diversity. Among the treatment groups, beef showed the highest microbial diversity, followed by pork, chicken, and milk. The three dominant phyla were Proteobacteria, Firmicutes, and Bacteroidetes in all the groups. The most abundant genera in beef, pork, and chicken were Rummeliibacillus, Clostridium, and Phascolarctobacterium, whereas milk was enriched with Streptococcus, Lactobacillus, and Enterococcus. Aerobic bacteria decreased while anaerobic and facultative anaerobic bacteria increased in protein-rich nutrients. Functional gene groups were found to be over-represented in protein-rich nutrients. Our results provide baseline information for understanding the roles of dietary animal proteins in reshaping the gut microbiome. Furthermore, growth-promotion by specific species/genus may be used as a cultivation tool for uncultured gut microorganisms.

Abstract
Pregnancy is a prerequisite for the initiation of lactation and for maintaining the milk production cycle. Pregnancy affects milk production and therefore should be accounted for in the genetic evaluation. Furthermore, there might be genetic differences in pregnancy effects on milk composition. The objective of this study was to estimate phenotypic and genetic effects of pregnancy on milk production traits. For this purpose, test-day records and conception dates of 1,359 first-parity Holstein-Friesian cows were analyzed. Significant effects of pregnancy on all milk production traits were detected except somatic cell score (e.g., the cumulative effects of pregnancy on milk yield were -247 kg). The pregnancy effects on milk yield, lactose yield, protein yield, fat yield, and fat content were small during early gestation (<150 d) and substantially increased in late gestation. The effects of pregnancy on milk protein yield were relatively stronger than those on fat yield. The effects of pregnancy on milk production traits differed for DGAT1 genotypes. Milk yield, lactose yield, protein yield, and fat yield of DGAT1 AA cows were more affected by pregnancy than that of DGAT1 KK cows (e.g., the cumulative effects of pregnancy on milk yield were negligible for DGAT1 KK cows and were -443 kg for DGAT1 AA cows). These results suggest that DGAT1 KK cows may be more suitable for shortening or omitting the dry period than DGAT1 AA cows.

Abstract
Mastitis is still the costliest disease in milk production. In particular, its subclinical form, which may spread unnoticeably within a herd, is a major challenge. Somatic cell count (SCC) is broadly used as an indicator for mastitis and thus the basis for udder health management programmes, e.g. through dairy herd improvement (DHI) testing. Since recently, differential somatic cell count (DSCC, representing the combined proportion of polymorphonuclear neutrophils and lymphocytes as a percentage of total SCC) is available in addition. Our study was aimed to investigate dairy cow performance in four newly defined udder health groups (UHG) based on SCC and DSCC results from DHI testing. In total, 961,835 test-day results generated in Austria, China, Estonia, Germany, and Spain between January 2019 and March 2020 were available for data analyses. Cows were categorised into four UHG depending on test day SCC and DSCC results (UHG A: healthy/normal, ≤200,000 cells/mL and ≤65 %; B: suspicious, ≤200,000 cells/mL and >65 %; C: mastitis, >200,000 cells/mL and >65 %; D: chronic/persistent mastitis, >200,000 cells/mL and ≤65 %). Linear mixed effect models were used to compare the performance of cows between the UHG based on the parameters milk weight, energy-corrected milk, fat, protein, lactose, and estimated milk value. Highest performance was found for cows in UHG A and ranged between 21.4 (Austria) and 38.3 kg per cow and day (Spain). Interestingly, cows in group B were significantly less productive (0.9-2.4% less daily milk production) compared to those in group A. Cows in groups C (6.0-9.8% less daily production compared to group A) and D were, as expected, even less productive with a particularly significant drop for cows in group D (17.5-38.5% less daily production). These trends could be observed in all countries involved in this study. Proportions of cows in the four different UHG differed between countries, changed slightly within countries depending on season, differed depending on parity and days in milk, and were seen to vary hugely between herds. In conclusion, this study demonstrates changes in performance of dairy cows depending on their udder health status as defined based on the combination of SCC and DSCC. In particular cows in UHG B and D are of interest as they cannot be identified working with SCC only. Nevertheless, the actual udder health management measures that could be taken based on the new UHG still require further investigation.

Abstract
At the beginning of lactation, high-producing cows commonly experience an unbalanced energy status that is often responsible for the onset of metabolic disorders and impaired health and performance. Blood β-hydroxybutyrate (BHB) and nonesterified fatty acids (NEFA) are indicators of excessive fat mobilization and circulating ketone bodies. Recently, prediction models based on mid-infrared (MIR) spectroscopy have been developed to assess blood BHB and NEFA from routinely collected individual milk samples. This study aimed to estimate genetic parameters of blood BHB and NEFA predicted from milk MIR spectra and to assess their phenotypic and genetic correlations with milk production and composition traits in early-lactation Holstein cows. The data set comprised the first test-day record within lactation and spectra of individual milk samples (n = 22,718) of 13,106 Holstein cows collected from 5 to 35 d in milk (DIM). Blood BHB and NEFA were predicted from milk MIR spectra using previously developed prediction models. Genetic parameters of blood metabolites and milk traits were estimated for the whole observational period (5-35 DIM) and within 6 classes of DIM. Blood BHB and NEFA showed similar genetic variation across DIM, with the highest heritability in the first 10 d after calving (0.31 ± 0.06 and 0.19 ± 0.05 for BHB and NEFA, respectively). The genetic correlation between BHB and NEFA was moderate (0.51 ± 0.05). Genetic correlations of BHB with milk yield, SCS, protein percentage, lactose percentage, and urea nitrogen content were similar to, or at least in the same direction as, the correlations of NEFA with the same traits, whereas opposite correlations were observed with fat percentage and fat-to-protein ratio. Results of the current study suggest that blood BHB and NEFA predicted from milk MIR spectra have genetic variation that is potentially exploitable for breeding purposes. Therefore, they could be used as indicator traits of hyperketonemia in a selection index aimed to reduce the susceptibility of dairy cows to metabolic disorders in early lactation.

Abstract
In Southern Italy, buffalo (Bubalus bubalis) milk is mostly intended for the manufacture of Mozzarella di Bufala Campana Protected Denomination of Origin (PDO) cheese. Despite the economic boost of the last 2 decades, the buffalo farming system should be improved to maximize the efficiency of the dairy industry, improve yield and quality of milk and cheese, and work toward better animal welfare. Milk somatic cell count (SCC) is used worldwide as an indicator of udder health in individual milk and is useful for monitoring farm hygiene in bulk milk. Mastitis data are currently not available on a large scale in Italy; thus, SCC is essential for identifying animals with suspected udder infection and inflammation. Moreover, high milk SCC is associated with altered composition and acidity, and poor technological properties of milk. However, payment systems of the PDO area are based simply on the delivered volume of milk rather than on quality characteristics. Hence, currently there are no penalties for elevated SCC in bulk milk in the Italian buffalo dairy industry. In addition, SCC for buffalo milk is not mentioned by either the European Community regulations or the PDO protocol, evidencing a lack of rules for the maximum SCC limit. To provide a phenotypic characterization of SCC at the population level and to improve knowledge on buffalo milk quality, 876,299 test-day records of 70,156 buffaloes reared in the PDO area were analyzed. Data revealed that around 11% of herd-test-dates (≥5 animals sampled each) showed average milk SCC ≥400,000 cells/mL (i.e., above the threshold fixed by the European Community for bovine milk). This suggests that there is room to improve SCC at both the farm and individual level. Within first parity, more than 28 and 15% of lactations had average SCC ≥200,000 and ≥300,000 cells/mL, respectively. Both percentages increased with parity and were 39 and 25% in sixth parity, respectively. Supporting this, the proportion of lactations with average SCC ≥500,000 cells/mL increased from 6% in first parity to 12% in sixth parity. Milk yield and SCC were negatively correlated with each other, especially when SCC level was high. An ANOVA was carried out on test-day record milk yield and composition traits, with fixed effects of parity, lactation stage, class of somatic cell score (n = 6), month of calving, and their interactions; buffalo, herd-test-date, and residual were considered random effects. Significantly lower milk yield and lactose percentage were estimated in progressively higher classes of somatic cell score, whereas no significant differences were observed for fat and protein percentages. This is the first attempt to investigate milk SCC in a large data set of Italian dairy buffaloes. These findings may be helpful for defining reliable and effective SCC thresholds to be adopted whenever specific penalties for high SCC are included in milk payment systems. Finally, these results could be used in mastitis monitoring plans aiming to reduce SCC and udder issues at both the individual and farm levels in the Italian buffalo population.

Abstract
Substantial evidence demonstrates that the genetic background of milk production traits changes during lactation. However, most GWAS for milk production traits assume that genetic effects are constant during lactation and therefore might miss those quantitative trait loci (QTL) whose effects change during lactation. The GWAS for genotype by lactation stage interaction are aimed at explicitly detecting the QTL whose effects change during lactation. The purpose of this study was to perform GWAS for genotype by lactation stage interaction for milk yield, lactose yield, lactose content, fat yield, fat content, protein yield, and somatic cell score to detect QTL with changing effects during lactation. For this study, 19,286 test-day records of 1,800 first-parity Dutch Holstein cows were available and cows were genotyped using a 50K SNP panel. A total of 7 genomic regions with effects that change during lactation were detected in the GWAS for genotype by lactation stage interaction. Two regions on Bos taurus autosome (BTA)14 and BTA19 were also significant based on a GWAS that assumed constant genetic effects during lactation. Five regions on BTA4, BTA10, BTA11, BTA16, and BTA23 were only significant in the GWAS for genotype by lactation stage interaction. The biological mechanisms that cause these changes in genetic effects are still unknown, but negative energy balance and effects of pregnancy may play a role. These findings increase our understanding of the genetic background of lactation and may contribute to the development of better management indicators based on milk composition.

Abstract
Simple Summary The buffalo dairy industry has deep roots in Southern Italy, due to the traditional link with Mozzarella di Bufala, a Protected Designation of Origin cheese with high economic value and market demand. At farm level, strategies aiming to improve milk yield and quality are essential to maximize profitability and dairy chain efficiency. In this study, we analyzed a large data set of Italian Buffaloes (around 70 thousands animals) in order to detect the phenotypic sources of variation of milk yield and quality traits, disclose exploitable favorable correlations among milk traits, and provide useful information for dairy buffalo chain stakeholders. Abstract The buffalo milk industry has economic and social relevance in Italy, as linked to the manufacture of traditional dairy products. To provide an overview of the current status of buffaloes’ performances on a large scale, almost 1 million milk test-day records from 72,294 buffaloes were available to investigate milk yield, energy corrected milk, fat, protein, and lactose content, and somatic cell score (SCS). Phenotypic correlations between milk traits were calculated and analysis of variance was carried out through a mixed model approach including fixed effect of parity, stage of lactation, sampling time, month of calving, and all their interactions and random effects of buffalo, herd-test-date, and residual. Third-parity buffaloes were the most productive in terms of milk yield, while the lowest solid content was detected in sixth parity buffaloes. A considerable gap between primiparous and multiparous buffaloes was observed for milk yield, especially in early- and mid-lactation. Overall, SCS progressively increased with parity and showed a negative correlation with milk yield in both primiparous (−0.12) and multiparous (−0.14) buffaloes. Results suggested that, at the industrial level, milk of primiparous buffaloes may be preferred for transformation purposes, since it was characterized by greater solid content and lower SCS. Results of this study provide a picture of the Italian population of buffaloes under systematic performance records and might be beneficial to both dairy industry and breeding organizations.

Abstract
High milk somatic cell count (SCC) influences milk production and quality; however, very little is known about the effect of low SCC on milk quality, especially in terms of mineral content and coagulation properties. Thus, the present study aimed to investigate the effects of somatic cell score (SCS), calculated as log2(SCC/100) + 3, on milk yield, composition (fat, crude protein, casein, lactose, milk urea nitrogen, protein fractions, and mineral contents), and coagulation properties of Brown Swiss, Holstein Friesian, and Simmental cows from multibreed herds. Milk composition and coagulation traits were predicted using mid-infrared spectroscopy. The data set comprised 95,591 observations of 6,940 cows in 313 multibreed herds, collected from January 2011 to December 2017. Observations were divided into 8 classes based on SCS. Statistical analysis was performed using a linear mixed model, which included breed, parity, stage of lactation, SCS class, and their interactions as fixed effects, and herd test day, cow, and residual as random effects. The probability that cows experienced SCS > 4.00 at 30 ± 5, 60 ± 5, or 90 ± 5 d after the observation test day was calculated for each SCS class, and odds ratios to the reference class (-1.00 < SCS ≤ 0.00) were reported. Results showed that the relationship between SCS and milk traits followed a third-order polynomial regression. The average loss of milk, fat, and crude protein yields were 0.43, 0.01, and 0.01 kg/d, respectively, for each SCS unit higher than 1.00. Very low SCS (<-1.00) had detrimental effects on milk yield and quality traits similar to or even stronger than high SCS (>4.00). Moreover, cows with SCS lower than -1.00 on a test day were about 7 times more likely to present high SCS within the following 90 ± 5 d than cows with SCS between -1.00 and 0.00. Breeds responded similarly to the increase of SCS, but the overall loss of fat and crude protein yields, and several minerals among Holstein Friesian were lower with increasing SCS. The best milk yield and quality were observed between SCS 0.00 and 1.00, but milk quality of Holstein Friesians started to decrease at lower SCS compared with milk quality of Brown Swiss and Simmental cows. Results suggest a breed-dependent optimum of SCS, and highlighted that very low SCS can be an indicator of udder health problems and, thus, may be used for early detection of mastitis.

Abstract
Goat milk is globally consumed but nutritional profiling at retail level is scarce. This study compared the nutrient composition of retail cow and goat milk (basic solids, fatty acids, minerals, and phytoestrogens) throughout the year and quantified the potential implications on the consumers' nutrient intakes. When compared to cow milk, goat milk demonstrated nutritionally desirable traits, such as lower concentrations of C12:0, C14:0, C16:0 and Na: K ratio, and the higher concentrations of cis polyunsaturated fatty acids (PUFA), eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA), isoflavones, B, Cu, Mg, Mn, P and I, although the latter may be less desirable in cases of high milk intakes. However, in contrast with nutritional targets, it had lower concentrations of omega-3 PUFA, vaccenic acid, lignans, Ca, S and Zn. The extent of these differences was strongly influenced by season and may demonstrate a combination of differences on intrinsic species metabolism, and farm breeding/husbandry practices.
