Abstract
This study aims to assess, by means of a full factorial design, the effect of storage temperature (10-30 °C), water activity (aw, 0.87-0.89), headspace oxygen (O2) level (0.15-0.80%) and pasteurization intensity (95 °C-105 °C/15sec) on the time to visible growth (tv, days) of Aspergillus fischerianus on acidified Potato Dextrose Agar (aPDA, pH 3.6) for up to 90 days. Moreover, in order to validate the results obtained on aPDA, 12 conditions were selected and assessed in concentrate strawberry-puree based medium. Overall, storage temperature had the greatest effect on the tv of A. fischerianus on the evaluated conditions. At 10 °C, no visible growth was observed over the 90 day incubation period, whilst visible mycelia (diameter ≥ 2 mm) were present in 37% and 89% of the conditions at 22 °C and 30 °C, respectively. Pasteurization intensity had only a minor effect on the outgrowth of A. fischerianus. Growth inhibition was observed when aw was reduced to 0.870 ± 0.005 in combination with very low headspace O2 levels (0.15% ± 0.10) in both, aPDA and concentrate strawberry-based media, regardless of the incubation temperature and heat pasteurization intensity. Overall, longer tv's were required when incubation was done at 22 °C compared to 30 °C. Ultimately, the effect of O2 (0.05 and 1%) and pasteurization intensity (95 °C and 105 °C/15sec) were evaluated on totally 22 fruit purees (un-concentrates and concentrates) over a 60 day storage period. None of the concentrates purees (aw ≤0.860) evaluated in this study supported the growth of A. fischerianus. On the other hand, A. fischerianus growth inhibition was only observed when the O2 levels were ≤0.05% on un-concentrates fruit purees (aw ≥ 0.980) stored at ambient temperature (22 °C). Combination of multiple stress factors effectively inhibited growth of A. fischerianus. In general, storage of fruit purees at low temperatures (<10 °C) or distribution in the form of concentrates can be considered as important strategies to prevent the growth of spoilage associated heat-resistant moulds.

Abstract
Ethnopharmacological use of plant natural extracts has been known since ancient times. The optimization of plant molecule extraction is fundamental in obtaining relevant extraction yields. The main purpose of this study was to understand the role of different extraction techniques (solid-liquid, ultrasound, Soxhlet, and microwave) and solvents (water, methanol, ethanol, acetone, dichloromethane, and hexane) on the antimicrobial and antioxidant activities of extracts from Olea europaea (olive) and Acacia dealbata (mimosa). Crude plant extracts were evaluated for their antimicrobial activity against Staphylococcus aureus and Escherichia coli by the disk diffusion method. The antioxidant capacity of the extracts was determined by ABTS (2,2-azinobis (3-ethyl-benzothiazoline-6-sulfonic acid)) and DPPH (2,2-diphenyl-1-picrylhydrazyl) methods. In terms of extraction yield, ultrasound extraction and the solvents methanol, acetone (O. europaea) or water (A. dealbata) were found to be the best options. However, ethanol and acetone proved to be the best solvents to extract compounds with antimicrobial activity and antioxidant capacity, respectively (regardless of the extraction method employed). Soxhlet and microwave were the best techniques to extract compounds with antimicrobial activity, whereas any of the tested techniques showed the ability to extract compounds with antioxidant capacity. In most of the cases, both plant extracts (mimosa and olive) were more efficient against S. aureus than E. coli. In the present study, both mimosa and olive leaf crude extracts proved to have antimicrobial and antioxidant activities, increasing the demand of these natural products as a source of compounds with health benefits.

Abstract
Sustainable utilization of agri-food wastes and by-products for producing value-added products (for cosmetic, pharmaceutical or food industrial applications) provides an opportunity for earning additional income for the dependent industrial sector. Besides, effective valorisation of wastes/by-products can efficiently help in reducing environmental stress by decreasing unwarranted pollution. The major focus of this review is to provide comprehensive information on valorisation of agri-food wastes and by-products with focus laid on bioactive compounds and bioactivity. The review covers the bioactives identified from wastes and by-products of plants (fruits, exotic fruits, vegetables and seeds), animals (dairy and meat) and marine (fish, shellfish seaweeds) resources. Further, insights on the present status and future challenges of sustainably utilizing agri-food wastes/by-products for value addition will be highlighted.

Abstract
Table grapes are largely produced and consumed in the Mediterranean area. Furthermore, in the last years, the commercial interest in table grapes and other non-alcoholic grape products has notably increased worldwide. In addition to the nutritional aspects, polyphenol compounds in fresh grapes could exert positive effects on human health. The aim of this study was the characterization of the phenolic pattern of sixteen grape varieties and the evaluation of the associated antioxidant capacity and anti-inflammatory activity at gastric level. The methods used were: 1) Folin-Cocalteau's assay for the quantification of total polyphenol content; 2) High-Performance Liquid Chromatography (HPLC) coupled with Diode-Array Detector (DAD) to perform the quantitative analysis of grapes phenolic fraction 3) DPPH (1,1,-diphenil-2-picrylhydrazyl) spectrophotometric assay for the assessment of radical scavenging activity; 4) assessment of IL-8 release from human gastric epithelial cells to evaluate the anti-inflammatory activity of grape extracts. Some grapes, including seedless varieties, showed that the phenolic pattern was highly correlated with the biological activities, and, in particular, with peel and seeds portion. These results suggest that selected grape varieties could represent, also for consumers who do not drink wine, a source of healthy compounds potentially able to counteract oxidative stress and gastric inflammation.

Abstract
The effects of nanoparticles (NPs) on plants are contrasting; these depend on the model plant, the synthesis of the nanoparticles (concentration, size, shape), and the forms of application (foliar, substrate, seeds). For this reason, the objective of this study was to report the impact of different concentrations of selenium (Se) and copper (Cu) NPs on yield, antioxidant capacity, and quality of tomato fruit. The different concentrations of Se and Cu NPs were applied to the substrate every 15 days (five applications). The yield was determined until day 102 after the transplant. Non-enzymatic and enzymatic antioxidant compounds were determined in the leaves and fruits as well as the fruit quality at harvest. The results indicate that tomato yield was increased by up to 21% with 10 mg L-1 of Se NPs. In leaves, Se and Cu NPs increased the content of chlorophyll, vitamin C, glutathione, 2,2'-azino-bis(3-ethylbenzthiazolin-6-sulfonic acid (ABTS), superoxide dismutase (SOD), glutathione peroxidase (GPX) and phenylalanine ammonia liasa (PAL). In fruits, they increased vitamin C, glutathione, flavonoids, firmness, total soluble solids, and titratable acidity. The combination of Se and Cu NPs at optimal concentrations could be a good alternative to improve tomato yield and quality, but more studies are needed to elucidate their effects more clearly.

Abstract
Several studies have shown that fresh grape and its derivatives contain phenolic compounds exhibiting antioxidant and health promoting effects, particularly in relation to the cardiovascular system. In this study, two methods were developed to characterize sixteen varieties of table and wine grapes: (1) a LC-MS method to identify major and minor phenolic compounds; and (2) a HPLC-DAD method to quantify the most representative compounds. Sixty-seven molecules belonging to different classes of phenolic compounds were identified: anthocyanins, flavan-3-ols, flavonols, stilbenes and organic acids. In parallel, the free radical scavenging activity and anti-inflammatory activities of the 16 grape varieties were evaluated. The results showed a good correlation between the total phenolic content and the biological activity. Extracts from Exalta and Albarossa grape varieties were the most active in reducing IL-8 release by gastric epithelial cells (IC50 = 8.48 μg mL-1 and 6.68 μg mL-1, respectively), a biomarker of inflammatory processes. The observed biological activities were mainly associated with skin and seed extracts/portions. The interest in studying table grapes and their non-fermented derivatives as sources of healthy compounds has increased in the last few years and our findings suggest that table grapes and their fresh derivatives, in addition to wine, could be involved in the health promoting effects of the Mediterranean diet.

Abstract
The extraction and enzymatic hydrolysis of collagen from sheepskins at different times of hydrolysis (0, 10, 15, 20, 30 min, 1, 2, 3 and 4 h) were investigated in terms of amino acid content (hydroxyproline), isoelectric point, molecular weight (Mw) by sodium dodecyl sulphate polyacrylamide gel electrophoresis (SDS-PAGE) method, viscosity, Fourier-transform infrared (FTIR) spectroscopy, antioxidant capacity by 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) assays, thermal properties (Differential Scanning Calorimetry) and morphology by scanning electron microscopy (SEM) technique. The kinetics of hydrolysis showed an increase in the protein and hydroxyproline concentration as the hydrolysis time increased to 4 h. FTIR spectra allowed us to identify the functional groups of hydrolysed collagen (HC) in the amide I region for collagen. The isoelectric point shifted to lower values compared to the native collagen precursor. The change in molecular weight and viscosity from time 0 min to 4 h promoted important antioxidant activity in the resulting HC. The lower the Mw, the greater the ability to donate an electron or hydrogen to stabilize radicals. From the SEM images it was evident that HC after 2 h had a porous and spongy structure. These results suggest that HC could be a good alternative to replace HC from typical sources like pigs, cows and fish.

Abstract
Background:Benzimidazoles and its derivatives have been attracting interest for many years because of their biological activities. Benzimidazoles containing different heterocyclic moieties have wide range of biological activities such as antimicrobial, antioxidant, anticancer, antiviral, etc.Methods:In this study, some benzimidazole derivatives containing furan, oxadiazole, triazole and thiadiazole moieties have been synthesized and then evaluated for their antioxidant and antiurease activities.Results:The results showed that all the tested benzimidazoles indicated remarkable urease inhibitory potentials with IC50 values ranging between 0.303±0.03 to 0.591±0.08 µM.Conclusion:In conclusion, synthesized benzimidazole derivatives showed good antioxidant and antiurease activities. Heterocyclic groups on benzimidazole nucleus enhance the activities.

Abstract
Polyphenols are important to human health thus making it interesting and necessary to identify and assess methods for their detection. Gallic acid (GA) is a well-known antioxidant compound, found in tea leaves, various fruits, fruit seeds and in fruit-derived foods and beverages. In this study, to electrochemically detect this compound and assess the potential for GA detection, different analytical conditions at pH values of 5.8, 7 and 8 were tried. Two types of device were used for GA detection: (1) Lazar ORP-146C reduction-oxidation microsensors, coupled with a Jenco device, for estimation of antioxidant capacities of different electroactive media, and (2) screen-printed carbon sensors coupled with a mobile PalmSens device using differential pulse voltammetry (qualitative and quantitative GA determination). These proposed methods were validated by analysing some real samples: wine, green tea, apple juice and serum fortified with GA. Detection was evaluated in terms of specific calibration curves, with low limit of detection (LOD) and limit of quantification (LOQ), low response time, and high sensitivities. The analytical characteristics obtained recommend these methods to be tested on more other types of real samples. Our proposed methods, used in the established conditions of pH, may have further application in other clinical, food or environmental samples analyses in which the results of total antioxidants contents are usually expressed in GA equivalents.

Abstract
Background:
Pyrazole is an important class of heterocyclic compound, has been shown
to exhibit diverse biological and pharmacological activities such as anti-inflammatory, anti-cancer,
antioxidant, etc.
Methods:
In this study, a series of novel 3,5-dimethyl-1H-pyrazole derivatives containing hydrazine
4a-l have been synthesized via the reaction of the 2-(3,5-dimethyl-1H-pyrazol-1-yl)acetohydrazide.
All synthesized compounds have been tested for their in vitro antioxidant activities via utilization of
1,1-biphenyl-2-picrylhydrazyl (DPPH) as a free radical scavenging reagent.
Results:
The data reported herein indicates that compound 4k showed potential radical scavenging
capacity and compounds 4f and 4g exhibited best activity for the iron binding while comparing with
positive controls.
Conclusion:
Good activity was noted for some compounds. In particular, compound 4k showed the
highest antioxidant activity with IC50 values of 22.79 ± 3.64 and 1.35 ± 0.66 μg/mL in the DPPH
and ABTS tests, respectively.

Abstract
Herein, a polysaccharide obtained from Pleurotus sajor-caju was fractionated via anion-exchange column chromatography and purified using gel permeation column chromatography. The chemical characterization of the polysaccharide indicated that it contained 90.16% total carbohydrate, 0% protein, 12.7% ash and 5.2% moisture; on the other hand, the carbon, hydrogen and nitrogen contents were found to be 31.53, 4.28 and 3.01%, respectively. The polysaccharide has the molecular weight of 79 kDa; the chemical structure of the polysaccharide is →6)α-d-Glciv(1→6)α-d-Glciii(1→6)β-d-Glcii(1→6)α-d-Glci(1→units. The polysaccharide exhibited the DPPH radical scavenging activity of 21.67-68.35% at 10-160 μg ml-1, ABTS radical scavenging activity of 16.01-70.09% at 25-125 μg ml-1, superoxide radical scavenging activity of 24.31-73.64% at 50-250 μg ml-1, hydroxyl radical scavenging activity of 16.64-63.51% at 25-125 μg ml-1 and reducing power of 0.366-1.678% at 10-120 μg ml; further evaluation of the polysaccharide revealed its anticancer activity of 18.61-63.21% at 100-500 μg ml-1 concentration against the AGS human gastric carcinoma cell line. The active principle of the polysaccharide may be used in the food and pharmacological industry in the future.

Abstract
Eucommia ulmoides Oliv. (E. ulmoides) is a kind of plant with high medicinal value, there are known as the "gold plants". Some components and contents of barks and branches from E. ulmoides are similar, the barks are mainly used as medicine, but the branches have not been systematically studied and were discarded. In this paper, five fractions extracted from E. ulmoides branches were detected by the classical anti-complement activity assay in vitro. The n-butanol fraction of E. ulmoides branches showed excellent anti-complement activities with a CH50 value of 0.016 ± 0.0014 mg·mL-1. A total of 76 compounds were identified from the n-butanol fraction, including 9 alkaloids, 18 organic acids, 22 lignans, 15 phenylethanoid glycosides and 12 other compounds. To further prove the anti-complement activity of potential active compounds, those compounds detectable in rat plasma after oral administration were tested by classical anti-complement activity assays. Genipin and pinoresinol 4-O-glucopyranoside had a certain complement inhibitory activity in the 17 potential anti-complements, their CH50 values were 0.050 ± 0.0038 and 0.022 ± 0.0018 mg·mL-1. UHPLC-Q-TOF/MS/MS was developed to profile and characterize the metabolites of genipin and pinoresinol 4-O-glucopyranoside in rat plasma. Twenty-one and seventeen metabolites were found, respectively. In summary, this study reported important clues for the further pharmacological and clinical studies of E. ulmoides branches. Meanwhile, it provided a practical strategy for rapid screening and identifying of in vivo anti-complement in traditional Chinese medicine.

Abstract
This study presents a general bibliometric overview of the major scientific developments that have been published in Food Chemistry, since its first issue (1976). The bibliometric data were retrieved from the scopus database. The review identifies the most cited, productive authors, and the leading institutions and countries of the journal, based on bibliometric indicators. The research hot spots in the period from 1976 to 2016 were identified by using the visualization of similarities software (Vosviewer), and the graphical mapping of the authors was developed to visualize networks between authors. A total of 20,050 publications was analysed and the most influential subjects covered by the journal were identified. Topics related to the antioxidant components of foods and the analytical quantification of contaminants or components of food were identified as being most relevant.The bibliometric analyses indicate a significant evolution of the journal in terms of publications, scientometric performance and themes covered.

Abstract
In the last years, the interest in non-alcoholic grape products has considerably increased. Table grapes are largely produced in the Mediterranean area and their consumption has raised worldwide. Beside the positive pattern of nutrients, table grapes could provide benefits on human health. Among the health-promoting substances contained in table grapes, flavonoids (mainly anthocyanins, flavan-3-ols and flavonols) seem to be the most interesting. The aim of this study was the characterization of the phenolic pattern of sixteen grape varieties, and the evaluation of the associated antioxidant activity. The methods were: 1) Folin-Cocalteau's assay for the quantification of total polyphenol content; 2) DPPH (1,1,-diphenil-2—picrylhydrazyl) assay and 3) ORAC (Oxygen Radical Absorbance Capacity) spectrophotometric assays for the assessment of radical scavenging activity; 4) High Performance Liquid Chromatography (HPLC) method, coupled with electrospray ionization mass spectrometer (ESI-MS) and DAD detector was developed in order to obtain the phenolic pattern of grape samples. Data obtained in this study underline that some table grape varieties can show interesting phenolic pattern independently from the presence or not of seeds. This observation suggests that selected varieties of seedless grapes could represent an interesting source of healthy compounds, satisfying consumers' preferences and reducing concerns versus alcoholic beverages.

Abstract
Fresh and half-dried fruits of lychee (Litchi Chinensis) and longan (Dimocarpus longan) were processed by air drying and implemented in diverse forms as fillings in order to produce chocolate pralines. Both dried fruits and chocolate pralines were characterized with total polyphenols, proanthocyanidins, flavan-3-ols and antioxidant capacity (2, 2-diphenyl-1-picrylhydrazyl, 2, 2-Azino-Bis-3-Ethylbenzothiazoline-6-Sulfonic acid) were determined by spectrophotometric and sensory analyses by quantitative descriptive analysis. Specific polyphenolic compounds were quantified using high-performance liquid chromatography coupled with photodiode array detector. The bioactive content and profile of chocolate pralines produced with the addition of longan and lychee were not significantly altered when compared to plain chocolate, but the sensory analysis revealed a preference for lychee-containing pralines, due to characteristic fruity sensory properties. Since longan and lychee fruits are still underutilized as raw materials and ingredients in food production, preservation by drying and incorporation into new products may enable their popularization and increase functional food production. Abstract
Pharmaceutically active compounds (PhACs) released in agroecosystems have been found to be taken up by and accumulated in the edible parts of crop plants. By employing simulated hydroponic cultivation under controlled conditions, the present study aimed at evaluating 1) the uptake and bioaccumulation of three common PhACs (diclofenac, DCF; sulfamethoxazole, SMX; trimethoprim, TMP), either applied individually (10 μg L-1) or as mixture (10 μg L-1 each), in tomato fruits harvested from the first three fruit sets, and 2) the PhACs-mediated effects on fruit quality attributes. DCF was not detected in tomato fruits, whereas both SMX and TMP were detected in varying concentrations in fruits, depending on the time of harvest, the mode of application and the allocation of plants in the greenhouse. The studied PhACs applied at environmentally relevant concentrations did not significantly affect plant productivity. Nevertheless, important fruit quality attributes, such as soluble solids and carbohydrate (fructose, glucose, sucrose, total sugars) content were significantly impacted by all studied PhACs applied individually, suggesting that for DCF, potentially its transformation products (TPs) (not examined in this study) may exert significant effects on fruits quality attributes. In addition, no additive or synergistic effects of the mixture of PhACs on studied fruits quality attributes were revealed. Gene expression analysis showed that the PhACs-mediated effects on the carbohydrate content of fruits can be attributed, at least to some extent, to the significant modulation of the abundance of transcripts related to the biosynthesis and catabolism of sucrose, such as SlSuSys, SlLin5 and SlLin7. To our knowledge, this is the first report highlighting the potential effects of PhACs released in agroecosystems on the quality of widely consumed agricultural products. In any case, further studies are warranted for the overall assessment of the potential impacts of PhACs on the quality of agricultural products under conventional agricultural conditions.

Abstract
Abstract The antioxidant and antibacterial activity and toxicity of natural products can change according to plant variety, as well as the part of the plant which is analyzed. In this study, peel, pulp and seed of four avocado varieties (Quintal, Fortuna, Margarida, and Hass) were analyzed for antioxidant and antibacterial properties and toxicity. There are few studies in the literature comparing these three first varieties. Antioxidant capacity was measured using the DPPH (2,2-diphenyl-1-picrylhydrazil), ABTS [2,2'-azino-bis- (3-ethylbenzothiazoline-6-sulfonic acid)], and FRAP (Ferric Reducing Ability Power) methods, along with the content of phenolic compounds and flavonoids. Principal component analysis was applied for antioxidant tests. Antibacterial activity against food pathogens was assessed by the minimum inhibitory concentration and minimum bactericidal concentration tests. Toxicity was evaluated against Artemia salina and also by hemolytic activity. The ethanolic extract of Quintal variety peel presented the greatest antioxidant and antibacterial activity. This same extract showed no toxicity in the preliminary tests, and shows great potential for food industry application as an additive.

Abstract
Gamma ray irradiation causes immune suppressive responses by inducing oxidative stress such as reduction of cell viability and damages in immune cells. In this present study, we investigated whether Octopus ocellatus meet (OM) consisted of a plentiful taurine has protective effects against damages caused by oxidative stress in murine splenocytes. First of all, we prepared the aqueous extract from OM (OMA) and identified it contained a plentiful taurine content. The result also showed that OMA exhibited the antioxidant activity by scavenging DPPH and ABTS+ radicals and hydrogen peroxide. In addition, OMA improved the cell viability without cytotoxicity in gamma ray-irradiated murine splenocytes. Moreover, OMA significantly reduced the production of reactive oxygen species (ROS) in gamma ray-irradiated splenocytes. In further study, we identified that OMA protected zebrafish embryo via improving the reduced survival rate and decreasing the formation of deformity caused by the exposure of gamma ray irradiation. Also, OMA decreased the production of NO and ROS in gamma ray-irradiated zebrafish embryos as well as the induction of cell death. In these results, this study suggests that the consumption of taurine-rich foods, such as O. ocellatus, may be useful for the useful material for the protection against oxidative stress.

Abstract
Fish gelatin hydrolysates have been shown to possess various biological activities due to their unique Gly-Pro-Y and Gly-X-Hyp sequences. In the current study, fish gelatin was extracted from non-extruded milkfish scale (FSG1) or extrusion-pretreated milkfish scale (FSG2); extracted gelatins were hydrolyzed with different combinations of Flavourzyme and Alcalase to give four different hydrolysates, namely: FSGH1 (FSG1 hydrolyzed with Flavourzyme), FSGH2 (FSG1 hydrolyzed with Alcalase + Flavourzyme), FSGH3 (FSG2 hydrolyzed with Flavourzyme), and FSGH4 (FSG2 hydrolyzed with Alcalase + Flavourzyme). The extrusion-pretreatment process enhanced the extraction yield of gelatin from fish scale. Sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) and Fourier transform infrared (FTIR) analyses showed the extracts FSG1 and FSG2 possessed characteristics of gelatin. Moreover, the physicochemical characteristics of FSGH1⁻FSGH4 were examined by analyses of their degree of hydrolysis, amino acid composition, UV spectrum, FTIR spectrum, molecular weight, and RP-HPLC profile. Additional biological functional analyses showed that all of the studied gelatin hydrolysates FSGH1⁻FSGH4 possessed antioxidant activity dose-dependently as revealed by DPPH scavenging, ABTS scavenging, and reducing power analyses. In addition, FSGH2 and FSGH4 showed higher angiotensin-I-converting enzyme (ACE)-inhibitory activity as compared to FSGH1 and FSGH3. Taken together, FSGH2 and FSGH4 showed high antioxidant activity and potent anti-ACE activity. Due to the potential antioxidant and antihypertensive properties of FSGH2 and FSGH4, further research is needed to explore their possible use as natural supplementary raw materials in food and nutraceutical products.

Abstract
Different percentages (0%, 1%, 5%, and 10%) of nano-Ag particles were added to polylactic acid (PLA) to make an active nanocomposite packaging film. Strawberries were packaged by the nanocomposite films and stored at 4 ± 1 °C for 10 days. The freshness of strawberries was assessed by regularly measuring the physicochemical properties of the strawberries in each packaging film. The difference in the freshness of strawberries was evaluated by determining the following parameter changes: weight loss, hardness, soluble solids, titratable acid, color, vitamin C, total phenol, free radical scavenging activity, peroxidase activity, and sensory evaluation. The results revealed that the active nanocomposite packaging film has better preservation effect when compared with pure PLA film. Its preservation effect is mainly reflected in the more effective reduction of vitamin C loss, delaying the decline of total phenols and 1-Diphenyl-2-picrylhydrazyl (DPPH) in strawberries. It also showed better physical properties. The results showed that the PLA nanocomposite packaging film could effectively preserve freshness of strawberries.

Abstract
Purpose
Watermelon (Citrullus lanatus) fruit and its rind are known to contain phytochemicals that may have health benefits. The aim of this paper is to investigate the potential hypocholesterolemic effect of watermelon fruit rind (WR) using rats who are fed a high-cholesterol diet.
Design/methodology/approach
Rats were divided into six groups and fed diets for eight weeks containing normal control diet or normal control diet with either 1% cholesterol, 5% WR, 10% WR, 1% cholesterol + 5% WR or 1% cholesterol + 10% WR. Triglycerides, total cholesterol and lipoprotein levels in serum and liver samples were determined, and histopathological examination of liver tissues was carried out.
Findings
Diets containing 1% cholesterol led to hypercholesterolemia, characterized by increased levels of total cholesterol and low-density lipoproteins in rat serum and liver samples. Incorporation of 10% WR into the diet of the otherwise hypercholesterolemic rats led to significant reduction in serum levels of total cholesterol (from 266.2 to 222.7 mg/dL) and low-density lipoproteins (from 159.5 to 94.4 mg/dL). In addition, these rats also exhibited improvements in hepatic tissue structure compared to the hypercholesterolemic rats.
Originality/value
These results support the potential use of WR as a hypocholesterolemic agent. Further research is needed to ascertain the hypocholesterolemic effect of WR in human.

Abstract
Twenty streptomycete strains were isolated from marine sediment samples collected from Nabq area, Sharm El-Sheikh, Red Sea Coast, Egypt. Four of them produce exopolysaccharides (EPS) showing marked in vitro antitumor activities. Morphological and cultural characteristics of the most significant strain (No. 3) were shown. Moreover, the sequence of this strain showed similarity with Streptomyces carpaticus. The results reveal that EPS produced by Streptomyces carpaticus No. 3 had high cytotoxicity reaching 51.7% and 59.1% against human tumor cells of breast and colon lines respectively. A chemical analysis of EPS indicated that the composing monosaccharides were galactouronic acid, glucose, xylose, galactose, mannose, and fructose with relative ratio of 3:1:1:2:2:1 respectively, with an average molecular weight (Mw) 1.180 × 105 g/mol and of a number average molecular weight (Mn) 1.052 × 105 g/mol. Also the EPS contained uronic acid (0.5072%) and monosaccharide sulphates (21.753%).

Abstract
Effects of pulsed electric filed (PEF) processing combined with heating (H-PEF processing) on the inactivation of microorganisms and the physicochemical properties of mixed mandarin and Hallabong tangor (MH) juice were studied. Using a pilot-scale PEF system, MH juice, pre-heated at 55 °C, was PEF-treated at 19 kV/cm of electric field and 170 kJ/L of specific energy and the juice, pre-heated at 70 °C, was PEF-treated at 16 kV/cm and 100 kJ/L or 12 kV/cm and 150 kJ/L. H-PEF processing at 70 °C-16 kV/cm-100 kJ/L reduced the aerobe, yeast/mold, and coliform counts of MH juice by 3.9, 4.3, and 0.8 log CFU/mL, respectively, without affecting the ascorbic acid concentration and antioxidant capacity of juice. H-PEF processing changed juice color and browning degree (p < 0.05), but not total soluble solid content or pH. By controlling initial juice temperature and electric field strength, H-PEF processing can be an effective pasteurization method for mixed juice with minimal changes in quality.

Abstract
Sorghum grains with different applications had different phenolic profiles, which were corresponded to various antioxidant capacities. In this study, total phenolic, proanthocyanidins and flavonoids contents, as well as contents of individual phenolic compounds from sorghum grains with various applications were determined, and their antioxidant capacities were evaluated. Total phenolic contents (TPC) and total proanthocyanidins contents (TPAC) showed strong correlation with antioxidant activities (r > 0.95, p < 0.01). Hongyingzi (S-1), one of the brewing sorghums, showed the highest level of TPC and TPAC, while white grain sorghum (S-8) had the lowest. Except for black grain sorghum (S-7), that contained the highest contents of ferulic acid, brewing sorghum grains contained the higher contents of the most individual phenolic compounds, especially the variety S-1. The correlation among individual phenolic compounds and antioxidant activities indicated that the free forms of protocatechuic acid (r = 0.982 of FRAPassay, p < 0.01) and taxifolin (r = 0.826 of FRAP assay, p < 0.01) may be the main functional compounds. These results indicate that brewing sorghum grains can also be utilized as effective materials for functional foods.

Abstract
The aims of this study were to characterize the curcumin/cyclodextrin polymer inclusion complex using X-ray diffractometry (XRD), Fourier transform infrared spectroscopy (FTIR), differential scanning calorimetry (DSC), and UV⁻vis spectroscopy, and to determine the antioxidant activity of this complex by methods of scavenging 2,2-azinobis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radicals assays and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radicals assays. The inhibitory effect of inclusion complex on A375 cells was also investigated by CCK-8 assay, Annexin-V/PI staining assay, and caspase activity assay. The results showed that the complex exhibited different physicochemical characteristics from that of free curcumin. Moreover, the inclusion complex exhibited novel antioxidant activity by scavenging the ABTS and DPPH free radicals and displayed higher antiproliferative activity on A375 cells. Further investigation revealed that inclusion complex could induce A375 cell apoptosis. These findings suggest that inclusion complex could be developed as a novel natural antioxidant with potential applications in cancer chemoprevention.

Abstract
AIM Free radicals are an outcome of various metabolic activities and their excess production leads to many diseases. Therefore, it is necessary to neutralize excess free radicals. MATERIALS & METHODS Free-radical scavenging activity of various extracts of Schima wallichii was evaluated using standard protocols. RESULTS Chloroform, ethanol and aqueous extracts of S. wallichii scavenged DPPH, hydroxyl, superoxide, nitric oxide and ABTS free radicals and increased ferric-reducing antioxidant potential in a concentration-dependent manner. A total of 1000 μg/ml of all the extracts and ethanol extract showed highest total flavonoids and phenol contents, respectively. CONCLUSION The different extracts of S. wallichii scavenged different free radicals efficiently due to the presence of flavonoids and polyphenols and may be helpful in free radical-induced diseases.
