Improvement of the Sterol and Triacylglycerol Compositions of Chemlali Virgin Olive Oils through Controlled Crossing with Mediterranean Cultivars

The chemical composition of extra virgin olive oils (EVOOs) from six new progenies, obtained through controlled crossings between the main Tunisian variety Chemlali and autochthonous (Chemcheli) and foreign cultivars (Sigoise, Coratina, Koroneiki, and Arbequina) used as pollen acceptor or pollinator, were compared with the EVOO of Chemlali cultivar known to be the main one cultivated in Tunisia as it is the most adapted to the arid climate. Several analytical determinations of major and minor components of EVOO were employed, especially triacylglycerol and sterol fractions. All the studied hybrid EVOOs showed an improvement in their chemical composition and stability by comparison with Chemlali EVOO. The main triacylglycerols were 1,2,3-trioleylglycerol (OOO), 2,3-dioleyl-1-palmitoylglycerol (POO), 2,3-dioleyl-1-linoleylglycerol (LOO) and 2,3-dioleyl-1-stearoylglycerol (SOO). β-sitosterol, Δ5-avenasterol and campesterol were the principal sterols in all samples. Cholesterol, stigmasterol, clerosterol and Δ7-stigmastenol were also found in all samples. Oil samples examined showed inter-variability between the studied cultivars. Results of discriminant and principal component analyses appear to prove that genetic origin of the raw materials has a great influence on the final composition of the oil; especially triacylglycerol and sterol compositions.

A new avenue for classification and prediction of olive cultivars using supervised and unsupervised algorithms

Various methods have been used to identify cultivares of olive trees; herein we used different bioinformatics algorithms to propose new tools to classify 10 cultivares of olive based on RAPD and ISSR genetic markers datasets generated from PCR reactions. Five RAPD markers (OPA0a21, OPD16a, OP01a1, OPD16a1 and OPA0a8) and five ISSR markers (UBC841a4, UBC868a7, UBC841a14, U12BC807a and UBC810a13) selected as the most important markers by all attribute weighting models. K-Medoids unsupervised clustering run on SVM dataset was fully able to cluster each olive cultivar to the right classes. All trees (176) induced by decision tree models generated meaningful trees and UBC841a4 attribute clearly distinguished between foreign and domestic olive cultivars with 100% accuracy. Predictive machine learning algorithms (SVM and Naïve Bayes) were also able to predict the right class of olive cultivares with 100% accuracy. For the first time, our results showed data mining techniques can be effectively used to distinguish between plant cultivares and proposed machine learning based systems in this study can predict new olive cultivars with the best possible accuracy.

Comparison of the chemical composition and the organoleptic profile of virgin olive oil from two wild and two cultivated Tunisian Olea europaea

With the aim to select new olive cultivars with superior physical and chemical properties than the cultivar Chemlali Sfax, the present study focused on the comparison of the chemical composition and the sensory profile of the virgin olive oils (VOOs) of two wild olive trees (Oleasters K and M) with those of VOOs obtained from Chemlali Sfax and Neb Jmel olive cultivars, all growing in the coastal region of Tunisia. Despite the variability in the chemical composition (fatty acids, pigments, and phenolic and volatile compounds) and the organoleptic profile of the VOOs of the oleasters and the cultivars, the quality indices (free fatty acids, peroxide value, and spectrophotometric indices K232 and K270) as well as the fatty acid composition of all VOOs studied met the commercial standards. Both the α-tocopherol and phenol contents varied between the genotypes. The Neb Jmel and Oleaster K VOOs had more than two times higher total phenol levels than the Chemlali Sfax and Oleaster M VOOs. Also the contents of volatile compounds differed between the olive oils studied. Chemlali Sfax and Oleaster K oils were more abundant in aldehydes, whereas Oleaster M VOO had higher contents of alcohols. These results were confirmed by a sensorial analysis showing that the later oil was deprived for consumption despite its abundance in α-tocopherol. In conclusion, the oleasters studied revealed to be interesting, since they produced oils with good quality characteristics in terms of minor compounds (phenols and volatiles) compared to the Chemlali Sfax cultivar.
