Abstract
Mung beans (Vigna radiata [L] Wilczek) purchased from a Spanish company as "green soybeans", showed a different phenolic composition than yellow soybeans (Glycine max cv. Merit). Isoflavones were predominant in yellow soybeans, whereas they were completely absent in the green seeds on which flavanones were predominant. In order to enhance their health benefits, both types of bean were subjected to technological processes, such as soaking and fermentation. Soaking increased malonyl glucoside isoflavone extraction in yellow beans and produced an increase in apigenin derivatives in the green beans. Lactobacillus plantarum CECT 748 T fermentation produced an increase in the bioactivity of both beans since a conversion of glycosylated isoflavones into bioactive aglycones and an increase of the bioactive vitexin was observed in yellow and green beans, respectively. In spite of potential consumer confusion, since soybean and "green soybean" are different legumes, the health benefits of both beans were enhanced by lactic fermentation.

Abstract
This study presents the results of a comparison that includes an analysis of variance and a canonical discriminant analysis to determine compositional equivalence and similarity between transgenic, sclerotinia blight-resistant and non-transgenic, susceptible cultivars of peanut in 3 years of field trials. Three Virginia-type cultivars (NC 7, Wilson, and Perry) and their corresponding transgenic lines (N70, W73, and P39) with a barley oxalate oxidase gene were analyzed for differences in key mineral nutrients, fatty acid components, hay constituents, and grade characteristics. Results from both analyses demonstrated that transgenic lines were compositionally similar to their non-transgenic parent cultivar in all factors as well as market-grade characteristics and nutritional value. Transgenic lines expressing oxalate oxidase for resistance to sclerotinia blight were substantially equivalent to their non-transgenic parent cultivar in quality and compositional characteristics.

Abstract
Glutelin, the major seed storage protein of rice (Oryza sativa L.), consists of multiple polymeric and monomeric subunits. Each subunit is composed of an α and a β polypeptide that are covalently linked by a disulfide bond. To analyze the microheterogeneous glutelin subunits using capillary electrophoresis (CE), the author identified the appropriate sample preparation procedures as well as optimal CE conditions. The glutelin was dissociated into its component α and β polypeptides by denaturation and reduction with low urea and 2-mercaptoethanol for a long incubation time at room temperature. The molecular species of the completely dissociated α and β polypeptides were identified and quantitatively analyzed by CE and SDS-PAGE using glutelin mutants. The measured CE migration times of the polypeptides correlated well with the calculated charge-to-size parameter values. Therefore, the rapid, simple, and precise separation and quantification of microheterogeneous proteins by CE required not only optimal CE conditions but also adequate protein pretreatment based on the molecular nature of the protein tested.

Abstract
Protein profiles are becoming an important tool to differentiate and classify varieties of several cultivars and to obtain a specific fingerprint for them. The use of protein profiles for these purposes needs to achieve high separation efficiencies to obtain a high number of well resolved peaks. In this work, carbosilane dendrimers with interior carbon-silicon bonds and negatively charged in the dendrimer surface with carboxylic acid as functional groups were employed as nanoadditives to separate soybean and olive seeds proteins. First, these dendrimers were characterized using CE to evaluate their possible impurities. A potentiometric titration was later carried out to determine their pK(a) values. Afterwards, the characterized dendrimers were used to improve the protein profiles obtained by EKC for vegetable proteins. Different dendrimer generations (G1, G2, and G3) and concentrations (0.01-1% m/v) were tested. The highest dendrimer generation G3 at 0.1% (m/v) allowed observing the best protein profiles for soybean and olive seeds. These results demonstrate that carboxylate-terminated carbosilane dendrimers are attractive nanoadditives in EKC for the effective separation of vegetable proteins.

Abstract
CE has generated considerable interest in the research community since instruments were introduced by different trading companies in the 1990s. Nowadays, CE is popular due to its simplicity, speed, highly efficient separations and minimal solvent and reagent consumption; it can also be included as a useful technique in the nanotechnology field and it covers a wide range of specific applications in different fields (chemical, pharmaceutical, genetic, clinical, food and environmental). CE has been very well evaluated in research laboratories for several years, and different new approaches to improve sensitivity (one of the main drawbacks of CE) and robustness have been proposed. However, this technique is still not well accepted in routine laboratories for food analysis. Researching in data bases, it is easy to find several electrophoretic methods to determine different groups of analytes and sometimes they are compared in terms of sensitivity, selectivity, precision and applicability with other separation techniques. Although these papers frequently prove the potential of this methodology in spiked samples, it is not common to find a discussion of the well-known complexity of the matrices to extract analytes from the sample and/or to study the interferences in the target analytes. Summarizing, the majority of CE scientific papers focus primarily on the effects upon the separation of the analytes while ignoring their behavior if these analytes are presented in real samples.

Abstract
Quality and safety control and the validation of origin are hot issues in the production of food and its distribution, and are of primary concern to food and agriculture organization. Modern mass spectrometry (MS) provides unique, reliable and affordable methodologies to approach with a high degree of scientificity any problem which may be posed in this field. In this review the contribution of mass spectrometry to food analysis is presented aiming at providing clues on the fundamental role of the basic principles of gas-phase ion chemistry in applied research fields. Applications in proteomics, allergonomics, glycomics, metabolomics, lipidomics, food safety and traceability have been surveyed. The high level of specificity and sensitivity of the MS approach allows the characterization of food components and contaminants present at ultra-trace levels, providing a distinctive and safe validation of the products.

Abstract
A CE-TOF MS proteomic approach was applied for the analysis of hydrolyzates from complex soybean protein mixtures. After CE-TOF MS method development, the new approach provided the simultaneous analysis of more than 150 peptides from the soybean protein fraction soluble in ACN-water (80/20 v/v). The method is fast (about 30 min of analysis per sample) and is characterized by a relatively low running cost. The approach was used to study the substantial equivalence between a genetically modified variety of soybean compared with its traditional counterpart. No significant differences were found between the two studied soybeans based on the protein fraction studied. The capacity of the CE-TOF MS method to analyze complex mixtures of peptides in short times opens interesting possibilities in the growing Foodomics area.

Abstract
This review article covers 3-year period from 2007 to 2009 and is a continuation of the review article by V. Dolnik, [Electrophoresis 2008, 29, 143-156]. This article with 125 references describes recent developments in CE and CEC of proteins in capillary format and does not cover the developments of CE and CEC in microchip format, since Tran et al. review the microchip subject in this special issue. The present review article has four major topics including (i) the separation media, (ii) multidimensional separations, (iii) detection, and (iv) applications.

Abstract
The use of capillary electromigration methods to analyze foods and food components is reviewed in this work. Papers that were published during the period April 2007 to March 2009 are included following the previous review by García-Cañas and Cifuentes (Electrophoresis, 2008, 29, 294-309). These works include the analysis of amino acids, biogenic amines, peptides, proteins, DNAs, carbohydrates, phenols, polyphenols, pigments, toxins, pesticides, vitamins, additives, small organic and inorganic ions and other compounds found in foods and beverages, as well as those applications of CE for monitoring food interactions and food processing. The use of microchips, CE-MS, chiral-CE as well as other foreseen trends in food analysis are also discussed including their possibilities in the very new field of Foodomics.

Abstract
In this work, capillary electrophoresis-time-of-flight mass spectrometry (CE-TOF-MS) is proposed to identify and quantify the main metabolites found in transgenic soybean and its corresponding non-transgenic parental line both grown under identical conditions. The procedure includes optimization of metabolites extraction, separation by CE, on-line electrospray-TOF-MS analysis and data evaluation. A large number of extraction procedures and background electrolytes are tested in order to obtain a highly reproducible and sensitive analytical methodology. Using this approach, a large number of metabolites were tentatively identified based on the high mass accuracy provided by TOF-MS analyzer, together with the isotopic pattern and expected electrophoretic mobility of these compounds. In general, the same metabolites and in similar amounts were found in the conventional and transgenic variety. However, significant differences were also observed in some specific cases when the conventional variety was compared with its corresponding transgenic line. The selection of these metabolites as possible biomarkers of transgenic soybean is discussed, although a larger number of samples need to be analyzed in order to validate this point. It is concluded that metabolomic procedures based on CE-MS can open new perspectives in the study of transgenic foods in order to corroborate (or not) the equivalence with their conventional counterparts.

Abstract
Perfusion reversed-phase HPLC (RP-HPLC)-electrospray mass spectrometry (ESI-MS) was employed for the characterization of soybean cultivars through the analysis of intact soybean proteins. The similarities and differences between yellow soybeans (the most usual soybeans) and other beans with different pigmentation (green, red, and black) commercialized as soybean were investigated. Red beans commercialized as azuki that are frequently sold as red soybean were also analyzed. Separation was carried out using a perfusion column at a flow-rate of 0.5 mL/min and a gradient elution. A step-by-step procedure was used for the optimization of the mass spectrometry parameters enabling the most sensitive detection. The method was applied to the analysis of the above-mentioned beans and the main soybean proteins (11S and 7S globulins) obtained by a fractionation procedure. MS spectra obtained from every peak in the beans and in their fractions were compared observing clear differences between yellow soybeans and the other beans with different pigmentation. The identification of some soybean proteins in yellow soybeans was also possible.
