Applications of nanotechnology to combat the problems associated with modern food

Currently, modern lifestyle diseases (LSD) such as cancer, diabetes, hypertension, cardiovascular and thyroid disease are commonly seen among people of different age groups. One of the root causes of this LSD is the type of food that we are eating. Staple crops like rice, sugarcane, vegetables and wheat are grown with the application of agrochemicals (e.g., glyphosate), traces of which are found in our food; after that, it gets ultra-processed in factories; e.g., chips and snacks are fried using saturated fats (trans fat); sugar and wheat (derivatives bread, buns, cookies) are processed using toxic chemicals (bleaching agents). As a result, the nutritional value of food is compromised due to low dietary fiber content and synthetic additives - e.g., sucralose (artificial sweetener) - which promotes inflammation and weakens our immune system, causing our body to become sensitive to microbial infection and many other LSDs. To strengthen the immune system, people start taking synthetically prepared supplements and drugs for a prolonged time, which further deteriorates the body organs and their normal function; e.g., prolonged medication for hypothyroidism poses a risk of heart attack and joint pain. Nanotechnology solves the above problems in the food, nutraceuticals and agriculture sectors. Nanotechnology-based naturally processed products such as nano-nutraceuticals, nanofood, nanofertilizers and nanopesticides will benefit our health. They possess desirable properties such as high bioavailability, targeted delivery, least processing and sustained release. With the help of nanotechnology, we can get nutritional and agrochemical-free food. © 2022 Society of Chemical Industry.

Potassium bromate in bread, health risks to bread consumers and toxicity symptoms amongst bakers in Bamenda, North West Region of Cameroon

This study evaluated the occurrence of potassium bromate in bread, its overall health risks to bread consumers, and its toxicity symptoms amongst bakers in Bamenda. Thirteen bakeries were included in a cross-sectional survey to gather information about the quantities of bread produced and the symptoms of potassium-bromated toxicity experienced by bakers during baking. The concentration of potassium bromate in the most consumed bread types was determined using a spectrophotometric method. The hazard quotient and hazard ratio were computed for each bread type to determine its chemical and carcinogenic risks. Results showed that all bakers had experienced symptoms of potassium bromate toxicity, and painful eyes, cough, diarrhea, and sore throat were the most recurrent symptoms of toxicity. The concentration of potassium bromate in all bread samples (100%) ranged from 48.50 mg/kg to 10148.50 mg/kg, exceeding the maximum acceptable limits by 9-203 times the dose (50 mg/kg) recommended by Food and Drug Administration. There was no significant difference (p = 0.109) in potassium bromate concentration between bread types, and simple bread, milk bread, and French bread had the highest concentration of potassium bromate. The chronic hazard quotient ranged from 277.93 to 2459.36, and the hazard ratio ranged from 251434.30 to 32862.86, indicative of possible chemical and carcinogenic risks after prolonged regular consumption. From the hazard ratios, the chances of having cancer from an average daily consumption of either simple bread or milk bread, or French bread are approximately 290,000 in 1,000,000 or 220,000 in 1,000,000 or 190,000 in 1,000,000. Thus regulatory authorities need to monitor, control or prohibit the use of potassium bromate as a flour additive.

Vortex- assisted liquid- liquid microextraction for the trace determination of potassium bromate in flour food products

Potassium bromate, also reported as a carcinogenic agent, commonly functions to improve flour in the baking industry to increase bread volume. In this study, a green and novel preconcentration and microextraction method, termed as vortex assisted liquid-liquid microextraction combined with UV-Vis spectrophotometry was developed and utilized for trace determination of Potassium Bromate in food samples. Furthermore, various chemometric methods have been used. Under optimum conditions, the linearity range was obtained in the range between 0.02 and 2 µg/mL. Using the proposed analytical approach, the detection limits and quantitation of KBrO₃ were 0.02 and 0.07 µg/mL, respectively. A pre-concentration factor of 22.2 was reported. The precision of the method was evaluated in the terms of repeatability and reproducibility and expressed by the relative standard deviation; the levels of them were considerably higher than 5.07 and 4.8%. The proposed approach was applied to the determination of trace bromate in different flour products.
