Abstract
BACKGROUND Chlorpyrifos is a commonly used organophosphorus pesticide in agriculture. However, its neurotoxicity poses a huge threat to human health. In the present study, a chitosan-modified filter paper-based surface enhanced Raman scattering active substrate (Ch/AgNPs/paper) was fabricated and used to detect trace amounts of chlorpyrifos in 120 treated wheat samples. RESULTS Results showed that the Ch/AgNPs/paper substrate could be used to enhance the chlorpyrifos spectral fingerprint only up to a concentration of 0.000558 mg L-1 . Following Raman spectra acquisition, three pre-processing methods, including Savitzky-Golay (Savitsky-Golay filter with a second order polynomial) smoothing with first derivative and second derivative and normalization, were used to reduce baseline variation and increase resolutions of spectral peak features of the original spectra dataset. Then, prediction models based on partial least squares were established for detecting chlorpyrifos pesticide residue in wheat. The partial least squares model with normalization yielded optimal result, with a correlation coefficient of 0.9764, root mean square error of prediction of 1.22 mg L-1 in the prediction, and relative analysis deviation of 4.12. Five unknown samples were prepared to verify the accuracy of the prediction model. The predicted recoveries were calculated to be between 97.25% and 119.38% with an absolute t value of 0.598. The value of a t-test shows that the prediction model is accurate and reliable. CONCLUSION The present study demonstrates that the proposed method can achieve rapid detection of chlorpyrifos in wheat. © 2022 Society of Chemical Industry.

Abstract
Impact damage is one of the main forms of damage during the postharvest transportation and processing of yellow peaches. Thus, a quantitative prediction of the impact damage degree of yellow peaches is significant for their postharvest grading. In the present study, mechanical parameters such as the damage area, absorbed energy and maximum force were obtained based on a single pendulum collision device and an intelligent data acquisition system. The reflection spectra (R) of the damaged areas of yellow peaches were collected by a hyperspectral imaging system and transformed into absorbance (A) spectra and Kubelka-Munk (K-M) spectra. The R, A and K-M spectra were preprocessed by standard normal variables (SNV), moving average (MA) and Gaussian filtering (GF). Partial least squares regression (PLSR) models and support vector regression (SVR) models based on original and preprocessed spectra were established, respectively. By comparative analysis, the spectral data with better prediction performance (raw or preprocessed spectra) were selected from all spectra, and the characteristic wavelengths were selected by competitive adaptive reweighted sampling (CARS) and uninformative variable elimination (UVE). The PLSR and SVR models based on characteristic wavelengths were established. The results revealed that the prediction performance of the K-M-GF-CARS-PLSR model is the best. For the damage area, absorbed energy and maximum force, the R P 2 and RMSEP of the K-M-GF-CARS-PLSR model were 0.870 and 77.865 mm2, 0.772 and 1.065 J, 0.895 and 47.996 N, respectively. Furthermore, the values of their RPD were 2.700, 1.768 and 3.050, respectively. The characteristic wavelengths of the model were 18.8%, 10.2% and 21.6%, respectively. The results of this study showed that there was a strong correlation between the mechanical parameters and K-M spectrum, which demonstrates the feasibility of quantitatively predicting the damage degree of yellow peaches based on the K-M spectrum. Therefore, the results of this work not only provide theoretical guidance for the postharvest grading of fruits, but also enrich the theoretical system of biomechanics.

Abstract
Citrus Huanglongbing (HLB) is nowadays one of the most fatal citrus diseases worldwide. Once the citrus tree is infected by the HLB disease, the biochemistry of the phloem region in midribs would change. In order to investigate the carbohydrate changes in phloem region of citrus midrib, the semi-quantification models were established to predict the carbohydrate concentration in it based on Fourier transform infrared microscopy (micro-FTIR) spectroscopy coupled with chemometrics. Healthy, asymptomatic-HLB, symptomatic-HLB, and nutrient-deficient citrus midribs were collected in this study. The results showed that the intensity of the characteristic peak varied with the carbohydrate (starch and soluble sugar) concentration in citrus midrib, especially at the fingerprint regions of 1175-900 cm-1, 1500-1175 cm-1, and 1800-1500 cm-1. Furthermore, semi-quantitative prediction models of starch and soluble sugar were established using the full micro-FTIR spectra and selected characteristic wavebands. The least squares support vector machine regression (LS-SVR) model combined with the random frog (RF) algorithm achieved the best prediction result with the determination coefficient of prediction ([Formula: see text]) of 0.85, the root mean square error of prediction (RMSEP) of 0.36%, residual predictive deviation (RPD) of 2.54, and [Formula: see text] of 0.87, RMSEP of 0.37%, RPD of 2.76, for starch and soluble sugar concentration prediction, respectively. In addition, multi-layer perceptron (MLP) classification models were established to identify HLB disease, achieving the overall classification accuracy of 94% and 87%, based on the full-range spectra and the optimal wavenumbers selected by the random frog (RF) algorithm, respectively. The results demonstrated that micro-FTIR spectroscopy can be a valuable tool for the prediction of carbohydrate concentration in citrus midribs and the detection of HLB disease, which would provide useful guidelines to detect citrus HLB disease.

Abstract
BACKGROUND Food processing induces various modifications that affect the structure, physical and chemical properties of food products and hence the acceptance of the product by the consumer. In this work, the evolution of volatile components, 2-thiobarbituric acid reactive substances (TBARS), moisture content (MC) and microstructural changes of pork was investigated by hyperspectral (HSI) and confocal imaging (CLSM) techniques in synergy with gas chromatography-ion mobility spectrometry (GC-IMS). Models based on partial least squares regression (PLSR) were developed using the full HSI spectrum variables as well as optimum variables selected through a competitive adaptive reweighted sampling algorithm. RESULTS Prediction results for MC and TBARS using multiplicative scatter correction pre-processed spectra models demonstrated greater efficiency and predictability with determination coefficient of prediction of 0.928, 0.930 and root mean square error of prediction of 0.114, 1.002, respectively. Major structural changes were also observed during CLSM imaging, which were greatly pronounced in pork samples oven cooked for 15 and 20 h. These structural changes could be related to the denaturation of the major meat components, which could explain the loss of moisture and the formation of TBARS visualized from the HSI chemical distribution maps. GC-IMS identified 35 volatile components, including hexanal and pentanal, which are also known to have a higher lipid oxidation specificity. CONCLUSION The synergistic application of HSI, CLSM and GC-IMS enhanced data mining and interpretation and provided a convenient way for analyzing the chemical, structural and volatile changes occurring in meat during processing. © 2021 Society of Chemical Industry.

Vis-NIR Hyperspectral Imaging for Online Quality Evaluation during Food Processing: A Case Study of Hot Air Drying of Purple-Speckled Cocoyam (Colocasia esculenta (L.) Schott). Abstract
In this study, hyperspectral imaging (HSI) and chemometrics were implemented to develop prediction models for moisture, colour, chemical and structural attributes of purple-speckled cocoyam slices subjected to hot-air drying. Since HSI systems are costly and computationally demanding, the selection of a narrow band of wavelengths can enable the utilisation of simpler multispectral systems. In this study, 19 optimal wavelengths in the spectral range 400–1700 nm were selected using PLS-BETA and PLS-VIP feature selection methods. Prediction models for the studied quality attributes were developed from the 19 wavelengths. Excellent prediction performance (RMSEP < 2.0, r2P > 0.90, RPDP > 3.5) was obtained for MC, RR, VS and aw. Good prediction performance (RMSEP < 8.0, r2P = 0.70–0.90, RPDP > 2.0) was obtained for PC, BI, CIELAB b*, chroma, TFC, TAA and hue angle. Additionally, PPA and WI were also predicted successfully. An assessment of the agreement between predictions from the non-invasive hyperspectral imaging technique and experimental results from the routine laboratory methods established the potential of the HSI technique to replace or be used interchangeably with laboratory measurements. Additionally, a comparison of full-spectrum model results and the reduced models demonstrated the potential replacement of HSI with simpler imaging systems.

Abstract
Dehydration is one of the most widely used food processing techniques, which is sophisticated in nature. Rapid and accurate prediction of dehydration performance and its effects on product quality is still a difficult task. Traditional analytical methods for evaluating food dehydration processes are laborious, time-consuming and destructive, and they are not suitable for online applications. On the other hand, vibrational spectral techniques coupled with chemometrics have emerged as a rapid and noninvasive tool with excellent potential for online evaluation and control of the dehydration process to improve final dried food quality. In the current review, the fundamental of food dehydration and five types of vibrational spectral techniques, and spectral data processing methods are introduced. Critical overtones bands related to dehydration attributes in the near-infrared (NIR) region and the state-of-the-art applications of vibrational spectral analyses in evaluating food quality attributes as affected by dehydration processes are summarized. Research investigations since 2010 on using vibrational spectral technologies combined with chemometrics to continuously monitor food quality attributes during dehydration processes are also covered in this review.
