Recent advances and applications of laser-based imaging techniques in food crops and products: a critical review

To meet the growing demand for food quality and safety, there is a pressing need for fast and visible techniques to monitor the food crop and product production processing, and to understand the chemical changes that occur during these processes. Herein, the fundamental principles, instruments, and characteristics of three major laser-based imaging techniques (LBITs), namely, laser-induced breakdown spectroscopy, Raman spectroscopy, and laser ablation-inductively coupled plasma-mass spectrometry, are introduced. Additionally, the advances, challenges, and prospects for the application of LBITs in food crops and products are discussed. In recent years, LBITs have played a crucial role in mapping primary metabolites, secondary metabolites, nanoparticles, toxic metals, and mineral elements in food crops, as well as visualizing food adulteration, composition changes, pesticide residue, microbial contamination, and elements in food products. However, LBITs are still facing challenges in achieving accurate and sensitive quantification of compositions due to the complex sample matrix and minimal laser sampling quantity. Thus, further research is required to develop comprehensive data processing strategies and signal enhancement methods. With the continued development of imaging methods and equipment, LBITs have the potential to further explore chemical distribution mechanisms and ensure the safety and quality of food crops and products.

A review on current progress of Raman-based techniques in food safety: From normal Raman spectroscopy to SESORS

Frequently occurrence of food safety incidents has induced global concern over food safety. To ensure food quality and safety, an increasing number of rapid and sensitive analytical methods have been developed for analysis of all kinds of food composition and contaminants. As one of the high-profile analytical techniques, Raman spectroscopy has been widely applied in food analysis with simple, rapid, sensitive, and nondestructive detection performance. Research on Raman techniques is a direction of great interest to many fields, especially in food safety. Hence, it is crucial to gain insight into recent advances on the use of Raman-based techniques in food safety applications. In this review, we introduce Raman techniques from normal Raman spectroscopy to developed ones (e.g., surface enhanced Raman scattering (SERS), spatially offset Raman spectroscopy (SORS), surface-enhanced spatially offset Raman spectroscopy (SESORS)), in view of their history and development, principles, design, and applications. In addition, future challenges and trends of these techniques are discussed regarding to food safety.

A packaged food internal Raman signal separation method based on spatially offset Raman spectroscopy combined with FastICA

Raman spectroscopy attempts to reflect food quality by characterizing molecular vibration and rotation. However, the blocking of optical signals by packaging materials and the interference of the optical signal generated by the packaging itself make the detection of internal food quality without destroying packaging highly difficult. In this regard, this paper proposes a novel packaged food internal signal separation based on spatially offset Raman spectroscopy (SORS) coupled with improved fast independent component analysis (FastICA). Firstly, the Raman scattering image of the packaged food with offset laser incident point was obtained. Then, the movable quadratic mean of information entropy was used to select the observation feature region of the image. Thirdly, the main independents decomposed by the optimized FastICA method were identified by spectral attenuation characteristics of the SORS peak signal. Finally, the non-negativity of the separated signal was ensured by baseline recognition and correction. The effectiveness of this method was verified by refactoring the similarity between the signal and the reference signal by testing three different packaging and four internal materials under standard experimental conditions. The applicability of the method was proved by the internal signal separation of three packaged foods on sale. The experimental results indicate that the proposed method can separate the Raman signal of packaged food and can be used as a pretreatment method and auxiliary analysis means for the detection of packaged food.

Portable through Bottle SORS for the Authentication of Extra Virgin Olive Oil

The authenticity of olive oil has been a significant long-term challenge. Extra virgin olive oil (EVOO) is the most desirable of these products and commands a high price, thus unscrupulous individuals often alter its quality by adulteration with a lower grade oil. Most analytical methods employed for the detection of food adulteration require sample collection and transportation to a central laboratory for analysis. We explore the use of portable conventional Raman and spatially-offset Raman spectroscopy (SORS) technologies as non-destructive approaches to assess the adulteration status of EVOO quantitatively and for SORS directly through the original container, which means that after analysis the bottle is intact and the oil would still be fit for use. Three sample sets were generated, each with a different adulterant and varying levels of chemical similarity to EVOO. These included EVOO mixed with sunflower oil, pomace olive oil, or refined olive oil. Authentic EVOO samples were stretched/diluted from 0% to 100% with these adulterants and measured using two handheld Raman spectrometers (excitation at 785 or 1064 nm) and handheld SORS (830 nm). The PCA scores plots displayed clear trends which could be related to the level of adulteration for all three mixtures. Conventional Raman (at 785 or 1064 nm) and SORS (at 830 nm with a single spatial offset) conducted in sample vial mode resulted in prediction errors for the test set data ranging from 1.9–4.2% for sunflower oil, 6.5–10.7% for pomace olive oil and 8.0–12.8% for refined olive oil; with the limit of detection (LOD) typically being 3–12% of the adulterant. Container analysis using SORS produced very similar results: 1.4% for sunflower, 4.9% for pomace, and 10.1% for refined olive oil, with similar LODs ranging from 2–14%. It can be concluded that Raman spectroscopy, including through-container analysis using SORS, has significant potential as a rapid and accurate analytical method for the non-destructive detection of adulteration of extra virgin olive oil.
