Proximate and fatty acid composition of zebra (Equus quagga burchellii) muscle and subcutaneous fat

A Descriptive Study on the Carcass, Muscle, and Offal Yields of the Plains Zebra (Equus quagga) Harvested in Two Seasons

This study presents descriptive data on the meat and offal production of Plains zebras harvested in the winter (n = 8) and summer (n = 12) seasons, at different respective locations in the Western Cape Province of South Africa. The cold dressing percentages were numerically higher for the winter (58.0 ± 0.60%) than for the summer-harvested animals (56.60 ± 0.70%). Heavier internal offal yields were reported for the winter-harvested group (70.76 ± 21.8 kg) compared to the summer-harvested animals (66.13 ± 3.78 kg). As harvest season had no influence, pooled data of the percentage contribution of each muscle to cold carcass weight indicated that the Longissimus et lumborum (3.5 ± 0.18%), semimembranosus (1.6 ± 0.04%), biceps femoris (2.7 ± 0.05%) and semitendinosus (0.9 ± 0.02%) muscles differed significantly in their respective contributions to cold carcass weight. No significant differences were recorded between the contribution of the infraspinatus (0.6 ± 0.02%), supraspinatus (0.4 ± 0.03%) and psoas major (0.6 ± 0.02%) muscles. Carcass and muscle yields, as well as low-cost protein offal yields from this study indicate that the Plains zebra has the potential to be used and distributed as an alternative protein source.

Physico-Chemical Characteristics and Lipid Oxidative Stability of Zebra (Equus Burchelli) Droëwors Made Using Different Levels of Sheep Fat

The physico-chemical properties (proximate, salt content, water activity (a_w), pH) and lipid oxidation of droëwors (dried salted/spiced meat sausages) produced with zebra meat and different sheep fat levels (10, 15, and 20% by weight) measured at day 0 (before drying), day 2 (after drying at 30 °C and 40% relative humidity), and over a 90 day storage (day 17, 32, 47, 62, 77, and 92) under vacuum at 25 °C were investigated. The use of lower fat levels (10 and 15%) in the formulation resulted in higher weight loss during drying and droëwors with higher protein, ash, and salt content and lower a_w and pH compared to the droëwors made with 20% fat. The pH increased (p < 0.001) during storage for all the fat levels, while the moisture content and the a_w were stable as expected. TBARS values were the highest in droëwors made with 20% of fat after drying (day 2), but droëwors made with 10% of fat reached similar maximal values on day 17. Formulations containing 15% sheep fat displayed the lowest TBARS values after drying and along storage, and thus had the best characteristics in relation to oxidative stability.

Fatty acid composition, cholesterol content and lipid oxidation indices of intramuscular fat from skeletal muscles of beaver (Castor fiber L.)

The lipid characteristics of the intramuscular fat (IMF) from skeletal muscles of different beaver carcass parts (the loin, hind leg and shoulder) were characterised in detail for the first time. The shoulder muscles had higher (P < 0.05) proportion of n-3 polyunsaturated fatty acids (PUFA) than the loin muscles, which had higher percentages of saturated fatty acids (SFA), odd-chain fatty acids (OCFA) and sum of conjugated linoleic acids (ΣCLA). Moreover, the shoulder muscles were found to contain higher fat, cholesterol and total fatty acids (FA) concentrations, as well had a beneficial fatty acid profile, especially in terms of the absolute content of PUFA and some nutritional FA indices (thrombogenic index and SFA/PUFA), as well as FA ratios (n-6/n-3 and PUFA/SFA). No differences (P > 0.05) in lipid oxidation parameters (FFA, PV and TBARS) were observed between muscles from different carcass parts. Irrespective of muscle location, the predominant class of FA in IMF of beaver was PUFA (averaging 49.39%), followed by SFA (27.81%) and MUFA cis (15.96%). Linoleic acid (LA, 18:2 n-6) was the most abundant FA in all muscles (>34% of total FA). Minor percentages of unusual FA (OCFA, trans FA and branched-chain FA), which are more typical for ruminants than monogastric animals, were also detected (3.46%, 1.92% and 1.22%, respectively).
