Dietary advanced lipoxidation products as risk factors for human health - a call for data

Evaluation of Steady-State and Time-Resolved Fluorescence Spectroscopy as a Method for Assessing the Impact of Photo-Oxidation on Refined Soybean Oils

The type of material used in packaging, lighting, and storage time can impact food quality during storage. This study aimed to investigate the progress of photosensitized oxidation in refined soybean oil using steady-state and time-resolved fluorescence spectroscopy. The experiment was conducted through accelerated photo-oxidation with Light-Emitting Diode (LED) in samples stored for ten days at room temperature (26.0 ± 2.0 °C) in clear polyethylene terephthalate (PET) packaging of different colors and different transmission spectra in the UV and visible range. Emission spectra were obtained with excitation at 373, 405, and 500 nm, resulting in two main emission peaks: the first with maximum emission between 430 and 555 nm and the second at around 660 nm. Fluorescence decay curves were obtained with excitation at 340 and 405 nm. The results indicated that transparent PET bottles are not effective in protecting soybean oil from photosensitized oxidation under the studied conditions. Strong correlations were observed between fluorescence parameters and peroxide and conjugated diene values, indicators of lipid oxidation progress. Fluorescence spectroscopy has several advantages over traditional methods as it is a simple, fast, low-cost, and low-waste technique.

Healthy eating recommendations: good for reducing dietary contribution to the body's advanced glycation/lipoxidation end products pool?

The present review aims to give dietary recommendations to reduce the occurrence of the Maillard reaction in foods and in vivo to reduce the body's advanced glycation/lipoxidation end products (AGE/ALE) pool. A healthy diet, food reformulation and good culinary practices may be feasible for achieving the goal. A varied diet rich in fresh vegetables and fruits, non-added sugar beverages containing inhibitors of the Maillard reaction, and foods prepared by steaming and poaching as culinary techniques is recommended. Intake of supplements and novel foods with low sugars, low fats, enriched in bioactive compounds from food and waste able to modulate carbohydrate metabolism and reduce body's AGE/ALE pool is also recommended. In conclusion, the recommendations made for healthy eating by the Spanish Society of Community Nutrition (SENC) and Harvard University seem to be adequate to reduce dietary AGE/ALE, the body's AGE/ALE pool and to achieve sustainable nutrition and health.

Produtos da reação de Maillard em alimentos: implicações para a saúde

A reação de Maillard é uma reação de escurecimento não enzimático que pode ocorrer em alimentos e em organismos vivos. Esta revisão tem como objetivo analisar a formação e o papel dos produtos originados a partir da reação de Maillard e seus efeitos na saúde. Para isso foram realizados levantamentos bibliográficos nas bases da área, sem restrição de data. Os resultados da revisão apontam que produtos carbonílicos inter-mediários da reação de Maillard e da peroxidação reagem facilmente com grupamentos aminas de proteínas e ácidos nucleicos, levando a modificações biológicas que podem resultar em complicações observadas no diabetes, aterosclerose e doenças neurodegenerativas. O consumo de produtos da reação de Maillard aumentou nas últimas décadas, devido ao aumento do consumo de alimentos industrializados que, em geral, sofreram processamento térmico. Essas substâncias são biodisponíveis em alguma proporção e, embora ainda não haja consenso sobre os possíveis efeitos deletérios à saúde decorrentes de sua ingestão, a comunidade científica tem expressado preocupação com as implicações em processos patológicos de que participam. Diante desses achados, ressalta-se a necessidade de estimar o consumo dos produtos da reação de Maillard, principalmente por populações vulneráveis, como crianças e diabéticos, a fim de, se necessário, estabelecer consumos diários aceitáveis e ampliar o conhecimento com vistas ao estabelecimento, no futuro, de limites para a indústria de alimentos.

Nutrients and phytochemicals: from bioavailability to bioefficacy beyond antioxidants

The effect of any dietary compound is influenced by the active bioavailable dose rather than the dose ingested. Depending on the individual predisposition, including genetics and medication, a bioavailable dose may cause different magnitudes of effects in different people. Age might affect the predisposition and thus the requirements for nutrients including phytonutrients (e.g. phytochemicals such as flavonoids, phenolic acids and glucosinolates). These are not essential for growth and development but to maintain body functions and health throughout the adult and later phases of life; they are 'lifespan essentials'. Major mechanisms involved in chronic, age-related diseases include the oxidant/antioxidant balance, but the latest research indicates indirect effects of dietary bioactives in vivo and adaptive responses in addition to direct radical scavenging.
