Food Applications of Starch Nanomaterials: A Review

Bioactive delivery systems based on starch and its derivatives: Assembly and application at different structural levels

Starch and modified starch, spanning various structural levels, are comprehensively reviewed, with a special emphasis on the advancement of starch and its derivative-based delivery systems for bioactive substances. The pivotal aspect highlighted is the controlled release of active ingredients by starch-based delivery systems with distinct hierarchical structures. At the molecular level, diverse categories of starch degradation products, such as dextrin and highly branched starch, serve as versatile amphiphilic carriers for encapsulating active ingredients. At the level of helical structure, the distinctive configuration of the starch-guest complex partly determines the mechanism of controlled release for diverse active components. At the crystal and particle structural level, starch assumes the role of a carrier, effectively modulating the release of active substances, and enhances the innate physiological activity of different active components. As a natural polymer molecule, starch can also generate hydrogel materials in polymer form, expanding its utility in the fields of food, materials, and even medicine.

Chemically Modified Starches as Food Additives

Starch is a renewable and multifunctional polysaccharide biopolymer that is widely used both in the food industry and other areas of the economy. However, due to a number of undesirable properties in technological processes, it is subjected to various modifications. They improve its functional properties and enable the starch to be widely used in various industries. A modified starch is a natural starch that has been treated in a way that changes one or more of its initial physical and/or chemical properties. Chemical modification consists of the introduction of functional groups into starch molecules, which result in specific changes in the physicochemical and functional properties of starch preparations. The bases of chemical modifications of starch are oxidation, esterification or etherification reactions. In terms of functionality, modified preparations include cross-linked and stabilized starches. These starches have the status of allowed food additives, and their use is strictly regulated by relevant laws. Large-scale scientific research is aimed at developing new methods of starch modification, and the use of innovative technological solutions allows for an increasingly wider use of such preparations. This paper characterizes chemically modified starches used as food additives, including the requirements for such preparations and the directions of their practical application. Health-promoting aspects of the use of chemically modified starches concerning resistant starch type RS4, encapsulation of bioactive ingredients, starch fat substitutes, and carriers of microelements are also described. The topic of new trends in the use of chemically modified starches, including the production of biodegradable films, edible coatings, and nanomaterials, is also addressed.

Identification of Chinese baijiu from the same brand based on a graphene quantum dots fluorescence sensing array

The identification of Chinese baijiu is crucial to regulating the international market and maintaining legitimate rights, as the popularity, influence and awareness of baijiu are growing. A graphene quantum dot (GQD) based fluorescence sensor array is designed in this paper. Upon using only GQDs as a single sensing element, combining three different solvents improves the sensing array's detection sensitivity while simplifying material preparation and experimental detection. Adding organic substances creates intermolecular forces between the GQDs and the solvent, causing the fluorescence intensity to change. The sensor array was able to distinguish 21 types of organic matter, different ratios of quaternary mixed organic materials and 17 types of baijiu of the same brand. It also showed excellent performance in the detection of species in blind samples, with the machine learning algorithm successfully distinguishing baijiu from five other distilled spirits. The experiment provides guidance for the practical application of GQDs and provides a simple but effective reference for sensor arrays to detect baijiu.

Stabilization of High Internal Phase Oil-in-Water Emulsions Using "Whole" Gracilaria lemaneiformis Slurry

In this study, a Gracilaria lemaneiformis slurry (GLS) was prepared using low-energy mechanical shearing. The resulting GLS, which was rich in polysaccharides, was utilized as an effective stabilizer for oil-in-water emulsions. The microstructures and stability of the resulting emulsions were controlled by adjusting the emulsion formulations, including Gracilaria lemaneiformis (GL) mass concentration and oil volume fraction (φ). The optimized GL mass concentration and φ conditions yielded high internal phase emulsions (HIPEs) with gel-like textures. Moreover, the presence of exogenous Ca2+ resulted in bridging structures in the emulsions, enhancing their viscoelasticity and forming a robust physical barrier against droplet coalescence. Our findings highlight the effectiveness of the GLS as an emulsifier for stabilizing HIPEs. Notably, this method relies solely on physical processes, aligning with the desirability of avoiding chemical additives, particularly in the food industry.

Exploring carbohydrate extraction from biomass using deep eutectic solvents: Factors and mechanisms

Deep eutectic solvents (DESs) are increasingly being recognized as sustainable and promising solvents because of their unique properties: low melting point, low cost, and biocompatibility. Some DESs possess high viscosity, remarkable stability, and minimal toxicity, enhancing their appeal for diverse applications. Notably, they hold promise in biomass pretreatment, a crucial step in biomass conversion, although their potential in algal biomass carbohydrates extraction remains largely unexplored. Understanding the correlation between DESs' properties and their behavior in carbohydrate extraction, alongside cellulose degradation mechanisms, remains a gap. This review provides an overview of the use of DESs in extracting carbohydrates from lignocellulosic and algal biomass, explores the factors that influence the behavior of DESs in carbohydrate extraction, and sheds light on the mechanism of cellulose degradation by DESs. Additionally, the review discusses potential future developments and applications of DESs, particularly extracting carbohydrates from algal biomass.

Starch Nanoparticles: Preparation, Properties and Applications

Starch as a natural polymer is abundant and widely used in various industries around the world. In general, the preparation methods for starch nanoparticles (SNPs) can be classified into 'top-down' and 'bottom-up' methods. SNPs can be produced in smaller sizes and used to improve the functional properties of starch. Thus, they are considered for the various opportunities to improve the quality of product development with starch. This literature study presents information and reviews regarding SNPs, their general preparation methods, characteristics of the resulting SNPs and their applications, especially in food systems, such as Pickering emulsion, bioplastic filler, antimicrobial agent, fat replacer and encapsulating agent. The aspects related to the properties of SNPs and information on the extent of their utilisation are reviewed in this study. The findings can be utilised and encouraged by other researchers to develop and expand the applications of SNPs.

Polysaccharide-based nano-delivery systems for encapsulation, delivery, and pH-responsive release of bioactive ingredients

Polysaccharides are natural polymers isolated from plants, microorganisms, algae, and some animals they are composed of aldoses or ketoses linked by glycosidic bonds. Due to the affordability, abundance, safety, and functionality, polysaccharides are widely used in the foods and medicines to construct oral delivery systems for sensitive bioactive ingredients. In this article, the characteristics and applications of nanoscale polysaccharide-based delivery carriers are reviewed, including their ability to encapsulate, protect, and deliver bioactive ingredients. This review discusses the sources, characteristics, and functional properties of common food polysaccharides, including starch, pectin, chitosan, xanthan gum, and alginate. It also highlights the potential advantages of using polysaccharides for the construction of nano-delivery systems, such as nanoparticles, nanogels, nanoemulsions, nanocapsules, and nanofibers. Moreover, the application of delivery systems assembled from polysaccharides is summarized, with a focus on pH-responsive delivery of bioactives. There are some key findings and conclusions: Nanoscale polysaccharide delivery systems provide several advantages, including improved water-dispersibility, flavor masking, stability enhancement, reduced volatility, and controlled release; Polysaccharide nanocarriers can be used to construct pH-responsive delivery vehicles to achieve intestinal-targeted delivery and controlled release of bioactive ingredients; Polysaccharides can be used in combination with other biopolymers to form composite delivery systems with enhanced functional attributes.
