Biobehavior of the human love of salt

We are beginning to understand why humans ingest so much salt. Here we address three issues: The first is whether our salt appetite is similar to that in animals, which we understand well. Our analysis suggests that this is doubtful, because of important differences between human and animal love of salt. The second issue then becomes how our predilection for salt is determined, for which we have a partial description, resting on development, conditioning, habit, and dietary culture. The last issue is the source of individual variation in salt avidity. We have partial answers to that too in the effects of perinatal sodium loss, sodium loss teaching us to seek salt, and gender. Other possibilities are suggested. From animal sodium appetite we humans may retain the lifelong enhancement of salt intake due to perinatal sodium loss, and a predisposition to learn the benefits of salt when in dire need. Nevertheless, human salt intake does not fit the biological model of a regulated sodium appetite. Indeed this archetypal 'wisdom of the body' fails us in all that has to do with behavioral regulation of this most basic need.

Salt conditions a flavor preference or aversion after exercise depending on NaCl dose and sweat loss

Sodium supplementation during or after exertion improves hydration. We hypothesized that it may therefore improve well being after exercise-induced sodium loss. To avoid cognitive-biased interpretations of the taste of salt, we used untasted salt in swallowed capsules to condition preference for the flavor of a drink. In four 90 min exercise sessions, 2-3 days apart, participants drank 100 ml of a novel drink and swallowed a capsule, either empty (placebo), or containing 200, 400 or 600 mg NaCl (n=20 in each group). We found both increases and decreases in flavor preference conditioning, depending on salt dose and level of sweat loss: in groups receiving salt supplementation, high levels of sweat loss induced greater flavor conditioning of preference than low levels of sweating. However, 600 mg NaCl conditioned a flavor aversion relative to placebo, which was greater in exercisers sweating little. We conclude that since untasted salt conditioned flavor preference in direct proportion to the amount of sweat lost, replenishment of the sodium lost in sweat induces a rewarding physiological state. The results provide further evidence for the physiological determinants of human salt appetite, and buttress the evidence that post-ingestive effects condition food preferences. Conditioned flavor preference may also provide a useful measure of the benefits of other nutrient additives in sports drinks.

Effect of an exercise-heat acclimation program on body fluid regulatory responses to dehydration in older men

We examined if an exercise-heat acclimation program improves body fluid regulatory function in older subjects, as has been reported in younger subjects. Nine older (Old; 70 +/- 3 yr) and six younger (Young; 25 +/- 3 yr) male subjects participated in the study. Body fluid regulatory responses to an acute thermal dehydration challenge were examined before and after the 6-day acclimation session. Acute dehydration was produced by intermittent light exercise [4 bouts of 20-min exercise at 40% peak rate of oxygen consumption (VO(2 peak)) separated by 10 min rest] in the heat (36 degrees C; 40% relative humidity) followed by 30 min of recovery without fluid intake at 25 degrees C. During the 2-h rehydration period the subjects drank a carbohydrate-electrolyte solution ad libitum. In the preacclimation test, the Old lost approximately 0.8 kg during dehydration and recovered 31 +/- 4% of that loss during rehydration, whereas the Young lost approximately 1.2 kg and recovered 56 +/- 8% (P < 0.05, Young vs. Old). During the 6-day heat acclimation period all subjects performed the same exercise-heat exposure as in the dehydration period. Exercise-heat acclimation increased plasma volume by approximately 5% (P < 0.05) in Young subjects but not in Old. The body fluid loss during dehydration in the postacclimation test was similar to that in the preacclimation in Young and Old. The fractional recovery of lost fluid volume during rehydration increased in Young (by 80 +/- 9%; P < 0.05) but not in Old (by only 34 +/- 5%; NS). The improved recovery from dehydration in Young was mainly due to increased fluid intake with a small increase in the fluid retention fraction. The greater involuntary dehydration (greater fluid deficit) in Old was accompanied by reduced plasma vasopressin and aldosterone concentrations, renin activity, and subjective thirst rating (P < 0.05, Young vs. Old). Thus older people have reduced ability to facilitate body fluid regulatory function by exercise-heat acclimation, which might be involved in attenuation of the acclimation-induced increase in body fluid volume.
