Selenium content of goat milk and its distribution in protein fractions

Effects of a whey protein supplementation on oxidative stress, body composition and glucose metabolism among overweight people affected by diabetes mellitus or impaired fasting glucose: A pilot study

Obesity and diabetes mellitus type 2 (DM2) are characterized by chronic inflammation and oxidative stress [Donath et al. 2013] and this leads to cardiovascular diseases [Hulsmans & Holvoet 2010]. Whey proteins (WP) have antioxidant [Chitapanarux et al. 2009], anti-inflammatory [Sugawara et al. 2012] and hypoglycemic activities [Mignone et al. 2015], while data on weight, body composition [Frestedt et al. 2008; Aldrich et al. 2011] and blood pressure are conflicting [Kawase et al. 2000; Lee et al. 2007]. WP have unpleasant taste and smell [Patel 2015], but a new WP isolate (ProLYOtin®) seems to be more palatable. 40 g/die of ProLYOtin® were supplemented to overweight people (n=31) with impaired fasting glucose/DM2 for 12 weeks. Markers of antioxidant status (total antioxidant status, glutathione peroxidase, glutathione reductase, uric acid), oxidative damage (thiobarbituric acid reactive substances, advanced oxidation protein products, 8-hydroxydeoxyguanosine), inflammation (interleukin-6, high sensitive reactive protein C) and glicemic status (fasting glucose, insulin, glycated hemoglobin), anthropometric data (weight, height, waist circumference), body composition (body cell mass, fat mass), blood pressure, hand grip strength and skin autofluorescence were measured before and at the end of supplementation. Isolate palatability was evaluated. An increase in glutathione peroxidase, a decrease in uric acid and no change in glutathione reductase, total antioxidant status, oxidative damage, inflammation and glucose markers were found. Significant improvements in anthropometric parameters and fat mass were detected. There wasn't any change in blood pressure, skin autofluorescence and physical performance. Two-thirds of subjects judged the supplement positively. ProLYOtin® seems suitable for treatment of OS and overweight.

Selenium content of milk and milk products of Turkey. II

Selenium content of 1028 milk and milk products of Turkey are presented in this study. The selenium content of human milk (colostrum, transitional, and mature milk), various kinds of milk [cow, sheep, goat, buffalo, paper boxes (3%, 1.5%, 0.012% fat), bottled milk, condensed milk (10% fat), mineral added milk (1.6%), and banana, strawberry, and chocolate milk] and milk products (kefir, yogurt, Ayran, various cheese, coffee cream, ice cream, butter, margarine, milk powder, and fruit yogurt) in Turkey were determined by a spectrofluorometric method. The selenium levels of cow milks collected from 57 cities in Turkey were also determined. Selenium levels in cow milk varied with geographical location in Turkey and were found to be lowest for Van and highest for Aksaray. The results [milk (cow, sheep, goat, buffalo and human) and milks products] were compared with literature data from different countries.

State-of-the-art ion chromatographic determination of inorganic ions in food

A review of the applications of ion chromatography (IC) to the determination of inorganic ions in food is presented. The most promising sample preparation techniques, such as accelerated solvent extraction, supercritical fluid extraction, solid-phase extraction, UV photolysis, microwave-oven digestion and pyrohydrolysis are discussed. Among the various inorganic anions, nitrogen, sulphur and phosphorus species and halides are widely determined in foods and to a lesser extent only, cyanide, carbonate, arsenic and selenium species are considered. IC determination of inorganic cations deals with ammonium ion, alkali, alkaline-earth, heavy and transition metals particularly and only a small amount of literature is found on the other ones, like aluminium and plantinum. A particular advantage of IC over traditional techniques is the simultaneous determination of several species.

Estimation of selenium bioavailability from human, cow's, goat and sheep milk by an in vitro method

The trace element selenium (Se) has been recognized to be essential for human health. The dependence of infants on milk as their principal food source, generally low in Se content, makes them more vulnerable to inadequate Se intake. The present study compared the Se availability as estimated by a simulated gastrointestinal digestion procedure, of human milk and some common ruminant milks, namely cow, goat and sheep milk. The Se availability of human milk (11.1%) was significantly higher compared to that of cow (6.8%), goat (6.2%) and sheep milk ( < 2%). Further study suggested that the Se availability may be related to the gastric digestibility of protein. The high Se availability of human milk might be attributed to the high gastric digestibility of human milk protein. It was found that removal of the milk fat fraction increases the Se availability.

Estimation of the bioavailability of zinc and calcium from human, cow's, goat, and sheep milk by an in vitro method

The availability of zinc and calcium from human, cow's, goat, and sheep milk is evaluated by an in vitro method that involves a simulated human gastrointestinal digestion followed by measurement of dialyzability of zinc and calcium. Zinc availability of milk showed the highest value for human milk (15.0%) and the lowest for sheep milk (1.0%), in both whole and skim milk. Calcium availability of the different types of milk did not differ significantly and ranged between 18 and 23%. No significant differences in availability between whole and skim milk were found for both elements, except for zinc in cow's milk.

Selenium content of sheep's milk and its distribution in protein fractions

The selenium (Se) distribution in sheep's milk is reported. Skim milk was found to contain the major part (98%) of total milk Se. The Se distribution over casein and whey protein fractions depends on the separation method used, but irrespective of these methods, skim milk Se is mainly associated with the casein fraction (> 68%). Approximately 11%, 4% and 17% Se is removed by dialysis (molecular mass cut-off 10-12 kDa) from skim milk, casein and whey respectively, indicating a major association of Se with milk proteins. This observation is confirmed through Se analysis of individual caseins and whey proteins isolated through ion-exchange chromatography and gel filtration. Se concentrations of the different isolated milk proteins show considerable variations (caseins, 304-750 ng Se/g; whey proteins, 241-806 ng Se/g).
