Stereoisomeric flavour compounds XXXVIII: Direct chirospecific analysis of γ-lactones using on-line coupled LC-GC with a chiral separation column

Enantiomeric analysis of γ(δ)-lactones by reversed phase high performance liquid chromatography using amylose tris(5-chloro-2-methylphenylcarbamate) as stationary phase

A Chiralpak AY-3R column was investigated for analytical enantiomeric separation of twelve racemic γ(δ)-lactones using reversed phase high performance liquid chromatography. Main influence factors, including organic modifier, flow rate and column temperature, were optimized. Five kinds of γ(δ)-lactones were successfully enantioseparated using the established method: γ-nonanolactone, δ-decalactone, δ-undecalactone, δ-dodecalactone and δ-tetradecalactone. Under optimized conditions, enantiomeric peak resolution (Rs) for the five γ(δ)-lactones reached more than 1.09, 1.08, 1.54, 1.43, and 1.11, respectively. Their chromatographic elution behavior was investigated using Van't Hoff equation and Van Deemter equation. It was found that an exothermic process occurred during enantiomeric separation of γ(δ)-lactones using this chromatographic column, and it showed a typical Van Deemter curve. Finally, this method was applied in enantiomeric ratio analysis of γ(δ)-lactones contents for purchased butter samples, and results confirmed the predominant content of the (R)-configuration of δ-dodecalactone in natural animal butter, while in margarine, an equal proportion of (R/S)-configuration of δ-dodecalactone was detected.

Quantitative analysis of γ- and δ-lactones in wines using gas chromatography with selective tandem mass spectrometric detection

RATIONALE

Aroma relevant γ- and δ-lactones are important flavor compounds in various foodstuffs. Their quantitative determination is essential for evaluating food sensory properties as well as food authenticity studies.

METHODS

High-throughput head-space solid-phase microextraction as sample preparation, separation by capillary gas chromatography coupled with triple stage quadrupole mass spectrometry has been evaluated as the analytical method.

RESULTS

Monitoring selected reaction mass fragments allowed sub-µg/L quantification of γ- and δ-lactones in complex wine matrices.

CONCLUSIONS

Tandem mass spectrometry improves specific detection of γ- and δ-lactones, a prerequisite for reliable quantification at low-µg/L concentration levels in complex wine matrices.

Enantiomeric analysis of β-pinene and limonene by direct coupling of reversed phase liquid chromatography and gas chromatography using absorbents as packing materials

A method based on the use of absorbents as packing materials inside the interface of the online coupling between RPLC and GC is proposed for the enantiomeric analysis of beta-pinene and limonene in essential oils. For that purpose, a comparison of the RSD, detection limit and recovery provided by two absorbents and one adsorbent is included in this study. The results found in this work proved the validity of absorbents as packing materials in online RPLC-GC to determine minor compounds in complex matrices. In particular, PDMS seemed to be specially useful to analyse nonpolar compounds, such as beta-pinene and limonene, since it provided higher sensitivity for this kind of compounds. The developed method was applied to the evaluation of the natural and non-natural character of commercial essential oils by means of the determination of the enantiomeric composition of beta-pinene and limonene.

Determination of the enantiomeric composition of gamma-lactones in edible oils by on-line coupled high performance liquid chromatography and gas chromatography

A new method is proposed for the determination of the enantiomeric composition of gamma-lactones in different vegetable edible oils (i. e., olive oil, almond oil, hazelnut oil, peanut oil, and walnut oil), and its potential for authenticity control is underlined for a limited number of samples. The method is based on the direct injection (i.e., without requiring a sample pretreatment step) in on-line coupled reversed phase liquid chromatography to gas chromatography (RPLC-GC) using a chiral stationary phase in the GC-step. Different experimental values for both speed of sample introduction into GC and volume of the transferred fraction are considered to improve the recoveries obtained. Relative standard deviations lower than 10% and detection limits ranging from 0.06 to 0.22 mg/L were achieved for the investigated gamma-lactones.
