Abstract
Mycotoxins (MTs) are secondary toxic metabolites that can contaminate food, impacting quality and safety, leading to various negative health effects and serious pathological consequences conferring urgent need to evaluate and validate the currently standard methods used in their analysis. Therefore, this study was aimed to validate ELISA and VICAM immunoaffinity fluorometric, the two common methods used to monitor the level of MTs according to the Egyptian Organization for Standardization and Quality Control. A total of 246 food samples were collected and tested for Aflatoxins (196 samples), Ochratoxin A (139), Zearalenone (70), and Deoxynivalenol (100) using both analytical methods. Results showed that aflatoxins exceeded limits in 42.9, 100, and 13.3% of oily seeds, dried fruits, and chili and spices, respectively. For ochratoxin A, 3.9% of Gramineae and 8% of spices and chili (locally sourced) exceeded the limits, while 17.6% of imported pasta and noodles exceeded the limits for deoxynivalenol. Significant differences for the aflatoxins and ochratoxin A detection among different categories of chocolate, dried fruits, and oily seeds (p-value < 0.05). No zearalenone contamination was detected in the exported, imported, and locally sourced categories. No deoxynivalenol contamination was detected in the tested Gramineae category. In contrast, for pasta and noodles, the imported samples exhibited the highest contamination rate (above the upper limit of 750 µg/kg) with 17.6% of the samples testing positive for deoxynivalenol with no significant difference among different sample categories of Gramineae, pasta, and noodles (p-value > 0.05). In conclusion, our study found no significant differences between the ELISA and immunoaffinity fluorometric analysis in the detection of the respective MTs in various food categories and therefore, they can substitute each other whenever necessary. However, significant differences were observed among different food categories, particularly the local and imported ones, highlighting the urgent need for strict and appropriate control measures to minimize the risk of MTs adverse effects.

Abstract
A multi-specimen, multi-mycotoxin approach involving ultra-sensitive LC-MS/MS analysis of breast milk, complementary food and urine was applied to examine mycotoxin co-exposure in 65 infants, aged 1-18 months, in Ogun state, Nigeria. Aflatoxin M1 was detected in breast milk (4/22 (18%)), while six other classes of mycotoxins were quantified; including dihydrocitrinone (6/22 (27%); range: 14.0-59.7 ng/L) and sterigmatocystin (1/22 (5%); 1.2 ng/L) detected for the first time. Seven distinct classes of mycotoxins including aflatoxins (9/42 (21%); range: 1.0-16.2 µg/kg) and fumonisins (12/42 (29%); range: 7.9-194 µg/kg) contaminated complementary food. Mycotoxins covering seven distinct classes with diverse structures and modes of action were detected in 64/65 (99%) of the urine samples, demonstrating ubiquitous exposure. Two aflatoxin metabolites (AFM1 and AFQ1) and FB1 were detected in 6/65 (9%), 44/65 (68%) and 17/65 (26%) of urine samples, respectively. Mixtures of mycotoxin classes were common, including 22/22 (100%), 14/42 (33%) and 56/65 (86%) samples having 2-6, 2-4, or 2-6 mycotoxins present, for breast milk, complementary food and urine, respectively. Aflatoxin and/or fumonisin was detected in 4/22 (18%), 12/42 (29%) and 46/65 (71%) for breast milk, complimentary foods and urine, respectively. Furthermore, the detection frequency, median concentrations and occurrence of mixtures were typically greater in urine of non-exclusively breastfed compared to exclusively breastfed infants. The study provides novel insights into mycotoxin co-exposures in early-life. Albeit a small sample set, it highlights transition to higher levels of infant mycotoxin exposure as complementary foods are introduced, providing impetus to mitigate during this critical early-life period and encourage breastfeeding.

Abstract
Mycotoxins represent a wide range of secondary, naturally occurring and practically unavoidable fungal metabolites. They contaminate various agricultural commodities like cereals, maize, peanuts, fruits, and feed at any stage in pre- or post-harvest conditions. Consumption of mycotoxin-contaminated food and feed can cause acute or chronic toxicity in human and animals. The risk that is posed to public health have prompted the need to develop methods of analysis and detection of mycotoxins in food products. Mycotoxins wide range of structural diversity, high chemical stability, and low concentrations in tested samples require robust, effective, and comprehensible detection methods. This review summarizes current methods, such as chromatographic and immunochemical techniques, as well as novel, alternative approaches like biosensors, electronic noses, or molecularly imprinted polymers that have been successfully applied in detection and identification of various mycotoxins in food commodities. In order to highlight the significance of sampling and sample treatment in the analytical process, these steps have been comprehensively described.

Abstract
We developed and validated a screening method for mycotoxin analysis in cereal products and spices. Ultra-high-performance liquid chromatography coupled with tandem mass spectrometry (UHPLC-MS/MS) was used for the analysis. Dispersive solid-phase extractions (d-SPEs) were used for the extraction of samples. Ochratoxin A (OTA), zearalenone (ZEA), aflatoxins (AFLA; AFB1, AFB2, AFG1, AFG2), deoxynivalenol (DON), fumonisin (FUMO; FB1, FB2, FB3), T2, and HT2 were validated in maize. AFLA and DON were validated in black pepper. The method satisfies the requirements of Commission Regulation (EC) no. 401/2006 and (EC) no. 1881/2006. The screening target concentration (STC) was under maximum permitted levels (MLs) for all mycotoxins validated. The method's performance was assessed by two different proficiencies and tested with 100 real samples.

Abstract
Condiments are the magical ingredients that make the food present a richer taste. In recent years, due to the increasing consciousness of food safety and human health, much progress has been made in developing rapid and nondestructive techniques for the evaluation of food condiments safety, authentication, and traceability. The potential of spectroscopy techniques, such as near-infrared (NIR), mid-infrared (MIR), Raman, fluorescence, inductively coupled plasma (ICP), and hyperspectral imaging techniques, has been widely enhanced by numerous applications in this field because of their advantages over other analytical techniques. Following a brief introduction of condiment and safety basics, this review mainly focuses on recent vibrational and atomic spectral applications for condiment nondestructive analysis and evaluation, including (1) chemical hazards detection; (2) microbiological hazards detection; and (3) authenticity concerns. The review shows current spectroscopies to be effective tools that will play indispensable roles for food condiment evaluation. In addition, online/real-time applications of these techniques promise to be a huge growth field in the near future.

Abstract
The simultaneous detection of multiple mycotoxins is important for food safety. Here, a magneto-controlled aptasensor for quantitative analysis of ochratoxin A (OTA) and fumonisin B1 (FB1) using inductively coupled plasma mass spectrometry (ICP-MS) with multiple metal nanoparticles as element labels was proposed. Firstly, the OTA aptamer (Apt1) and the FB1 aptamer (Apt2) immobilized on the magnetic beads (MBs) were hybridized with probe DNA1-CdSe quantum dots (pDNA1-QDs) and probe DNA2-Ag nanoparticles (pDNA2-Ag NPs) labels, producing the MBs-Apt1-pDNA1-QDs and MBs-Apt2-pDNA2-Ag NPs conjugates, respectively. Then, the MBs-Apt1-OTA and MBs-Apt2-FB1 conjugates were generated with the addition of targets, resulting the pDNA1-QDs and pDNA2-Ag NPs labels released into the solutions. Finally, the signal intensities of 111Cd and 107Ag were detected by ICP-MS, achieving limits of detection of 0.10 and 0.30 ng mL-1 for OTA and FB1, respectively. The assay showed high specificity and succeeded in wheat flour. The method provides an ideal model for sensitive analysis of multiple mycotoxins in food samples.

Two thermo-responsive molecularly imprinted polymers (MHNTs@MIP and MCNTs@MIP) for the selective extraction of sterigmatocystin have been prepared on the surface of the magnetic halloysite nanotubes (MHNTs) and magnetic carbon nanotubes (MCNTs), respectively. 1, 8-dihydroxyanthraquinone, n-isopropyl acrylamide, methacrylic acid, ethylene dimethacrylate and dimethyl sulfoxide were used as the dummy template, thermo-sensitive functional monomer, co-monomer, cross-linker and porogen, respectively. The magnetic properties, adsorption properties as well as the temperature responsive behaviors of MHNTs@MIP and MCNTs@MIP were systematically studied and compared for the first time. Enough saturation magnetizations of MHNTs@MIP (9.42 emu/g) and MCNTs@MIP (10.54 emu/g) were obtained. MHNTs@MIP and MCNTs@MIP also showed controllable adsorption and release behaviors to sterigmatocystin in response to the temperature change (35 °C and 20 °C). Compared with MCNTs@MIP, MHNTs@MIP had higher adsorption affinity (KL = 0.120 L/mg), higher adsorption kinetic (K2 = 0.0100 g/(mg•min)) and higher imprinting factor (5.22) to sterigmatocystin. These results indicated that MHNTs@MIP was favorable adsorbent for the selective separation of sterigmatocystin. Furthermore, the elution conditions of MHNTs@MIP were optimized by response surface methodology. Under the optimal conditions, MHNTs@MIP coupled with high performance liquid chromatography were successfully applied to the selective recognition, purification, enrichment and detection of sterigmatocystin in wheat samples. The recoveries were calculated from 88.62% to 102.9% with RSDs less than 3.5 % and limit of detection of 1.1 μg/kg. This work provided a suitable carrier for the preparation of imprinted polymers and a practical approach for highly selective recognition and determination of analytes in real samples.

Abstract
β-Cyclodextrin-functionalized carbon nitride nanosheets were modified with a molecularly imprinted polymer to obtain a fluorescent probe of type MIP@β-CD/CNNS which is shown to enable fluorometric determination of sterigmatocystin (STG). The material was characterized by transmission electron microscopy, infrared spectra, powder X-ray diffraction, X-ray photoelectron spectroscopy, and by absorption and emission spectra. The modified CNNSs have a good fluorescence quantum yield (13%), high sorption capacity for STG (86 mg·g-1), fast adsorption rate (25 min), and superior adsorption selectivity (with an imprint factor 2.56). When used as an optical probe for STG, the CNNSs act as the chromophore, while β-CD and MIP act as the recognition groups. The blue fluorescence of MIP@β-CD/CNNS (with excitation/emission maxima at 368/432 nm) is quenched by STG. Fluorescence drops linearly in the 0.15 to 3.1 μM STG concentration range. The lower detection limit is 74 nM. The method was successfully applied to the determination of STG in spiked wheat extract. Conceivably, this detection scheme based on a combination of β-CD inclusion and molecular imprinting may be extended to the detection of various other organic compounds. Abstract
The simultaneous detection of multiple mycotoxins is important due to the increased toxic effects of combined mycotoxins in grains. In this research, a combination of modified QuEChERS with ultrahigh-performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS) was used for simultaneous detection of 20 mycotoxins in grains. A series of different types of magnetic (Fe3O4) nanoparticles modified with multiwalled carbon nanotubes (Fe3O4-MWCNTs) were designed as modified QuEChERS adsorbents for facile and efficient purification and for target interferences removal in the matrices. When there is an external magnetic field, the proposed modified QuEChERS method uses a shorter pretreatment time compared with the traditional QuEChERS method, which makes it possible to conduct high-throughput analyses. To optimize the QuEChERS process, the extraction solvent and the type and amount of the Fe3O4-MWCNTs were investigated. Under optimal conditions, the method was validated and showed satisfactory linearity (r2 ≥ 0.9965), good recovery (73.5-112.9%), good precision (1.3-12.7%), and excellent sensitivity (ranging from 0.0021 to 5.4457 ng g-1), which indicates that this method can be used for detecting multiple mycotoxins in real samples.

Abstract
Sterigmatocystin (STC) is a toxic secondary metabolite produced by more than 50 fungal species, including Aspergillus flavus, A. parasiticus, A. nidulans, and A. versicolor. The Joint FAO/WHO Expert Committee on Food Additives concluded that sterigmatocystin is genotoxic and carcinogenic with the critical effect determined to be carcinogenicity. The present study describes a simple method to prepare hapten and immunogens in order to generate polyclonal antibodies against this metabolite. We developed a sensitive and specific polyclonal antibody-based competitive indirect enzyme-linked immunosorbent assay (ciELISA) for monitoring STC in wheat and corn flours without the need for derivatisation of STC or clean-up of samples by immunoaffinity chromatography for quantification. The half inhibitory concentration (IC50) of the established method was 4.52 ± 0.81 ng mL-1, with the limit of detection (IC10) being 0.19 ± 0.04 ng mL-1 in wheat and corn flour matrices with the coefficient of variation of less than 22%.The assay was very specific to STC and showed no cross-reactivity with its analogue structures. The ELISA allowed for up to 5% methanol without significant influence on the IC50 value. Validation of the assay was performed by spiking STC into a blank flour matrix and the recoveries were in the range of 75.3 % to 104.5 % with a coefficient of variation less than 15%. A small retail survey was conducted by purchasing wheat (n = 8) and corn flours (n = 2) from local grocery stores. All of these retail samples were negative for STC using the developed ELISA method and were confirmed by LC-MS/MS. We demonstrated a rapid, simple, and reliable method for screening STC in wheat and corn flours.
