Abstract
To assess the total daily mercury intake and main exposure sources of residents, six food groups, including marine fish, freshwater fish, poultry, livestock, vegetables, and cereals, were collected from five districts of Chengdu, China. The median concentrations of total mercury (THg) and methylmercury (MeHg) were 12.8 and 6.94 μg kg-1 ww, respectively. Cereals (32.2%), vegetables (30.5%), and livestock (16.2%) contributed to a much larger extent to the total consumption for the participants in Chengdu. All food categories that contributed the most of THg (2.16 μg day-1) and MeHg 1.44 (μg day-1) to the daily intake in Chengdu were cereals and marine fish, respectively. The total Hazard Ratios values below 1 in this study indicate that there is no health risk associated with Hg ingestion from the consumption of these foods for the residents in Chengdu.

Abstract
The bioaccumulation of total mercury (THg) and methylmercury (MeHg) by housefly maggots (HM) during the conversion of food waste (vegetables and meat (VM) and rice waste) under various waste feed ratios were investigated. Subsequently, Nile tilapia (Oreochromis niloticus) were fed with the commercial feed, commercial dried HM, dried HM, and fresh HM, followed by a human health risk assessment of Hg via fish consumption. The THg concentrations of HM fed with food waste ranged from 39.5 to 100 μg kg-1 ww. Concentrations of MeHg in the maggots fed with 100 % vegetables and meat (VM) waste (13.7 ± 1.12 μg kg-1 ww) was significantly higher than that fed with other mixed ratios of rice waste and VM waste (p<0.05). Concentrations of MeHg were positively correlated with the weight and lipid content of houseflies (p<0.05). THg and MeHg concentrations in tilapia fed with the converted HM (dried and fresh HM) were 22.5 ± 6.50 μg kg-1 ww and 2.43 ± 0.36 μg kg-1 ww, respectively. There was no significant difference in MeHg between tilapia fed the four experiment diets (p>0.05). Health risk assessment results indicated that mercury in tilapia fed the food waste-grown HM did not pose potential health risks to humans (target hazard quotient < 1). In conclusion, HM could convert food waste into high-quality and safe fish feeds for cultivating tilapia.

Ideating A Sustainable Swine Feed Prototype: A Qualitative Approach in Farmers’ Pain Point Identification and Product Development. SUSTAINABILITY 2022. Abstract
There is a growing interest and trend in new product development (NPD) from food waste. However, most qualitative approaches rarely use the lean entrepreneur concept in the context of new product development (NPD), which allows for understanding customer insight rather than the traditional qualitative approach. Therefore, this study aims to (1) explore the swine farmer behaviors, desired outcomes, and pain points in using swine feedstuffs, (2) select three representative segments and identify high-value customers of swine feeds, and (3) develop a sustainable swine feed prototype from the fermented fish industrial residues. The target users, 24 pig farmers from 11 provinces across the Northeastern Region of Thailand, were recruited to participate in this research. Qualitative in-depth semi-structured interviews and thematic analysis were conducted to analyze their behaviors, desired outcomes, and pain points towards pig feed usages. The framework was combined with in-depth qualitative interviews and the customer, problem, and solution zoom tools. The results revealed that household farmers were the target customer segment of swine feed made from fermented fish industrial wastes. In addition, the findings showed that the household farmers typically fed their pigs with instant feeds and alternative feeds. Moreover, their desired outcomes were the pellet feed with nutrients. Furthermore, the pain points of the household farmers were the expensive cost of feeds and mold in feeds. Therefore, this segment needs to minimize the cost of feeds by using other sustainable alternatives.

Abstract
Food waste has been a major barrier to achieving global food security and environmental sustainability for many decades. Unfortunately, food waste has become an even bigger problem in many countries because of supply chain disruptions during the COVID-19 pandemic and African Swine Fever epidemic. Although Japan and South Korea have been leaders in recycling food waste into animal feed, countries that produce much greater amounts of food waste, such as the United States and the European Union, have lagged far behind. Concerns about the risk of transmission of bacteria, prions, parasites, and viruses have been the main obstacles limiting the recycling of food waste streams containing animal-derived tissues into animal feed and have led to government regulations restricting this practice in the U.S. and EU. However, adequate thermal processing is effective for inactivating all biological agents of concern, perhaps except for prions from infected ruminant tissues. The tremendous opportunity for nitrogen and phosphorus resource recovery along with several other environmental benefits from recycling food waste streams and rendered animal by-products into animal feed have not been fully appreciated for their substantial contribution toward solving our climate crisis. It is time to revisit our global approach to improving economic and environmental sustainability by more efficiently utilizing the abundant supply of food waste and animal tissues to a greater extent in animal feed while protecting human and animal health in food animal production systems.

Abstract
Methylmercury (MeHg) poses health risks to humans worldwide. The investigation of a longer chain of biogeochemical MeHg transport from production to consumption than that addressed in previous studies could provide additional scientific foundation for the reduction of risks. The main objective of this study is to identify the impacts of the interregional food trade along with the age, gender and socioeconomic status of people on human MeHg exposure in a developing megacity. Based on a field investigation, sampling and measurements, we provide experimental evidence regarding the substantial displacement of human MeHg exposure from production areas to consumption areas induced by the food trade. In 2018, 20% and 64% of the exposure in Beijing originated from the international and interprovincial food trade, respectively. Meanwhile, the ingestion of fish contributed 79% to the total exposure, followed by rice (4.4%), crab (3.8%) and shrimp (2.7%), and the exposure risk in urban districts was higher than that in rural areas by a factor of 2.2. A significantly higher contribution of imported deep-sea species to exposure among young people than among older people was observed (P < 0.01**), and a larger contribution of the international food trade to the MeHg exposure risk for women of childbearing age (average: 27%) than that among other groups (average: 10%) was found. Overall, our efforts demonstrate the dramatic impact of the food trade on MeHg exposure in a developing megacity, and we suggest that MeHg-susceptible populations in China should choose indigenous fish species (e.g., hairtail, yellow croaker and carp species) rather than imported deep-sea species as their dietary protein source.

Abstract
Two farmed freshwater fish species Nile tilapia (Oreochromis niloticus) and jade perch (Scortum barcoo) were cultured with food waste-based diets and compared with commercial formulated control diet for a period of six months. Sixteen priority polycyclic aromatic hydrocarbons (PAHs) in the diets and cultured fish meat were tested by gas chromatography-mass spectrometry. No significant differences of ∑PAHs were observed between Nile tilapia and jade perch fed with food waste-based diets and control diet (p > 0.05). However, there were significantly higher concentration of ∑PAHs in market fish compared with the same species of fish fed by food waste-based diets (p < 0.05). Thus, the food waste-based diets have a potential to lower the PAH concentrations in farmed fish when compared with market fish. Based on the PAH concentrations, a human health risk assessment was made. The results indicated there were no non-cancer and very low cancer risks of consuming fish cultured with food waste-based diets at the 95th centile (Nile tilapia: hazard index (HI adult) = 0.343 × 10-3, HI children = 0.614 × 10-3 and cancer risk value = 0.943 × 10-6; jade perch: HI adult = 0.456 × 10-3, HI children = 0.814 × 10-3 and cancer risk value = 0.291 × 10-6). In general, the fish fed with food waste-based diets were unlikely to cause adverse health effects, based on the concentrations of PAHs. There is great potential for using food waste-based diets as an alternative to commercial feeds for cultivating freshwater fish.

Abstract
Mercury (Hg) is a global toxic pollutant and has raised the world's attention for decades. In this study, we reviewed the fish mercury levels in China (both marine and freshwater, as well as wild and farmed) documented over the past decade and their controlling environmental and biological factors. China is the largest contributor of global Hg cycling and the largest nation for the consumption and export of fish and fish product, thus Hg level in fish becomes a critical issue for food safety and public health. In China, Hg in fish is generally accumulated at a low level, but significant geographical differences were evident and formed the "hot spots" from the north to the south. For marine fish, the east (median: 70 ng g-1 ww, range: 5.0-330 ng g-1 ww) and southeast (median: 72 ng g-1 ww, range: 0.3-329 ng g-1 ww) of China have higher total Hg concentrations than the other coastal areas. For freshwater fish, Tibetan Plateau exhibited the highest total Hg levels (median: 104 ng g-1 ww, range: 5.0-868 ng g-1 ww). Risk assessment of the exposure of low-Hg-level fish to China's population deserves more attention and detailed fish consumption advisories to specific populations are urgently needed. The biokinetic model is a useful tool to characterize the underlying processes involved in Hg accumulation by fish. The diet (Hg concentration, speciation, food quality and quantity) and growth appear to be the important factors affecting the Hg levels of fish in China. The Hg biotransformation can also make contributions to Hg speciation and overall accumulation in fish. The intestinal microbes play an important role in Hg biotransformation and the potential for minimizing Hg contamination in fish deserves further investigation.

Abstract
Food waste is a low-cost and nutritious source of feed which could be beneficial to the fishery industry. The objective of this study was to use fermented food wastes as major sources of protein to replace the fish meal used in fish feeds for culturing jade perch (Scortum barcoo) and Nile tilapia (Oreochromis niloticus). Two experiments (a laboratory and a field trial) were conducted to test the suitability of the fish feeds for the two fish species. In the laboratory trial, six out of seven formulations (six food waste-based formulations and one commercial diet as control) were tested on jade perch whereas four out of the seven formulations were tested on Nile tilapia to study the effects of the diets on the growth performance and serum immunological parameters of fish. The formulations (Diet F and Diet A) with the best growth performance (feed conversion ratio (FCR) of jade perch (1.98) and Nile tilapia (1.28)) while having the lowest amount of fish meal (5%) were selected for field scale feeding trial. In addition, the percentage of fermented food waste ingredient in fish feed (Diet A and Diet F) was about 50% without causing significant effects on the immunity (P < 0.05) of the two fish species when compared with control diet. In the field scale feeding trial, FCR values of jade perch and Nile tilapia fed with Diet F and A were 1.06 and 1.16, respectively, which were similar to the control diet (P > 0.05). Metal/loids concentrations in fish tissue showed that both fish species fed with food waste-based pellets (Nile tilapia) Diet A: As (0.028 mg/kg), Cd (0.011 mg/kg), Cr (0.163 mg/kg), Cu (0.851 mg/kg), Hg (0.141 mg/kg), Pb (0.081 mg/kg) and Zn (30.8 mg/kg)) and jade perch Diet F: As (0.709 mg/kg), Cd (0.026 mg/kg), Cr (0.300 mg/kg), Cu (2.49 mg/kg), Hg (0.318 mg/kg), Pb (1.745 mg/kg) and Zn (40.9 mg/kg) were all below the maximum permissible levels of the local standard (As (AS2O3) = 6 mg/kg; Cd = 2 mg/kg; Cr = 1 mg/kg; Pb = 6 mg/kg; Hg = 0.5 mg/kg), while no permissible levels of Cu and Pb are stipulated by the standard. The results of the human health risk assessment indicated that the fish cultured with food waste-based diets were generally safe for human consumption (Hazard Index values: 0.075-0.054; cancer risk range: 2.14-8.15 × 10-6). The present study revealed that fermented food waste could serve as protein substitute in fish feed for the culture of quality jade perch and Nile tilapia for human consumption.

Abstract
The global pollutant mercury (Hg), especially as methylmercury (MeHg), threatens human and ecosystem health. But major contributors of MeHg exposure to people in China remain highly debated. We developed the China Mercury Exposure Assessment (CMEA) model, which incorporates human exposure pathways for MeHg and total Hg (THg), the interregional, including international and interprovincial, food trading as well as human physiology to provide a comprehensive system that can evaluate the pathway of Hg forms to human consumers in China. Based on the CMEA model that employed the most comprehensive and recent data, we have found that the Probable Daily Intake (PDI) of MeHg for the Chinese population was 0.057 (range: 0.036-0.091 as 60% confidence interval) μg·kg-1·day-1, while that of THg was 0.35 (range: 0.22-0.55) μg·kg-1·day-1. MeHg exposure was dominated by fish intake, especially by farm-raised freshwater fish due to higher consumption of these fish. In 2011, fish intake contributed to 56% to the total MeHg exposure, followed by rice (26%). Consumption of farm-raised fish reduced human exposure to MeHg by 33%. On the other hand, interregional food trading increased MeHg exposure of the Chinese population, as a whole, by 7.6%. The international and interprovincial food trades contributed to 5.1% and 22% of MeHg intake, respectively. For the whole China, fish intake related exposure to MeHg was highest for the Eastern and Northeastern populations, while Tibetans were chronically exposed to the highest MeHg from other sources. Our findings highlight the importance of farmed fish and food trade for MeHg exposure.

Abstract
This study investigates the mercury (Hg) contaminations in soil and foodstuffs along the artisanal gold mining areas, Gilgit-Baltistan Province, Pakistan. For this purpose, soils were analyzed for Hg concentrations and evaluated for the enrichment/contamination using enrichment factor or contamination factors (CF). The CF values ranged from 18.9 to 153 showed multifold higher levels of Hg contamination as compared to background or reference site. Foodstuffs including vegetables, seeds or grains and fish muscles showed Hg accumulation. Results revealed that Hg concentrations in foodstuffs were higher than the critical human health value set by European Union. The Hg in foodstuffs was consumed and, therefore, evaluated for the risk assessment indices using the daily intake (DI) and health risk index (HRI) for the exposed human population both children and adults. Results of this study revealed that cumulative HRI values through foodstuffs consumption were <1 (within safe limit), but if the current practices continued, then the Hg contamination could pose potential threat to exposed population in near future.

Abstract
China's aquaculture industry is growing dramatically in recent years and now accounts for 60.5% of global aquaculture production. Fish protein is expected to play an important role in China's food security. Formulated feed has become the main diet of farmed fish. The species farmed have been diversified, and a large amount of 'trash fish' is directly used as feed or is processed into fishmeal for fish feed. The use of locally available food waste as an alternative protein source for producing fish feed has been suggested as a means of tackling the problem of sourcing safe and sustainable feed. This paper reviews the feasibility of using locally available waste materials, including fish waste, okara and food waste. Although the fishmeal derived from fish waste, okara or food waste is less nutritious than fishmeal from whole fish or soybean meal, most fish species farmed in China, such as tilapia and various Chinese carp, grow well on diets with minimal amounts of fishmeal and 40% digestible carbohydrate. It can be concluded that food waste is suitable as a component of the diet of farmed fish. However, it will be necessary to revise regulations on feed and feed ingredients to facilitate the use of food waste in the manufacture of fish feed.

Abstract
The amount of food waste generated from modern societies is increasing, which has imposed a tremendous pressure on its treatment and disposal. Food waste should be treated as a valuable resource rather than waste, and turning it into fish feeds would be a viable alternative. This paper attempts to review the feasibility of using food waste to formulate feed pellets to culture a few freshwater fish species, such as grass carp, grey mullet, and tilapia, under polyculture mode (growing different species in the same pond). These species occupy different ecological niches, with different feeding modes (i.e., herbivorous, filter feeding, etc.), and therefore all the nutrients derived from the food waste could be efficiently recycled within the ecosystem. The problems facing environmental pollution and fish contamination; the past and present situation of inland fish culture (focusing on South China); upgrade of food waste based feed pellets by adding enzymes, vitamin-mineral premix, probiotics (yeast), prebiotics, and Chinese medicinal herbs into feeds; and potential health risks of fish cultivated by food waste based pellets are discussed, citing some local examples. It can be concluded that appropriate portions of different types of food waste could satisfy basic nutritional requirements of lower trophic level fish species such as grass carp and tilapia. Upgrading the fish pellets by adding different supplements mentioned above could further elevated the quality of feeds, leading to higher growth rates, and enhanced immunity of fish. Health risk assessments based on the major environmental contaminants (mercury, PAHs and DDTs) in fish flesh showed that fish fed food waste based pellets are safer for consumption, when compared with those fed commercial feed pellets.

Abstract
The effects of Astragalus membranaceus and Lycium barbarum on the growth performance and non-specific immunity of grass carp and Nile tilapia were studied. Herb extracts of Chinese medicinal herbs (2 g kg-1 or 20 g kg-1) were incorporated into food waste based fish feed pellets. Fish growth and selected non-specific immune parameters of grass carp and Nile tilapia were studied in two separate feeding trials. Both grass carp and Nile tilapia fed diets of feed pellets containing 2 g kg-1Lycium barbarum extract achieved the best relative weight gain, feed conversion ratio, specific growth rate and protein efficiency ratio among all experimental diets. Fish fed with diets containing 2 g kg-1Lycium barbarum also resulted in significantly higher total immunoglobin, bactericidal activity and anti-protease activity; and also a lower mortality when challenged with pathogenic bacteria. On the other hand, both fish species fed with diets containing 20 g kg-1 of Astragalus membranaceus and 20 g kg-1Lycium barbarum, resulted in significantly impaired weight gain. In addition, incorporation of 2 g kg-1Lycium barbarum extract would be a more suitable dose for both fish species, in terms of achieving better feed conversion ratio, specific growth rate, protein digestibility, and improved non-specific immune parameters. Based on this study, it can be concluded that waste based feed pellets incorporated with Chinese medicinal herb extracts have the ability to enhance growth and immunity of fish. Therefore, the use of Chinese medicinal herbs in aquaculture should be encouraged, in order to replace certain antibiotics known to impose environmental and health effects through the discharge of aquaculture effluents.

Abstract
The widespread use of compound pelleted feeds and chemical fertilizers in modern food production contribute to a vast amount of residual nutrients into the production system and adjacent ecosystem are major factors causing eutrophication. Furthermore, the extensive development and application of chemical compounds (such as chemical pesticides, disinfectants and hormones used in enhancing productivity) in food production process are hazardous to the ecosystems, as well as human health. These unsustainable food production patterns cannot sustain human living in the long run. Wetlands are perceived as self-decontamination ecosystems with high productivities. This review gives an overview about wetlands which are being integrated with food production processes, focusing on aquaculture.
