A New Insight into the Evaluation of Used Frying Oils Based on the Kinetics of Chemical Changes during the Process

Kinetics of change in total polar compounds (TPC), carbonyl value (CV), and conjugated diene value (CDV) were simultaneously investigated during the frying of potato strips in eight oil samples at 170 °C. The CDV at the turning point of the sigmoidal kinetic curves (CDV_T) with an average of ~19 mmol/L, which was almost equivalent to the TPC and CV of ~14% and ~24 μmol/g, respectively, was found to be as a sensory cut-off value for rejection. To discard frying oils from a toxicological standpoint, the CDV at the mean of the times required to reach the CDV_T and the CDV_max with an average of ~28 mmol/L (almost equivalent to the TPC and CV of ~22% and ~41 μmol/g, respectively) was determined as the corresponding cut-off value.

Evaluation of Olive Oil Quality with Electrochemical Sensors and Biosensors: A Review

Electrochemical sensors, sensor arrays and biosensors, alongside chemometric instruments, have progressed remarkably of late, being used on a wide scale in the qualitative and quantitative evaluation of olive oil. Olive oil is a natural product of significant importance, since it is a rich source of bioactive compounds with nutritional and therapeutic properties, and its quality is important both for consumers and for distributors. This review aims at analysing the progress reported in the literature regarding the use of devices based on electrochemical (bio)sensors to evaluate the bioactive compounds in olive oil. The main advantages and limitations of these approaches on construction technique, analysed compounds, calculus models, as well as results obtained, are discussed in view of estimation of future progress related to achieving a portable, practical and rapid miniature device for analysing the quality of virgin olive oil (VOO) at different stages in the manufacturing process.

Antioxidant, antimicrobial, and cytotoxic activities of extracts from the seed and pulp of Jujube (Ziziphus jujuba) grown in Iran

The aim of the present study was to investigate the biological activities of the ultrasound-assisted extracts obtained from pulp and seed of jujube (Ziziphus jujuba) fruits. To reach this purpose, total phenolic content (TPC), total flavonoid content (TFC), total pro-anthocyanin, DPPH radical scavenging activity, rancimat test, as well as antimicrobial activity and cytotoxicity test of both jujube pulp and seed extracts were evaluated. Total phenolic content (TPC), total flavonoid content (TFC), and total pro-anthocyanin in pulp extract were higher than those obtained from seed extract. In addition, DPPH radical scavenging activity of pulp extract (IC50 = 53.97 µg/ml) was higher than that of seed extract (IC50 = 88.68 µg/ml). Furthermore, the highest antimicrobial activity was observed against Escherichia coli and Staphylococcus aureus (MIC = 20 mg/ml) for both seed and pulp extracts. In vitro cytotoxicity evaluation on seven cell lines revealed that pulp and seed extracts of jujube had no cytotoxic activity. The present results suggested the promising antioxidant properties of jujube, which can be used in the fabrication of functional bioactive ingredients for different purposes.
