Estimating the potential of spices for mineral provision in a refugee context in East Africa. SN APPLIED SCIENCES 2023. Abstract
AbstractMicronutrient deficiency remains an enormous problem in refugee settings. Transforming refugees’ food systems through the scaling up of kitchen gardening and fortifying relief food crops with minor food components including nutrient-dense spices can help improve the quality of staple foods. Globally, spices are indispensable in the daily diet and play an important role in the socio-cultural setting of different communities. Forty turmeric and curry powder samples were collected from different market establishments and geographic locations in East Africa. The samples were analyzed for selected elements using Portable X-Ray Fluorescence (PXRF). The contents of potassium (K), calcium (Ca), zinc (Zn) and strontium (Sr) in turmeric powder were statistically different among geographic origins (Ethiopia, Kenya and Uganda). We also aimed to determine if a small portion of spices (turmeric (5 g) and curry (4 g)) would contribute to an adequate intake (AI) or recommended dietary allowance (RDA) for selected minerals, for refugee men and women aged between 19 and 50 years as defined by the Food and Nutrition Board of the Institute of Medicine (IOM). For the reference groups, the contributions of turmeric and curry powder to AI/RDA for K, Ca and Zn varied between 0.48 to 4.13%. On the other hand, turmeric was identified to contribute > 20% AI/RDA for refugee men and women aged between 19 and 50 years for two micro minerals: manganese (Mn) and iron (Fe). Considering turmeric and curry powder of East African origins are good sources of minerals and present acceptable toxic metal(loid)s loads coupled with low cost, these spices particularly turmeric should be more widely popularized and recommended for food-to-spice fortification among the refugee population located in East Africa.

Abstract
The current work is aimed to assess the impact of macronutrient and mineral contents in food products of packaged food, restaurant food, and street food in Hyderabad. The estimated daily intake of macronutrients and minerals, followed by the toxic risk assessment of microminerals by consuming studied food dishes, was also conducted. The collected products were freeze-dried and standard procedures for measuring macronutrients were followed. At the same time, the acid digestion method was used to prepare the solution for detecting minerals by atomic absorption spectrometry. The resulting data indicated that all the food dishes supplied 134-454 kcals/100 g. The chicken/meat and pulse food dishes of all three categories were enriched with protein except bhindi masala. All the food dishes have a massive variation in fat contents and differ based on the used quantity of hydrogenated oil during their preparations. A significant difference in the macro- and microminerals in studied food products was observed. However, all food dishes are a good supplementary source of fundamental nutrients, supplying the recommended daily allowances for adults. The estimated hazardous index (Ih) of microminerals in some street and restaurant food products (based on a survey) showed possible toxicity risk, especially for the workers of automechanic workshops (Ih > 1.00). Thus, it is concluded that the contaminated (cheap) raw materials and unhygienic conditions for preparing street and restaurant foods and hawking places (atmospheric pollution) are the significant sources of micromineral contamination.

Abstract
Food security and protection are the most crucial concerns worldwide. However, vegetables may significantly contribute to the macro and micro-nutrients for good health compared to dietary supplements. Eight vegetables of the Larkanadivision, namely spinach (Spinacia oleracea), brinjal (Solanum melongina L.), sponge gourd (Luffa acutangula), lotus root (Lelumbo nucifera), okra (Abelmoschus esculentus), coriander leave (Coriandrum sativum), fenugreek leave (Trigonella foenum graecum), and cauliflower (Brassica oleracea) were studied for their proximate, macro and micro-mineral contents to estimate their importance in human nutrition. The results showed that almost all vegetables contain appreciable amounts of essential nutrients. All the vegetables showed moisture contents of >70.00%. Lotus and sponge gourd have a maximum level of carbohydrates (>10.00%). Fiber was found in the range of 2.70 – 5.10%, with the highest in the okra. Protein and fat were found at < 4.00%, with maximum protein in spinach and fat in fenugreek leaves. The studied vegetables showed maximum levels of K and Ca, followed by Na, Mg, Fe, Zn, and Cu while Cr and Mn were observed to be < 5.00 µg/g. The macro and micro-minerals in the studied vegetables were within the maximum permissible limits recommended by WHO. Moreover, the eight studied vegetables of the Larkana division can also provide up to 1.00% of the required dietary daily intake of macro and micro-nutrients as recommended by the Food and Nutrition Board.

Abstract
Leafy vegetables are important components of the human diet for providing mineral nutrients. However, due to the tendency of metal accumulation, metal contents of leafy vegetables need not only to be determined but also estimated health risk for revealing possible health effects on humans. The aims of this study are (I) to examine comprehensive concentrations of trace/heavy metals along with some macroelements including Ca, Cd, Cu, Fe, K, Mg, Mn, Na, Ni, Pb, and Zn in selected leafy vegetables from Kyrgyzstan; (II) to assess recommended dietary allowances (RDA); and (III) to evaluate hazard quotient (HQ) and carcinogenic risk estimation with associated vegetable consumption. For this purpose, B, Ca, Cd, Cu, Fe, K, Mg, Mn, Na, Ni, Pb, and Zn elements were quantified, utilizing an ICP-OES instrument, in 18 samples belonging to 12 different groups of leafy vegetables including celery, Chinese parsley, dill, garden sorrel, lettuce, parsley, purple basil, spinach, and white-red-napa cabbage collected from different bazaars of Kyrgyzstan. Average elemental contents of the analyzed vegetables were determined (in mg kg-1) as follows: B (3.21-64.79), Ca (852.51-17,183.20), Cd (0.015-0.09), Cu (6.08-63.47), Fe (116.52-768.66), K (2347.04-17,305.42), Mg (136.34-1261.11), Na (54.75-526.42), Ni (0.09-1.3), Pb (1.91-9.54), and Zn (29.49-314.93). Estimated daily intake, recommended daily allowance, hazard quotients, and carcinogenic risk values of the vegetables were calculated with the help of these results. In considering HQ values, Chinese cabbage was determined to be safe for the consumption of both genders whereas parsley to be safe for only males. Based on the carcinogenic risk calculation, most of the vegetables examined in this study were categorized as moderately risky. It was inferred from the given results that airborne pollution has impaired/increased the mineral contents of vegetables for both genders. The findings obtained from this study were compared with international standards and will contribute to the data available on a global scale.

Abstract
BACKGROUND Our survey has found eleven plants that have being consumed for traditional treatment of diabetes mellitus, particularly in Saudi Arabia and generally in many countries across the world. The literature reported about trace elements such as Cr and Mn positively affecting diabetes mellitus. The aim of this work is to determine the total, accessible element species, and protein-fraction contents of Cr and Mn in the edible parts of those plants. METHODS The total contents of Mn were determined by inductively coupled plasma-optical emission spectrometry (ICP-OES), while the total contents of Cr was determined by ICP-sector field (sf)-mass spectrometry (MS) due to lower concentration. The protein-fraction contents were determined in accessible element species by size-exclusion chromatography (SEC)-ICP-MS. RESULTS AND DISCUSSION The separation was successfully carried out to quantify Cr and Mn bound up to 11 protein fractions. The examined plants recorded wide ranges of total contents (Cr 44.7-1880.0 μg/kg and Mn 3.7-59.0 mg/kg) and accessible element species contents (Cr 0.93-29.40 μg/kg and Mn 0.82-35.85 mg/kg). Also wide ranges of percentages of accessible element species contents to total contents of Cr (0.65-4.21%) and Mn (5.43-68.42%) were obtained. The hazardous indices of both trace elements Cr and Mn for all examined plants consumed by both children and adults were all < 1, indicating no probability of health risk to occur. Moreover, Cr as carcinogen element reported no probability of cancer risk to occur from the consumption of all examined plants. Irrespective of plant species, Cr was quantified in all SEC fractions (mainly protein fractions), with the exception of 1.9-3.7 kDa, while Mn was quantified in all SEC fractions with the exception of 100-120 and 1.3-3.7 kDa. Nevertheless, the majority of accessible Cr species contents bound to the 10-14 and 0.05-0.40 kDa fractions, while that of Mn bound to 0.05-0.40 kDa fraction. To gather, the benefits of specific plant species in terms of accessible Cr and Mn species contents, in addition to accessible Zn species contents reported in our previous study, Haloxylon Salicornicum, Olea Europaea Momordica and Charantia are recommended to be consumed for traditionally controlling T2DM.
