Effect of Traditional Processing Methods on the Cultivated Fish Species, Egypt. Part I. Mineral and Heavy Metal Concentrations

Investigations of the Polycyclic Aromatic Hydrocarbon and Elemental Profile of Smoked Fish

Fish are vulnerable to environmental pollutants such as polycyclic aromatic hydrocarbon and heavy metals. As one of the most commonly applied processing methods, the smoking of different species has been applied globally. Hence, this study aims to investigate the smoking process on the polycyclic aromatic hydrocarbon and elemental accumulation of the five different species (rainbow trout, Atlantic bonito, horse mackerel, sea bass, and Atlantic bluefin tuna) which are commonly processed and traded in the smoked fish industry. The processing yield, water holding capacity, and pH were also investigated. The results revealed that the proximal differences among fish species influence the water holding capacity, processing yield, and pH which are very important for process sustainability and the quality of the end product. The main finding was the proximal composition impact on the accumulation of both PAHs and heavy metals at different levels. While all of the tested samples were below the maximum permissible limit, some of the heavy metals, especially toxic elements, were found above the acceptable limit. Horse mackerel is determined to be the species most vulnerable to PAHs and heavy metal accumulation.

Fish Parasites and Heavy Metals Relationship in Wild and Cultivated Fish as Potential Health Risk Assessment in Egypt

Despite wide studies of biomonitoring aquatic environment through dynamics of host–parasite interaction, bio-indicators to track the influence and accumulation of heavy metals on fish are still few. The present study sheds light on the relation between fish parasites and heavy metals as it threatens fish’s health and, as a consequence, that of humans after fish consumption. Samples of Nile tilapia (Oreochromis niloticus) were collected in Burullus Lake, a wild fish source, and from a private fish farm in Kafr El-Sheikh Governorate, in Egypt. They were exposed to various pollutants associated with anthropogenic activities to determine the levels of accumulation of Fe, Zn, and Cu, along with the top three most toxic metals (As, Cd, and Pb) in water and fish tissues of gills, intestine, liver, and muscles in both wild and farmedO. niloticus. The results showed the order of abundance: Fe < Zn < Pb < Cu < As < Cd. In waters of both farmed and wild fish, there was a significant negative relation between parasite prevalence and heavy metals, including Zn, Pb, and As. Also, there was a significant positive relation between parasite prevalence with Cu while no significant relation was found with Fe and Cd. Heavy metal content was significantly higher (p> 0.05) in non-infected than infected farmed and wildO. niloticus. In addition, a significantly decreased concentration (p> 0.05) of essential heavy metal was recorded in wild fish compared to farmed specimens, while non-essential heavy metal was significantly higher (p> 0.05) in wild compared to farmed fish. Bioaccumulation factors (BAF) of different organs ofO. niloticuswere ranked in ascending order: Liver > Gills > Intestine > Muscles. In general, the risk assessment showed safe human consumption of farmed and wild fish under the reported environmental conditions in this study. Moreover, the parasite's presence can be adopted as a surrogate indicator to estimate the potential impact of heavy metal pollution and accumulation.

Chemical hazards in smoked meat and fish

This review aims to give an insight into the main hazards currently found in smoked meat and fish products. Literature research was carried out on international databases such as Access to Global Online Research in Agriculture (AGORA) database, Science direct, and Google scholar to collect and select 92 relevant publications included in this review. The smoking process was described and five hazards mostly found in smoked fish and meat were presented. The heat-induced compounds such as polycyclic aromatic hydrocarbons, heterocyclic amines, and nitrosamines were found in smoked fish and meat. Other hazards such as biogenic amines and heavy metals were also present in smoked fish and meat. The levels of these hazards reported from the literature exceeded the maximal limits of European Union. A brief description of risk assessment methodology applicable to such toxic compounds and risk assessment examples was also presented in this review. As most of the hazards reported in this review are toxic and even carcinogenic to humans, actions should be addressed to reduce their presence in food to protect consumer health and to prevent public health issue.
