Factors influencing consumers’ to Take Ready-made Frozen Food

Household consumption expenditure behaviour towards outside ready-made food: Evidence from Bangladesh

Young and middle-aged people in Bangladesh are increasingly eating out. This paper examines consumer demand characteristics associated with consumption expenditure patterns toward eating out using the nationally representative Bangladesh Integrated Household Survey 2018-19 dataset, which is conducted by the International Food Policy Research Institute in all 64 districts of Bangladesh. Data from 5604 sample households and 20,717 individuals within those households were analysed for this study. The descriptive statistics highlight that gender, education, employment status, and occupation are significant individual-level characteristics related to having prepared outside food. People generally eat snacks and sample ready-made foods from local shops and the Haat/Bazar (market). Empirical evidence based on Cragg's double-hurdle model assesses that secondary or higher school education, family size, and annual food expenditure are important determinants of the likelihood of household participation in consumption and spending on eating out in the past week. In contrast, raising livestock noticeably reduces expenditures on eating outside meals. This study, therefore, recommends that educated households be aware of the adverse health effects of eating food prepared outside. In addition, livestock raising could complement the diet outside the home and decrease expenses on eating out.

Utilization of bottle gourd (Lagenaria siceraria (Mol.) Standl.) pomace for the preparation of instant kheer (dessert) mix

Bottle gourd pomace, a waste from vegetable processing industry was used to prepare instant kheer (dessert) mix. In this study, the bottle gourd was procured from the farm, washed, grated, steam blanched and the grits were further divided into two parts. One part of grits was dried without juice extraction (BGFD- Bottle gourd fresh dried), while, the other half (BGPD- Bottle gourd pomace dried) was dehydrated after extraction of juice. The dehydrated grits were used for the preparation of kheer mix and the recipe was optimized using RSM Central Composite Design (CCD). The variables were BGFD and BGPD ranged 3-7 g. The other ingredients with the fixed quantities were milk powder (50 g), sugar (15 g), and small cardamom (1 g). The product was selected based on sensory responses like taste, colour, flavour, texture, and overall acceptability (OAA). The software suggested a kheer mix prepared using 7 g BGFD and 3 g BGPD will produce the best sensory scores. The prepared kheer mix had a moisture, TSS, carbohydrates, reducing sugars, total sugars, titratable acidity, crude protein, and crude fat content of 7.9%, 27 °B, 72.21%, 10.79%, 16.75%, 0.896% CA, 10.76%, and 7.63%, respectively. The product was rich in energy (400.55 kcal/100 g), total phenols (4.99 mg/100 g), and exhibited strong antioxidant activity (46%). The total plate count on the product on nutrient agar medium was 4.3 × 106 CFU/g. The kheer could be prepared by adding 140 mL of water to 70 g of water to kheer mix and cooking it for 10 min. Further, to see the credibility and obtain more clearer patterns, the Canonical Correlation Analysis (CCA) and Principal Component Analysis (PCA) were applied. The overall variation of the BGFD and BGPD on the sensory parameters based on canonical correlation analysis was 92.5%. The sum of Principal Components PC1 and PC2 explained a very high variability (98.2%) among the studied treatments.

A Tomato Pomace Enriched Gluten-Free Ready-to-Cook Snack’s Nutritional Profile, Quality, and Shelf Life Evaluation

Attempts were undertaken to design a quick ready-to-cook gluten-free snack utilizing finger millet and potato flour (50:50) as well as tomato pomace due to the restricted availability of gluten-free snack goods in the Indian market. The nutritional content of the food and its general acceptability, cooking characteristics, and storage stability were all tested. The addition of tomato pomace had a distinct influence on the product’s color and hardness. Additionally, it resulted in a significant reduction in the amount of oil used, cooking loss, and frying time required. With a high acceptance level, the snack supplemented with 10% tomato pomace was determined to be the most optimal formulation. When the same substance was subjected to FTIR analysis, it was discovered that it retained all the important functional groups required for sustaining antioxidant activity. It also displayed high storage stability, a desirable overall acceptance score, and a very promising nutritional profile, all of which would benefit the product’s end users.

Analyzing Consumer Perception on Quality and Safety of Frozen Foods in Emerging Economies: Evidence from Albania and Kosovo

Freezing technology is one of the most well established long-term preservation techniques for producing high-quality, nutritious foods with prolonged shelf-life. Frozen foods (FFs) are a significant section of the global food market experiencing rapid growth. It also represents an alternative to small producers in developing countries to add value to their products in a competitive market. However, unfairly, FFs are often perceived as less qualitative than fresh produce, although studies have shown that some FFs have higher nutritional values than fresh products. This study’s aim is to analyze consumers’ perceptions in the two Balkan countries towards FFs. A total of 380 questionnaires were completed in both countries (182 in Kosovo and 198 in Albania). Consumers’ perceptions towards FFs were measured through eleven items using a five-point Likert scale. The items addressed issues related to the quality and safety of FFs, information on FFs, and the impact of origin on the perception of FFs. The differences between populations were tested with the t-test and correlation analysis with the bootstrapping method for sociodemographic factors. The results show that Kosovo consumers generally show a higher positive attitude toward FFs than Albanian consumers. Albanian consumers prefer fresh foods over FFs. The lack of trust in food safety institutions was expressed with concern for the conditions of the frozen chain applied both on the imported and domestic frozen products. Similarly, the findings show that Albanian consumers are willing to pay more than the baseline price to obtain fresh products instead of frozen compared with Kosovo consumers. Additional studies are needed to explore whether the lack of trust in food safety institutions inhibits the successful development of FFs in Albania and Kosovo. In both countries, responsible authorities should help consumers to have a more profound knowledge of the quality of FFs and boost these activities to increase farmers’ incomes and play an active role in reducing food loss and waste.
