Abstract
The use of plant-derived emulsified gel systems as fat substitutes for meat products has always been an important direction in the development of healthy foods. In this study, a composite matrix emulsion gel was prepared with soy protein isolate (SPI) and different concentrations of cassia bean gum (CG), and then the selected emulsion gel was applied to meat sausage as a fat substitute to explore its stability. Our results showed that the hardness, chewiness, viscosity, shear stress, and G' and G″ moduli of the emulsion gel increased considerably with the cassia bean gum concentration, the thickness of the emulsion gel increased, and the pore size decreased. The gel strength of the 1.75% CG/SPI emulsion gel was the highest, which was 586.91 g. The elasticity was 0.94 mm, the masticability was 452.94 mJ, and the water-holding capacity (WHC) was 98.45%. Then, the 1.75% CG/SPI emulsion gel obtained via screening was applied as a fat substitute in meat sausage. With an increase in the substitution amount, the cooking loss, emulsification stability, pH, color difference, texture, and antioxidant activity of the meat sausage before and after freezing and thawing increased first and then decreased. The indexes of meat sausage with 50% fat replacement were not considerably different from those of full-fat meat sausage. This study can provide a theoretical basis for the application of plant-derived emulsified gel systems as fat substitutes in meat sausage.

Abstract
The accomplishment of food/nutrition security for all across sustainable food systems (SFS) is tied to the Sustainable Development Goals (SDGs). SFS is connected to all SDGs via the traditional framework of social inclusion, economic development, environmental safety, inclusivity, and the development of sustainable food systems. We suggest that, for the world to achieve sustainable development, a shift to SFS is necessary to guarantee food/nutrition security for all, while operating within planetary boundaries to protect ecosystems and adapt to and mitigate climate change. Therefore, there is a requirement for original approaches that implement systemic and more participatory methods to engage with a wider range of food system stakeholders. However, the lack of skills and tools regarding novel methodologies for food system transformation is a key obstacle to the deployment of such approaches in practice. In the first part of this review, a summary of some challenges that occur in the governance of food system transformation is given. Through a case study of plant-based proteins and their biological and chemical modification as diets shift towards alternative proteins, we demonstrate that resource-efficient food systems and food waste, through system transformation, are useful in understanding both (i) how food system transformation has ensued and (ii) how the required transformation is prohibited. Finally, we discuss the implications of food system transformation in terms of nutrition and sustainable healthy diets, which are needed to achieve changes in food safety systems in the future. The linkage of food and the environment is evident, focusing on nutrition and sustainable healthy diets. This cannot be accomplished without system change and research towards new foods and, more specifically, new proteins such as plant-based ones and their biological and chemical modification.

Abstract
Blue foods have traditionally been undervalued in their contribution to global food systems. Yet they are incredible sources of locally produced nutrition for millions of people. In late 2022, there was a call for global action on food system transformation in the United Nations Food Systems Summit. The Blue Food Assessment, a scientific assessment of blue foods and their potential to contribute to sustainable and just food systems, reveals gaps where innovation could meaningfully bolster the blue food ecosystem. This article aims to examine the dynamic impact of the fishery sector on long-term food security in 27 European Union (EU27) countries while considering the contribution of agricultural output, energy production, economic development, and governance between 1990 and 2022. The findings showed a substantial positive link between fishery production and sustainable food security at a 5% statistical level, except the fifth quantile, using the new method of moment quantile regression (MMQR) with fixed effects. From the first to the ninth quantiles, fishery output considerably improves sustainable food security, with a more substantial benefit at the highest (≈ 0.021) and a lower impact at the lowest quantile (≈ 0.010). The findings also show that the EU13 developing countries see a more significant positive impact, at a 5% statistical level, on sustainable food security from fishery output than the EU14 developed nations. On the other hand, the findings also show that the EU14 developed countries see a more significant positive impact, at a 1% statistical level, from the agricultural output on sustainable food security than the EU13 underdeveloped nations. The results show a strong positive correlation between agricultural production and long-term food security at the median and most recent quantiles (≈ 0.362). In the EU27 area, sustainable food security rose across median and recent quantiles, supporting the growth hypothesis for nations that produce fisheries. In the EU27, the impact of governance was positive and statistically significant at 5% for both older and more recent quantiles. The findings also show that the EU14 nations have a more substantial beneficial effect of governance, at a 1% statistical level, on sustainable food security than the EU13 countries. With the help of effective fishery sector production, policymakers may raise the degree of food security in the EU14 and EU13 nations and ensure long-term food security.

Within the nutritionism paradigm, in this article we critically review the marketization and medicalization logics which aim to address the pressing issue of malnutrition in low- and middle-income countries. Drawing from political economy and food system transformation discourses, we are using the popular intervention types of nutrition-sensitive value chains (marketization logic) and biofortification exemplified through orange-fleshed sweet potato (medicalization logic) to assess their outcomes and underlying logics. We demonstrate that there is insufficient evidence of the positive impact of these interventions on nutritional outcomes, and that their underlying theories of change and impact logics do not deal with the inherent complexity of nutritional challenges. We show that nutrition-sensitive value chain approaches are unable to leverage or enhance the functioning of value chains to improve nutritional outcomes, especially in light of the disproportionate power of some food companies. We further demonstrate that orange-fleshed sweet potato interventions and biofortification more broadly adopt a narrow approach to malnutrition, disregarding the interactions between food components and broader value chain and food system dynamics. We argue that both intervention types focus solely on increasing the intake of specific nutrients without incorporating their embeddedness in the wider food systems and the relevant political-economic and social relations that influence the production and consumption of food. We conclude that the systemic nature of malnutrition requires to be understood and addressed as part of the food system transformation challenge in order to move towards solving it. To do so, new evaluation frameworks along with new approaches to solutions are necessary that support multiple and diverse development pathways, which are able to acknowledge the social, political-economic, and environmental factors and drivers of malnutrition and poverty.

Abstract
The wicked nature of sustainability challenges facing food systems demands intentional and synergistic actions at multiple scales and sectors. The Southern Cone of Latin America, with its historical legacy of “feeding the world,” presents interesting opportunities for generating insights into potential trajectories and processes for food system transformation. To foster such changes would require the development of collective understanding and agency to effectively realize purposeful and well-informed action toward desirable and sustainable food futures. This in turn demands the transdisciplinary engagement of academia, the private sector, government/policy-makers, community groups, and other institutions, as well as the broader society as food consumers. While the need for contextualized knowledge, priorities and definitions of what sustainable food systems change means is recognized, there is limited literature reporting these differences and critically reflecting on the role of knowledge brokers in knowledge co-production processes. The political nature of these issues requires arenas for dialogue and learning that are cross-sectoral and transcend knowledge generation. This paper presents a case study developed by SARAS Institute, a bridging organization based in Uruguay. This international community of practice co-designed a 3-year multi-stakeholder transdisciplinary process entitled “Knowledges on the Table.” We describe how the process was designed, structured, and facilitated around three phases, two analytical levels and through principles of knowledge co-production. The case study and its insights offer a model that could be useful to inform similar processes led by transdisciplinary communities of practice or bridging institutions in the early stages of transformative work. In itself, it also represents a unique approach to generate a language of collaboration, dialogue, and imagination informed by design skills and methods. While this is part of a longer-term process toward capitalizing on still-unfolding insights and coalitions, we hope that this example helps inspire similar initiatives to imagine, support, and realize contextualized sustainable food system transformations.

Abstract
Food hubs (FHs) providing neighbourhoods with regional food from agroecological production are a promising concept for a sustainable food system transformation. However, their operationalization and scaling are still unclear. We developed a methodological approach that, for the first time, scales out FHs to an entire city (Berlin) based on a 15-min walking distance and socio-culturally oriented sub-districts as underlying spatial units. We considered the population density and the distance to organic groceries, public transportation and between FHs to estimate their most suitable locations. The results reveal an optimal allocation of 231 FHs covering 91% of the city's populated areas in a radius lower than 1 km and almost the entire city within a 1.5 km radius. We found this approach to be a meaningful way to plan the inner-city allocation of FHs from an integrative perspective and to adopt urban policies by considering the local specificities of each neighbourhood. The scaling out of agroecology-based regional FHs in Berlin allows for the creation of a sustainable city-region food system that increases the resilience of the metropolitan food environment. We generally propose a participative and integrative approach in order to realise this process.

Abstract
To reorient food systems to ensure they deliver healthy diets that protect against multiple forms of malnutrition and diet-related disease and safeguard the environment, ecosystems, and natural resources, there is a need for better governance and accountability. However, decision-makers are often in the dark on how to navigate their food systems to achieve these multiple outcomes. Even where there is sufficient data to describe various elements, drivers, and outcomes of food systems, there is a lack of tools to assess how food systems are performing. This paper presents a diagnostic methodology for 39 indicators representing food supply, food environments, nutrition outcomes, and environmental outcomes that offer cutoffs to assess performance of national food systems. For each indicator, thresholds are presented for unlikely, potential, or likely challenge areas. This information can be used to generate actions and decisions on where and how to intervene in food systems to improve human and planetary health. A global assessment and two country case studies-Greece and Tanzania-illustrate how the diagnostics could spur decision options available to countries.

Abstract
Increasingly, discussions on sustainability, in particular in relation to energy transition, are finding their way to the regional and local political arena. Although for analysing transition pathways on these sub-national scales, conceptual frameworks such as the multi-level perspective may be helpful, some issues remain relatively unaddressed: the relevance of citizens and their social networks and the precise interactions between place, the local context, and external conditions. This paper aims to better understand energy transition processes on the local and regional scale by analysing the case of the Dutch island of Ameland. Since 2006, Ameland has been on a sustainability pathway towards self-sufficiency, in particular in terms of reducing CO2 emissions. In this case study, we conducted in-depth empirical analysis, using a mixed-methods approach, including document analysis and ethnographic techniques. In a five-stage development process, a combination of place-related niche development, regime developments, and the involvement of citizens have created a protective space for several socio-technological innovations to emerge. The unique combination of specific local conditions, in particular political and cultural, and external influences, national policy, and ‘enlightened’ companies have shaped ideal conditions for Ameland to become an inspiring example of innovation in regional transition processes.

Abstract
The interest in technological innovation has burgeoned in recent years. Theory and research support the vital role of innovative technologies in enhancing agrifood systems resilience. In this theoretical contribution, focusing on different sets of technologies, we present three technological innovation strategies, discuss their potential for strengthening resilience, and expose some open issues that need to be addressed. Responsible technological innovation arose as a response to the growing concerns about the possible unintended impacts of mega-technological trends, like digital farming tools or nanotechnologies, on agrifood systems. Although responsibly innovating is far from easy, and despite the gaps between theoretical ideals and innovation praxis, responsible technological innovation is a promising development since it can prevent counterintuitive effects of technologies on resilience. On the other hand, poly-innovation emerged as a social practice in which internetworking technologies facilitate—and create bundles with—organizational, social, and business innovation. In that strategy, technology represents a mediator of resilience-enhancing social behavior. However, by promoting the uberization of agrifood systems, poly-innovation is associated with various uncertainties. Finally, micro-innovation refers to the incremental adaptations of existing technologies or the development of new ones through bricolage and tinkering. The commercialization of such innovations through open design can increase the resilience of small-scale farming, especially in low-income countries. Nonetheless, the lack of financial resources, technical assistance, and institutional support hamper the full exploitation of micro-innovation.

Abstract
Articles published in Food Security in 2021 are reviewed, showing a wide range of topics covered. Many articles are directly linked with "food" and associated terms such as "nutritive", "nutrition", "dietary", and "health". Another important group is linked with (food) "production" and a range of connected terms including: "irrigation", "cultivated", "organic", "varieties", "crop", "vegetable", and "land". A third group of terms refers to the scales at which food security is considered: "household", "farmer", "farm", "smallholder", "community", "nation" and "region". A few themes of Food Security are considered: (1) food supply and demand, food prices, and global trade; (2) food security in households; (3) food production; (4) value chains and food systems; (5) the evolution of the concept of food security; and (6) global nutrition. In a last section, perspectives for Food Security are discussed along four lines of thoughts: the level of inter-disciplinary research published in Food Security; the importance of the Social Sciences for food security as a collective good underpinned by other collective goods within food systems; the balance between the Global South and the Global North in Food Security; and a warning that urgent global challenges that vitally interact with food security may be left unattended as a result of the current public health emergency.

Abstract
AbstractThe growing attention for food systems in policy debates has highlighted the systemic linkages between desired food system outcomes. There is an increased recognition that systemic changes are required to improve access to healthy, sustainable diets. While there is abundant academic analysis on the global need for food system transformation, regional differences in food system transformation priorities have received limited scholarly attention. This article aims to address this gap by analysing the results of a regional consultation study about respondents’ perceptions of the needs and modalities for food systems transformation. Data collection consisted of an online survey among 621 agri-food professionals and in-depth interviews among 33 food system experts from different regions across the world. The study shows how different stakeholders across the world prioritise food system drivers, food system challenges and food system transformation strategies. Region, organisational background, countries’ level of food system transformation, political and socio-economic structure are critical factors in determining such priorities. The study highlights relevant food system differences and priorities between food system actors. These differences have important policy implications for the agendas of stakeholders in their regional priorities in food systems transformation. While there is much agreement across regions on the key drivers of different food system challenges, which food system challenge is considered most urgent and which food system transformation strategy deserves most priority, differs greatly between regions. This article shows the importance of including regional and local perspectives in policy debates on the directions food system transformations should take and the need to identify such differences methodically.

Abstract
Food systems must serve different societal, public health and individual nutrition, and environmental objectives and therefore face numerous challenges. Considering the integrated performances of food systems, this paper highlights five fundamental paradigm shifts that are required to overcome trade-offs and build synergies between health and nutrition, inclusive livelihoods, environmental sustainability and food system resilience. We focus on the challenges to raise policy ambitions, to harmonize production and consumption goals, to improve connectivity between them, to strengthen food system performance and to anchor the governance of food systems in inclusive policies and participatory institutions. Taken together, these shifts in paradigms shape a new discourse for food system transformation that will be capable to respond to current and future policy challenges.

Abstract
AbstractFood systems analysis is increasingly being applied to understand relations between production, distribution, and consumption of food products, the drivers that influence the system, and the outcomes that show how well the food system performs on health and nutrition, on environmental sustainability, and on income and inclusiveness. Little attention has gone to the position of global export commodities, where production and consumption are far apart. Banana in Costa Rica and cocoa in Cote d’Ivoire were the subject of this study to find out what major drivers determine the functioning of these systems. Next to identifying drivers such as population growth and increased plant disease pressure, it was found that the typical far-away setting and different living conditions between producer and consumer countries required a special eye on governance as a tripartite arena (government, private sector, civil society) with their power relations, and on certification schemes as a driver that follows from corporate social responsibility. The certification schemes addressed cover all food system outcomes, although health and nutrition in a less conspicuous way. The descriptions of the functioning of the schemes were also linked to living wages and incomes for banana plantation workers in Costa Rica and cocoa smallholder farmers in Côte d’Ivoire. Although very meaningful, certification schemes so far do not prove to be a silver bullet, but they do have the potential, in combination with other measures, to help positive food system transformations.
