Abstract
Here we test a method of incorporating of plant extracts into popular snack foods to help control diabetes. Since some fresh vegetables contain antidiabetic compounds, ultrasound-assisted extraction was used to optimize their extraction of from spring onions, bunching onions, and celery for later incorporation into crackers. We compared various concentrations of ethanol used during extraction, after which they were exposed to an ultrasound processor whose amplitude and sonication time were also varied. The optimal extraction conditions were found to be an ethanol concentration of 44.08%, an amplitude of 80%, and a sonication time of 30 min. This resulted in the highest level of α-glucosidase inhibitory activity (i.e., 1,449.73 mmol ACE/g) and the highest extraction yield (i.e., 24.16%). The extract produced from these optimum conditions was then used as a constituent component of crackers at 0.625%, 1.25%, or 2.5% w/w. These biscuits were then produced at baking temperatures of 140°C, 150°C, or 160°C. We then measured the physical characteristics and bioactivities of sample biscuits from each treatment. We found that biscuits containing 2.5% vegetable combination extract and baked at 140°C had the highest total phenolic content, the strongest antioxidant performance, and showed the most substantial antidiabetic and antiobesity effects. Here we establish conditions for the effective extraction of antidiabetic functional ingredients via ultrasound from green leafy vegetables. We also provide a method of using these ingredients to prepare crackers with the aim of developing a functional antidiabetic snack food.

Abstract
Phenolic compounds from cashew (Anacardium occidentale L.) leaves were extracted using ethanol with the aid of ultrasonication. Three independent variables, including ultrasound amplitude, time, and ethanol concentration, were used for response surface methodology (RSM) along with the central composite design (CCD). Under the optimized condition (70% amplitude; 40 min; 80% ethanol), the extraction yield and total phenolic contents were 24.50% and 431.16 mg GAE/g dry extract, respectively. Cashew leaf extract (CLE) had the lower minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC) against Shewanella sp. than P. aeruginosa. The release of K+ and Mg2+ ions from damaged cell membranes with a coincidental decrease of TTC dehydrogenase activity were augmented when treated with CLE. In addition, scanning electron microscopic (SEM) image revealed deformations and perforation of cell walls of bacteria treated with CLE. The dominant compounds in CLE were amentoflavone, quercetin, and its glycosides. Based on microbial challenge test, the growth of P. aeruginosa and Shewanella sp. inoculated in tilapia slices were inhibited by CLE at 400 and 600 ppm within 15 days of refrigerated storage.

Abstract
Multiple sclerosis (MS) is an autoimmune disease of the central nervous system that is mainly mediated by pathological T-cells. Experimental autoimmune encephalomyelitis (EAE) is a well-known animal model of MS that is used to study the underlying mechanism and offers a theoretical basis for developing a novel therapy for MS. Good therapeutic effects have been observed after the administration of natural compounds and their derivatives as treatments for EAE. However, there has been a severe lag in the research and development of drug mechanisms related to MS. This review examines natural products that have the potential to effectively treat MS. The relevant data were consulted in order to elucidate the regulated mechanisms acting upon EAE by the flavonoids, glycosides, and triterpenoids derived from natural products. In addition, novel technologies such as network pharmacology, molecular docking, and high-throughput screening have been gradually applied in natural product development. The information provided herein can help improve targeting and timeliness for determining the specific mechanisms involved in natural medicine treatment and lay a foundation for further study.

Abstract
Abstract
Background
Hyperglycemia is the hallmark of diabetes, and the associated oxidative stress is a major concern that invites an array of diabetic complications. The traditional practices of medicare are of great, current interest due to the high cost and side effects of conventional diabetic medications. The present in vitro study focuses on evaluating the potential of various A. occidentale root extracts for their antihyperglycemic and antioxidant potentials.
Materials and methods
The four different solvent extracts petroleum ether (PEAO), chloroform (CHAO), ethyl acetate (EAAO), and 80 % methanol (80 % MAO) of A. occidentale roots were evaluated for their total phenolic, flavonoid, and antioxidant capacity. Using MIN6 pancreatic β-cells, the cytotoxicity of the extracts was evaluated by MTT assay and the antidiabetic potential by quantifying the insulin levels by ELISA at a higher concentration of glucose. The effect of 80 % MAO on INS gene expression was determined by qRT PCR analysis.
Results
Among the four different solvent extracts of A. occidentale roots, 80 % MAO showed the highest concentration of phenolics (437.33 ± 0.03 µg GAE/mg), CHAO to be a rich source of flavonoids (46.04 ± 0.1 µg QE/mg) and with the highest total antioxidant capacity (1865.33 ± 0.09 µg AAE/ mg). Evaluation of the free radical scavenging and reducing properties of the extracts indicated 80 % MAO to exhibit the highest activity. The MTT assay revealed the least cytotoxicity of all four extracts. 80 % MAO enhanced INS up-regulation as well as insulin secretion even under high glucose concentration (27mM).
Conclusions
The present study demonstrated that the A. occidentale root extracts have effective antihyperglycemic and antioxidative properties, together with the potential of normalizing the insulin secretory system of β-cells. Above mentioned properties have to be studied further by identifying the active principles of A. occidentale root extracts and in vivo effects. The prospect of the present study is identifying drug leads for better management of diabetes from the A. occidentale root extracts.

Abstract
Ultrasound-assisted extraction (UAE) was used to extract anthocyanins, antioxidants and phenolic compounds from butterfly pea petals, as an alternative to traditional methods. Taguchi method with three factors: extraction time (30, 45, 60 min), temperature (40, 60, 80 °C) and liquid-solid ratio (5, 7.5, 10 mL distilled water/mg butterfly pea) was used to obtain the high extraction yield. Grey relational analysis was employed to convert multi-response problem into single response optimization. The high extraction efficiency could be achieved at optimal parameter condition using 45 min of extraction time, 40 °C and 10 ml distilled water/mg butterfly pea. Liquid-solid ratio exhibited the highest contribution for anthocyanin and total phenolic content. A high temperature of ultrasonication resulted in a negative effect on antioxidant capacity and total phenolic content. The findings from this study indicated that the UAE process optimization would be an efficient and sustainable method for the preparation of bioactive compounds from medical plants with saving of reaction time and cost in which extraction yields of antioxidant capacity and total phenolic content were also increased. The color response analysis results suggested that the gelatin film incorporated with butterfly pea extract can be potentially used as pH-indicator for detecting food spoilage for intelligent packaging.

Abstract
Eriodictyol is a flavonoid in the flavanones subclass. It is abundantly present in a wide range of medicinal plants, citrus fruits, and vegetables that are considered to have potential health importance. Having the considerable medicinal properties, eriodictyol has been predicted to clarify the mode of action in various cellular and molecular pathways. Evidence for the existing therapeutic roles of eriodictyol includes antioxidant, anti-inflammatory, anti-cancer, neuroprotective, cardioprotective, anti-diabetic, anti-obesity, hepatoprotective, and miscellaneous. Therefore, this review aims to present the recent evidence regarding the mechanisms of action of eriodictyol in different signaling pathways in a specific disease condition. In view of the immense therapeutic effects, eriodictyol may serve as a potential drug source to enhance community health standards.

Abstract
Pacific white shrimp with prior pulsed electric field (PEF) treatment before soaking in Chamuang leaf extract (CLE) at different concentrations (0.5 and 1%) for 30 min were prepared. Sample pre-treated with PEF and soaked with 1% CLE (PEF-1 CLE) showed lower melanosis score than that with 1.25% sodium metabisulfite treatment, PEF treated sample or those soaked in CLE without prior PEF and the control during storage of 10 days (P < 0.05). PEF-1 CLE sample showed lower total volatile base content, peroxide value and thiobarbituric acid reactive substances but high sensory scores than others (P < 0.05). Lower increases in mesophile, psychrophile, Pseudomonas, Enterobacteriaceae and H2S producing bacterial counts were obtained in PEF-1 CLE, compared to the control and other treated samples. The most abundant compounds from Chamuang leaf extract, including Chrysoeriol 6-C-glucoside-8-C-arabinopyranoside and veranisatin-C were found in PEF-1 CLE sample and were plausibly involved in keeping quality of shrimp.
