Abstract
In livestock, brucellosis is mainly an asymptomatic disease except when abortion occurs; therefore, two serological tests are used for diagnosis as no single test is suitable. Abattoir samples enable a combination of culture, molecular, and serological tests to detect brucellosis. This study assessed Brucella-specific PCR (ITS-PCR) to detect brucellosis and to conduct a molecular characterization of Brucella spp. isolated from PCR-positive livestock (n = 565) slaughtered at abattoirs and the appropriate sample tissue(s). ITS-PCR detected Brucella DNA in 33.6% of cattle, 14.5% of sheep, and 4.7% of pig tissues. Impure Brucella cultures from PCR-positive tissues were 43.6% (44/94) of cattle, 51.7% (15/29) of sheep, and 50% (2/4) of pigs with predominantly B. abortus identification with AMOS-PCR and low isolation of mixed B. abortus and B. melitensis in all species. In cattle, 33% of isolates were from lymph nodes, while in sheep 38.0% were from the liver and kidney and only from tonsils in pigs (2/4). Brucella infections identified with AMOS-PCR were present in seropositive and mainly seronegative (75.6-100%) livestock with the potential to cause brucellosis during pregnancy or breeding. This study demonstrated the value of the polyphasic approach, especially with chronic infections and the potential risk of these asymptomatic animals.

Abstract
We started a campaign in the heart of Faisalabad, Punjab, Pakistan, to expose the hidden threats of parasitic illnesses in ruminants and the severe financial consequences associated with them. Our in-depth investigations focused on the prevalence, impact, and astounding financial losses brought on by organ contamination in slaughtered animals. Of the 384 slaughtered ruminants examined for gastrointestinal parasites, a prevalence of 44.79% was recorded. It is interesting to note that we found no conclusive association between parasitic infection and the various ruminant species under study (p > 0.05). However, goats (52.0%) had the highest numerical prevalence of parasitic infection, followed by cattle (46.1%), buffalo (46.0%), and sheep (34.7%) in that order. A significant finding (p < 0.05) showed that the majority of animals had light parasitism (46.5%), as opposed to those with moderate (30.2%) or severe loads (23.2%). Our research revealed substantial (p < 0.05) relationships between ruminant age, sex, and parasitic infection prevalence. In comparison to females (56.4%) and adults (48.1%), males (36.1%) and young (36.9%) ruminants showed considerably decreased infection rates (p < 0.05). On the other hand, we discovered a non-significant (p > 0.05) association between the months and the prevalence of parasitic infection. As a result of the condemnation of contaminated organs such as the rumen, lungs, and liver, an estimated financial loss of PKR 133,731,400 (USD = 466,939.2) was incurred. The yearly economic losses caused by liver condemnation were much greater than those caused by rumen and lung condemnation (p < 0.05). Our research not only reported a significantly higher abundance but also economic threats of the parasitic diseases among the slaughtered animals in Faisalabad, Punjab, Pakistan. Our findings highlighted the critical need for preventive and therapeutic interventions for parasitic infections in animals, in order to mitigate the economic losses through strengthened animal health.

Abstract
BACKGROUND Pre-slaughter stress or the welfare condition of food-producing animals (FPAs) and the slaughter practices of slaughterhouse workers (SHWs) are critically important for the safety and quality of meats processed in slaughterhouses (SHs). Consequently, this study determined the pre-slaughter, slaughter, and post-slaughter (PSP) practices of SHWsin four SHs in Southeast, Nigeria; and discussed the impacts on meat quality and safety. METHODS The PSP practices were determined by observation method. Additionally, a structured and validated closed-ended questionnaire was used to determine the knowledge of the SHWs on: the effects of poor welfare (preslaughter stress) on the quality and safety of meats produced, carcass/meat processing practices and modes of transmission of meat-borne zoonotic pathogens during carcass/meat processing. Finally, a systematic post-mortem inspection (PMI) was conducted on cattle, pigs and goats slaughtered, and economic losses accruable from condemned carcasses/meats were estimated. RESULTS Food-producing animals were transported to the SHs or held in the lairage under inhumane conditions. A pig being conveyed to one of the SHs was seen gasping for air, as it was firmly tied on motorbike at the thoracic and abdominal regions. Fatigued cattle were forcefully dragged on the ground from the lairage to the killing floor. Cattle for slaughter were restrained, held in lateral recumbency and left groaning, due to extreme discomfort, for about one hour before slaughter. Stunning was not performed. Singed pig carcasses were dragged on the ground to the washing point. Although more than 50% of the respondents knew the modes of transmission of meat-borne zoonotic pathogens during meat processing, 71.3% of the SHWs processed carcasses on bare floor, 52.2% used same bowl of water to wash multiple carcasses while 72% did not wear personal protective equipment during meat/carcass processing. Processed meats were transported to meat shops in an unsanitary conditions, using open vans and tricycles. During the PMI, diseased carcasses/meats/organs were detected in 5.7% (83/1452), 2.1% (21/1006) and 0.8% (7/924) of the cattle, pig and goat carcasses inspected, respectively. Gross lesions pathognomonic of bovine tuberculosis, contagious bovine pleuro-pneumonia, fascioliasis and porcine cysticercosis were detected. Consequently, 391,089.2 kg of diseased meat/organs valued at 978 million Naira (235, 030 USD) were condemned. There were significant associations (p < 0.05) between educational level and the use of personal protective equipment (PPE) during slaughterhouse operations and knowledge that FPAs can harbour zoonotic pathogens (p = < 0.001) transmissible during carcass processing. Similarly, significant association was observed between working experience and use of PPE; and between geographical location of the respondents and knowledge that zoonotic pathogens in animals are transmissible during carcass processing or via the food chain. CONCLUSION The findings show that slaughter practices of SHWs have detrimental impacts on the quality and safety of meats processed for human consumption in Southeast, Nigeria. These findings underscore the need to: improve the welfare condition of slaughter-animals, mechanise abattoir operations, train and retrain the SHWs on hygienic carcass/meat processing practices. There is a need to adopt strict enforcement of food safety laws to promote meat quality, food safety and consequently promote the health of the public.

The occurrence of technological damage in slaughtered cattle, pigs, sheep and goats in the Czech Republic. ACTA VET BRNO 2021. Abstract
The occurrence of technological damage in cattle, pigs, sheep and goats reared and slaughtered in the Czech Republic was monitored by evaluation and analyzing results of post mortem inspections of official veterinarians from slaughterhouses in the period from 2010 to 2019. We found that technological damage was the most common in pigs, and less common in cattle, sheep and goats. Compared to other species, pigs have statistically the highest occurrence of lung congestion (51.9%–19.3%, in the order: sows, finishing pigs, piglets), insufficient technology processing (0.200%–0.018%, in the order: sows, finishing pigs, piglets), delayed evisceration (0.04%–0.02%, in the order: finishing pigs, sows, piglets), muscle spoilage (0.033%–0.004%, in the order: piglets, finishing pigs, sows) and over-scalding (0.028%–0.013%, in the order: finishing pigs, piglets, sows). Compared to other species, cattle have statistically the highest incidence of different sensory deviations (7.42%–0.33%, in the order: calves, dairy cows, heifers, bulls) and insufficient bleeding (4.4%–2.9%, in the order: bulls, heifers, dairy cows, calves). In all monitored animal species, a similar level of the occurrence of contamination during the carcass processing was recorded (0.37%–0.00%). In sheep and goats, technological damage is generally lower than in pigs and cattle.

Food Loss and Waste in Meat Sector—Why the Consumption Stage Generates the Most Losses? SUSTAINABILITY 2021. Abstract
The aim of this paper is to present data on the scale of food waste in the meat sector and to emphasize the need to disseminate measures to reduce the number of losses in this sector. The article discusses food loss and waste in the meat sector as a current, widespread and serious problem. The Web of Science database was searched up to March 2021 to find publications reporting studies of the food loss and waste with particular emphasis on the meat sector. Due to the relatively high consumption of meat and meat products, the level of losses during production and of product waste by consumers in consumer stage becomes significant. It is estimated that as much as 23% of production in the meat sector is lost and wasted. The largest share is generated at the consumption level, representing 64% of the total food waste, followed by manufacturing (20%), distribution (12%) and primary production and post-harvest (3.5%). Data on food losses and wastage in the meat sector are very limited, and at the same time the production of meat and meat products is characterized by an unfavorable impact on the environment (meat has the highest emissions per kilogram of food compared to other food products), which requires rational management of these products in the entire chain (production, processing, transport and consumer stage). Therefore, determining the size and causes of formation as well as the methods of reducing food losses and food waste throughout the meat sector is important both for economic and environmental reasons. The idea behind food loss and waste reduction should be as an opportunity to improve efficiency within businesses, redirect food to those who need it and reduce environmental impacts.

Abstract
PurposeThe livestock sector contributes significantly to the Brazilian economy, but also creates many environmental and social issues. To mitigate these problems and help counteract the effects of the growing production demand, it is essential to address the prevention of food loss and waste (FLW). Therefore, the aim of the present study is to identify the causes of FLW, model their interrelationships and determine their root causes for the Brazilian beef supply chain (SC).Design/methodology/approach16 causes are analysed using an integrated interpretive structural modelling (ISM) and matrix impact of cross-multiplication applied to classification (MICMAC) methodology. ISM identified interrelationships among the causes and MICMAC determined the root causes of FLW.FindingsThe ISM highlights the “Lack of transportation infrastructures”, “Inadequate handling”, “Poor operational performance”, “Variety of products available in supermarkets” and “Unhealthy animals and outbreaks of disease” as the most influential causes and the MICMAC classifies them as the root causes of FLW in the Brazilian beef SC.Practical implicationsThe results provide fundamental insights for researchers, practitioners and policymakers, by exploring which causes are more influential and which are the root causes, thereby assisting the SC members in the definition of suitable strategies to mitigate FLW.Originality/valueThis is the first empirical analysis of the interdependencies between the causes of FLW in the beef SC.

Abstract
OBJECTIVE This study aimed to characterise antibiotics resistance of Escherichia coli isolates from the formal meat sector (FMS) and informal meat sectors (INMS). METHOD A total of 162 and 102 E. coli isolates from the FMS, and INMS respectively were isolated by standard culture-based, and biochemical reactions. The isolates were further confirmed by polymerase chain reaction (PCR). The disc diffusion method was used to screen for antimicrobial susceptibility against 19 different antibiotics. The presence of class 1-2 integrons in each E. coli isolates was assessed using 3'-CS and 5'-CS regions specific primers. RESULT Among the 19 antimicrobials, resistance to tetracyclines, aminoglycosides, cephalosporins, and nitrofurans were found to be more frequent than carbapenems and chloramphenicol. The number of multi-drug resistance ranged from three to ten antimicrobials. The resistant determinants with the highest prevalence in the FMS and INMS were; [aminoglycosides: aadA (40.6%; 31.9%), and strA (6.5%; 9.4%)], [β-lactams: ampC (20%; 45%),], [Chloramphenicol: catI (1.7%; 1.7%), and [tetracyclines: tetB (11.5%; 24%),], and [sulfonamides: sul1 (22.2%; 26.7%),]. CONCLUSION Higher phenotypic resistance to cephalosporins and carbapenems were found in the FMS than in INMS. The multiple antibiotic resistance (MAR) indexes for FMS and INMS ranged from 0.2-0.5. The results reveal a high prevalence of multidrug-resistant E. coli isolates and resistance determinants, suggesting that consumers and handlers of such meat are at risk of contracting antibiotic-resistant E. coli-related foodborne disease.

Abstract
Cystic echinococcosis (CE) and liver fluke infections as important zoonotic infections impose a large socioeconomic impact on societies. As an endemic region for these infections, slaughterhouse inspections should be more considered in Iran. This study aimed to analyze the 11-year record of offal condemnation due to CE, fascioliasis, dicrocoeliasis infections in sheep and goat and its economic impact at Alborz slaughterhouse, north-central Iran. The prevalence rate was calculated as the infected organs (as nominator) divided by the slaughtered cases (as the denominator) in each year and month. The annual percent changes was used to determine trends of parasitic diseases over time. The relationship between metrological indexes and the prevalence of parasitic diseases was determined by the linear regression model. Statistical analyses were done using STATA software 14. For an estimate, the economic impact, the total numbers of offal condemnation were calculated. The overall prevalence rate of fascioliasis, dicrocoeliasis, and CE was 0.95%, 2.17%, and 12.74%, respectively. There was a declining trend in the prevalence of fascioliasis and dicrocoeliasis, whereas, the prevalence of CE increased from 7.57% in 2008 to 9.53% in 2018, representing an annual change of + 0.02%. The direct economic impact was estimated at US$ 1,670,977 and US$ 25,148 for liver and lung, respectively. The number of condemned organs due to these infections is noticeable in Alborz Province, north-central, Iran. The high economic impact of these infections showed the necessity of implementing a continuously infected animal's trace-back and disease control in the site of infection.

Abstract
Background Fascioliasis is a trematode zoonotic snail-borne disease of public health and economic importance. The disease causes liver damage and is hardly recognized by medical personnel hence, is rarely considered as the differential diagnosis. In animals, the disease leads to mortalities, growth retardation, drop in livestock production and condemnation of the infected livers during meat inspection. The cross-sectional study was conducted from 2013 to 2017 in abattoirs in Mongu district, Western province of Zambia. Each selected carcass was examined macroscopically for bovine fascioliasis by dissecting the liver and checking for adult liver flukes. Infested and condemned livers were weighed and incinerated. Results A total of 69,152 carcasses with their livers was examined at the abattoirs for adult Fasciola worms and 44,511 (64.4%) were positive. According to the intensity of pathological lesions, 55.3% constituted severely affected livers, 30.3% were moderately affected livers and 14.4% were lightly affected livers. Our observation revealed that the most prevalent liver fluke identified was Fasciola gigantica (56.1%) and it mostly affected the poor body conditioned animals (71.4%). The study also indicated that 164,600 kg liver was condemned and destroyed. This reduced the income base for small-scale livestock farmers to about ZMW 7,407,000.00, which was equivalent to 592,560 USD. Conclusion In conclusion, our study suggests that the prevalence of bovine fascioliasis was high resulting in a large amount of liver being condemned and destroyed, leading to economic losses for affected livestock farmers in the area. Consequently, there is a need to take the necessary measures to control the disease and create awareness among medical personnel to consider it as a differential diagnosis in all functional liver deficiencies due to the zoonotic nature of the disease.
