Abstract
Rheumatoid arthritis (RA) is a complex illness with both hereditary and environmental components. Globally, in 2019, 18 million people had RA. RA is characterized by persistent inflammation of the synovial membrane that lines the joints, cartilage loss, and bone erosion. Phenolic molecules are the most prevalent secondary metabolites in plants, with a diverse spectrum of biological actions that benefit functional meals and nutraceuticals. These compounds have received a lot of attention recently because they have antioxidant, anti-inflammatory, immunomodulatory, and anti-rheumatoid activity by modulating tumor necrosis factor, mitogen-activated protein kinase, nuclear factor kappa-light-chain-enhancer of activated B cells, and c-Jun N-terminal kinases, as well as other preventative properties. This article discusses dietary polyphenols, their pharmacological properties, and innovative delivery technologies for the treatment of RA, with a focus on their possible biological activities. Nonetheless, commercialization of polyphenols may be achievable only after confirming their safety profile and completing successful clinical trials.

Abstract
Anthocyanins are widespread and biologically active water-soluble phenolic pigments responsible for a wide range of vivid colours, from red (acidic conditions) to purplish blue (basic conditions), present in fruits, vegetables, and coloured grains. The pigments' stability and colours are influenced mainly by pH but also by structure, temperature, and light. The colour-stabilizing mechanisms of plants are determined by inter- and intramolecular co-pigmentation and metal complexation, driven by van der Waals, π-π stacking, hydrogen bonding, and metal-ligand interactions. This group of flavonoids is well-known to have potent anti-inflammatory and antioxidant effects, which explains the biological effects associated with them. Therefore, this review provides an overview of the role of anthocyanins as natural colorants, showing they are less harmful than conventional colorants, with several technological potential applications in different industrial fields, namely in the textile and food industries, as well as in the development of photosensitizers for dye-sensitized solar cells, as new photosensitizers in photodynamic therapy, pharmaceuticals, and in the cosmetic industry, mainly on the formulation of skin care formulations, sunscreen filters, nail colorants, skin & hair cleansing products, amongst others. In addition, we will unveil some of the latest studies about the health benefits of anthocyanins, mainly focusing on the protection against the most prevalent human diseases mediated by oxidative stress, namely cardiovascular and neurodegenerative diseases, cancer, and diabetes. The contribution of anthocyanins to visual health is also very relevant and will be briefly explored.

Abstract
Anthocyanins are among the best-known phenolic compounds and possess remarkable biological activities, including antioxidant, anti-inflammatory, anticancer, and antidiabetic effects. Despite their therapeutic benefits, they are not widely used as health-promoting agents due to their instability, low absorption, and, thus, low bioavailability and rapid metabolism in the human body. Recent research suggests that the application of nanotechnology could increase their solubility and/or bioavailability, and thus their biological potential. Therefore, in this review, we have provided, for the first time, a comprehensive overview of in vitro and in vivo studies on nanocarriers used as delivery systems of anthocyanins, and their aglycones, i.e., anthocyanidins alone or combined with conventional drugs in the treatment or management of chronic diseases.

Abstract
Grape (Vitis vinifera L.) is one of the most popular fruits worldwide. It contains various bioactive compounds, such as proanthocyanidins, anthocyanins, flavonols, phenolic acids and stilbenes, the contents of which could vary considerably in grape skin, pulp and seed. Many studies have revealed that grape possesses a variety of health benefits, such as antioxidant, anti-inflammatory, gut-microbiota-modulating, anticancer and cardioprotective effects. Grape is eaten as fresh fruit and is also used as raw material to produce various products, such as wine, grape juice and raisins. Moreover, the byproducts of grape, such as grape pomace and grape seed, have many applications in the food industry. In this paper, the bioactive compounds in grape are briefly summarized based on literature published in recent years. In addition, the health benefits of grape and its bioactive components are discussed, with special attention paid to the underlying mechanisms. Furthermore, the applications of grape in the food industry are elucidated, especially the applications of grape pomace and grape seed. This paper can contribute to understanding the health benefits and mechanisms of grape and its bioactive compounds, as well as the promotion of the use of grape in the food industry.

Value-Added White Beer: Influence of Red Grape Skin Extract on the Chemical Composition, Sensory and Antioxidant Properties. SUSTAINABILITY 2022. Abstract
This work aimed to improve the functionality of beer by increasing the level of antioxidant activity through the addition, up to acceptable sensory amounts, of red grape skin extract. A commercial hefeweizen beer was supplemented with different concentrations (1, 5, and 10 mg/mL) of grape skin extract (GSE). The phytochemical characterization of GSE and supplemented beer samples was achieved in terms of the total phenolic content (TPC), total flavonoid content (TFC), and total monomeric anthocyanin content (TMA). Additionally, the antioxidant activity of the samples was assessed using a variety of radical scavenging tests. The addition of various concentrations of GSE significantly increased the TPC and TFC content of beer samples, from 3.167 to 4.477 mg GAE/mL and from 0.841 to 1.226 mg CE/mL, respectively. The TMA content of the GSE-supplemented white beer samples ranged from 0.005 to 0.027 mg C3G/ mL. Consequently, the antioxidant capacity of the beer samples increased with the level of GSE addition. The obtained results suggest the potential of using GSE as a functional ingredient for beer production.

Abstract
Nowadays, it is largely accepted that the daily intake of fruits, vegetables, herbal products and derivatives is an added value in promoting human health, given their capacity to counteract oxidative stress markers and suppress uncontrolled pro-inflammatory responses. Given that, natural-based products seem to be a promising strategy to attenuate, or even mitigate, the development of chronic diseases, such as diabetes, and to boost the immune system. Among fruits, cherries and blueberries are nutrient-dense fruits that have been a target of many studies and interest given their richness in phenolic compounds and notable biological potential. In fact, research has already demonstrated that these fruits can be considered functional foods, and hence, their use in functional beverages, whose popularity is increasing worldwide, is not surprising and seem to be a promising and useful strategy. Therefore, the present review reinforces the idea that cherries and blueberries can be incorporated into new pharmaceutical products, smart foods, functional beverages, and nutraceuticals and be effective in preventing and/or treating diseases mediated by inflammatory mediators, reactive species, and free radicals.

Abstract
In recent years, the consumption of natural-based foods, including beans, fruits, legumes, nuts, oils, vegetables, spices, and whole grains, has been encouraged. This fact is essentially due to their content in bioactive phytochemicals, with the phenolic compounds standing out. Among them, anthocyanins have been a target of many studies due to the presence of catechol, pyrogallol, and methoxy groups in their chemical structure, which confer notable scavenging, anti-apoptotic, and anti-inflammatory activities, being already recommended as supplementation to mitigate or even attenuate certain disorders, such as diabetes, cancer, and cardiovascular and neurological pathologies. The most well-known anthocyanins are cyanidin 3-O-glucoside and cyanidin 3-O-rutinoside. They are widespread in nature, being present in considerable amounts in red fruits and red vegetables. Overall, the present review intends to discuss the most recent findings on the potential health benefits from the daily intake of anthocyanin-rich foods, as well as their possible pharmacological mechanisms of action. However, before that, some emphasis regarding their chemical structure, dietary sources, and bioavailability was done.

Abstract
In Mediterranean regions, extreme weather conditions during the growing season may alter grapevine physiology and metabolism, thus modifying the quality of wines. The objective of this study was to investigate the effects of Ascophyllum nodosum treatments on plant physiology and berry metabolism in Vitis vinifera exposed to water stress. The experiment was performed on potted vines subjected to two irrigation regimes (well-watered, WW, and water stressed, WS) both associated with A. nodosum treatments (SWE), compared with control plants (CTRL). Gas exchanges, chlorophyll fluorescence, and water relations were monitored on SWE and CTRL leaves, both in WW and WS vines at three times. Moreover, the quantification of secondary metabolites and their partitioning were performed in berry skins. Plants treated with A. nodosum extract showed higher photosynthesis and stomatal conductance than CTRL in both irrigation regimes and maintained a better plant hydraulic conductivity at the end of the sampling period. In addition, secondary metabolites in berry skins and their partitioning were significantly affected by the treatments in both irrigation regimes. Our results suggest that foliar application of A. nodosum extract may help the acclimation of grapevines to post-veraison water stress, likely improving plant physiological and biochemical performances under environmental constraints.

Abstract
Seaweed-based extracts have been recently employed as sustainable tools to improve abiotic stress tolerance and increase grape quality. However, the effect of these extracts on secondary metabolism compounds, that are fundamental for grape and wine quality, is still scarce. In the present study, the effects of foliar treatments with an Ascophyllum nodosum extract on physiological and biochemical parameters of Vitis vinifera (cv. Sangiovese) were investigated. We hypothesized an enhancement in the biosynthesis of secondary metabolites in berry skins and in leaves in response to these treatments, effective in improve grape quality and help vines to cope with abiotic stresses. Gas exchanges, chlorophyll fluorescence and midday stem water potential on leaves treated with A. nodosum extract and non-treated control leaves, were monitored over two growing seasons at three phenological stages: full véraison, mid maturation and full maturation. In addition, anthocyanins, flavonols and hydroxycinnamic acids were quantified both in berry skins and in leaves. The foliar treatments with A. nodosum increased photosynthesis and stomatal conductance in treated compared to control plants. Furthermore, extract-treated vines were able to maintain the potential efficiency of photosystem II close to the optimal value even during the hottest periods. No effect of A. nodosum extract treatments was observed on stem water potential. A. nodosum applications delayed berry ripening, leading to a lower sugar content and a higher anthocyanin content in treated berry skins. Interestingly, treatments also affected the content and the partitioning of secondary metabolites in berry skins, as anthocyanins and flavonols contents were higher in treated compared to control plants, while the ratio of methoxylated to non-methoxylated anthocyanins was lower in treated than in control vines. Furthermore, A. nodosum extract-treated plants also had higher content of flavonols and hydroxycinnamic acids both in berry skins and in leaves and showed a reduction in the biosynthesis of methoxylated anthocyanins, which are usually accumulated in grapes under environmental constraints. Considering the challenges posed by climate change in the Mediterranean basin, the use of seaweed extracts might represent a sustainable tool to mitigate the increasing severity of drought, often associated to heat-waves, on the viticulture sector.

Abstract
Grapes are well known for their high content of phenolic compounds. Polyphenols are classified into flavonoids and non-flavonoids by their primary chemical structures of hydroxybenzene. Flavonoids mainly consist of anthocyanins, flavonoids, and flavonols whereas non-flavonoids include hydroxycinnamic and hydroxybenzoic acids. In the present study, sixteen phenolic compounds from ten red and nine white grape wine varieties were quantified using high-performance liquid chromatography. Gallic acid, Vanillic acid, Rutin hydrate, Ellagic acid, Chlorogenic acid, Sorbic acid, Catechin hydrate, Epicatechin, p-coumaric acid, Quercetin, Myricetin, Kaempferol, Piceatannol, and Resveratrol were major compounds found in red wine grapes. Among the varieties, Petit Verdot, Cabernet Franc showed maximum quantitative phenolics, whereas Cabernet Sauvignon, Niellucio, Cinsaut, and Syrah showed least quantitative phenolics in grape berries. Phenolic profile of white wine grapes showed lower concentration of phenolics than that of red wine grapes. The variety Gros Meseng showed maximum phenolics followed by Sauvignon, while the variety Colombard and Chenin Blanc showed least phenolics.

Abstract
Since annually a high amount of wastes is produced in vine pruning, the aim of this study was to evaluate the potential of vine shoots from two Portuguese grape varieties (Touriga Nacional - TN and Tinta Roriz - TR) to be used as a natural source of phenolic compounds. To reach this goal, three techniques were explored, namely microwave-assisted extraction (MAE), subcritical water extraction (SWE) and conventional extraction (CE). The phenolic composition of the extracts, antioxidant and biological activities were evaluated by spectrophotometry and chromatography. MAE and SWE produced the highest concentrated extracts. TR vine shoot variety had the highest antioxidant activity and total phenolic (32.1±0.9mggallicacidequivalents/g dry sample), as well as flavonoid content (18.7±1.2mgepicatechinequivalents/g dry sample). For the first time, the biological activity of the vine shoot extracts was tested. Results demonstrated that all of them had antimicrobial potential against different bacteria and yeasts, and the ability of inhibiting α-amylase and acetylcholinesterase enzymes, with MAE TR extracts being the most efficient. HPLC analysis enabled the identification of different phenolic compounds, with gallic acid, catechin, myricetin and kaempferol-3-O-rutinoside being the main contributors to the phenolic composition. Portuguese vine shoot wastes could serve as easily accessible source of natural antioxidants for the food or pharmaceutical industries.

Abstract
Cherries are one of the most appreciated summer fruits due to their attractive colour, sweet taste, high water content, low level of calories and composition in bioactive compounds which, in turn, are important to prevent some pathologies like diabetes, cardiovascular diseases and cancer. In this work we evaluated the phenolic profile and biological potential of 5 varieties of sweet cherries from Fundão region (Portugal) (Saco, Sweetheart, Satin, Maring and Hedelfinger). A total of 23 phenolic compounds were identified by LC-DAD and distributed by the several classes: 6 anthocyanins, 1 hydroxybenzoic acid, 8 hydroxycinnamic acids, 3 flavan-3-ols and 5 flavonols. Maring revealed higher contents in anthocyanins, while Hedelfinger was the richest in non-coloured phenolics. The antioxidant capacity was evaluated against DPPH and nitric oxide radicals. Hedelfinger was the most active against DPPH• (IC50=12.1μg/mL) and Maring against nitric oxide (IC50=140.9μg/mL). Afterwards, antidiabetic capacity was evaluated through the inhibition of α-glucosidase activity, pointing Hedelfinger as the most active (IC50=10.3μg/mL). The capacity of Saco extracts to inhibit the hemoglobin oxidation and the hemolysis of human erythrocytes was also evaluated. Both assays revealed a concentration-dependent inhibitory effect (IC50=38.6μg/mL and IC50=73.0μg/mL, respectively). The results obtained in this study allow us to conclude that sweet cherries possess a great biological potential, and further investigation should be done to promote commercialization and encourage its use in food supplements and in new pharmaceutical and nutraceutical applications.
