Abstract
OBJECTIVES To examine if higher degrees of pathological eating attitudes in a non-clinical sample are associated with odour and taste perception and preferences based on psychophysical ratings. PARTICIPANTS AND METHODS A total of 80 female university students completed the eating attitudes test (EAT-26), followed by four chemosensory measures including olfactory and gustatory perception plus perceptual ratings and preferences for food odours and tastes. RESULTS There were no significant correlations between EAT-26 scores and measures of olfactory and gustatory perception. However, a significant interaction effect indicated higher degrees of pathological eating attitudes may be associated with differential sensitivity to sweet and fatty food odours compared to those with lower levels of pathological eating attitudes. CONCLUSIONS This was the first study to examine pathological eating attitudes using food stimuli with a non-clinical sample. The results remain preliminary until replication. However, the findings highlight the need for development of measures of disordered eating attitudes and behaviours that go beyond caloric restriction.

Associations among perceived taste and smell sensitivity, gastrointestinal symptoms, and restrictive eating in a community sample of adults. Eat Behav 2022; 46:101647. Abstract
Restrictive eating is associated with several poor health outcomes. Exteroceptive sensory modalities, including taste and smell, are employed while eating and disturbances in exteroceptive sensitivity may influence eating behavior. Meal-related gastrointestinal disturbances, such as early satiety and postprandial fullness, are well-documented in eating disorders and may influence eating behavior. This study examined the relationships of perceived sensitivity to taste or smell and gastrointestinal symptoms with restrictive eating, and potential interactions between gastrointestinal symptoms and perceived sensitivity to taste or smell. Adults aged 18-65 were recruited via ResearchMatch.org (N = 420) and completed questionnaires assessing restrictive eating, perceived sensitivity to taste and smell, and gastrointestinal symptom severity. There was a weak relationship between restrictive eating and perceived sensitivity to taste (r = -0.115, p = .022) and smell (r = -0.101, p = .039). There was a strong relationship between gastrointestinal symptom severity and restrictive eating (r = 0.583, p < .001). Gastrointestinal symptom severity moderated the relationship between perceived sensitivity to taste and restrictive eating, such that this relationship was strongest at lower levels of gastrointestinal symptom severity (Estimate = -0.136, p = .014). There was no observed interaction between perceived sensitivity to smell and gastrointestinal symptoms (Estimate = 0.001, p = .156). Results indicate that increased perceived sensitivity to taste, smell, and gastrointestinal symptom severity were each associated with greater restrictive eating. The relationship between perceived sensitivity to taste and restrictive eating is strongest at lower gastrointestinal symptom severity. Future research should examine whether tailoring treatments for individuals who present with elevated perceived sensitivity to taste or smell, gastrointestinal symptoms, or both is effective in reducing restrictive eating.

Abstract
Modulation of sensory perception by homeostatic feedback from physiological states is central to innate purposive behaviors. Olfaction is an important predictive modality for feeding-related behaviors and its modulation has been associated with hunger-satiety states. However, the mechanisms mapping internal states to chemosensory processing in order to modify behavior are poorly understood. In the zebrafish olfactory epithelium, a subset of olfactory sensory neurons (OSNs) and the terminal nerve projections express neuropeptide Y (NPY). Using a combination of neuronal activity and behavioral evaluation, we find that NPY signaling in the peripheral olfactory system of zebrafish is correlated with its nutritional state and is both necessary and sufficient for the olfactory perception of food-related odorants. NPY activity dynamically modulates the microvillar OSN activation thresholds and acts cooperatively with amino acid signaling resulting in a switch-like increase in OSN sensitivity in starved animals. We suggest that cooperative activation of phospholipase C by convergent signaling from NPY and amino acid receptors is central to this heightened sensitivity. This study provides ethologically relevant, physiological evidence for NPY signaling in the modulation of OSN sensitivity to food-associated amino acid cues. We demonstrate sensory gating directly at the level of OSNs and identify a novel mechanistic framework for tuning olfactory sensitivity to prevailing energy states.

Is it still still water? Relationships between sparkling sensitivity and consumption frequency of carbonated waters. Food Res Int 2021; 147:110584. Abstract
Little is known about how sensitivity to trigeminal stimulation such as carbonation is affected by consumption habits and consumer characteristics. The aim of this study was to determine how detection thresholds for and perception of sparkling sensations in carbonated mineral water are affected by frequency of consumption of carbonated water and individual consumer characteristics. One hundred subjects differing in sparkling water consumption frequency (non-consumers, infrequent consumers, frequent consumers) participated. First, sparkling sensation detection thresholds were determined using the method of best estimate threshold (BET) with CO2 concentrations ranging from 0.03 to 1.05 g/L. Secondly, intensity of sparkling sensation and liking of five sparkling waters (CO2 concentrations ranging from 0.21 to 4.92 g/L) were assessed. To characterize consumers, consumption frequency of sparkling water, sensitivity to 6-n-propylthiouracil (PROP taster status) and consumer characteristics were determined. Average detection threshold of sparkling sensation (BET) was 0.44 g/L CO2 concentration. BET of sparkling sensation was not affected by consumption frequency of sparkling water and was not related to PROP taster status and consumer characteristics. Perception of sparkling intensity and liking of carbonated mineral water were significantly affected by consumption frequency of sparkling water. Sparkling sensations were perceived significantly more intensive by non-consumers compared to infrequent and frequent consumers. Surprisingly, non-consumers liked sparkling water significantly more than infrequent or frequent consumers. We conclude that consumption frequency of and preferences for carbonated water do not influence detection thresholds of sparkling sensations but influence suprathreshold intensity perception of sparkling sensations in carbonated water.

Abstract
BACKGROUND High-intensity exercise can have an anorectic impact, leading to negative energy balance. Several studies have reported that the practice of physical activity could also cause a shift in perceptions and preferences, causing a change in food intakes. OBJECTIVE This study aimed to question to what extent the timing of exercise in relation to a meal could have an impact on olfaction and gustation, appetite, and food choices. METHODS Twelve males aged 25 (4) years with a body mass index of 22.4 (2.0) kg/m2 attended two experimental visits in a counterbalanced fashion. The participants consumed a standardized breakfast between 7:00 and 7:30 a.m. and were subjected to smell and taste tests upon arrival at the laboratory (8:30 a.m.). In the EX9:40 visit, the participants performed a 30-min exercise session (70% of maximum oxygen uptake) at 9:40 a.m., followed by a 90-min sedentary break. In EX10:30, the participants first took part in the 90-min sedentary break and then performed the 30-min exercise session at 10:30 a.m. Taste and smell tests were performed again at 11:40 a.m., immediately followed by an ad libitum buffet-style meal. Visual analog scales were used to report appetite sensations during the session and satiety quotients around the lunch. RESULTS There was no difference in energy intakes between the EX9:40 (596 [302] kcal) and EX10:30 (682 [263] kcal) conditions (p = .459). There was no condition effect for the taste and smell sensations (all ps > .05), appetite sensation, or satiety quotients around the meal (all ps > .05). CONCLUSION Exercise timing in the morning had no effect on taste and smell perceptions, appetite sensations, or energy intakes.

Abstract
Despite considerable research investigating the role of 6-n-propylthiouracil bitterness perception and variation of fungiform papillae density in food perception, this relationship remains controversial as well as the association between the 2 phenotypes. Data from 1119 subjects (38.6% male; 18-60 years) enrolled in the Italian Taste project were analyzed. Responsiveness to the bitterness of 6-n-propylthiouracil was assessed on the general Labeled Magnitude Scale. Fungiform papillae density was determined from manual counting on digital images of the tongue. Solutions of tastes, astringent, and pungent sensations were prepared to be moderate/strong on a general Labeled Magnitude Scale. Four foods had tastants added to produce 4 variations in target sensations from weak to strong (pear juice: citric acid, sourness; chocolate pudding: sucrose, sweetness; bean purée: sodium chloride, saltiness; and tomato juice: capsaicin, pungency). Women gave ratings to 6-n-propylthiouracil and showed fungiform papillae density that was significantly higher than men. Both phenotype markers significantly decreased with age. No significant correlations were found between 6-n-propylthiouracil ratings and fungiform papillae density. Fungiform papillae density variation does not affect perceived intensity of solutions. Responsiveness to 6-n-propylthiouracil positively correlated to perceived intensity of most stimuli in solution. A significant effect of fungiform papillae density on perceived intensity of target sensation in foods was found in a few cases. Responsiveness to 6-n-propylthiouracil positively affected all taste intensities in subjects with low fungiform papillae density whereas there were no significant effects of 6-n-propylthiouracil in those with high fungiform papillae density. These data highlight a complex interplay between 6-n-propylthiouracil status and fungiform papillae density and the need of a critical reconsideration of their role in food perception and acceptability.

Abstract
The presence of some healthy phytochemicals in food can be paired with high bitterness, and consumers have a widespread avoidance toward bitter-tasting food. This causes a gap between preferences and healthy needs of consumers. Therefore, this review collected insights from literature belonging to different discipline domains in order to have a broad view of the current state-of-the-art about biochemical aspects and consumers’ perceptions and preferences toward foods with an enhanced bitter taste. In detail, we focused on two core products of the Mediterranean diet: Extra-virgin olive oil (EVOO) and Brassicaceae, both characterized by specific phytochemicals having strong healthy properties and bitter-pungent taste. Results suggested that, although bitter taste is a general driver of dislike, some exceptions can be represented by: niches of consumers (e.g., innovators and organic buyers), foods consumed with specific purposes (e.g., coffee, chocolate, and alcoholic beverages). The level of bitterness perceived by the consumers can be modulated through exposure, information on benefits, and elements within the environment (e.g., music). Thus, these insights can be used to develop specific campaigns aimed at promoting bitter (healthy) food, considering also the key role that could be played by food pairings.

Abstract
Restrictive eating disorders (ED) are increasing and represent a serious risk to the health of adolescent females. Restrictive ED in youth are often treated through aggressive short-term refeeding. Although evidence supports that this intervention is the "gold standard" for improving ED outcomes in youth, little research has specifically probed appetite and meal-related responses to this type of intensive, short-term refeeding in newly diagnosed individuals. Information about appetite and meal-related dysfunction could provide valuable insights regarding treatment-interfering features of ED in both acute inpatient and longer-term outpatient treatment. The purpose of this study was to evaluate the hunger, fullness, olfactory, and gustatory responses of adolescents with newly-diagnosed restrictive ED and to probe how and when these responses are altered by refeeding. Using a quasi-experimental ecologically valid methodology, this study described and compared profiles of hunger, fullness, olfactory, and gustatory responses in adolescent females (n = 15) with newly diagnosed restrictive ED at hospital admission (i.e., severe malnutrition) and after medical refeeding, in comparison to healthy controls (n = 15). Results showed that newly diagnosed (i.e., malnourished) adolescents with ED showed significantly different meal-related experiences than controls. Refeeding improved some of these differences, but not all. Following refeeding, females with ED continued to show lower hunger, greater fullness, and lower pleasantness of smell ratings compared to controls. Unpleasantness of taste ratings maladaptively increased, such that females who were re-fed reported more aversive scents than pre-treatment. Profiles of meal-related responses were also identified and compared between groups. The applicability of these findings are discussed within the context of critical periods of change during refeeding treatment and potentially promising intervention targets that might enhance treatment outcomes for adolescents with newly onset, restrictive ED.

Abstract
The pleasantness of a food odour decreases when that food is eaten to satiety or even smelled for a brief period (Olfactory Specific Satiety, OSS), which suggests that odours signal food variety and encourage approach behaviour toward novel foods. In the study here, we aimed to extend this theory to understand the consequence of manipulating the food consumed and its degree of association to the evaluated odour. We also wished to clarify if these effects related to individual sensitivity to the target odour. In the study here, participants (n = 94) rated the pleasantness of a food odour (isoamyl acetate) and then consumed confectionary that had either Low or High association to that odour or a No food control. This was followed by final pleasantness ratings for the odour and a threshold sensitivity test. Results revealed that in line with OSS, pleasantness decreased in the High association group only. This effect was not dependent on any differences in sensitivity to the target odour. These findings are consistent with OSS, and that this effect likely depends on activation of brain areas related to odour hedonics rather than the degree to which the odour is detected.

Abstract
The study provides a systematic review that explores the current literature on olfactory capacity in abnormal eating behavior. The objective is to present a basis for discussion on whether research in olfaction in eating disorders may offer additional insight with regard to the complex etiopathology of eating disorders (ED) and abnormal eating behaviors. Electronic databases (Medline, PsycINFO, PubMed, Science Direct, and Web of Science) were searched using the components in relation to olfaction and combining them with the components related to abnormal eating behavior. Out of 1352 articles, titles were first excluded by title (n = 64) and then by abstract and fulltext resulting in a final selection of 14 articles (820 patients and 385 control participants) for this review. The highest number of existing literature on olfaction in ED were carried out with AN patients (78.6%) followed by BN patients (35.7%) and obese individuals (14.3%). Most studies were only conducted on females. The general findings support that olfaction is altered in AN and in obesity and indicates toward there being little to no difference in olfactory capacity between BN patients and the general population. Due to the limited number of studies and heterogeneity this review stresses on the importance of more research on olfaction and abnormal eating behavior.
