Abstract
OBJECTIVE Satureja kermanica is a native species with a relatively wide distribution in Iran, which has been studied less. Due to the low stability of the plants, in this study, the methanolic extract of S. kermanica (MSK) along with a nanoemulsion (NEK) preparation was evaluated in terms of antioxidant and cytotoxic activity. MATERIAL AND METHODS The aerial parts of S. kermanica were collected and after studying the organoleptic characteristics and quality control parameters, were extracted with methanol. Total phenolic compounds and total flavonoids of the plant were measured. A nanoemulsion preparation was prepared using ultrasonication method from S. kermanica extract. After measuring the particle size of nanoemulsion, both MSK and NEK were evaluated for their antioxidant and cytotoxic activity using DPPH scavenging assay and MTT colorimetric method on breast cancer cell line (MCF-7) respectively. RESULTS Phytochemical studies exhibited the presence of secondary metabolites including flavonoids, tannins, steroids and carbohydrates in the plant. Based on the histogram of the SBL nanosizer, the average diameter of nanoemulsion was determined as 37.09nm. Both MSK and NEK showed dose-dependent antioxidant and cytotoxic activity. The IC50 value of MSK and NEK for DPPH inhibition was 30.105±2.781 58.14±0.84μg/mL and for toxicity toward MCF-7 cell line was 1251.088 and 201.745±4.554μg/mL respectively. CONCLUSION MSK and NEK showed antioxidant and cytotoxic activity, but in NEK, the antioxidant and cytotoxic potential of the plant was more prominent, which may be due to the rapid release of the bioactive component from the nanoemulsion.

Abstract
Syzygium aromaticum, commonly called clove, is a culinary spice with medical uses. Clove is utilized in cosmetics, medicine, gastronomy, and agriculture due to its abundance of bioactive components such as gallic acid, flavonoids, eugenol acetate, and eugenol. Clove essential oil has been revealed to have antibacterial, antinociceptive, antibacterial activities, antifungal, and anticancerous qualities. Anti-inflammatory chemicals, including eugenol and flavonoids, are found in clove that help decrease inflammation and alleviate pain. The anti-inflammatory and analgesic qualities of clove oil have made it a popular natural cure for toothaches and gum discomfort. Due to its therapeutic potential, it has been used as a bioactive ingredient in coating fresh fruits and vegetables. This review article outlines the potential food processing applications of clove essential oil. The chemical structures of components, bioactive properties, and medicinal potential of clove essential oil, including phytochemical importance in food, have also been thoroughly addressed.

Abstract
The aim of the present study was to extend the shelf life of bread by using organic additives and optimization techniques. Quadruple effects of temperature (-18, + 4, + 20 °C), clove oil (0, 1, 2%), orange oil (0, 1, 2%), residence time (7, 14, 21 days) were investigated to determine optimum bread as moisture response. Quadratic model was found to be suitable with an accuracy of 0.9854 for moisture response. Rheological properties remained intact for 7 days at 20 °C in bread with 1% clove oil and 1% orange oil added. The effect of 4 effective parameters from 3 levels was examined with Box-Behnken in Design Expert. Optimum and control samples at two different temperatures were determined with SEM, TG-DTA and polarized light microscope. Consumer survey was conducted as appearance, colour, smell for optimum, control samples for bread and cake. It was concluded that bread samples could be stored with clove and orange oil at + 20 °C with period of 7 days without losing their quality properties. Graphical abstract

Abstract
In the current study, clove oil nanoemulsion (CL-nanoemulsion) and emulsion (CL-emulsion) were prepared through an ecofriendly method. The prepared CL-nanoemulsion and CL-emulsion were characterized using dynamic light scattering (DLS) and a transmission electron microscope (TEM), where results illustrated that CL-nanoemulsion droplets were approximately 32.67 nm in size and spherical in shape, while CL-nanoemulsion droplets were approximately 225.8 nm with a spherical shape. The antibacterial activity of CL-nanoemulsion and CL-emulsion was carried out using a microbroth dilution method. Results revealed that the preferred CL-nanoemulsion had minimal MIC values between 0.31 and 5 mg/mL. The antibiofilm efficacy of CL-nanoemulsion against S. aureus significantly decreased the development of biofilm compared with CL-emulsion. Furthermore, results illustrated that CL-nanoemulsion showed antifungal activity significantly higher than CL-emulsion. Moreover, the prepared CL-nanoemulsion exhibited outstanding antifungal efficiency toward Candida albicans, Cryptococcus neoformans, Aspergillus brasiliensis, A. flavus, and A. fumigatus where MICs were 12.5, 3.12, 0.78, 1.56, and 1.56 mg/mL, respectively. Additionally, the prepared CL-nanoemulsion was analyzed for its antineoplastic effects through a modified MTT assay for evaluating apoptotic and cytotoxic effects using HepG2 and MCF-7 cell lines. MCF-7 breast cancer cells showed the lowest IC50 values (3.4-fold) in CL-nanoemulsion relative to that of CL-emulsion. Thus, CL-nanoemulsion induces apoptosis in breast cancer cells by inducing caspase-8 and -9 activity and suppressing VEGFR-2. In conclusion, the prepared CL-nanoemulsion had antibacterial, antifungal, and antibiofilm as well as anticancer properties, which can be used in different biomedical applications after extensive studies in vivo.

Abstract
The growing understanding of nanoemulsion biomedical applications necessitates a basic understanding of protein-drug-loaded nanoemulsion interaction. In our present study, we investigated the binding interactions of Mefloquine (MEF)-loaded black cumin seed oil (Thymoquinone) nanoemulsion of different concentrations towards human and bovine serum albumin (HSA&BSA).Fluorescenceemission,three-dimensionalspectra,UV-visible spectroscopy, and FTIR-spectroscopy, techniques were used together with molecular docking studies to identify the binding effects. The ground state complex formation between Mefloquine-loaded black cumin seed oil nanoemulsion and protein fluorophores was confirmed by a decrease in fluorescence intensity and disputed hyper-chronicity found in the UV-visible spectra of albumins. According to three-dimensional fluorescence spectral analysis, the addition of MEF in thymoquinone impacted the microenvironment around aromatic amino acid (tryptophan and tyrosine) residues in HSA. The quenching mechanism is determined to be static contact by stern-volmer analysis, resulting in the formation of a stable bioconjugate. Significant modifications in the amide FTIR frequencies at around 1600 cm-1 correlate to variations in the secondary alpha-helical structures of biomolecules at the MEF-loaded nanoemulsion interface. Molecular dynamic studies have shown the binding affinity scores of the proteins BSA and HSA with the drug, MEF-loaded black cumin seed oil nanoemulsion. The determined thermodynamic parameters were found to agree with molecular docking data, indicating that vander-waals and hydrogen bonding forces were important in the interaction process. MEF prefers a highly polar binding site at the exterior area of domains in HSA than BSA, as shown in the molecular model, and the hydrogen bonds are highlighted. From our results, we have observed that drug delivery has a detrimental effect on protein frame confirmation by altering its physiological function.

Abstract
Acinetobacter baumannii is an emerging nosocomial pathogen resistant to a wide spectrum of antibiotics, with great potential to form a biofilm, which further aggravates treatment of infections caused by it. Therefore, searching for new potent agents that are efficient against A. baumannii seems to be a necessity. One of them, which has already been proven to possess a wide spectrum of biological activities, including antimicrobial effect, is cinnamon essential oil. Still, further increase of antibacterial efficacy and improvement of bioavailability of cinnamon oil is possible by emulsification process. The aim of this study was comparative analysis of cinnamon essential oil and its emulsion against biofilm forming A. baumannii clinical isolates. Furthermore, the investigation of toxicological aspects of possible applications of essential oil and emulsion was done as well. Gas chromatography–mass spectrometry of essential oil indicated trans-cinnamaldehyde as the most abundant component. The cinnamon emulsion was synthesized from cinnamon essential oil by combining modified low- and high- energy methods. Synthesized emulsion was characterized with Fourier-transform infrared spectroscopy and photon correlation spectroscopy. Both substances exhibited significant antibacterial (minimal inhibitory concentrations in the range 0.125–0.5 mg/ml) and antibiofilm effects (inhibitions of formation and reduction of pre-formed biofilm were 47–81 and 30–62%, respectively). Compared to essential oil, the efficacy of emulsion was even stronger considering the small share of pure oil (20%) in the emulsion. The result of biofilm eradication assay was confirmed by scanning electron microscopy. Even though the cytotoxicity was high especially for the emulsion, genotoxicity was not determined. In conclusion, strong antibacterial/antibiofilm effect against A. baumannii of the cinnamon essential oil and the fact that emulsification even potentiated the activity, seems to be of great significance. Observed cytotoxicity implicated that further analysis is needed in order to clearly determine active principles being responsible for obtained antibacterial/antibiofilm and cytotoxic properties.
