Abstract
As an important agricultural product, the endosperm portion of Gleditsia sinensis seeds, called "zào jiǎo mǐ" (ZJM) in Chinese, has gradually gained popularity and has been accepted by the public. However, there is limited information on the nutritional value and metabolic components of endosperm among Gleditsia. This study compared the endosperm composition among seven species. The types of metabolites, content of nutrients and amino acids were determined. A total of 4495 types of metabolites were detected. Galactose metabolism (gmx00052) was enriched in all combinations compared with G. sinensis. The polysaccharides content ranged from 51.49 to 80.37 g/100 g. Based on considerations of growth rate, seed yield, amino acid content, and interspecific differences, G. fera could be an alternative planting option to G. sinensis. These results can provide a reference for growers in selecting Gleditsia varieties and provide insights into the industrial applications of Gleditsia endosperm products.

Abstract
Gleditsia fruits have been known as a valuable traditional Chinese herb for tens of centuries. Previous studies showed that the galactomannans are considered as one of the major bioactive components in Gleditsia fruits seeds (GSGs). Here, we systematically review the major studies of GSGs in recent years to promote their better understanding. The extraction methods of GSGs mainly include hot water extraction, microwave-assisted extraction, ultrasonic extraction, acid extraction, and alkali extraction. The analysis revealed that GGSs exhibited in the form of semi-flexible coils, and its molecular weight ranged from 0.018 × 103 to 2.778 × 103 KDa. GSGs are composed of various monosaccharide constituents such as mannose, galactose, glucose, and arabinose. In terms of pharmacological effects, GSGs exhibit excellent activity in antioxidation, hypoglycemic, hypolipidemic, anti-inflammation. Moreover, GSGs have excellent bioavailability, biocompatibility, and biodegradability, which make them used in food additives, food packaging, pharmaceutical field, industry and agriculture. Of cause, the shortcomings of the current research and the potential development and future research are also highlighted. We believe our work provides comprehensive knowledge and underpinnings for further research and development of GSGs.

Abstract
Chinese quince fruit (CQF) contains abundant pectin; however, the pectin cannot be efficiently separated by conventional approaches because of strong lignin-carbohydrate complexes (LCC). In this study, to elucidate the structural characteristics of the original LCC formed by lignin and pectin in CQF, single and multiple enzymatic hydrolysis pretreatments were innovatively performed, and the resulting LCC preparations were comprehensively characterized using a series of techniques. The enzymatic hydrolysis pretreatments significantly increase the LCC yield, releasing LCC fractions with low molecular weights (Mw = 4660-8288 Da). LCC-4, isolated by pretreatment with cellulase plus xylanase, had the highest galacturonic acid content (15.5 %), followed by LCC-2 (isolated by xylanase pretreatment) of 14.0 %. In CQF, lignin develops lignin-carbohydrate (LC) bonds with pectin to form LCC, with phenyl-glycoside bond being the dominant linkage. Although the pectinase pretreatment reduced the pectin content, signals of the LC linkages in the 2D-HSQC spectra were enhanced. LCC-4 could be considered as the most representative of the original LCC in CQF due to its high pectin content and multiple LCC signals in the 2D-HSQC spectrum. The structural understanding of the original LCC in CQF will lay a foundation for designing appropriate methods for extracting pectin from CQF.

Abstract
The self-healing property based on metal-ligand physical coordination is particularly interesting in bio-hydrogel science due to its allowance for multiple local healing events to process. As the most abundant renewable green resource in nature, Gleditsia sinensis galactomannan has great potential as a starting material for functional materials. In this study, the biocompatible Gleditsia sinensis galactomannan and cellulose were firstly chemically modified and then taken as the main constituent for constructing the metal-ligand coordination through an enzyme-regulated strategy. The hydrogel could quickly gelatinize in the surrounding environment, corresponding to the violent exothermic phenomenon, and exhibit extraordinary self-healing behavior. The molecular dynamics simulation of the hydrogel confirmed the more stable coordinated configuration from Fe(III)-chelates than Fe(II)-chelates. The morphology, mechanical property, antibacterial, and cytotoxicity of the prepared hydrogel were also studied. Our results indicated that galactomannan hydrogel based on the metal-ligand networks could balance the kinetic stability and intrinsic healability through the enzyme-induced route, which provide a new perspective in the field of biomaterial applications.

Abstract
Acetylation modification was conducted to improve the water-solubility and solution properties of xyloglucan from tamarind seeds (TSX). Three acetylated TSX with different degree of substitution (DS) were successfully prepared, and their structure and molecular parameters were investigated by FT-IR, NMR, and high-performance size exclusion chromatography (HPSEC). Further, the effects of acetylation on the thermal stability, solubility, and rheological properties of TSX were studied. Results showed that acetyl groups were mainly substituted at the O-6 position of terminal galactose with DS of 0.2, 0.47, and 0.36 for AC-2, AC-5, and AC-10, respectively. HPSEC analysis indicated that molecular weight of acetylated derivatives decreased slightly, and the solution conformation became more flexible as the DS increase. By comparing with TSX, the thermal stability, water-solubility, solution transmittance, and ζ-potential of acetylated TSX were significantly improved as the DS increase. In addition, rheological studies demonstrated that acetylation reduced the shear viscosity, but high DS of acetylation could induce the weak gelling property of TSX. In conclusion, acetylation modification could be applied to improve the physicochemical properties of TSX and promote its further application in food and pharmaceutical industries.

Abstract
Sandy soil has poor water-holding performance, making it difficult for plants to survive, which worsens the deterioration of the ecological environment. Therefore, borax cross-linked Gleditsia microphylla galactomannan hydrogel (GMGH) was prepared, and its practicability as a water-retaining agent was analyzed. GMGH exhibited fast self-healing performance (150 s, ≈100%) and a high swelling index (88.70 g/g in pH 9). The feasibility of improving the water absorption and retention properties of sandy soil was explored by mixing different proportions (0.1, 0.3, 0.5 wt % sandy soil) of GMGH and sandy soil. The results showed that sandy soil had a more porous structure after adding 0.5 wt % GMGH, and its water absorption index increased from 15.68 to 38.12%. In an artificial climate box, the water-holding time of the sandy soil was extended from 3 to 23.5 days, and the cycles of water absorption and retention were more than 10 times. Therefore, GMGH has broad application prospects as a potential water-retaining agent for desertification control.

Abstract
Barley grass polysaccharides (BGPs) are some of the major bioactive constituents of barley (Hordeum vulgare L.) grass (BG). They exhibit favorable biological activities and health benefits. In this study, seven BGPs were extracted from BG, which was harvested at three different growth stages (e.g., seedling, tillering, and stem elongation), by alkaline-extraction method. Their physicochemical properties, structural characteristics, and biological activities were investigated and compared. Results demonstrated that the extraction yields, chemical compositions, monosaccharide constituents, and molecular weights of the seven BGPs obtained at different growth stages varied obviously. These BGPs had similar preliminary structural characteristics but different microstructures and thermal properties. Furthermore, the BGPs (BGP-Z12 and BGP-Z21) obtained at the seedling stage possessed stronger in vitro antioxidant potentials, cholic acid binding activity, and immunological activity than other BGPs. Therefore, these results indicated that that the seedling stage of BG was the preferable harvest time for preparing highly bioactive BGPs.

Abstract
Fluorescence probing was used to study hydrophobic interactions of galactomannan (GM) obtained from fenugreek gum (FG), guar gum (GG), and locust bean gum (LBG) at different M/G ratios. The I1/I3 ratio of pyrene changed from 1.73 to 1.29, 1.22, and 1.29 for FG, GG and LBG, respectively, as the concentration of GM increased from 0.01 to 8.0 g/L at 30 °C. The critical aggregation concentration of FG, GG, and LBG increased from 1.04 to 3.84 g/L, 1.15 to 3.73 g/L, and 0.94 to 3.63 g/L, respectively, as temperature increased from 10 to 70 °C. Addition of Na2SO4 and NaSCN increased the I1/I3 ratio in dilute solution, but reduced it in semi-dilute solution, whereas adding urea reduced I1/I3 in dilute solution but increased it in semi-dilute solution. These results indicated that the CAC of GM, polarity and number of hydrophobic microdomains were highly dependent on the M/G ratio and galactose distribution.

Abstract
Abstract
Background
Diosgenin is an isospirostane derivative, which is a steroidal sapogenin and the product of acids or enzymes hydrolysis process of dioscin and protodioscin. Galactomannans are heteropolysaccharides composed of D-mannose and D-galactose, which are major sources of locust bean, guar, tara and fenugreek.
Methods
Literature survey was accomplished using multiple databases including PubMed, Science Direct, ISI web of knowledge and Google Scholar.
Results
Four major sources of seed galactomannans are locust bean (Ceratonia siliqua), guar (Cyamopsis tetragonoloba), tara (Caesalpinia spinosa Kuntze), and fenugreek (T.foenum-graecum). Diosgenin has effect on immune system, lipid system, inflammatory and reproductive systems, caner, metabolic process, blood system, blood glucose and calcium regulation. The most important pharmacological benefits of galactomannan are antidiabetic, antioxidant, anticancer, anticholinesterase, antiviral activities, and appropriate for dengue virus and gastric diseases.
Conclusions
Considering the importance of diosgenin and galactomannans, the obtained findings suggest potential of diosgenin and galactomannans as natural products in pharmaceutical industries.

Abstract
Aminated poly(N-isopropylacrylamide) (PNIPAm-NH2) was grafted onto oxidized galactomannan polysaccharide extracted from Delonix regia (OXGM) via Schiff base reaction by a simple, rapid synthetic route, deprived of the use of organic solvents. Grafting was confirmed by FTIR and 1H NMR and the self-organizing ability of the obtained nanoparticle copolymers was investigated by dynamic light scattering (DLS). The minimum concentration required for self-organization (CAC) at 25 °C was higher than at 50 °C. Lower critical solution temperature (LCST) was in the range 34-40 °C, depending on both inserted PNIPAm-NH2 molar mass and on the presence of reduced imine bond. Synthesized copolymers are promising candidates for drug delivery as they show good cell viability, particle size around 250 nm and transition temperature closer to that of human body. Reaction success points out to the possibility of use free aldehyde groups of oxidized polysaccharide, not used in the copolymerization, to form a pro-drug with substances that possess NH2 groups in their structure, such as doxorubicin.

Abstract
Galactomannan extracted from Cassia fistula seed endosperm present little data related to the its structural characterization. This study reports the chemical characterization of the galactomannan from Cassia fistula (CF) and their oxidized derivatives. The extracted CF presented a yield of 26.5% (w/w) and the intrinsic viscosity [η] was 9.73 dL/g. 1D and 2D nuclear magnetic resonance spectroscopy (NMR) confirmed that the polysaccharide has a backbone of 4-linked β-D-mannose units, and contains galactose units as pending groups. These galactose units are linked to the central core through a (1→6) linkage and the galactomannan presented Man/Gal ratio of 3.1/1. The galactomannan from Cassia fistula presents low cytotoxicity in Vero cells with a CC50 > 1000 μg/ml. The properties of CF resemble other commercially important galactomannans such as Locust bean gum. Three oxidized derivatives of CF were produced by periodate oxidation, which were carefully characterized by different structural techniques. It was observed that as the degree of oxidation increased, there was an increase in the Man/Gal ratio and a reduction in molar mass and viscosity. The polialdehyde produced may be explored as a versality material to react with amine group of the protein and amined polysaccharide to produce biomaterials.

Abstract
Gleditsia sinensis, fenugreek and guar galactomannans (referred to as GSG, FG, and GG) were extracted from their gums and investigated using various techniques. Mannose to galactose ratios were 3.55, 1.11, and 1.65, respectively. The intrinsic viscosity of GSG was very close to that of GG, while that of FG was the lowest one. This was attributed to the influence of high galactose substitution of FG on the mannan backbone, which induced a lower chain dimension due to intermolecular entanglement. High degrees of substitution and high temperatures contributed to improving the solubility of galactomannan. Rheological behavior indicated that GG had the highest apparent viscosity, yet the power-law model could well-fitted the flow curves of GSG and FG, but not GG. Through morphological observations, the extracted galactomannans exhibited rod-like structure in deionized water and showed fibrous filament network structure after dehydration by freeze-drying. The thermal behavior was greatly influenced by the degree of side groups and Mw of galactomannans.
