Abstract
Water sources have become extremely scarce and contaminated by organic and inorganic industrial and agricultural pollutants as well as household wastes. Poisoning water resources by dyes and metals is a problem because contaminated water can leak into subsurface and surface sources, causing serious contamination and health problems. Therefore, developing wastewater treatment technologies is valuable. Today, hydrogels have attracted considerable attention owing to their broad applications. Hydrogels are polymeric network compositions with significant water-imbibing capacity. Hydrogels have potential applications in diverse fields such as biomedical, personal care products, pharmaceuticals, cosmetics, and biosensors. They can be prepared by using natural (biopolymers) and synthetic polymers. Synthetic polymer-based hydrogels obtained from petrochemicals are not environmentally benign; thus, abundant plant-based polysaccharides are found as more suitable compounds for making biodegradable hydrogels. Polysaccharides with many advantages such as non-toxicity, biodegradability, availability, inexpensiveness, etc. are widely employed for the preparation of environmentally friendly hydrogels. Polysaccharides-based hydrogels containing chitin, chitosan, gum, starch (St), etc. are employed to remove pollutants, metals, and dyes. Among these, St has attracted a lot of attention. St can be mixed with other compounds to make hydrogels, which remove dyes and metal ions to variable degrees of efficiency. Although St has numerous advantages, it suffers from drawbacks such as low stability, low water solubility, and fast degradability in water which limit its application as an environmental adsorbent. As an effective way to overcome these weaknesses, various modification approaches to form starch-based hydrogels (SBHs) employing different compounds have been reported. The preparation methods and applications of SBH adsorbents in organic dyes, hazardous materials, and toxic ions elimination from water resources have been comprehensively discussed in this review.

Abstract
Nano starch exhibits many advantages for application in diverse fields. Amaranth starch consisted of starch particle aggregates, isolated amaranth starch, and few natural nano starch (NNS), while NNS (0.92 ± 0.12 μm) was successfully isolated for the first time. Compared with the isolated amaranth starch, NNS showed smaller particle size but larger molecular weight, suggesting that the molecules arranged densely. NNS had a weak A-type crystal structure because of its more content of short starch chains, but higher amylose content resulted in the increase of its gelatinization temperature. The special NNS, owning several different physicochemical properties from amaranth starch, can open new ways for the production and application of nano biomass materials.

Abstract
Natural polysaccharides are abundant and renewable resource, but their applications are hampered by limited biological activity. Chemical modification can overcome these drawbacks by altering their structure. Three series of polysaccharide derivatives with coumarins were synthesized to obtain polysaccharide derivatives with enhanced biological activity. The biological activities were tested, including antioxidant property, antifungal property, and antibacterial property. Based on the results, the inhibitory properties of the coumarin-polysaccharide derivatives were significantly improved over the raw polysaccharide. The IC50 of the inhibition of DPPH, ABTS•+, and superoxide (O2•-) radical-scavenging was 0.06-0.15 mg/mL, 2.3-15.9 μg/mL, and 0.03-0.25 mg/mL, respectively. Compared with the raw polysaccharides, coumarin- polysaccharide derivatives exhibited higher efficacy in inhibiting the growth of tested phytopathogens, showing inhibitory indices of 60.0-93.6 % at 1.0 mg/mL. Chitosan derivatives with methyl and chlorine (Compound 10B and 10C) exhibited significant antibacterial activity against S. aureus (MIC = 31.2 μg/mL), E. coli (MIC = 7.8 μg/mL), and V. harveyi (MIC = 15.6 μg/mL), respectively. The results of the cytotoxicity assay showed no observed cytotoxicity when the RAW 264.7 cells were incubated with the synthesized polysaccharide derivatives at the tested concentrations.

Abstract
A preparation method involving the combination of high-pressure homogenization and ultrasound (HPH-US) techniques was employed to produce starch nanocrystals (NCs) from three botanical starch sources: chestnut, corn starch, and potato starch. The optimal conditions, determined using response surface methodology, consisted of a homogenization pressure of 60 MPa and ultrasound at 280 W for 30 min. The utilization of dynamic light scattering (DLS) and transmission electron microscopy (TEM) unveiled that the resulting starch particles exhibited nanometric dimensions ranging from 135.36 to 203.47 nm. The mechanical forces generated by the HPH-US treatment significantly enhanced the physicochemical properties of the starch NCs, leading to a partial disruption of the crystalline structure. Moreover, the potential application of the synthesized starch NCs as fat replacers (FRs) was investigated. As the degree of substitution increased, notable improvements were observed in the hardness and viscosity of ice cream, accompanied by a reduction in the melting rate. The overall sensory evaluation indicated that corn starch NCs held substantial promise as a viable alternative FR for enhancing the quality of ice cream.

Abstract
Probiotics provide several benefits for humans, including restoring the balance of gut bacteria, boosting the immune system, and aiding in the management of certain conditions such as irritable bowel syndrome and lactose intolerance. However, the viability of probiotics may undergo a significant reduction during food storage and gastrointestinal transit, potentially hindering the realization of their health benefits. Microencapsulation techniques have been recognized as an effective way to improve the stability of probiotics during processing and storage and allow for their localization and slow release in intestine. Although, numerous techniques have been employed for the encapsulation of probiotics, the encapsulation techniques itself and carrier types are the main factors affecting the encapsulate effect. This work summarizes the applications of commonly used polysaccharides (alginate, starch, and chitosan), proteins (whey protein isolate, soy protein isolate, and zein) and its complex as the probiotics encapsulation materials; evaluates the evolutions in microencapsulation technologies and coating materials for probiotics, discusses their benefits and limitations, and provides directions for future research to improve targeted release of beneficial additives as well as microencapsulation techniques. This study provides a comprehensive reference for current knowledge pertaining to microencapsulation in probiotics processing and suggestions for best practices gleaned from the literature.

Abstract
Death caused by excessive blood loss has always been a global concern. Timely control of bleeding in incompressible penetrated wounds remains a great challenge. Here, we developed a shape memory sponge (SQG) based on modified starch and gelatin (Gel) to control the hemorrhage of penetrating wounds. The porous structure of SQG greatly enhanced the absorption of blood, and the adhesion of erythrocytes and platelets. The water absorption rate of SQG reached 1178.72 ± 12.18% in 10 s. SQG quickly recovered its shape in water (∼3 s) and exhibited high mechanical strength (∼38 kPa), acting as a physically packed barrier to facilitate hemostasis. Furthermore, the positively charged sponges were conducive to activating platelets and promoting the release of coagulation factors. SQG sponges possessed the lowest blood coagulation index (BCI) of 21.32 ± 0.19%, and presented good biocompatibility and obvious inhibitory effect on Escherichia coli (E. coli) and Staphylococcus aureus (S. aureus). Moreover, SQG sponges controlled complete bleeding in 69 ± 20 s and a bleeding loss of 334 ± 138 mg was observed, nearly 50% lower than that of gelatin sponge in rabbit liver penetrating wounds. Overall, SQG possesses a combination of potent shape recovery, rapid hemostasis, and excellent antibacterial and degradation ability, enabling promising applications for hemostasis in non-compressible penetrating wounds.

Abstract
With the increasing growth of the algae industry and the development of algae biorefinery, there is a growing need for high-value applications of algae-extracted biopolymers. The utilization of such biopolymers in the biomedical field can be considered as one of the most attractive applications but is challenging to implement. Historically, polysaccharides extracted from seaweed have been used for a long time in biomedical research, for example, agarose gels for electrophoresis and bacterial culture. To overcome the current challenges in polysaccharides and help further the development of high-added-value applications, an overview of the entire polysaccharide journey from seaweed to biomedical applications is needed. This encompasses algae culture, extraction, chemistry, characterization, processing, and an understanding of the interactions of soft matter with living organisms. In this review, we present algae polysaccharides that intrinsically form hydrogels: alginate, carrageenan, ulvan, starch, agarose, porphyran, and (nano)cellulose and classify these by their gelation mechanisms. The focus of this review further lays on the culture and extraction strategies to obtain pure polysaccharides, their structure-properties relationships, the current advances in chemical backbone modifications, and how these modifications can be used to tune the polysaccharide properties. The available techniques to characterize each organization scale of a polysaccharide hydrogel are presented, and the impact on their interactions with biological systems is discussed. Finally, a perspective of the anticipated development of the whole field and how the further utilization of hydrogel-forming polysaccharides extracted from algae can revolutionize the current algae industry are suggested.

Abstract
Starch, which is a carbohydrate polymer with a semicrystalline granular structure, has been the subject of academic research for decades due to its renewable and biodegradable property as well as various applications in food, pharmaceutical and other industries. Nano-starch (NS) is a novel type of starch material with unique physiochemical properties due to its small size. However, the nano-size nature of NS determines its tendency to agglomeration as a natural process to approach a thermodynamically steady state, and the single hydroxyl functional group is also not favorable to its applications in hydrophobic environments. Thus, modified-NS with improved dispersion property, hydrophobicity, and stability is emerging as a new research direction. However, information about modified-NS is sporadic in literature, and a systematic review from its preparation, application, the problem and challenge as well as related health concerns is carried out to further the understanding of modified-NS. It is expected that the theoretical basis and new insight into the development of modified-NS will be improved.
