Abstract
Electrospun fibers (EFs) have emerged as promising one-dimensional materials for a myriad of research/commercial applications due to their outstanding structural and physicochemical features. Polymers of either synthetic or natural precursors are applied to design EFs as carriers for bioactive compounds. For engineering food systems, it is crucial to exploit polymers characterized by non-toxicity, non-immunogenicity, biocompatibility, slow/controllable biodegradability, and structural integrity. The unique attributes of protein-based biomaterials endow a wide diversity of desirable features to EFs for meeting the requirements of advanced food/biomedical applications. In this review paper, after an overview on electrospinning, different protein materials (plant- and animal-based) as biodegradable/biocompatible building blocks for designing EFs will be highlighted. The potential application of protein-based EFs in loading bioactive compounds with the intention to inspire interests in both academia and industry will be summarized. This review concludes with a discussion of prevailing challenges in using protein EFs for the bioactive vehicle development.

Abstract
Multicore alginate microspheres (MCPs) have been demonstrated as promising carriers for bioactive substances. Herein, the influence of the size of the inner core on the bioaccessibility of astaxanthin (AST) was investigated using both in vitro and in vivo methods. MCPs with different inner core sizes were fabricated in which the oil-in-water emulsion with different oil droplet sizes was embedded in alginate microspheres (AST@MCPs) via the electrospray technology. The AST@MCPs appeared as a uniform sphere with an average size of 300 μm. The AST encapsulation efficiency in the AST@MCPs was determined to be more than 68%, which was independent of the inner core size. The bioaccessibility of AST increased from 38.3 to 83.2% as the size of the inner core decreased. Furthermore, the anti-inflammatory activity of AST@MCPs after in vitro simulated digestion was evaluated by LPS-induced RAW264.7 cells. The results suggested that AST@MCPs with a smaller inner core size exhibited a stronger anti-inflammatory activity, which further proved the results obtained from in vitro simulated digestion. As expected, the oral administration of AST@MCPs significantly mitigated colitis symptoms in DSS-induced ulcerative colitis mice. Compared with AST@MCPs with larger inner cores, AST@MCPs with smaller inner cores reflect stronger anti-inflammatory activity in vivo. These results suggested that the bioaccessibility of AST in MCPs increased significantly with the decrease in the inner core size, which may be attributed to the rapid formation of micelles in the intestine. This work provides a simple and efficient strategy to prepare microspheres for the enhanced delivery of AST, which has important implications for the design of health-promoting foods.

Abstract
Climate change due to different human activities is causing adverse environmental conditions and uncontrolled extreme weather events. These harsh conditions are directly affecting the crop areas, and consequently, their yield (both in quantity and quality) is often impaired. It is essential to seek new advanced technologies to allow plants to tolerate environmental stresses and maintain their normal growth and development. Treatments performed with exogenous phytohormones stand out because they mitigate the negative effects of stress and promote the growth rate of plants. However, the technical limitations in field application, the putative side effects, and the difficulty in determining the correct dose, limit their widespread use. Nanoencapsulated systems have attracted attention because they allow a controlled delivery of active compounds and for their protection with eco-friendly shell biomaterials. Encapsulation is in continuous evolution due to the development and improvement of new techniques economically affordable and environmentally friendly, as well as new biomaterials with high affinity to carry and coat bioactive compounds. Despite their potential as an efficient alternative to phytohormone treatments, encapsulation systems remain relatively unexplored to date. This review aims to emphasize the potential of phytohormone treatments as a means of enhancing plant stress tolerance, with a specific focus on the benefits that can be gained through the improved exogenous application of these treatments using encapsulation techniques. Moreover, the main encapsulation techniques, shell materials and recent work on plants treated with encapsulated phytohormones have been compiled.

Abstract
Biopolymeric nanoparticles are gaining importance as nanocarriers for various biomedical applications, enabling long-term and controlled release at the target site. Since they are promising delivery systems for various therapeutic agents and offer advantageous properties such as biodegradability, biocompatibility, non-toxicity, and stability compared to various toxic metal nanoparticles, we decided to provide an overview on this topic. Therefore, the review focuses on the use of biopolymeric nanoparticles of animal, plant, algal, fungal, and bacterial origin as a sustainable material for potential use as drug delivery systems. A particular focus is on the encapsulation of many different therapeutic agents categorized as bioactive compounds, drugs, antibiotics, and other antimicrobial agents, extracts, and essential oils into protein- and polysaccharide-based nanocarriers. These show promising benefits for human health, especially for successful antimicrobial and anticancer activity. The review article, divided into protein-based and polysaccharide-based biopolymeric nanoparticles and further according to the origin of the biopolymer, enables the reader to select the appropriate biopolymeric nanoparticles more easily for the incorporation of the desired component. The latest research results from the last five years in the field of the successful production of biopolymeric nanoparticles loaded with various therapeutic agents for healthcare applications are included in this review.
