Content of essential and non-essential elements in wild animals from western Ukraine and the health risks associated with meat and liver consumption

Cadmium in Selected Organs of Game Animals from Areas with Different Degrees of Industrialisation and Its Intake by Human Consumers

The aim of this study was to determine the concentration of cadmium (Cd) in the organs of game animals from areas with different degrees of industrialisation and to assess its intake following the consumption of the livers of these animals. The material for this study consisted of liver and kidney samples taken from roe deer (Capreolus capreolus), red deer (Cervus elaphus), and wild boar (Sus scrofa) from five regions differing in land use and industrialisation. Compared to the kidneys, the liver was an indicator of the current state of the environment and Cd intake, while the kidney was used to assess the long-term accumulation of Cd in the body. The cadmium concentration in the samples was determined by inductively coupled plasma atomic emission spectrometry. The cadmium concentrations of the organs were found to vary according to geographical location, with the highest levels being observed in Southern Poland, i.e., areas characterised by the highest degree of industrialisation and the presence of heavy industry. However, high Cd concentrations were also reported in the northeastern region. Examples of excessive cadmium levels in the kidneys were noted in all tested regions. Cd intake by humans was evaluated by calculating the estimated daily cadmium intake, and this was compared with the tolerable weekly intake (TWI). The TWI was only exceeded by children frequently consuming wild boar liver from the southwest region.

Antioxidant Activity and Cell Protection of Glycosylated Products in Different Reducing Sugar Duck Liver Protein Systems

Duck liver is an important by-product of duck food. In this study, we investigated the effects of glucose, fructose, and xylose on the antioxidant properties of glycosylated products of duck liver protein and their protective effects on HepG2 cells. The results show that the glycosylation products of the three duck liver proteins (DLP-G, DLP-F, and DLP-X) all exhibit strong antioxidant activity; among three groups, DLP-X shows the strongest ability to scavenge DPPH, ·OH free radicals, and ABTS⁺ free radicals. The glycosylated products of duck liver protein are not toxic to HepG2 cells and significantly increase the activity of antioxidant enzymes such as SOD, CAT, and GSH-Px in HepG2 cells at the concentration of 2.0 g/L, reducing oxidative stress damage of cells (p < 0.05). DLP-X has a better effect in reducing oxidative damage and increasing cellular activity in HepG2 cells than DLP-G and DLP-F (p < 0.05). In this study, the duck liver protein glycosylated products by glucose, fructose, and xylose were named as DLP-G, DLP-F, and DLP-X, respectively.

The Effect of the Inclusion of Different Concentrates in Feed Rations on the Contents of Tocopherols, β-Carotene and Retinol in the Livers and Longissimus dorsi Muscles of Farm-Raised Fallow Deer (Dama dama L.)

This study analyzed the chemical composition and contents of β-carotene, tocopherols and retinol in the longissimus dorsi (LD) muscles and livers of fallow deer (Dama dama L.) fed diets based on hay containing different concentrates (hay and oats—HO; hay, oats and protein concentrate—HOP; hay and pellets—HP). The provitamin and lipophilic vitamin contents in the samples of feed and animal tissues were determined by high-performance liquid chromatography (HPLC). The contents of retinol were nearly two-fold higher (p < 0.002) in the livers and many-fold higher in the LD muscles of fallow deer fed the HOP and HP diets. β-carotene was not identified in the livers or LD muscles of fallow deer. The concentrations of α-tocopherol and total tocopherols were higher in the livers and LD muscles of the animals that received the HO and HP diets, but the noted differences were not significant. The inclusion of various concentrates in the feed rations had no influence on the proximate chemical compositions of the livers or LD muscles of fallow deer.

Effect of Fermentation Time on Physiochemical Properties of Kombucha Produced from Different Teas and Fruits: Comparative Study

This study aimed to investigate the impact of fermentation time on antioxidative activities and phenolic composition and sensory quality of kombucha fermented from different teas (green, black, and oolong) and fruits (grape, dragon, and guava). Results: the highest antioxidative activity was observed in kombucha from green tea and grapefruit fermented for 6-7 days at 25–30°C and 48 h at 37°C, respectively. Further analysis revealed that the antioxidative activity of grape kombucha was significantly improved due to an increase in polyphenols’ concentration as compared to original green tea kombucha. Furthermore, the sensory evaluation of grape kombucha suggested that grape-flavoured kombucha is more acceptable by the young-aged group. In conclusion, this study provides a potential and promising method for the first time to produce fruit-flavoured kombucha with increased bioactive compounds in very short fermentation time (48 h) which could fulfil the nutritional requirement for human health.

Spatio-temporal monitoring of mercury and other stable metal(loid)s and radionuclides in a Croatian terrestrial ecosystem around a natural gas treatment plant

The natural gas industry bears a certain contamination risk to human and biota due to, among others, mercury, arsenic, and naturally occurring radioactive material content in gas. We tracked multiple stabile metal(loid)s and radionuclides within the natural gas treatment plant Molve, Croatia, ecosystem during the last decade through a comprehensive monitoring of soil, earthworms, moss, livestock (blood, milk, hair, urine, and feces from cows), and wildlife animals (brain, muscle, liver, and kidney of European hare and pheasant). The level of mercury and other stable metal(loid)s has shown temporal variation, but without an obvious trend. The found spatial differences in soil and earthworms were based on the differing soil characteristics of the sampled locations and exceeded the maximal allowable concentration of arsenic and zinc for agricultural soil. The status of essential copper, selenium, and zinc in cows, hares, and pheasants inclined towards deficiency. The measured stable metal(loid) levels in soil and animal samples were generally in the same range of values reported in earlier decades from the same area or non-polluted areas across Europe. The consumption of local cow and game products (e.g., milk, meat) can be considered safe for human health, although game offal is advised to be avoided as a food item due to the low risk of lead and cadmium's adverse effects. Although the activity concentrations of some radionuclides in moss were higher than reported for pristine areas, transfer from soil to moss was assessed as average (except for lead-210). Radiological risk to human and biota around the gas treatment plant Molve was estimated as negligible.

The influence of preferred habitat and daily range of the European hare on its contamination by heavy metals: a case study from the West Carpathians

The Spišská Magura mountain range, located in the Middle Spiš, is one of the regions in Slovakia most contaminated by heavy metals resulting from mining and smelting activities. Heavy metals and other potentially toxic elements have accumulated in mountain areas via atmospheric transport. The influence of the daily range size of the European hare on its contamination by heavy metals was investigated in three habitat types (forest, woodland edge, meadow) in the Spišská Magura mountain range in the West Carpathians. Individual hares (n = 21) were traced and located by GPS following snowfall. Pair samples of their faeces (n = 64) and food (n = 64) were collected from feeding sites. The maps created were used for determination of the size of the daily range as being small or large. All hares that have a small daily range avoid meadows and open spaces due to the higher predation risk. However, individuals with a large daily range feed in all habitats, including meadows. Hares with a small daily range in a forest habitat ingested higher amounts of bio-elements Ca, Cr, S, and Mn as well as higher amounts of heavy metals Ba and Pb than hares with a large daily range. Moreover, dominant hares with a small daily range, with access to abundant food sources in a forest habitat, may gradually take on higher levels of bio-elements including heavy metals that are present in their food source. In contrast, in the woodland edge, hares with a small daily range had a smaller concentration of Ca, Cr, Mn, S, Ba, and Pb compared to hares with a large daily range. Caecotrophy plays a very significant role as far as the intake of nutrients and other elements is concerned. We found significant dependence between concentrations of the elements Cr, S, Ba, Pb, and Cd in the food of European hares and in their faeces.

Industrial Halal hunted-game and feral animals' meat production

Hunted wild game meat (HGM) is growing in popularity and attracting a premium among consumers. This has led to the emergence of supply chains for industrially produced HGM in many countries. With the growing demand for Halal meat and the disposable income of its consumers around the globe, meat and game industries in countries rich in wild game and feral animals would be encouraged to consider supplying Halal hunted game meat (HHGM) to Halal consumers around the world. Meeting the Halal requirements for industrial HHGM is easy given the already existing supply chains for HGM in many producing countries. What is needed by the Game and Meat Industries in these countries to comply with the Halal requirements in terms of the hunted animal and the hunter, the hunt location, modes and methods, the handling and processing of hunted carcases and the hunted animal welfare and sustainability in the industrial production of HHGM, is the subject of this review.

Sex-related and spatial variation in trace elements in feathers of the Kentish plover (Charadrius alexandrinus) from different coastal areas of the Iberian Peninsula

This study investigated the sex-related and spatial variation in trace elements concentrations in feathers of the Kentish plover (Charadrius alexandrinus) inhabiting different coastal locations in the Iberian Peninsula. Feathers were sampled in a total of 50 breeding birds from 7 different locations: 3 on the Mediterranean coast (n=18), 1 on the Atlantic coast of Andalusia (n=9) and 3 on the NW Atlantic coast (n=23). The feathers were analyzed to determine the concentrations of Al, Cr, Mn, Cu, Zn, As, Se, Cd, Hg and Pb. All of the trace elements were present at detectable concentrations, and the mean concentrations of Al, Zn and Cu were highest of those considered. The coastal section had a significant effect on 5 elements (Mn, Cu, As, Cd and Pb). The mean concentrations of almost all of the trace elements were highest in the birds from Andalusia, intermediate in the birds from the Mediterranean area and, in general, lowest in the birds from the NW Atlantic coast. Females showed significant higher Mn concentrations and high levels of exogenous elements (Al and As) in contrast with males. Less preening activity during the day of female birds, when they are occupied in incubating eggs, could favour higher concentrations of exogenous trace elements. The high levels of several trace elements observed in the samples from Mediterranean and Atlantic coast of Andalusia may pose a serious threat to these populations.

Heavy Metal Transporters-Associated Proteins in S. tuberosum: Genome-Wide Identification, Comprehensive Gene Feature, Evolution and Expression Analysis

Plants have evolved a number of defense and adaptation responses to protect themselves against challenging environmental stresses. Genes containing a heavy metal associated (HMA) domain are required for the spatiotemporal transportation of metal ions that bind with various enzymes and co-factors within the cell. To uncover the underlying mechanisms mediated by StHMA genes, we identified 36 gene members in the StHMA family and divided them into six subfamilies by phylogenetic analysis. The StHMAs had high collinearity and were segmentally duplicated. Structurally, most StHMAs had one HMA domain, StHIPPc and StRNA1 subfamilies had two, and 13 StHMAs may be genetically variable. The StHMA gene structures and motifs varied considerably among the various classifications, this suggests the StHMA family is diverse in genetic functions. The promoter analysis showed that the StHMAs had six main cis-acting elements with abiotic stress. An expression pattern analysis revealed that the StHMAs were expressed tissue specifically, and a variety of abiotic stresses may induce the expression of StHMA family genes. The HMA transporter family may be regulated and expressed by a series of complex signal networks under abiotic stress. The results of this study may help to establish a theoretical foundation for further research investigating the functions of HMA genes in Solanum tuberosum to elucidate their regulatory role in the mechanism governing the response of plants to abiotic stress.

Content of Selected Macro- and Microelements in the Liver of Free-Living Wild Boars (Sus Scrofa L.) from Agricultural Areas and Health Risks Associated with Consumption of Liver

Liver is a traditional dish and a basic ingredient of traditional dishes consumed in many countries worldwide. The analysis of trace elements and macro- and microelements in the liver of wild boars is important due to the insufficient amount of available scientific information in this field. The material comprised liver samples taken from 70 wild boars (Sus scrofa L.). The animals represented the following ranges of age: Up to one year (group I), from one to three years (group II), and over three to five years (group III). It was shown that the wild boar liver is a rich source of mineral compounds. The age was found to exert an effect on the concentration of most minerals. The sex significantly determined the content of iron, calcium, and cadmium. The results obtained in our study indicate that children should avoid a frequent intake of wild boar liver. In turn, this type of liver can be a valuable source of such elements as Fe, Zn, and Cu for adults. The permissible concentration of Cd in the liver was exceeded in five samples. We suggest that regular control of the content of trace elements in wild boar liver is extremely important and advisable for assessment of the level of consumer exposure. The toxic metal content can be determined to assess the degree of environmental pollution and for biomonitoring of contamination. The information included in this article may be useful for environment protection agencies and policy makers that design strategies for environmental protection and human health and safety regulations.

Abstract

The aim of the study was to determine the levels of selected toxic and non-toxic elements in the liver of free-living wild boars from agricultural areas and to assess health risks associated with liver consumption. Samples were collected from 70 wild boars. The animals were divided into three age groups (group I up to one year, group II from one to three years, group III over three to five years). It was shown that wild boar liver is a rich source of mineral compounds (K, Fe, Mg, Ca, Zn, and Cu). The age was found to exert an effect on the concentration of most minerals. The sex significantly determined the content of Fe, Ca, and Cd. The maximum allowable level of Cd in the liver was exceeded in two and three samples from groups I and III, respectively. Therefore, regular monitoring of the content of this element in tissues of game animals is extremely important and advisable to assess the consumer exposure to this metal. From the point of view of human health, the estimation of the non-carcinogenic risk indicated that the intake of individual trace elements through the consumption of the liver was safe, whereas consumption of combined trace elements (only in the case of the consumption of the wild boar liver twice a week) suggested a potential health risk to children.

Fatty Acid Composition of Meat and Edible Offal from Free-Living Red Deer (Cervus elaphus)

The objective of the study was to characterize tissue-associated differences in the fatty acid composition of fat in skeletal muscles M. longissimus dorsi (loin), M. biceps femoris (hind quarter), and M. triceps brachii (shoulder), and internal organs (i.e., liver, heart, and kidney) from free-living red deer (Cervus elaphus) females (n = 11) hunted in Lithuania. Skeletal muscles were characterized by lower content of free fat compared with the offal. The highest percentage of saturated fatty acids was found in the liver fat, whereas the lowest percentage was in the heart. Red deer offal showed significantly lower and higher proportions of monounsaturated and polyunsaturated fatty acids compared to meat, respectively. Higher proportions of oleic fatty acid in the shoulder and hind quarter compared to the loin were the only significant differences between skeletal muscles. The lowest and the highest n-6 polyunsaturated/n-3 polyunsaturated fatty acids (n-6/n-3PUFA) ratio were found in the liver and heart, respectively. More favorable lower atherogenic index and higher hypocholesterolemic/hypercholesterolemic ratio found in the offal showed their high nutritional value, however, higher peroxidizability index indicated higher susceptibility to lipid peroxidation compared to skeletal muscles.
