Interfacial protein-protein displacement at fluid interfaces

Protein blends are used to stabilise many traditional and emerging emulsion products, resulting in complex, non-equilibrated interfacial structures. The interface composition just after emulsification is dependent on the competitive adsorption between proteins. Over time, non-adsorbed proteins are capable of displacing the initially adsorbed ones. Such rearrangements are important to consider, since the integrity of the interfacial film could be compromised after partial displacement, which may result in the physical destabilisation of emulsions. In the present review, we critically describe various experimental techniques to assess the interfacial composition, properties and mechanisms of protein displacement. The type of information that can be obtained from the different techniques is described, from which we comment on their suitability for displacement studies. Comparative studies between model interfaces and emulsions allow for evaluating the impact of minor components and the different fluid dynamics during interface formation. We extensively discuss available mechanistic physical models that describe interfacial properties and the dynamics of complex mixed systems, with a focus on protein in-plane and bulk-interface interactions. The potential of Brownian dynamic simulations to describe the parameters that govern interfacial displacement is also addressed. This review thus provides ample information for characterising the interfacial properties over time in protein blend-stabilised emulsions, based on both experimental and modelling approaches.

Interfacial and molecular interactions between fractions of heavy oil and surfactants in porous media: Comprehensive review

The oil production by the natural energy in oil reservoirs is decreasing gradually. Only 25-30% of the world's reservoirs can be produced naturally, and different methods are employed to recover the remaining oil. The use of surfactants is one of the promising methods for unlocking the residual oil after natural depletion. In such a method, one of the main challenges is to study how surfactant, oil, and water interact and how porous media affect these interactions. Molecular dynamics (MD) simulation provides an opportunity to gain insights into this challenge. MD simulation can be used to study interactions between surfactant, oil, and water statically and dynamically in porous media. This paper presents a comprehensive review of interactions between surfactants and fractions of oil/heavy oil, including asphaltene, resin, aromatics, and saturates. Also, it explains the probable mechanisms of oil detachment from reservoir rock in the presence of surfactants. A thorough grasp of molecular interactions between surface-active agents and different fractions of oil helps us to develop successful surfactant-based oil recovery methods.

Numerical Study of Surfactant Dynamics during Emulsification in a T-Junction Microchannel

Microchannel emulsification requires large amounts of surfactant to prevent coalescence and improve emulsions lifetime. However, most numerical studies have considered surfactant-free mixtures as models for droplet formation in microchannels, without taking into account the distribution of surfactant on the droplet surface. In this paper, we investigate the effects of nonuniform surfactant coverage on the microfluidic flow pattern using an extended lattice-Boltzmann model. This numerical study, supported by micro-particle image velocimetry experiments, reveals the likelihood of uneven distribution of surfactant during the droplet formation and the appearance of a stagnant cap. The Marangoni effect affects the droplet breakup by increasing the shear rate. According to our results, surfactant-free and surfactant-rich droplet formation processes are qualitatively different, such that both the capillary number and the Damköhler number should be considered when modeling the droplet generation in microfluidic devices. The limitations of traditional volume and pressure estimation methods for determining the dynamic interfacial tension are also discussed on the basis of the simulation results.

Interfacial rheology of model particles at liquid interfaces and its relation to (bicontinuous) Pickering emulsions

Interface-dominated materials are commonly encountered in both science and technology, and typical examples include foams and emulsions. Conventionally stabilised by surfactants, emulsions can also be stabilised by micron-sized particles. These so-called Pickering-Ramsden (PR) emulsions have received substantial interest, as they are model arrested systems, rather ubiquitous in industry and promising templates for advanced materials. The mechanical properties of the particle-laden liquid-liquid interface, probed via interfacial rheology, have been shown to play an important role in the formation and stability of PR emulsions. However, the morphological processes which control the formation of emulsions and foams in mixing devices, such as deformation, break-up, and coalescence, are complex and diverse, making it difficult to identify the precise role of the interfacial rheological properties. Interestingly, the role of interfacial rheology in the stability of bicontinuous PR emulsions (bijels) has been virtually unexplored, even though the phase separation process which leads to the formation of these systems is relatively simple and the interfacial deformation processes can be better conceptualised. Hence, the aims of this topical review are twofold. First, we review the existing literature on the interfacial rheology of particle-laden liquid interfaces in rheometrical flows, focussing mainly on model latex suspensions consisting of polystyrene particles carrying sulfate groups, which have been most extensively studied to date. The goal of this part of the review is to identify the generic features of the rheology of such systems. Secondly, we will discuss the relevance of these results to the formation and stability of PR emulsions and bijels.

Direct calculation of anisotropic surface stresses during deformation of a particle-covered drop

The modification of the surface tension and the surface shear elasticity by particles in particle-covered drops can be attributed to a particle-induced surface stress. This stress represents at the macroscopic, continuum level the microscopic effect of lateral particle-particle interactions. Understanding the link between the isotropic and anisotropic components of the surface stress and the particle microstructure, and how these components change when structured interfaces deform, is a crucial problem in the field of particle-laden interfaces. In this paper, we analyse static and transient three-dimensional simulations of a pendant drop whose surface is covered by colloidal particles displaying purely repulsive particle-particle interactions. We compute the isotropic and anisotropic surface stress from the inter-particle forces using a version of the Kirkwood-Irving formula suitable for interfacial suspensions; we validate the approach by comparing against surface tension values obtained using Fordham's method (Proc. R. Soc. London, Ser. A, 1948, 194). In the parameter range simulated, the combination of parameters for which the drop does not pinch off (stable drop) gives rise to a homogeneous and isotropic surface stress; we argue that in the absence of attractive interactions the drop becomes unstable before anisotropic effects can manifest themselves. For unstable drops, stress non-uniformity and anisotropy are significant when the drop deformation and the solid area fraction are sufficiently large. Our results have implications for the dynamic deformation of structured interfaces with geometrically complex and time dependent morphologies.
