Abstract
Cooking oil fumes (COFs) are widely acknowledged as substantial contributors to indoor air pollution, having detrimental effects on human health. Despite the existence of commercialized in vitro aerosol exposure platforms, assessment risks of aerosol pollutants are primarily evaluated based on multiwell plate experiments by trapping and redissolving aerosols to conduct comprehensive in vitro immersion exposure manner. Therefore, an innovative real-time exposure system for COF aerosol was constructed, featuring a self-designed microfluidic chip as its focal component. The chip was used to assess toxicological effects of in vitro exposure to COF aerosol on cells cultured at the gas-liquid interface. Meanwhile, we used transcriptomics to analyze genes that exhibited differential expression in cells induced by COF aerosol. The findings indicated that the MAPK signaling pathway, known for its involvement in inflammatory response and oxidative stress, played a crucial role in the biological effects induced by COF aerosol. Biomarkers associated with inflammatory response and oxidative stress exhibited corresponding alterations. Furthermore, the concentration of COF aerosol exposure and post-exposure duration exert decisive effects on these biomarkers. Thus, the study suggests that COF can induce oxidative stress and inflammatory response in BEAS-2B cells, potentially exerting a discernible impact on human health.

Abstract
Temperature is one of the possible activators for asthma. As global warming continues, the health hazard of high temperatures is increasing. It is unclear, nevertheless, how high temperatures affect asthma. The research aims to examine how asthma is affected by high temperatures and underlying molecular mechanisms. The BALB/c mice were adopted in a model of asthma. The mice were exposed at 24 °C, 38 °C and 40 °C for 4h on weekdays from day 1 to day 30. After the experiment, the lung function was measured in vivo, and then serum protein, pulmonary inflammation and immunohistochemistry assay was assessed in vitro. As the temperature increased from 24 °C to 40 °C, there was a significant increase in serum protein, while there is no discernible difference in serum protein of OVA-sIgE and OVA-sIgG between the OVA (38 °C) group and OVA (24 °C) group. The immunohistochemistry assay showed a change in the pro-inflammatory cytokines. The histopathological analysis exhibited the change of airway structure after high-temperature exposure, especially for exposure at 40 °C. The results of signals protein showed a remarkable rise of TRPV1 for OVA+40 °C. Our results revealed that high temperatures may make asthmatic airway dysfunction severe, and the higher the temperature, the more serious asthma. The oxidative stress and TRPV1 receptor can be a potential drug target for asthma. It will provide a new tool for precision medicine in asthma.

Abstract
Background Cooking oil fumes (COFs) from cooking with hot oil may contribute to the pathogenesis of lung cancer. Since 2021, occupational lung cancer for individual cafeteria workers has been recognized in South Korea. In this study, we aimed to identify the distribution of lung-imaging reporting and data system (Lung-RADS) among cafeteria workers and to determine factors related to Lung-RADS distribution. Methods We included 203 female participants who underwent low-dose computed tomography (LDCT) screening at a university hospital and examined the following variables: age, smoking status, second-hand smoke, height, weight, and years of service, mask use, cooking time, heat source, and ventilation. We divided all participants into culinary and non-culinary workers. Binomial logistic regression was conducted to determine the risk factors on LDCT of Category ≥ 3, separately for the overall group and the culinary group. Results In this study, Lung-RADS-positive occurred in 17 (8.4%) individuals, all of whom were culinary workers. Binary logistic regression analyses were performed and no variables were found to have a significant impact on Lung-RADS results. In the subgroup analysis, the Lung-RADS-positive, and -negative groups differed only in ventilation. Binary logistic regression showed that the adjusted odds ratio (aOR) of the Lung-RADS-positive group for inappropriate ventilation at the workplace was 14.89 (95% confidence interval [CI]: 3.296-67.231) compared to appropriate ventilation as the reference, and the aOR for electric appliances at home was 4.59 (95% CI: 1.061-19.890) using liquid fuel as the reference. Conclusions The rate of Lung-RADS-positive was significantly higher among culinary workers who performed actual cooking tasks than among nonculinary workers. In addition, appropriate ventilation at the workplace made the LDCT results differ. More research is needed to identify factors that might influence LDCT findings among culinary workers, including those in other occupations.

Abstract
Cooking oil smoke (COS) contains many harmful substances, such as particulate matter, formaldehyde, and phenyl esters. Currently, commercial COS treatment equipment is expensive and requires a large space. Furthermore, a large amount of agricultural waste is generated and is mainly burned onsite, producing large amounts of greenhouse gases and air pollutants. This waste could be reused as a precursor for biochar and activated carbon. Therefore, this research used saccharification and catalytic hydrothermal carbonization to process rice straw and produce compact carbon-based filters (steel wool-C) for removing cooking-induced pollutants. Scanning electron microscopy indicated that carbon layers were coated on the steel wool. The Brunauer-Emmett-Teller surface area of the carbon filter was 71.595 m2/g, 43 times larger than that of steel wool. The steel wool filter removed 28.9%-45.4% of submicron aerosol particles. Adding a negative air ionizer (NAI) to the filter system enhanced the particle removal efficiency by 10%-25%. The removal efficiency of total volatile organic compounds was 27.3%-37.1% with the steel wool filter, but 57.2%-74.2% with the carbon-containing steel wool filter, and the NAI improved the removal efficiency by approximately 1%-5%. The aldehyde removal efficiency of the carbon filter with NAI was 59.0%-72.0%. Conclusively, the compact steel wool-C and NAI device could be promising COS treatment equipment for households and small eateries.

Abstract
The goal of this research is to investigate the temperature-dependent emission rates of particle numbers and emission characteristics during oil heating. Seven regularly used edible oils were studied in a variety of tests to attain this objective. First, total particle number emission rates ranging from 10 nm to 1 μm were measured, followed by an examination within six size intervals from 0.3 μm to 10 μm. Following that, the impacts of oil volume and oil surface area on the emission rate were investigated, and multiple regression models were developed based on the results. The results showed that corn, sunflower and soybean oils had higher emission rates than other oils above 200 °C, with peak values of 8.22 × 109#/s, 8.19 × 109#/s and 8.17 × 109#/s, respectively. Additionally, peanut and rice oils were observed to emit the most particles larger than 0.3 μm, followed by medium-emission (rapeseed and olive oils) and low-emission oils (corn, sunflower and soybean oils). In most cases, oil temperature (T) has the most significant influence on the emission rate during the smoking stage, but its influence was not as pronounced in the moderate smoking stage. The models obtained are all statistically significant (P < 0.001), with R2 values greater than 0.9, and the classical assumption test concluded that regressions were in accordance with the classical assumptions regarding normality, multicollinearity, and heteroscedasticity. In general, low oil volume and large oil surface area were more recommended for cooking to mitigate UFPs emission.

Abstract
Particulate matter emitted by heated cooking oil is hazardous to human health. To develop effective mitigation strategies, it is critical to know the amount of the emitted particles. The purpose of this research is to estimate the temperature-dependent particle mass emission rates of edible oils and to develop models for source strength based on the multiple linear regression method. First, this study examined seven commonly used oils by heating experiments. The emission rates of PM2.5 and PM10 were measured, and the effects of parameters such as oil volume and surface area on the emission rates were also analysed. Following that, the starting smoke points (Ts') and aggravating smoke points (Tss') of tested oils were determined. The results showed that oils with lower smoke points had greater emission rates. Notably, the experiments performed observed that peanut, rice, rapeseed and olive oil generated PM2.5 much faster at 240 °C (2.22, 1.50, 0.82 and 0.80 mg/s, respectively, at the highest emission conditions) than that of sunflower, soybean, and corn oil (0.15, 0.12 and 0.11 mg/s, respectively). The temperature, volume, and surface area of oils all had a significant impact on the particle mass emission rate, with oil temperature being the most influential. The regression models obtained were statistically significant (P < 0.001), with the majority of R2 values greater than 0.85. Using sunflower, soybean and corn oils, which have higher smoke points and lower emission rates, and smaller pans for cooking is therefore recommended based on our research findings.

Abstract
This study explored whether using a coal or biomass stove for cooking was associated with a greater risk of red blood cell (RBC) folate insufficiency among pregnant women compared to using clean energy. A researcher-designed questionnaire was used to collect information on exposure-related factors and confounding factors. RBC folate concentrations were examined by microbiological assay. Binary logistic regression analysis was used to identify factors related to RBC folate insufficiency. The use of coal or firewood for cooking was associated with an increased risk of RBC folate insufficiency (<906 nmol/L) compared to gas. In subgroup analyses, associations between the use of polluting cooking fuels and folate insufficiency were positive for both urban and rural residents and statistically significant for rural women. Efforts to promote the use of clean energy and proper ventilation, especially in rural areas, are recommended to improve the health of pregnant women and their offspring.

Abstract
Cooking oil fumes (COFs) represent a major indoor environmental pollutant and exhibit potent mutagenic or carcinogenic health effects caused by containing various heterocyclic aromatic amines (HAAs) and long-chain aldehydes. Despite some evaluation of the cumulative exposure of COFs to cancer cells under high concentration were evaluated, their biological adverse effects with low-dose exposure to healthy cells had been inadequately investigated. Herein, we firstly scrutinized the three selected typically toxic compounds of heterocyclic amine 2-amino-1-methyl-6-phenylimidazo[4,5-b]pyridine (PhIP), 3,8-dimethylammidazo[4,5-f]quinoxalin-2-amine (MeIQx) and trans, trans-2,4-decadienal (TDA)) emitted from COFs. In vitro studies revealed that the PhIP, MeIQx and TDA aerosol particles were negligible toxicity to cancer cells (A549 and HepG-2) but strong cytotoxicity to normal healthy cells (HelF and L02) under 0.5–4 μg/mL low dose exposure based on the reactive oxygen species (ROS) mechanism. In vivo studies demonstrated that PhIP caused significant lung and liver damage after exposure to PhIP for 30 days with mice. These results indicated the direct proof of healthy cell damage even at low-dose exposure to HAAs and aldehydes.

Abstract
The stir-frying process in Chinese cooking has produced serious emissions of oily particles, which are an important source of urban air pollution. In particular, the complex composition of fine particulate may pose a threat to human respiratory and immune systems. However, current filtration methods for oily particulate fumes have low filtration efficiency, high resistance, and high equipment costs. In polypropylene (PP) electret filters, efficiency rapidly decreases and pressure drop (wind resistance) sharply increases after the adsorption of oily particles, due to the oleophilic properties of the PP fibre. We addressed this issue of filter performance degradation by fabricating a sodium perfluorooctanoate (SPFO) oleophobic coating on polyvinylidene fluoride (PVDF) fibre membranes for oily particle filtration. The SPFO coating showed a promising oleophobic effect even at low concentrations, which suggests it has oleophobic properties for different oil types and can be modified for different substrates. This fabricated oleophobic coating is thermostable and the oleophobic effect is unaffected by temperatures from 0 to 100 °C. By modifying the SPFO coating on the PVDF membrane, a high filtration efficiency (89.43%) and low wind resistance (69 Pa) was achieved without oil adhesion, so the proposed coating can be applied in the filtration and purification of oily fine particles and offers a potential strategy for preventing atmospheric oil pollution.
