Abstract
Zein-based nanofibers (NFs) functionalized with nisin (NS), reinforced with montmorillonite nanoclay (nMMT) were fabricated by uniaxial electrospinning (ES) for the first time to preserve yellow peach. Spinnability/viscosity/conductivity optimizations generated porous (95.09%), bead-free, ultrathin (119 nm) NFs of low hydrophobicity (26.05°). Glutaraldehyde (GTA) crosslinking fostered positive outcomes of tensile strength (1.23 MPa), elongation (5.0%), hydrophobicity (99.46°), surface area (201.38 m2.g-1), pore size (2.88 nm), thermal stability (Tmax = 342 °C), antioxidant/cytotoxic activities in optimized NFs that released NS sustainably according to Korsmeyer-Peppas model indicating a Fickian diffusion mechanism with R2 = 0.9587. The novel NFs inhibited growth of Listeria monocytogenes/aerobic mesophilic populations in peach after 4 days of abusive storage, evincing their robustness in food contact applications. Simultaneously, quality parameters (moisture/texture/browning/total soluble solids/pH) and peach physical appearance were maintained for up to 8 days, endorsing the practical value of zein-based NFs as a non-thermal postharvest intervention for prolonging fruits storage life.

Abstract
In this study, Polycaprolactone (PCL)/Yam Polysaccharide (YP) fiber membranes loaded the ultrasound-mediated assembly of 2-Hydroxypropyl-β-cyclodextrin (HP-β-CD)/Epicatechin gallate (ECG) inclusion complexes were prepared by electrospinning technology for food packaging. Morphology, infrared spectroscopy and X-ray diffraction results showed that the inclusion complexes were successfully assembled. With the addition of inclusion complexes, the average diameter of the fibers increased from 2480.96 to 10179.12 nm, the crystallinity decreased, the thermal stability improved, the hydrophilicity enhanced, and the water vapor permeability enhanced. Meanwhile, thermogravimetry and differential scanning calorimetry results showed that the inclusion complexes formed hydrogen bonds between the fibers, which improved the thermal stability, but the mechanical behavior suffered a certain loss. In addition, the fiber membrane could continuously release ECG within 240 h, which showed excellent antibacterial effects both in vitro and in vivo. These results indicated that the fiber film developed based on electrospinning had a broad application prospect in food packaging.

Abstract
Pickled frequently contains nitrosodimethylamine (NDMA), a mutagenic and carcinogenic substance that is dangerous for the general public's health. This study reports on the fabrication of a fluorescent biosensor using zein film and aptamer functionalized upconversion nanoparticles (UCNPs) for on-site monitoring of NDMA in meat. UCNPs were first prepared followed by aptamer binding and mixing with zein film, which was further conjugated with cDNA of dabcyl modified at 5'. The fluorescence resonance energy transfer (FRET) mechanism between the UCNPs and dabcyl was exploited. The fluorescence signals of the zein film recovered when NDMA was present because it was selectively collected by the particular aptamer and damaged the cDNA structure. The designed functionalized zein film was used for on-site and portable determination of NDMA with a lower limit of detection of 0.017 ng/mL, and possessed a satisfactory recovery ranging from 95.8% to 100.2% with no significant difference compared with the GC-MS method.
