Abstract
The purpose of this work was to develop a facile strategy based on self-crosslinking between the core and wall materials in the coacervation system for effective procyanidins (PCs) encapsulation. The coacervates were constructed through the interaction of bioactive PCs, gelatin, and sodium alginate, followed by forming cationic bridge of sodium alginate-calcium ions to improve the stability of PCs. When the concentration of PCs and calcium ions were 6.25 and 0.24 mg/mL, respectively, the PC-loaded coacervates showed spherical shape with a size about 150 nm, and the microcapsulation efficiency and yield was 81.19 ± 1.47 and 87.86 ± 2.67%, respectively. The photothermal stability of PCs was effectively improved by embedding them in coacervates. The decrease of mitochondrial membrane potential in PC-12 cells induced by H2O2 was significantly inhibited by PC coacervates, demonstrating an improved protection effect of PCs after being encapsulated in coacervates.

Abstract
The aim of this study was to assess content of primary and secondary metabolites of 18 plum cultivars selected in Serbia. Autochthonous cultivar 'Crvena Ranka' exhibited the highest level of total sugars (174.3 g/kg FW) while cultivar 'Mildora' had the highest sugars/acids ratio (17.2). Cultivar 'Nada' also contained high sugars/acid ratio as well as a high level of glucose and total sugars. Compared to the other cultivars, 'Nada' had a higher content of anthocyanins (27.14 mg/100 g FW), 'Crvena Ranka' neochlorogenic acid (23.21 mg/100 g FW) and flavanols (86.15 mg/100 g FW) but also the highest antioxidant activity. The PCA analysis confirmed that 'Nada' and 'Crvena Ranka' demonstrated better results in terms of sugars and antioxidant activity than the standard cultivars grown in Serbia and can be recommended for increased plum growing for fresh consumption, processing and in the breeding of plum with enhanced nutritional content.

Abstract
Olive leaf extracts are of special interest due to their proven therapeutic effects. However, they are still considered a by-product of the table olive and the oil industries. In order to learn possible ways of exploiting this waste for health purposes, we investigated the phytochemical profiles and antioxidant activities in the leaves of 15 Italian Olea europaea L. cultivars grown in the same pedoclimatic conditions. The phenolic profiles and amounts of their seven representative compounds were analyzed using HPLC ESI/MS-TOF. The antioxidant activities were determined using three different antioxidant assays (DPPH, ORAC, and superoxide anion scavenging assay). Wide ranges of total phenolic content (11.39-48.62 g GAE kg-1 dry weight) and antioxidant activities (DPPH values: 8.67-29.89 µmol TE mg-1 dry weight, ORAC values: 0.81-4.25 µmol TE mg-1 dry weight, superoxide anion scavenging activity values: 27.66-48.92 µmol TE mg-1 dry weight) were found in the cultivars. In particular, the cultivars Itrana, Apollo, and Maurino, showed a high amount of total phenols and antioxidant activity, and therefore represent a suitable natural source of biological compounds for use in terms of health benefits.

Abstract
There is a growing interest in wild edible species that represent a source of several health-promoting compounds, providing a potential strategy to diversify and enrich the daily diet. The aim of the present work was to characterize the nutritional and chemical composition of Rubus ulmifolius Schott fruits. Furthermore, their antimicrobial activity, non-anthocyanin and anthocyanin phenolic profile were also determined. According to the obtained results, R. ulmifolius fruits exhibited a high concentration in carbohydrates and a low fat content, in comparison with the other nutrients and non-nutrients detected in this sample. The colour parameters demonstrated differences in a* and b* parameters after lyophilisation process. Glucose and fructose were the most abundant free sugars detected and quinic acid showed the highest content compared to the other five organic acids identified. The fatty acids profile revealed 25 compounds, being mostly represented by polyunsaturated fatty acids and evidencing linolenic and α-linolenic acid as the most abundant. All tocopherol isoforms were detected, revealing γ-tocopherol with highest amount. Cyanidin-3-O-glucoside, ellagic acid pentoside, ellagic acid glucuronide and sanguiin H-10 were the main phenolic compounds present, which could be related to the antimicrobial activity (MIC values ranging between 5 and 20 mg/mL) revealed by R. ulmifolius fruits. These results showed that this fruit is a good source of nutrients as also non-nutrient compounds, with human health benefits.
