Abstract
Traditional methods used to detect fungi or mycotoxins are time-consuming and prevent real-time monitoring. In this study, solid-phase microextraction combined with full two-dimensional gas chromatography time-of-flight mass spectrometry was utilized to detect volatile organic compounds (VOCs) produced by fungi during grain infestation predictive F. graminearum PH-1 infestation in wheat. The results show that the VOCs emitted by F. graminearum can distinguish strains at different growth stages. The growth matrices (potato dextrose agar medium and wheat kernels) play a large role in VOC production. The infection of wheat sample F. graminearum showed that a specific relationship between VOCs and the composition of fungal flora, for example, 5-pentyl-cyclohexa-1,3-diene, 3-hexanone, and 1,3-octadiene, was positively correlated with the infection rate of PH-1. In the correlation study of fungal mycotoxins and VOCs, zearalenone produced by F. graminearum was predicted based on the VOCs released. Further analysis determined the correlation of three VOCs, 6-butyl-1,4-cycloheptadiene, hexahydro-3-methylenebenzofuran-2(3H)-one, and (E,E)-3,5-octadien-2-one, with zearalenone production, confirming the ability of VOCs as characteristic markers of mycotoxins.

Abstract
Numerous fungal plant pathogens can infect fresh fruits and vegetables during transit and storage conditions. The resulting infections were mainly controlled by synthetic fungicides, but their application has many drawbacks associated with the threatened environment and human health. Therefore, the use of natural plants with antimicrobial potential could be a promising alternative to overcome the side effects of fungicides. In this regard, this study aimed at evaluating the antifungal activity potential of saffron petal extract (SPE) against three mains important fungal pathogens: Rhizopus stolonifer, Penicillium digitatum and Botritys cinerea, which cause rot decay on the tomato, orange and apple fruits, respectively. In addition, the organic composition of SPE was characterized by attenuated total reflection Fourier transform infrared (ATR-FT-IR) spectroscopy and its biochemical, and gas chromatography-mass spectrometry (GC-MS) analyses were carried out. The obtained results highlighted an increased inhibition rate of the mycelial growth and spore germination of the three pathogenic fungi with increasing SPE concentrations. The mycelial growth and spore germination were completely inhibited at 10% of the SPE for Rhizopus stolonifer and Penicillium digitatum and at 5% for B. cinerea. Interestingly, the in vivo test showed the complete suppression of Rhizopus rot by the SPE at 10%, and a significant reduction of the severity of grey mold disease (37.19%) and green mold, when applied at 5 and 10%, respectively. The FT-IR spectra showed characteristic peaks and a variety of functional groups, which confirmed that SPE contains phenolic and flavonoid components. In addition, The average value of the total phenolic content, flavonoid content and half-maximal inhibitory concentration (IC50) were 3.09 ± 0.012 mg GAE/g DW, 0.92 ± 0.004 mg QE/g DW and 235.15 ± 2.12 µg/mL, respectively. A volatile analysis showed that the most dominant component in the saffron petal is 2(5H)-Furanone (92.10%). Taken together, it was concluded that SPE could be used as an alternative to antioxidant and antifungal compounds for the control of postharvest diseases in fruits.

Abstract
The avocado fruit is an agro-industrial product with high export demand in Peru due to its sensory and nutritional qualities, which can be affected during storage. The study aimed to evaluate the effect of the application of a coating formulated with potato starch (Solanum tuberosum ssp andigena), nopal mucilage (Opuntia ficus indica), and pectin on the physicochemical and physiological properties during the storage of Fuerte and Hass avocados. Samples were taken in their harvest state from the plantation in “Occobamba”, which is cultivated by the Avocado Producers Association in Chincheros, Apurímac, Peru. Physicochemical properties (titratable acidity, pH, total soluble solids) and physiological properties (weight loss, firmness, and color L* a* b*) were determined during 20 days of storage at 20 °C. The elaborated films present high transparency and low aw values. In the coated avocado of the Hass and Fuerte varieties, acidity and total soluble solids decreased significantly (p-value < 0.05) during the storage time. Weight loss and firmness of coated fruits decrease to a lesser extent. Luminosity L*, color index, and color variation showed better attributes for the coated samples. The use of coatings made with potato starch, nopal mucilage, and pectin allows the physicochemical and physiological properties of avocado fruits to be maintained for a longer time during storage.

Abstract
Conventional methods for detecting fungal contamination are generally time-consuming and sample-destructive, making them impossible for large-scale nondestructive detection and real-time analysis. Therefore, the potential of headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) was examined for the rapid determination of fungal infection on wheat samples in a rapid and nondestructive manner. In addition, the validation experiment of detecting the percent A. flavus infection presented in simulated field samples was carried out. Because the dual separation of HS-GC-IMS could generate massive amounts of three-dimensional data, proper chemometric processing was required. In this study, two chemometric strategies including: (i) nontargeted spectral fingerprinting and (ii) targeted specific markers were introduced to evaluate the performances of classification and prediction models. Results showed that satisfying results for the differentiation of fungal species were obtained based on both strategies (>80%) by the genetic algorithm optimized support vector machine (GA-SVM), and better values were obtained based on the first strategy (100%). Likewise, the GA-SVM model based on the first strategy achieved the best prediction performances (R2 = 0.979-0.998) of colony counts in fungal infected samples. The results of validation experiment showed that GA-SVM models based on the first strategy could still provide satisfactory classification (86.67%) and prediction (R2 = 0.889) performances for percent A. flavus infection presented in simulated field samples at day 4. This study indicated the feasibility of HS-GC-IMS-based approaches for the early detection of fungal contamination in wheat kernels.

Abstract
The improvement of the postharvest quality of tomato fruits was evaluated using an edible coating functionalized with an Flourensia cernua extract evaluating the antifungal, structural, barrier, and optical properties. The formulation and evaluation of an edible coating and its application on tomato was evaluated using a response surface methodology to determine the ideal concentrations of candelilla wax, whey protein, and glycerol. Edible films showed good barrier properties, with water vapor permeability varying from 0.435–0.404 g mm/m2 day kPa. The addition o F. cernua extract showed significant improvement in the transparency of films. The edible coating applied to tomato reduced weight and firmness loss. The sensory evaluation proved that the product obtained is acceptable for consumers. The edible coating added with F. cernua extract was the most effective in inhibiting the growth of pathogenic fungi and the visual appearance at the end of storage confirmed the beneficial effect of the edible coating.

Abstract
Candida albicans is an opportunistic pathogenic yeast commonly found in mouth, gastrointestinal tract and vagina. Under certain conditions, it causes skin, mucosal and systemic infections. With growing concern over the emergence of resistant strains to conventional antifungals, the development of novel antifungal agents for the management of this pathogen is an urgent need. In the present work, novel bioextracts from folk medicinal plants were directly used as active ingredient in a topical formulation for dermal candidiasis. With the aim to replace hazardous traditional reagents, a natural solvent composed by lactic acid: glucose: water (LGH) was used as vehicle for bioactive compound extraction. Furthermore, phenolic and alkaloid composition were determined by HPLC and their individual antifungal effect was evaluated. LGH extracts of Larrea spices demonstrate a significant antimicrobial activity against C. albicans being higher than their individual bioactive constituents. Notably, the mixture of Larrea cuneifolia and L divaricata extracts in topical formulations reveal a synergistic antifungal effect highlighting their potential for candidiasis treatment.

Abstract
Physicochemical, antifungal and antioxidant properties of a pectin – aloe mucilage – candelilla wax – Larrea tridentata polyphenols based bioactive film were evaluated. Antifungal capacity was analyzed against Botrytis cinerea, Colletotrichum gloeosporioides, Fusarium oxysporum and Alternaria alternata. The main antioxidants in Larrea tridentata polyphenols were identified by HPLC-MS. Water vapor permeability (WVP) was measured in the film. Antioxidant capacities for ABTS·+, DPPH·, lipid oxidation inhibition (LOI) and ferric reducing antioxidant power (FRAP) (97, 92, and 57 %, 0.73 mM Fe, respectively) were evaluated. It was possible to determine the MIC50 for the fungi evaluated at concentrations of 558–612 ppm of polyphenols. Antioxidants identified were nordihydroguaiaretic acid (NDGA), Quercetin, and Kaenpherol. Treatment with 1.1 % of pectin, 0.16 % candelilla wax, 0.3 % glycerol, 5 % AM and 4 % extract of polyphenols showed values of thickness and WVP suitable to be applied on model fruits.

Abstract
A non-destructive method for detection of fungal contamination in peaches using an electronic nose (E-nose) is presented. Peaches were inoculated with three common spoilage fungi, Botrytis cinerea, Monilinia fructicola and Rhizopus stolonifer and then stored for various periods. E-nose was then used to analyze volatile compounds generated in the fungi-inoculated peaches, which was then compared with the growth data (colony counts) of the fungi. The results showed that changes in volatile compounds in fungi-inoculated peaches were correlated with total amounts and species of fungi. Terpenes and aromatic compounds were the main contributors to E-nose responses. While principle component analysis (PC1) scores were highly correlated with fungal colony counts, Partial Least Squares Regression (PLSR) could effectively be used to predict fungal colony counts in peach samples. The results also showed that the E-nose had high discrimination accuracy, demonstrating the potential use of E-nose to discriminate among fungal contamination in peaches.

Abstract
Commercial cellulase production has increased in recent years and consistent research has been carried out to improve levels of β-glucosidase. Bioprocesses have been successfully adapted to produce this enzyme, with solid-state fermentations as the best-suited technique involving fungi. The aim of this study was to use leaves of tarbush (Flourensia cernua), an abundant shrub of the Chihuahuan Desert, as a carbon source for β-glucosidase production by Aspergillus niger. During the solid bioprocess, this enzyme reached its peak production at 36 h of culture with 3876.6 U/L. There is a particular interest in the substrate composition because of the possibility of phenolic glycosides having an important role in β-glucosidase production. HPLC-MS analyses showed that glycosides were present with the highest accumulation at 36 h of fungal culture. Luteolin and apigenin glycosides [1.8 and 2.4 absorbance units, respectively] were also detected and showed their highest point of detection alongside the highest β-glucosidase activity. No apparent changes in cellulose were observed, while hemicellulose content decreased, which could be related to production and activity of β-glucosidase. This study shows that leaves of F. cernua are an important raw material for β-glucosidase production and give a source of compounds of added value which also may have an important role for β-glucosidase production.
