Solvation behavior and sweetness response of carbohydrates, their derivatives and sugar alcohols in thiamine HCl (vitamin B1) and pyridoxine HCl (vitamin B6) at different temperatures

Preferential solvation of carbohydrates in water-trifluoroethanol mixtures: a solvent detected heteronuclear NMR approach

The present study aims to establish a simple approach involving multi-field multinuclear longitudinal relaxation (R1) analysis of the solvents to decipher solute-solvent interactions during the solvation of model carbohydrates in aqueous trifluoroethanol (TFE) co-solvent systems (TFE:D2O). The behavior of D2O and TFE is monitored around β-CD (β-cyclodextrin) and glucose through R1D (2H) and R1F (19F), respectively. Correlation times (τc) are estimated for D2O and TFE for various % (v/v) compositions of TFE:D2O mixtures. The differential trends of the R1 or τc ratio for D2O and TFE (in the presence and absence of carbohydrates) revealed that both β-CD and glucose undergo selective solvation by TFE in comparison to D2O. Owing to its encapsulation properties, β-CD exhibited a comparatively higher tendency to undergo solvation by TFE than glucose. The maximum transfer of solute bound water to bulk solvent appears in the 20-30% (v/v) TFE range. The current approach emerges as being straightforward in contrast to traditional methods that primarily focus on solute behavior to unravel the preferential solvation dynamics.

The sweetness response and thermophysical properties of glucose and fructose in the aqueous solution of some deep eutectic solvents at T= (288.15-318.15) K

Thermophysical properties elucidate the sweetness response, taste quality and hydration characteristics of saccharides in the aqueous solutions and offer significant information for pharmaceutical and food industries. In this current work, the effect of some neoteric green solvents as named deep eutectic solvents (DESs) on the sweetness response, taste quality and hydration behavior of the glucose and fructose solutions have been investigated from apparent specific volumes ASV, apparent specific isentropic compressibility ASIC parameters. The standard partial molar volumes V_φ⁰, transfer apparent molar volumes Δ_trV_φ⁰, partial molar isentropic compressibilities K_φ⁰, viscosity B-coefficients and molar refractions R_D the aqueous solutions of saccharides in choline chloride (ChCl)-urea, ChCl-ethylene glycol (EG), dimethyl ammonium chloride (DMAC)-ethylene glycol as DESs have been calculated from measured density, speed of sound, viscosity and refractive index data at T= (288.15-318.15) K. The results indicated that glucose in the aqueous solutions of ChCl-urea has the strongest interactions and get stronger with increasing the concentration of DES and temperature. Interaction volume V_int and cavity volume V_cav have been computed from scaled particle theory (SPT).

Hydration characteristics, structural effects and the taste quality of some polyhydroxy compounds in aqueous solutions of nicotinic acid (vitamin B3) at (288.15-318.15) K

Physicochemical properties elucidating the hydration characteristics and structural effects of polyhydroxy compounds in mixed aqueous solutions offer significant information for the growth of pharmaceutical and food industries. Consequently, standard partial molar volumes and isentropic compressibilities at infinite dilution of saccharides, their derivatives and sugar alcohols in (0.01, 0.05, 0.09 and 0.13) mol kg^-1 nicotinic acid_(aq) (vitamin B3) solutions have been investigated by experimental density and ultrasonic velocity with respect to temperature. Their transfer values, compressibility hydration numbers, apparent massic volumes and isentropic compressibilities have also been determined. These parameters are important to study the taste behavior of polyhydroxy compounds and intermolecular interactions occurring in ternary mixtures. UV absorption spectra of the studied polyhydroxy compounds have been recorded in 1 × 10^-4 mol kg^-1 nicotinic acid_(aq) solutions. The comparison of present results has been made with the studies reported earlier in l-ascorbic acid, thiamine HCl and pyridoxine HCl.

The solvation properties and effect of d-fructose on the taste behavior of Citrus aurantium active components in aqueous solutions

The densities and viscosities of synephrine hydrochloride and octopamine hydrochloride aqueous solutions were determined. Apparent molar volumes, apparent molar volume at infinite dilution, viscosity B-coefficients and hydration number were calculated, and it was found that synephrine hydrochloride acts as a better structure maker than octopamine hydrochloride in aqueous solutions. The densities of the investigated salts were measured in aqueous d-fructose solutions, and the corresponding apparent molar volumes of transfer at infinite dilution were determined. Its taste behavior was discussed based on the calculated values for apparent specific volume and intrinsic viscosity. Molecular dynamics simulations and radial distribution functions were applied in order to understand the nature of the interactions and water structuring in the studied systems. The change in taste behavior was observed with increasing concentration of the cosolute, and it was found that the addition of sugar increases the bitterness of the solution. From a molecular docking study on the bitter receptor TAS2R38, the strongest interactions for synephrine-HCl were noted causing the most bitter taste.
