Abstract
Baijiu quality and safety have received considerable attention owing to the gradual increase in its consumption. However, owing to the unique and complex process of Baijiu production, issues leading to quality and safety concerns may occur during the manufacturing process. Therefore, establishing appropriate analytical methods is necessary for Baijiu quality assurance and process control. Nanomaterial (NM)-based optical sensing techniques have garnered widespread interest because of their unique advantages. However, comprehensive studies on nano-optical sensing technology for quality and safety control of Baijiu are lacking. In this review, we systematically summarize NM-based optical sensor applications for the accurate detection and quantification of analytes closely related to Baijiu quality and safety. Furthermore, we evaluate the sensing mechanisms for each application. Finally, we discuss the challenges nanotechnology poses for Baijiu analysis and future trends. Overall, nanotechnological approaches provide a potentially useful alternative for simplifying Baijiu analysis and improving final product quality and safety.

Abstract
Herein, a signal output SERS aptasensor for Histamine (HA) detection is designed. MIL-100(Fe) was loaded with gold nanoparticles (AuNPs) to form composite nanozyme MIL-100(Fe)@AuNPs, which was used in the reaction system TMB/H2O2. Silver nanoparticles (AgNPs) were synthesized as "amplifier" for the SERS signal of ox TMB. After nucleic acid functionalization, the two parts were assembled to form the multifunctional substrate with both high catalytic and SERS efficiency. In the detection system, the specific binding effect of HA aptamer toward HA induced a decrease in the assembly of AgNPs on MIL-100(Fe)@AuNPs which caused a decrease in ox TMB SERS signals. The linear relation of HA ranged from 10-11 M to 5 × 10-3 M with LOD as low as 3.9 × 10-12 M. Recovery ratio in fermented soybean products (94.42-105.75 %) proved the real sample applicability. The fabricated SERS aptasensor will provide technical support for the safety during food processing and storage.

Abstract
Malachite green (MG) is highly toxic, persistent, and carcinogenic, and its widespread use is a danger to the ecosystem and a threat to public health and food safety, making it necessary to develop new sensitive multimode molecular spectroscopy methods. In this work, a new copper-based nanomaterial (CuNM) was prepared by a high-temperature roasting using a copper metal-organic framework (CuMOF) as precursor. The as-prepared CuNM was characterized using X-ray diffraction (XRD), X-ray photoelectron spectroscopy, transmission electron microscopy (TEM), and BET surface area analysis. CuNM was found to catalyze the oxidation of 3,3',5,5'-tetramethylbenzidine (TMB) by H2O2 to produce the oxidation product TMBOX; however, subsequently, the MG aptamer (Apt) could be adsorbed on the CuNM surface by intermolecular interaction, which would inhibit the catalytic performance. After the addition of MG to be tested, the CuNM previously adsorbed by the Apt was transformed into its free state, thus restoring its catalytic activity. This new nanocatalytic indicator reaction could be monitored by surface-enhanced Raman scattering (SERS)/resonance Rayleigh scattering (RRS)/fluorescence (FL)/absorption (Abs) quadruple-mode methods. The SERS determination range was 0.004-0.4 nmol L-1 MG, with a limit of detection of 0.0032 nM. In this way, a rapid, stable, and sensitive method for the determination of MG residues in the environment was established.

Abstract
The development of reliable and sensitive detection methods is essential for addressing the escalating concerns surrounding fish and fish products, driven by increasing market demands. This comprehensive review presents recent advances in detection approaches, specifically focusing on microplastic, biological, and chemical hazards associated with these products. The overview encompasses 21 distinct detection methods, categorized based on the type of hazard they target. For microplastic hazards, six methods are visual, spectroscopic, and thermal analyses. Biological hazard identification relies on six approaches employing nucleic-acid sequence, immunological, and biosensor technologies. The investigation of chemical hazards encompasses ten methods, including chromatography, spectroscopy, mass spectrometry, immunological, biosensor, and electrochemical techniques. The review provides in-depth insights into the basic principles, general characteristics, and the recognized advantages and disadvantages of each method. Moreover, it elaborates on recent advancements within these methodologies. The concluding section of the review discusses current challenges and outlines future perspectives for these detection methods. Overall, this comprehensive summary not only serves as a guide for researchers involved in fish safety and quality control but also emphasizes the significance of staying abreast of evolving detection technologies to ensure the continued safety of fish and fish products in response to emerging food safety hazards.

Abstract
Although both electromagnetic and charge transfer (CT) mechanisms play a role in surface-enhanced Raman scattering (SERS), the contribution of the latter is limited by poor CT efficiency. Herein, we propose molecular-enhanced Raman spectroscopy (MERS) for the first time and develop a simple strategy to induce strong CT-enhanced Raman signals using a phosphoester (POE) electron-transfer bridge. Consequently, an excellent POE-enhanced Raman effect was found when various mono-, bis-, and trisaminobenzene compounds were used as probe analytes. Quantification analysis of this MERS effect revealed that the enhancement ratio and factor of the POE molecules can be up to 87% and ∼109, respectively. Spectroscopic analysis and density functional theory calculation confirmed that this effect was because of the formation of intermolecular hydrogen bonds, which promotes CT via electronic reorganization and enhances the Raman signals of target analytes. These results demonstrate the feasibility of MERS for highly CT-enhanced Raman signals.

Abstract
We successfully prepared a non-enzymatic sensor based on a graphene-thiophene composite for histamine detection. The self-assembling properties of the thiophene onto Au support and the high electrical conductivity of graphene encouraged the choice of this type of composite. The composite was deposited via electrochemical polymerization onto the Au layer of a screen-printed microelectrode. The electropolymerization and electrochemical detection of histamine were both achieved by cyclic voltammetry. Two types of electrolytes were used for the electrochemical detection: (a) phosphate buffer solution (PBS), which showed low-intensity redox peaks for histamine; and (b) trichloroacetic acid (TCA) 0.01 M, which showed improved results over PBS and did not damage the microelectrode. For the concentration range of 100-200 mg/kg, the sensor shows a linear regression pattern for the oxidation peak fitted on the equation Ipa = 123.412 + 0.49933 ×x, with R2 = 0.94178. The lowest limit of detection was calculated to be 13.8 mg/kg and the limit of quantification was calculated at 46 mg/kg. These results are important since by monitoring the amount of histamine in a food product, early onset of spoilage can be easily detected, thus reducing foodborne poisoning and food waste (by recycling products that are still edible).

Abstract
In order to improve the detection performance of surface-enhanced Raman scattering (SERS), a low-cost Au@Ag nanorods (Au@Ag NRs) substrate with a good SERS enhancement effect was developed and applied to the detection of malachite green (MG) in aquaculture water and crayfish. By comparing the SERS signal enhancement effect of five kinds of Au@Ag NRs substrates with different silver layer thickness on 4-mercaptobenzoic acid (4-MBA) solution, it was found that the substrate prepared with 100 µL AgNO3 had the smallest aspect ratio (3.27) and the thickest Ag layer (4.1 nm). However, it showed a good signal enhancement effect, and achieved a detection of 4-MBA as low as 1 × 10-11 M, which was 8.7 times higher than that of the AuNRs substrate. In addition, the Au@Ag NRs substrate developed in this study was used for SRES detection of MG in crayfish; its detection limit was 1.58 × 10-9 M. The developed Au@Ag NRs sensor had the advantages of stable SERS signal, uniform size and low cost, which provided a new tool for SERS signal enhancement and highly sensitive SERS detection method development.

Abstract
A crucial issue in analytical science and physiology is the detection of histamine with high sensitivity, specificity and credibility, which served as an important neurotransmitter in biofluids. Despite the high sensitivity of surface-enhanced Raman spectroscopy (SERS) at the level of single molecule, there are still challenges in providing high sensitivity for histamine with a small cross section. For the selective detection of histamine using SERS, a highly sensitive sandwich structure substrate combining Fe3O4 and an Ag-based SERS nanotag was developed. The Fe3O4@SiO2-COOH served as a capture component for enriching histamine. Upon functionalized Ag nanoparticles with glycine (Gly) and (3-Aminopheyonyl) boronic acid (APBA), they were then used to connect with histamine and serve as a SERS nanotag, respectively. A linear relationship between the Raman intensity and the histamine concentration was observed over the range 10-4-10-8 M with a limit of detection of 7.24 × 10-9 M. This methodology also exhibited good selectivity in the presence of other neurotransmitters. With our new approach, histamine can be detected sensitively and reliably in fish samples, which indicates the potential prospect of an effective method for analyzing histamine in complex specimens.

In this study, a simple and sensitive surface-enhanced Raman scattering (SERS) sensor based on gold nanostars@reduced graphene oxide (AuNS@rGO) was successfully developed for the detection of benzo[a]pyrene in foods. The detection strategy involved benzo[a]pyrene adsorption on reduced graphene oxide, followed SERS detection of adsorbed molecules. Owing to the large electric fields generated by the gold nanostars under laser irradiation, which greatly amplified the Raman signals of benzo[a]pyrene, very high sensitivity for the target analyte was achieved. Under optimized conditions, the SERS sensor exhibited a wide linear detection range for benzo[a]pyrene (from 0.1 μg L-1 to 10000 μg L-1), with a low limit of detection of 0.0028 μg L-1. Chicken samples spiked with benzo[a]pyrene were assayed using the sensor, with recoveries ranging from 89.20% to 100.80%. The benzo[a]pyrene content in roasted mutton sample was quantified using the SERS sensor and a reversed-phase high-performance liquid chromatography method, with similar results being obtained.

Abstract
Conventional cancer detection and treatment methodologies are based on surgical, chemical and radiational processes, which are expensive, time consuming and painful. Therefore, great interest has been directed toward developing sensitive, inexpensive and rapid techniques for early cancer detection. Optical biosensors have advantages in terms of high sensitivity and being label free with a compact size. In this review paper, the state of the art of optical biosensors for early cancer detection is presented in detail. The basic idea, sensitivity analysis, advantages and limitations of the optical biosensors are discussed. This includes optical biosensors based on plasmonic waveguides, photonic crystal fibers, slot waveguides and metamaterials. Further, the traditional optical methods, such as the colorimetric technique, optical coherence tomography, surface-enhanced Raman spectroscopy and reflectometric interference spectroscopy, are addressed.

Abstract
Histamine is a significant biomarker to assess the freshness of fish products. In this study, a novel MOF-based SERS sensor for histamine determination was synthesized by wrapping PVP-capped Au nanoflowers with a ZIF-67 shell (Au NFs@ZIF-67). The highly branched Au NFs core exhibited a strong electromagnetic field enhancement effect and provided an ultra-sensitive SERS fingerprint spectrum, while ZIF-67 shell was the contributor to enrich the target and stabilize the substrate. The morphology of the core-shell structures can be easily controlled by the concentrations of the capping agent PVP and MOF precursor Co ion. Consequently, 4-MBA pre-grafted on the optimized SERS substrate can act as the Raman internal standard (IS) to eliminate signal fluctuations through standardizing all spectra against its peak at 1074 cm-1. Moreover, as the specific receptor for histamine molecules, 4-MBA helped reach the low detection sensitivity, where the SERS intensity ratio, I1172/I1074 presented a good linear relationship towards the histamine concentrations (10-3-10-7 M) with the LOD of 0.87 × 10-7 M (R2 = 0.9930). Furthermore, the application in monitoring fish spoilage process demonstrated the feasibility and reliability of the developed sensor. This work provided a facile strategy to construct MOF-based SERS substrate as a potential platform for the shelf-life prediction of fish products.

Abstract
In the global market era, food product control is very challenging. It is impossible to track and control all production and delivery chains not only for regular customers but also for the State Sanitary Inspections. Certified laboratories currently use accurate food safety and quality inspection methods. However, these methods are very laborious and costly. The present review highlights the need to develop fast, robust, and cost-effective analytical assays to determine food contamination. Application of the molecularly imprinted polymers (MIPs) as selective recognition units for chemosensors' fabrication was herein explored. MIPs enable fast and inexpensive electrochemical and optical transduction, significantly improving detectability, sensitivity, and selectivity. MIPs compromise durability of synthetic materials with a high affinity to target analytes and selectivity of molecular recognition. Imprinted molecular cavities, present in MIPs structure, are complementary to the target analyte molecules in terms of size, shape, and location of recognizing sites. They perfectly mimic natural molecular recognition. The present review article critically covers MIPs' applications in selective assays for a wide range of food products. Moreover, numerous potential applications of MIPs in the food industry, including sample pretreatment before analysis, removal of contaminants, or extraction of high-value ingredients, are discussed.

Abstract
The most challenging step in developing bioanalytical methods is finding the best sample preparation method. The matrix interference effect of biological sample become a reason of that. Molecularly imprinted SERS become a potential analytical method to be developed to answer this challenge. In this article, we review recent progress in MIP SERS application particularly in bioanalysis. Begin with the explanation about molecular imprinting technique and component, SERS principle, the combination of MIP SERS, and follow by various application of MIP SERS for analysis. Finally, the conclusion and future perspective were also discussed.

Abstract
Fish is one of the highly demanded aquatic products, and its quality and safety play a pivotal role in daily diet. However, the possible hazardous substance in perishable fish both in pre- and postharvest periods may decrease their values and pose a threat to public health. Laborious and expensive traditional methods drive the need of developing effective tools for detecting fish quality and safety properties in a rapid, nondestructive, and effective manner. Recent advances in Raman spectroscopy (RS) and surface-enhanced Raman scattering (SERS) have shown enormous potential in various aspects, which largely boost their applications in fish quality and safety evaluation. They have incomparable merits such as providing molecule fingerprint information and allowing for rapid, sensitive, and noninvasive detection with simple sample preparation. This review provides a comprehensive overview focusing on the applications of RS and SERS for fish quality assessment and safety inspection, highlighting the hazardous substance and illegal behavior both in preharvest (veterinary drug residues and environmental pollutants) and postharvest (freshness and illegal behavior) particularly. Moreover, challenges and prospects are also proposed to facilitate the vigorous development of RS and SERS. This review is aimed to emphasize potential opportunities for applying RS and SERS as promising techniques for routine food quality and safety detection. PRACTICAL APPLICATION: With these applications, it can be clearly indicated that RS and SERS are promising and powerful in fish quality and safety surveillance, thereby reducing the occurrence of commercial fraud and food safety issues. More efforts still should be concentrated on exploiting the high-performance Raman instruments, establishing a universal Raman database, developing reproducible SERS substrates and combing RS with other versatile spectral techniques to promote these technologies from laboratory to practice. It is hoped that this review should arouse more research interests in RS and SERS technologies for fish quality and safety surveillance, as well as provide more insights to make a breakthrough.

Abstract
Histamine (His) is used as an indicator of seafood quality, but it can be toxic at high intakes. A fluorescence (FL)-surface-enhanced Raman scattering (SERS) dual-mode assay system has been developed for His detection. The His detection method was established based on the specific binding capacity of gold nanoparticles (AuNPs) for the FL derivative of His and o-phthalaldehyde (OPA). In this strategy, His reacted with the OPA to form a Schiff base product (O-His) along with a change in FL and SERS activities. The usual nature of AuNPs could display a significant role both enhancement of SERS and quenching of FL signals. The current investigation displayed a good selectivity toward His over all other biogenic amines. Under the optimized analytical conditions, the SERS and FL intensity of the system were linearly proportional to the His concentration in the range of 0.05-4.5 mg/L and 1-20 mg/L with a detection limit of 0.04 mg/L and 0.32 mg/L, respectively. Moreover, the proposed method was successfully applied for His determination in seafood with promising results.

Abstract
Putrescine and cadaverine are toxic biogenic amines in spoiled food, which poses a serious threat to food security. In this work, we reported a highly sensitive three-dimensional (3D)-rosettelike surface-enhanced Raman spectroscopy (SERS) substrate functionalized with a p-mercaptobenzoic acid (p-MBA) monolayer to detect liquid and gaseous putrescine and cadaverine in pork samples. The SERS substrate was made by a combination of the merit of the 3D morphology of ZnO nanorod arrays on a flexible porous poly(vinylidene fluoride) (PVDF) membrane and the in situ chemical growth of Au nanoparticle seeds on Au film-coated ZnO nanorods, which produced a 3D-rosettelike BigAuNP/Au/ZnO/P heterostructure with abundant SERS-active hot spots that significantly enhanced the localized surface plasmonic resonance (LSPR) effect and charge-transfer (CT) effect of Raman enhancement. This SERS substrate showed high sensitivity, reproducibility, stability, and uniformity. With the p-MBA molecular monolayer as the sensing interface, our SERS substrate realized the highly sensitive and quantitative detection of liquid putrescine and cadaverine within 10 min, with a limit of detection (LOD) of 3.2 × 10-16 and 1.6 × 10-13 M, respectively. Additionally, the sensor showed efficient SERS responses to gaseous amine molecules at low concentrations (putrescine: 1.26 × 10-9 M, cadaverine: 2.5 × 10-9 M). Further, the sensor was successfully applied to determine the total content of putrescine and cadaverine. Moreover, the practicability of this SERS sensor was verified by the measurement of liquid and gaseous amines in pork samples, and it showed great potential applications for sensitive detection of food spoilage.
