Abstract
The introduction of complementary foods (CFs) is a critical step in an infant's transition to solid foods, providing essential nutrients beyond breast milk. However, CFs may contain potentially toxic elements (PTEs), such as arsenic and cadmium that pose health risks to infants. In this context, understanding the bioaccessibility of PTEs is vital as it determines the fraction of a contaminant released from the food matrix and available for absorption in the gastrointestinal tract. Efforts have been made to standardize the assessment methodology for bioaccessibility, ensuring consistent and reliable data. Moreover, regulatory agencies have established guidelines for PTEs levels in food. However, important gaps still exist, which motivates many research opportunities on this topic.

Abstract
BACKGROUND Color additives requiring batch certification by the U.S. Food and Drug Administration (FDA) have Code of Federal Regulations (CFR) specification limits for certain elements and are usually analyzed by x-ray fluorescence spectrometry (XRF). However, sensitivity for Hg is too low in some color additives. OBJECTIVE The thermal decomposition amalgamation-atomic absorption spectrometric (TDA-AAS) technique was investigated for providing quick and accurate determinations of Hg in certifiable color additives. METHODS Tests were performed to optimize conditions and test reliability of Hg determinations at and below the CFR specification limit of 1 mg/kg. RESULTS Sensitivity is much improved over XRF with limits of quantitation of 0.03 mg/kg for highly homogeneous color additives. CONCLUSIONS The TDA-AAS method can be used for determining Hg concentrations at and below the CFR specification limit. The technique is effective for all color additives, including those that are difficult to analyze by XRF, but less efficient for color additives that quickly deteriorate the catalyst. Regular quality checks using certified reference materials and in-house matrix-matched check standards are essential. HIGHLIGHTS The TDA-AAS method is applicable for use in routine color additive batch certification. Certain matrices (notably those that release nitrogen or sulfur oxides or halogens upon combustion) necessitate more frequent replacement of the catalyst and recalibration, impacting productivity. Color additives containing BaSO4, in color additive lakes, that are difficult to analyze by other techniques are well suited for TDA-AAS analysis.

Abstract
Data concerning the monomethylmercury (MeHg) bioaccumulation in marine biota from Southeast Atlantic Ocean are scarce. This study purchased large specimens of demersal fishes from an upwelling region: Warsaw grouper (Epinephelus nigritus), Dusky grouper (Epinephelus marginatus) and Namorado sandperch (Pseudopercis numida). The authors addressed the bioaccumulation and toxicokinetic of mercury in fish organs, and the toxicological risk for human consumption of this metal in the muscle tissues accessed. Additionally, the present study discussed the possible implications of shifts in key variables of the environment related to a climate-changing predicted scenario, to the mercury biomagnification in a tropical upwelling system. The muscle was the main stock of MeHg, although the highest THg concentrations have been found in liver tissue. Regarding the acceptable maximum level (ML = 1 mg kg-1), E. nigritus and E. marginatus showed 22% of the samples above this limit. Concerning P. numida, 77% were above 0.5 mg kg-1, but below the ML. The %MeHg in liver and muscle showed no significative correlations, which suggest independent biochemical pathways to the toxicokinetic of MeHg, and constrains the indirect assessment of the mercury contamination in the edible tissue by the liver analyses. The present study highlights the food web features of a tropical upwelling ecosystem that promote mercury biomagnification. Additionally, recent studies endorse the enhancement of upwelling phenomenon due to the climate global changes which boost the pumping of mercury enriched water to the oceanic upper layer. Therefore, the upwelling areas might be hot spots for MeHg monitoring in marine biota.

Abstract
BACKGROUND Fish consumption is increasing nowadays both because of its positive role for health due to the abundant presence of unsaturated fatty acids and for its use in many new food preparations (e.g. raw fillet used for uncooked sushi and sashimi dishes). The growing food industry and increased demand for the long-term storage and preservation of food have created the need to develop methods that can easily track and preserve food freshness and safety throughout shelf-life (production, storage, shipment, and consumption). While E-nose technologies have already been used and tested for these purposes, scarce information is available in the literature on the feasibility of using other food devices to detect changes in perishable food like fish during shelf-life in order to predict and correctly manage all food storage phases. The aim of the present study was to investigate the potential of Food Sniffer® portable devices to define the quality and safety of salmon fillet and burger (Salmo salar) packaged in modified atmosphere at two refrigerated conditions (4 and 8 °C). RESULTS An increase in biogenic amines and volatile compounds especially ketones and alcohols were observed, with large amounts at final storage times of 8 °C temperature. CONCLUSION The Food Sniffer® application was able to anticipate unacceptability conditions of salmon samples also correlated with chemical and microbiological parameters. This could represent a valid support for food industry and retail to manage perishable food commodities preventing possible food risk as well. © 2020 Society of Chemical Industry.

Abstract
Natural zeolites are hydrated aluminosilicate minerals that, due to their remarkable physical-chemical properties of being molecular sieves and cation exchangers, have applications in different areas such as environmental protection, catalysis, animal feed, and dietary supplements. Since natural zeolites may contain traces of undesirable compounds such as toxic metals, the accurate quantification of these elements is necessary. In this study, a direct method for Hg determination in zeolite samples based on the thermal desorption atomic absorption spectrometry (TD-AAS) technique is fully validated, taking into account the legislative requirements in the field. The chosen quantification limit was 0.9 µg kg−1, which is satisfactory for intended use. Trueness was evaluated by recovery rate using certified reference materials containing mercury, with satisfactory results. Other figures of merit, such as repeatability and measurement uncertainty, also fulfill the legislative requirements related to the analysis of dietary supplements. This paper presents, for the first time, a fully validated method for mercury determination in zeolite samples, and the obtained results reveal that the method can be applied successfully for the intended purpose.

Abstract
Mercury (Hg) is a well-known toxic element, diffused in the environment, especially in the Mediterranean Sea which is rich in cinnabar deposits. Mercury bioaccumulation in fish is of great concern, especially for top-level aquatic predators (e.g., shark, tuna, swordfish) and above all for species of large human consumption and high nutritional value. This work aimed to determine Hg concentrations in farmed and wild Atlantic Bluefin tuna (Thunnus thynnus) caught in the Mediterranean area in order to evaluate the level of Hg bioaccumulation. selenium (Se) content was also determined, since this element is an antagonist of mercury toxicity. Mercury and Se were analysed by atomic absorption spectrometry after microwave digestion of the samples. Hg content in farmed tuna was below the legal limit (1 mg/kg, wet weight, w.w.) for all specimens (0.6 ± 0.2 mg/kg), whereas the wild ones had a content over the limit (1.7 ± 0.6 mg/kg); Se concentration was higher in farmed specimens (1.1 ± 0.9 mg/kg) compared to wild ones (0.6 ± 0.3 mg/kg). A safe seafood could show a Se/Hg ratio >1 and a health benefit value (HBVSe) > 0: farmed tuna had higher values than the wild specimens (Se/Hg 5.48 vs. 1.32; HBVSe 11.16 vs. 0.29). These results demonstrate that for Hg, there is a better risk/benefit ratio in farmed T. thynnus. making it safer than wild tuna.
