Abstract
The burden of food contamination and food wastage has significantly contributed to the increased prevalence of foodborne disease and food insecurity all over the world. Due to this, there is an urgent need to develop a smarter food traceability system. Recent advancements in biosensors that are easy-to-use, rapid yet selective, sensitive, and cost-effective have shown great promise to meet the critical demand for onsite and immediate diagnosis and treatment of food safety and quality control (i.e. point-of-care technology). This review article focuses on the recent development of different biosensors for food safety and quality monitoring. In general, the application of biosensors in agriculture (i.e. pre-harvest stage) for early detection and routine control of plant infections or stress is discussed. Afterward, a more detailed advancement of biosensors in the past five years within the food supply chain (i.e. post-harvest stage) to detect different types of food contaminants and smart food packaging is highlighted. A section that discusses perspectives for the development of biosensors in the future is also mentioned.

Abstract
The globalization of food markets has led companies to buy products not only locally, but also from other corners of the world. This has introduced complexity into supply chains, as products have to move longer distances and pass through more companies before reaching the end consumer. The meat industry has been no different. Events such as animal disease outbreaks have diminished consumer confidence in the industry and the supply chain. Coupled with this, consumers started demanding "more transparent" meat products. This has led companies to think about new traceability systems, which continue to enforce food safety and health rules, but at the same time enhance and make transparent to the consumer the origin and constitution of their products. This article proposes a traceability system in the agri-food (meat industry) with a multi-chain architecture, among them, blockchain. The use of blockchain in the traceability system helped to mitigate the omission of relevant data for the traceability process, allowing us to guarantee the immutability, reliability, and transparency of the data along the value chain. At the same time, the system was able to reduce the time of the traceability process by giving the user the possibility to access the traced information via a unique product identifier.

Abstract
Blockchain techniques have been introduced to achieve decentralized and transparent traceability systems, which are critical components of food supply chains. Academia and industry have tried to enhance the efficiency of blockchain-based food supply chain traceability queries. However, the cost of traceability queries remains high. In this paper, we propose a dual-layer index structure for optimizing traceability queries in blockchain, which consists of an external and an internal index. The dual-layer index structure accelerates the external block jump and internal transaction search while preserving the original characteristics of the blockchain. We establish an experimental environment by modeling the blockchain storage module for extensive simulation experiments. The results show that although the dual-layer index structure introduces a little extra storage and construction time, it significantly improves the efficiency of traceability queries. Specifically, the dual-layer index improves the traceability query rate by seven to eight times compared with that of the original blockchain.

Abstract
This paper presents a systematic literature review focused on the use of inductively coupled plasma mass spectrometry (ICP-MS) combined with PCA, a multivariate technique, for determining the geographical origin of plant foods. Recent studies selected and applied the ICP-MS analytical method and PCA in plant food geographical traceability. The collected results from many previous studies indicate that ICP-MS with PCA is a useful tool and is widely used for authenticating and certifying the geographic origin of plant food. The review encourages scientists and managers to discuss the possibility of introducing an international standard for plant food traceability using ICP-MS combined with PCA. The use of a standard method will reduce the time and cost of analysis and improve the efficiency of trade and circulation of goods. Furthermore, the main steps needed to establish the standard for this traceability method are reported, including the development of guidelines and quality control measures, which play a pivotal role in providing authentic product information through each stage of production, processing, and distribution for consumers and authority agencies. This might be the basis for establishing the standards for examination and controlling the quality of foods in the markets, ensuring safety for consumers.

Abstract
In today’s era, humanity has been overwhelmed by technological revolutions that have changed and will continue to change how business operations are performed, directly or indirectly. At the same time, the processes within the supply chain are quite complex, and as technology and processes evolve, they become more and more challenging. Traceability has become a critical issue in the food industry to ensure safety, quality, and compliance with regulations. The adoption of blockchain technology in the food supply chain has gained significant attention as a potential solution to improve traceability. This paper presents the development of a distributed application for table olives’ traceability on the Ethereum network. The paper also presents a methodological framework, which can help anyone aiming to implement an Ethereum decentralized application and demonstrates the practical use of the developed application by a Greek table olives producer. The application significantly improved the producer’s product traceability by providing a secure, transparent, and efficient solution for tracking and tracing the products in the supply chain. The app reduced the time, increased the accuracy and reliability of data, improved supply chain efficiency, and helped the producer comply with international regulations and standards.

Abstract
Proteomics is a field that has grown rapidly since its emergence in the mid-1990s, reaching many disciplines such as food technology. The application of proteomic techniques in the study of complex biological samples such as foods, specifically meat products, allows scientists to decipher the underlying cellular mechanisms behind different quality traits. Lately, much emphasis has been placed on the discovery of biomarkers that facilitate the prediction of biochemical transformations of the product and provide key information on parameters associated with traceability and food safety. This review study focuses on the contribution of proteomics in the improvement of processed meat products. Different techniques and strategies have recently been successfully carried out in the study of the proteome of these products that can help the development of foods with a higher sensory quality, while ensuring consumer safety through early detection of microbiological contamination and fraud. SIGNIFICANCE: The food industry and the academic world work together with the aim of responding to market demands, always seeking excellence. In particular, the meat industry has to face a series of challenges such as, achieving sensory attributes in accordance with the standards required by the consumer and maintaining a high level of safety and transparency, avoiding deliver adulterated and/or contaminated products. This review work exposes how the aforementioned challenges are attempted to be solved through proteomic technology, discussing the latest and most outstanding research in this regard, which undoubtedly contribute to improving the quality, in all the extension of the word, of meat products, providing relevant knowledge in the field of proteomic research.

Abstract
Introduction The virtuality, concealment, uncertainty and complexity of online trading make the online food trading market have security risks, while the lack of information, information asymmetry and imperfect market system make the "lemon problem" in the market increasingly obvious. Methods In order to clearly understand and manage the "lemon problem" in the online food trading market, we built an evolutionary game model involving the seller, buyers and online food trading platform, deeply analyzed the formation process of the "lemon problem" in the online food trading market, and revealed the influencing factors and effects of each subject's strategy choice from the perspectives of subsidy, punishment, cost, and benefit. Results Findings of this study reveal that: (1) In the online food trading market, the strategy of the seller, buyer and platform will be stable in six situations, and the "lemon problem" will emerge with the development and evolution of the online food trading market. (2) The strategy of each subject in the online food trading market will be affected by variables like cost difference between positive performance and negative performance of the seller, punishment from the buyer with positive participation to the seller with negative performance, subsidy from the platform with positive regulation to the seller with positive performance, etc., and different factors have different influence directions and degrees on the subject strategy. (3) In the online food trading market, cost, punishment, subsidy and benefit have different effects on the subject's strategy. Among them, cost and cost difference have the most significant impact on the subject's strategy, followed by punishment and benefit difference, and subsidy and additional benefit have less impact on the subject's strategy. Discussion Based on our study findings, it is proposed that by constructing a complete and standardized system of online food trading market from the aspects of examination and verification institution, reward and punishment institution, and supervision institution, it will be able to provide reference for managing the "lemon problem" in the online food trading market, promoting the sustainable development of the market, and ensuring the safety of online food.

Abstract
The traceability system has significantly contributed to ensure food safety and quality. However, the biggest difficulty in food traceability is the numerous links from field to table, and there is no stable strategic partnership between supply chain members and the lack of social responsibility of some practitioners. Thus, this study aims to seek the best traceability strategy for companies in centralized model and decentralized model, respectively. Therefore, we have constructed a differential game model based on the delay effect to determine the optimal traceability level and traceable goodwill and compare the profits of the food supply chain (FSC). The results show that the delay time is positively related to the level of traceability effort and has a high impact on the traceable goodwill. Companies in the FSC can formulate optimal traceability strategies based on delay time and foster improvement in food safety and quality.

Abstract
In China, there is a renewed interest in traceability systems as an efficient tool to guarantee pork safety. One of the pathways through which a traceability system can benefit consumers is by easing information asymmetry. However, past literature on the traceability system in China pays more attention to theoretical analysis and less to empirical analysis. Using a large-scale survey of pig farms in China, we investigate the effects influencing farmers' participation in the traceability system. Findings show that a traceability system can influence the safety of pork indirectly through its impacts on farmers' production behaviors. Another important finding is that unsafe pork is a result of non-standard use of veterinary drugs, and the traceability system works well for farmers by pushing them to take stricter safety measurements.

Abstract
The blockchain-based traceability in agri-food marketing has brought a disruptive paradigm shift by removing the inherent information asymmetry problem. Likewise, revealing sufficient product quality and attributes information could break agricultural markets' “Lemon Market” dilemma. This study takes the fresh fruit with blockchain traceability QR label as a case and systematically investigates the influence of consumers' food control risk attitude on information-seeking intentions. We utilized online survey data of 1,058 fresh fruit buyers and simultaneously applied ordinary least square (OLS), ordered logit model (Ologit), and propensity score matching (PSM) approaches to overcome the potential self-selection biases and confounding factors. The results show that risk attitude significantly negatively impacts consumers' information seeking fresh fruits. The stronger consumers' risk preference, the lower the probability of information seeking. Furthermore, we used PSM to overcome potential sample selectivity bias; therefore, PSM reinforces the significance of OLS and Ologit results. The sub-sample estimation results show that young individuals with high school and below education have stronger blockchain information-seeking intentions. The study provides new insights into the role of food control risk attitude and agri-food information traceability and offers several measures for policy and practice to realize a border trajectory in agri-food information disclosure.

Abstract
This paper systematically investigates the impact of consumers’ health risk perceptions on the purchase intention of blockchain traceable fresh fruits in China. It uses online-survey data collected from four pilot cities that are part of the food traceability system in China. The ordinary least squares (OLS) and the ordered probit model was applied to examine the posited relationships. The results show that consumers’ health risk perception has a significant positive effect on the purchase intention of blockchain traceable fresh fruits. The stronger consumers’ health risk perception, the stronger their purchase intention of blockchain traceable fresh fruits. Likewise, heterogeneity exists among gender, age, income, and education in their corresponding effect of consumers’ health risk perception on blockchain traceable fresh fruit purchase intention. This suggests that male, high-aged, high-income and high-educated groups have a higher health risk perception, and therefore a higher purchase perception for blockchain traceable fresh fruits than female, low-aged, low-income and low-educated, respectively. Furthermore, family structure, consumers’ traceability cognition and purchase experience of traceable products affect the purchase intention of blockchain traceable fresh fruits. The study has several insights on the broader promotion, acceptance and development of the food traceability system and provides practical cues for policy and practice.

Abstract
The values associated with food are framed and constructed by market-based systems that assign attributes to different foods across the marketplace. The aim of the paper was to conceptualize the range of non-financial aspects associated with food in the literature examined and a typology was introduced to position a new set of non-financial food values, the alter-values, which support the creation of a more holistic approach to visualize and reimagine a more sustainable, resilient food system that readdresses and respects such values. The four alter-values of interest, intrinsic, production-related, supply chain related, and emotio-cultural values, were discussed in the context of changing food environments, and a visualization of the typology was presented to explain them. By focusing especially on intrinsic and emotio-cultural values, an adaptation of the current food environment beyond pecuniary-based emphasis was possible. Such an approach helps to challenge the structure of the conventional food system towards a more citizen-driven sustainable model, altering priorities, with a drive towards embedding values and going beyond perceiving food only in terms of exchange value, to considering food as a vital aspect of life.

In recent years, China has obtained positive achievements in the construction of traceability systems for key products, such as edible agricultural products and food. However, problems such as complex situations, one-sided information, repeated system construction, and lack of qualification of information testing agencies still exist in food quality traceability. Based on the development features of the industry, this paper puts forward countermeasures and suggestions for the construction of a food quality traceability system.

Abstract
Food safety is a vital issue of public and social concern. Since the outbreak of the COVID-19, frozen fresh food has become the hardest hit area for the spread of the COVID-19. In response to the opaque information, lack of trust, and difficulty in traceability in the fresh food supply chain, the article proposes blockchain technology to address the problem. This paper defines a blockchain technology use case and a quick reference guide to design a blockchain network for the food industry. It improves transparency throughout the supply chain and helps reconcile the documentation and required data with legislation authorities to import cold chain products to certify the quality of the final product. The fresh food supply chain framework can ensure integrity, authenticity, and supply chain information. This design is of great significance to ensure the traceability of the fresh food supply chain.

Abstract
Traceability is becoming an essential tool for both the industry and consumers to confirm the characteristics of food products, leading industries to implement traceability to their merchandise. In order for the Computer Technology Institute and Press “Diophantus” (CTI) to help small and medium-sized enterprises (SMEs) implement traceability systems based on open innovation, principles were introduced. This paper presents market research that was carried out in order to determine the significant concerns of the Greek consumers about pork meat and pork products, their opinion on traceability information, and their preferences regarding how they would like to receive this information. The survey was conducted online and took place from mid-February to mid-March 2021 on a sample of 224 participants. The market research showed a very high interest concerning traceability, especially on the expiry date of the meat (87.9%), while the way and conditions of transport of the meat products follow (79%). Furthermore, consumers showed that they believe that the quality and safety of pork products would be improved with traceability (70.1%) and (79%) would prefer to buy traceable compared with untraceable pork, signifying the importance of traceability for consumers. Additionally, it was found that consumers and SMEs have common concerns regarding traceability. The information gathered from this market research will be used to adapt the traceability system to consumers’ needs.

Abstract
Rice is a major food crop around the world, and its various quality and safety problems are closely related to human health. As an important area of food safety research, the rice supply chain has attracted increasing attention. Based on blockchain technology, this study investigated problems of data privacy and circulation efficiency caused by complex rice supply networks, long circulation cycles, and various risk factors in each link. First, we deconstructed the quality and safety of each link of the rice supply chain at the information level and established a key information classification table for each link. On that basis, we built a rice supply chain information supervision model based on blockchain. Various encryption algorithms are used to secure the sensitive data of enterprises in the supply chain to meet regulators' needs for efficient supervision. Moreover, we propose a practical Byzantine fault-tolerant consensus algorithm that scores the credit of enterprise nodes, optimizes the selection strategy of master nodes, and ensures high efficiency and low cost. Then, we built a prototype system based on the open-source framework of hyperledger fabric, analyzed the model's viability, and implemented the system using cases. The results indicated that the proposed system can optimize the information supervision process of rice supply chain regulators and provide a feasible solution for the quality and safety supervision of grain and oil.

Abstract
The demand for beef resources in Indonesia is always increasing every year. However, Indonesia's national beef supply cannot meet those needs. The import of beef in large numbers likely to remain performed. The government has made various efforts to reduce imports and achieve self-sufficiency in beef. However, the government does not yet have a good identification, registration, documentation, and traceability system, so there is no truly valid data regarding the actual stock condition. Inaccuracy of data can lead to inappropriate policymaking in the livestock sector. Therefore, an e-Government initiative in the form of e-Livestock has been proposed. The definitions and success factors regarding e-Livestock have been revealed in our previous researches. Based on those researches, by using soft system methodology, hermeneutics, focus group discussion, and success factors, the business process models for e-Livestock in Indonesia will be created in this research. Apart from that, various kinds of recommendations for action to solve the problem will also be generated from this research. Those recommendations are about the functional requirement, the identification tool, the location numbering rule, the ownership documentation, the socialization of the e-Livestock, the institutional aspect of e-Livestock, the regulations underlie e-Livestock and the conceptual infrastructure diagram of e-Livestock. All of the business process models produced have been validated and their complexities are also calculated. Most of the business process model is very easy to understand. All the business process models and recommendations generated from this research can be a guide for the government when implementing e-Livestock.

Abstract
Traceability technologies have great potential to improve sustainable performance in cold food supply chains by reducing food loss. In existing approaches, traceability technologies are selected either intuitively or through a random approach, that neither considers the trade-off between multiple cost–benefit technology criteria nor systematically translates user requirements for traceability systems into the selection process. This paper presents a hybrid approach combining the fuzzy Analytic Hierarchy Process (AHP) and Technique for Order Preference by Similarity to Ideal Solution (TOPSIS) with integer linear programming to select the optimum traceability technologies for improving sustainable performance in cold food supply chains. The proposed methodology is applied in four case studies utilising data collected from literature and expert interviews. The proposed approach can assist decision-makers, e.g., food business operators and technology companies, to identify what combination of technologies best suits a given food supply chain scenario and reduces food loss at minimum cost.

Abstract
Traceability, namely the ability to access information about a product and its movement across all stages of the supply chain, has been emerged as a key criterion of a product’s quality and safety. Managing fresh products, such as fruits and vegetables, is a particularly complicated task, since they are perishable with short shelf lives and are vulnerable to environmental conditions. This makes traceability of fresh produce very significant. The present study provides a brief overview of the relative literature on fresh produce traceability systems. It was concluded that the commercially available traceability systems usually neither cover the entire length of the supply chain nor rely on open and transparent interoperability standards. Therefore, a user-friendly open access traceability system is proposed for the development of an integrated solution for traceability and agro-logistics of fresh products, focusing on interoperability and data sharing. Various Internet of Things technologies are incorporated and connected to the web, while an android-based platform enables the monitoring of the quality of fruits and vegetables throughout the whole agri-food supply chain, starting from the field level to the consumer and back to the field. The applicability of the system, named AgroTRACE, is further extended to waste management, which constitutes an important aspect of a circular economy.
