Abstract
The current study assessed (i) the microbiological safety level profiles (MSLPs) of milkmen's hands and milking containers and (ii) the influence of hygiene and handling practices on MSLPs of raw and cultured milk, from six informal dairy farms in Zimbabwe. Interviews and direct observations were carried out during the assessment of hygiene and handling practices at six farms designated A to F. Microbiological criteria of the following six microbiological parameters: Total Bacterial Counts (TBCs), Coliform Counts (CCs), Total Escherichia coli Counts (TECs), Salmonella spp., Listeria monocytogenes and Klebsiella pneumonia, were used to determine contamination level (CL) at four different critical sampling locations (CSLs). The CSLs were raw milk (CSL1), cultured milk (CSL2), milkmen's hands (CSL3), and milking containers (CSL4). The microbiological criteria of the six microbiological parameters were used to score CLs as: intolerable (0), poor to average (1), average (2), and good (3). MSLPs at each CSL for the six farms were computed based on the CL scores to a maximum score of 18. A total of 192 samples were collected and analyzed. Salmonella spp. and L. monocytogenes were not detected at all the CSLs. All the farms failed to achieve a maximum MSLP score of 18 at all the CSLs. The relationship between MSLPs and hygiene and handling practices was tested using point-biserial correlation coefficients. The correlation study revealed that handling and hygiene practices (such as the duration between milking and storage, the type of milking container utilized at farms, the frequency of cleaning the milking parlor, the water source for hand and equipment washing, and the use of hand sanitizers) generally influenced the MSLPs on the farms. Both training and improvement in infrastructure are needed to improve the quality of milk and its products produced and sold in the informal value chain in Zimbabwe.

Abstract
Background and Purpose Staphylococcus aureus is a common pathogen responsible for causing various human and animal infections and is well known for its ability to develop resistance to multiple antibiotics. This study aimed to evaluate the occurrence of methicillin-resistant Staphylococcus aureus (MRSA) in bulk milk and dairy farms in northwestern Ethiopia and to determine their phenotypic and genotypic antimicrobial susceptibility patterns. Methods We collected 50 bulk milk samples from 50 dairy farms and 50 hand swabs from dairy milkers. The cefoxitin disk diffusion test and PCR-based assays were used to identify MRSA isolates. In addition, cefoxitin-resistant isolates were tested for susceptibility to other antibiotics using the Kirby-Bauer disk diffusion method. Results The results showed that MRSA was detected in 8 samples: 6 from bulk milk samples (12%) and 2 from hand swabs (4%). All MRSA isolates exhibited a high resistance rate to penicillin (100%), followed by tetracycline (75%), ciprofloxacin (25%), chloramphenicol (25%), erythromycin (25%), gentamycin (12.5%), and trimethoprim-sulfamethoxazole (12.5%). Moreover, 72% of the isolates showed resistance to three or more antibiotic classes and were classified as multidrug-resistant. Conclusion This study identified methicillin-resistant Staphylococcus aureus and multidrug-resistant MRSA in bulk milk and dairy farms in northwestern Ethiopia. These findings highlight the potential risk of transmission of these antibiotic-resistant bacteria to humans and the need for improved antibiotic stewardship in the dairy sector using the One Health approach.

Abstract
In most low- and middle-income countries, milk is produced by smallholders, thereby contributing to the livelihood of their households. With the increasing importance of milk production in these countries, it is essential that milk quality is of a high level to ensure a safe product for consumers. It is, however, unclear whether smallholder dairy farmers are aware of the quality of their milk. The aim of this cross-sectional study was to gain insight on Indonesian smallholder dairy farmer awareness of milk quality parameters and to identify factors associated with the total plate count (TPC) and somatic cell count (SCC). A stratified sampling method was used to select smallholder farms in 4 districts in West Java, Indonesia, that were interviewed between August and September 2017. Factors putatively associated with awareness of TPC were investigated with multinomial regression models, whereas a Firth-type logistic regression was applied to identify factors associated with SCC awareness. Of the total 600 farmers surveyed, 264 (44%), 109 (18%), 170 (28%), 111 (19%), and 23 (4%) farmers were aware of TPC, total solid, fat content, milk density, and SCC, respectively, but did not know its value. Those that were conceptually aware of these quality parameters were generally unaware of their value. Furthermore, this study revealed that the following variables were significantly associated with dairy farmers' awareness of TPC: cooperative to which the farmer belonged, distance to neighboring dairy farmer, technology adoption index, TPC as the most important quality factor for the buyer, milk production information from cooperatives, and cow health information from veterinarians. Similarly, cooperative, dairy business experience, and milk quality test adoption were significantly associated with dairy farmers' awareness of SCC. Cooperative was the only variable that was significant in both final statistical models. This indicates that cooperatives play an important role in increasing farmer awareness of milk quality parameters in these smallholder dairies. This may be valid for other regions in the world also where milk production is dominated by smallholder dairy farmers.

Abstract
Milk consumption has traditionally been recognized as a fundamental element of global dietary patterns due to its perceived nutritional advantages. Nonetheless, a substantial decrease in milk consumption has been identified within diverse populations in recent times. Specifically, consumers' expectations and representations of milk quality have undergone notable transformations, contributing to the observed reduction in consumption. The objective of this systematic review was to conduct a comprehensive examination and categorization of the conceptual attributes associated with milk quality, considering the representations of citizen-consumers, farmers, and processing experts. This review was conducted following the Preferred Reporting Items for Systematic reviews and Meta-Analyses (PRISMA) guidelines. The titles and abstracts of 409 articles were screened, and 20 full-text articles were assessed for eligibility. The results demonstrate the existence of a dual articulation in the conceptual definition of milk quality. Farmers and processing experts exhibited a relatively similar representation of milk quality, focusing on technical indicators. In contrast, citizen-consumers held more simplistic and subjective concepts that are challenging to quantify. This study emphasized the critical need for establishing a platform for communication and knowledge exchange to foster shared representations and expectations regarding milk quality.

Abstract
This study uses photovoice to explore smallholder dairy farmers' husbandry knowledge and practices and document how they address constraints faced in pursuing their livelihood strategy. Currently, there is a paucity of farmer-led research in Ethiopia which captures farmers' local knowledge and lived experiences. This study was conducted in April and May 2021 in Kaliti, a sub-city of Addis Ababa, and Holeta, located near Addis Ababa, in the Oromia region of Ethiopia. Farmers were selected through purposive and snowball sampling approaches based on their previous participation in a bovine tuberculosis study. Farmers selection was based on their experience in dairy farming and willingness to attend research-related meetings and to engage in photo-taking and subsequent group discussions. Farmers were trained on the use of the digital camera and asked to take pictures of their day-to-day activities, challenges faced in pursuing dairy production and how they overcome these challenges. The pictures taken by farmers indicated their attachment to their cattle, cattle disease symptoms, manure management, pest control practices, cattle housing, feeding practices, milking hygiene and storage. Discussions revealed that husbandry challenges faced stemmed from land-use change, declining farm sizes, poor access to veterinary and animal health services, low milk prices and high cattle feed prices. Farmers explained that they had developed knowledge of cattle nutrition, such as feed ration mixing and ways to deal with manure problems. The results of this study underscore that farmers have a good understanding of husbandry challenges and, additionally, have a wealth of local knowledge which can be leveraged, if captured through participatory and visual research methods, such as photovoice, by policymakers to develop context-aware policies and interventions and recommendations regarding improved practices which are economically viable, and socially and culturally acceptable.

Abstract
Dairying is one of the new promising economic sectors in eastern Democratic Republic of Congo (DRC), but still not explored enough to ensure consumers' safety. This study aimed to assess the health risks and nutritional profile of milk products along the value chain in South-Kivu and Tanganyika provinces. A total of 288 milk actors, including 160 producers, 35 collectors and 93 vendors, were concerned for interview and milk samples collection. A total of 302 milk samples (159 raw, 44 pasteurized, 76 fermented and 19 white cheese so-called “Mashanza”) were collected for physicochemical [pH, fat, non-fat dry matter (NFDM), lactose, protein, freezing point, density] and microbiological (total Aerobic Mesophilic Flora, Escherichia coli, Total Coliforms, Fecal Coliforms, Salmonella and Staphylococci) analyses. Results revealed that the physicochemical characteristics of the milk mostly varied according to the type of milk and the regions. The pasteurized milk from Tanganyika presented the best physicochemical parameters [crude protein (CP) = 4.36%, Fat = 4.06%, NFDM = 12%, lactose = 5.4%, density = 1.02 and pH = 6.59] compared to other types of milk. For microbiology, no E. coli was recorded but Salmonella and Staphylococci were found in all the milk types with the values not exceeding 3 × 104 CFU ml−1 and 3 × 103 CFU ml−1, respectively. This implies a long-term consumers' health issue if appropriate measures are not taken by milk actors along the value chain. The microbiological quality was influenced by the ecologies of production axis (representing the production zones) and by handling methods and infrastructures used by the actors involved along the value chain. Factors related to animal husbandry, milking method, milk processing and packaging had no significant effect on the physicochemical parameters under study. These results indicated that health risks for milk consumers are accrued by production practices and handling by milk actors due to shortage of required skills and appropriate equipment along the milk value chain. Observance of hazard analysis critical control point (HACCP) measures is carefully required along the milk value chain nodes to improve the quality of milk produced and sold and thus reduce the risks among consumers in South-Kivu and Tanganyika provinces.

Abstract
This study determined the family dairy farmers' knowledge, attitudes, and practices regarding the management strategy of mastitis, antibiotic use, and antimicrobial resistance in dairy farms in Türkiye. A total of 455 dairy farmers participated in face-to-face surveys from the villages of Çanakkale in Türkiye. A total of 62 questions that were divided into 5 categories were asked of the participants. Farmers (252/455; 55.4%) noted that they had not heard of any term about the expression of microbial resistance. They believe that antibiotic residues (156/455; 34,3%) do not pass into the soil and environment with animal wastes, and diseases such as mastitis (173/455; 38%) cannot be cured without antibiotics. Farmers indicated that they used antibiotic therapy in the treatment of udder diseases such as mastitis at a rate of 44.8%. Moreover, most dairy farmers (78.2%) decided to start antibiotic treatment with the decision of the veterinarian. Farmers believe that the barn environment is not as clean as necessary at a rate of 23.5%, and the necessary hygiene conditions are not followed in animal care 23.4% as the cause of mastitis. They highlighted that they detected mastitis from the redness or swelling of the udder at a rate of 38.2%. 55.8% of the farmers participating in the study had undergone analysis for the diagnosis of mastitis disease. On the other hand, 57.4% of farmers tried natural products such as olive oil, soft soap, vinegar, clay soil, honey, soapy, and yogurt, instead of antibiotics treatment for mastitis diseases. They have been relying mostly on veterinarian recommendations for AU. The use of culture and susceptibility test results for antimicrobial selection should be expanded among veterinarians. All stakeholders should be included in periodic training programs on topics such as AU, AR, preventive treatments for mastitis, vaccination, public health, and environmental health. Surveillance systems are needed to monitor AU and AR in animals, as in human medicine.

Abstract
Milk plays an important role in the growth and development of children. In Kenya, it is one of the most produced and consumed animal-sourced foods, but often consumed in small amounts among children of low-income families, especially in urban settings. The aim of the study was to identify household milk purchase and consumption patterns of milk, with emphasis on young children, as well as estimate key determinants of such patterns to identify areas of leverage to increase milk consumption. Results showed that 98% of households purchased unprocessed fresh milk at least once during the 7 days prior to the survey, while only 17% purchased packed pasteurized milk. Findings from the Ordinary Least Squares (OLS) model of purchase behavior suggest that the amount of unpacked milk purchased by households is positively and significantly related to household income, the number of children below the age of 4, and the budget of animal-sourced food. The price and quantities of pasteurized milk purchased were negatively related to the amount of unpacked milk purchased. Consumption patterns for children below the age of 4 showed that milk and dairy products are most commonly consumed as part of dishes than as individual products. Informal markets played a key role in meeting the milk needs of children, but consumption was below recommended amounts. The clear association of income and milk intake calls for efforts from the government to support the dairy sector with policies that promote the availability and affordability of milk, especially for a sector that feeds low-income families, as it is the case with the informal dairy markets.

Abstract
BackgroundLivestock farmers' attitudes, practices, and behaviors are major factors in infection prevention and control of animal diseases. Kenya has the fourth largest global camel population, and the industry has grown over the last two decades, transforming beyond the traditional camel-keeping areas to include peri-urban camel trade and value chain growth. The dromedary camel is resilient, and it is a preferred species in the arid and semi-arid areas (ASALs) of Kenya. However, it still faces many health and production challenges; to identify infection drivers and risky behaviors for camel respiratory illnesses and conditions in Kenya, we conducted a knowledge, attitudes, and practices (KAP) survey.MethodUsing a set of tools (questionnaires, key informant interviews, and focus group discussions), we interviewed camel owners, herders, agro-veterinary outlets, and other relevant value chain stakeholders in Garissa and Isiolo counties (n = 85). Data were analyzed using descriptive and analytic statistics.ResultsMost camel owners/herders are male and most are relatively uneducated (85.5%). The camels were used primarily for milk and meat production, income generation, and transport. Larger herd sizes (>30 camels) and owner/herder's lack of formal education are risk factors for owner-reported respiratory illnesses in camels. Major clinical signs of respiratory conditions were coughing (85.7%), nasal discharge (59.7%), and fever (23.4%). Diseases, lack of feeds, theft, and marketing challenges are the major constraints to camel production in Kenya. Owners-herders use drugs indiscriminately and this may contribute to antimicrobial resistance challenges.ConclusionPractitioners in the camel value chain want more commitment from the government and animal health officials on support services and access to veterinary services. Watering points, grazing areas, and marketing points are the primary areas for congregating camels and have a significant potential for disease spread. Kenya camels have a massive capacity for rural and ASALs' livelihoods transformation but the identified health challenges, and other issues must be addressed. Further studies on the Kenyan camels' respiratory microbial ecology are important to understand microbial risks and reduce the burden of zoonotic infections. Intensification of risk communication and community engagement, and messaging targeted at behavior change interventions should be directed at camel value chain actors.

Abstract
Background: Staphylococcus aureus is commonly found in dairy cows and is a source of contamination in milk. S. aureus that are resistant to beta-lactam antibiotics (especially cefoxitin) are referred to as methicillin-resistant Staphylococcus aureus (MRSA). The spread of MRSA cannot be separated from sanitation management during milking; it can originate from milk collected from the udder or from the hands of farmers during the milking process. The purpose of this study was to examine the level of MRSA contamination in dairy cow's milk and farmer's hand. Methods: A total of 109 samples of dairy cow's milk and 41 samples of farmer's hand swabs were collected at a dairy farm in Probolinggo, East Java, Indonesia. Samples were cultured and purified using mannitol salt agar (MSA). The profile of S. aureus resistance was established by disk diffusion test using a disk of beta-lactam antibiotics, namely oxacillin and cefoxitin. Results: The S. aureus isolates that were resistant to oxacillin and cefoxitin antibiotics were then tested for oxacillin resistance screening agar base (ORSAB) as a confirmation test for MRSA identity. S. aureus isolates suspected to be MRSA were then tested genotypically by polymerase chain reaction (PCR) method to detect the presence of the mecA gene. The results of the isolation and identification found 80 isolates (53.33%) of S. aureus. The results of the resistance test found that 42 isolates (15%) of S. aureus were resistant to oxacillin and 10 isolates (12.5%) were resistant to cefoxitin. The ORSAB test found as many as 20 isolates (47.62%) were positive for MRSA. In PCR testing to detect the presence of the mecA gene, three isolates (30%) were positive for the mecA gene. Conclusions: This study shows that several S. aureus isolates were MRSA and had the gene encoding mecA in dairy farms.
