Microalgae Proteins as Sustainable Ingredients in Novel Foods: Recent Developments and Challenges

Microalgae are receiving increased attention in the food sector as a sustainable ingredient due to their high protein content and nutritional value. They contain up to 70% proteins with the presence of all 20 essential amino acids, thus fulfilling human dietary requirements. Microalgae are considered sustainable and environmentally friendly compared to traditional protein sources as they require less land and a reduced amount of water for cultivation. Although microalgae's potential in nutritional quality and functional properties is well documented, no reviews have considered an in-depth analysis of the pros and cons of their addition to foods. The present work discusses recent findings on microalgae with respect to their protein content and nutritional quality, placing a special focus on formulated food products containing microalgae proteins. Several challenges are encountered in the production, processing, and commercialization of foods containing microalgae proteins. Solutions presented in recent studies highlight the future research and directions necessary to provide solutions for consumer acceptability of microalgae proteins and derived products.

Red seaweed biorefinery: The influence of sequential extractions on the functional properties of extracted agars and porphyrans

Red seaweeds are exploited for their hydrocolloids, but other fractions are usually overlooked. In a novel approach, this study aimed to evaluate cold-water (CWE), ethanolic (EE), and alkaline (SE) extractions, alone and in sequence, to simultaneously: i) decrease the hydrocolloid extraction waste (valorizing bioactive side-streams and/or increasing extraction yield); and ii) increase the hydrocolloids' texturizing properties. It is the first time these extractions' synergetic and/or antagonistic effects will be accessed. For Porphyra dioica, a combination of CWE and EE was optimal: a positive influence on the melting temperature (increasing 5 °C to 74 °C) and sulphate content (a 3-fold reduction to 5 %) was observed, compared to a direct porphyran extraction. The same was observed for Gracilaria vermiculophyla, recovering two additional bioactive fractions without impacting the hydrocolloid's extraction (agar with 220 g/cm2 gelling strength and 14 % yield was obtained). The sequential use of CWE, EE, and SE was the most beneficial in Gelidium corneum processing: it enhanced agar's texturizing capacity (reaching 1150 g/cm2, a 1.5-fold increase when compared to a direct extraction), without affecting its 22 % yield or over 88 % purity. Ultimately, these findings clarified the effects of cascading biorefinery approaches from red seaweeds and their pertinence.

Industry chain and challenges of microalgal food industry-a review

Currently, the whole world is facing hunger due to the increase in the global population and the rising level of food consumption. Unfortunately, the impact of environmental, climate, and political issues on agriculture has resulted in limited global food resources. Thus, it is important to develop new food sources that are environmentally friendly and not subject to climate or space limitations. Microalgae represent a potential source of nutrients and bioactive components for a wide range of high-value products. Advances in cultivation and genetic engineering techniques provide prospective approaches to widen their application for food. However, there are currently problems in the microalgae food industry in terms of assessing nutritional value, selecting processes for microalgae culture, obtaining suitable commercial strains of microalgae, etc. Additionally, the limitations of real data of market opportunities for microalgae make it difficult to assess their actual potential and to develop a better industrial chain. This review addresses the current status of the microalgae food industry, the process of commercializing microalgae food and breeding methods. Current research progress in addressing the limitations of microalgae industrialization and future prospects for developing microalgae food products are discussed.

Effect of Fe(III) Species on the Stability of a Water-Model Oil Emulsion with an Anionic Sulfonate Surfactant as an Emulsifier

The stability of an emulsion has an important effect on enhancing oil recovery. However, the effect of ions with different valences on the stability of the emulsion emulsified by an ionic surfactant is not fully understood. In this study, the effects of Fe(III) species on the stability, microscopic morphology of droplets, interfacial properties, and rheological properties of water-model oil emulsions emulsified by sodium dodecyl benzenesulfonate (SDBS) were explored. The effect of Fe(III) species on the stability of a W/O crude oil emulsion was also explored. The stability experiment results show that the addition of the Fe(III) species impairs the stability of the model oil-in-water (O/W) emulsion, in which the O/W model oil emulsion is inverted to a water-in-model oil (W/O) emulsion at ∼99 ppm. With the increase of Fe(III) species concentration, stable W/O model oil and W/O crude oil emulsions are obtained. The rheological results indicated that the existence of the Fe(III) species has a remarkable effect on the viscosity and viscoelastic behaviors of the water-model oil emulsion. The calculation results based on Derjaguin-Landau-Verwey-Overbeek (DLVO) theory are in accord with the stability experiment results. Furthermore, the addition of EO groups makes the phase inversion point appear at a higher Fe(III) species concentration, forming a more stable W/O model oil emulsion and a more unstable O/W model oil emulsion. The experimental results are helpful to comprehensively understand the effect of Fe(III) species on the stability of an emulsion emulsified by an anionic sulfonate surfactant, which can help to enhance the oil recovery.
