Abstract
To date, no studies have reported on the structure and properties of the polysaccharides from Atractylodes macrocephala cultivated in Pan'an. In this paper, a polysaccharide designated as RAMP1 was isolated from A. macrocephala in Pan'an for the first time. Its structure was determined as a heteropolysaccharide consisting of fructose and glucose in a molar ratio of 20:1, with a molecular weight of 3494 Da based on chemical and NMR analysis. Scanning electron microscopy analysis revealed that RAMP1 presented a smooth flake structure with irregular curls. Thermal analysis results indicated that RAMP1 had high thermal stability below 165 °C. Rheological studies indicated that both temperature and concentration affected the viscosity of RAMP1. The viscosity of the RAMP1 solution decreased as the shear rate increased, displaying shear - thinning behavior, suggesting that the RAMP1 solution was a non - Newtonian fluid. RAMP1 showed potent dose - dependent antioxidant activity against DPPH, superoxide, ABTS, and hydroxyl radicals, with the strongest inhibition against hydroxyl radicals (83.97 ± 1.62 % at 8 mg/mL). This paper reports for the first time on the structure, rheology, and antioxidant properties of the polysaccharide (RAMP1) from A. macrocephala in Pan'an. These results highlight the potential applications of RAMP1 in the food and biotechnology industries.

Abstract
The physicochemical properties of konjac glucomannan (KGM) are impaired in the harsh gastrointestinal tract, which may reduce its effectiveness in physiological functions. In this paper, fenugreek gum (FG) with high water holding capacity and stability was used as a gastric protectant for KGM, and the effects of the KGM-FG complexes with different composite ratios on gastric emptying were researched by in vitro dynamic simulated gastric digestion system. The results showed that FG significantly enhanced the delayed gastric emptying properties of KGM. Adding FG reduced the apparent viscosity, flow behavior, and mechanical properties of KGM. The simulated gastric fluid (SGF) decreased the apparent viscosity of the KGM-FG complex and increased the microstructure network density of the KGM-FG complex compared with the water system. FG helped the structure of the KGM-FG complexes become more stable and trapped more water in the stomach. The KGM-FG complex with high viscosity, mechanical modulus, and frictional resistance in a dynamic simulated digestion system increased gastric retention. The KGM-FG complex with a composite ratio 5:5 showed the best performance and a potential satiety-enhancing property. The results provided a theoretical basis for designing satiety food formulations that help control energy intake and body weight.

Abstract
Background and Objective: In Saudi Arabia, numerous plant species with promising medicinal properties are cultivated, widely traded, and commonly utilized in traditional medicine, including fenugreek (Trigonella foenum-graecum). This study aimed to comprehensively assess the phytochemical composition and antimicrobial potential of the Saudi cultivar of fenugreek using an integrative approach combining in vitro and in silico methodologies. Methods: A comprehensive investigation was conducted on the ethanol extract of fenugreek seeds, assessing its antibacterial, antifungal, properties. Computational modeling was employed to predict pharmacokinetic behavior and potential toxicity of the identified bioactive compounds. Results: Qalitative phytochemical analysis showed presence of alkaloids, tannins, saponins, glycosides, flavonoids, and steroids, while terpenoids were notably absent. GC-MS analysis of Trigonella foenum-graecum (fenugreek) seeds identified 25 bioactive compounds, with Ethyl methane sulfonate (12.41%) being the predominant component. Other key compounds included n-Hexadecanoic acid, 4-Butyl-2(4-nitrophenyl)-1,3-thiazole, and α-Tocopherol. In silico modeling of fenugreek phytochemicals supported their antibacterial, antioxidant, and neuroprotective potential, with compounds 21 and 24 showing strong binding to key targets like Tyrosyl-tRNA Synthetase (TyrRS) of Staphylococcus aureus (S. aureus), Aspartic proteinase from Candida albicans (C. albicans) and human peroxiredoxin 5. Pharmacokinetic analysis indicated good oral bioavailability, minimal CYP inhibition, and blood-brain barrier penetration, suggesting potential for treating neurodegenerative diseases. These bioactive compounds, including diosgenin and trigonelline, support fenugreek's therapeutic promise and warrant further in vitro, in vivo, and clinical studies. Conclusion: The Saudi fenugreek cultivar is rich in bioactive compounds with good antibacterial potential. These findings establish a robust foundation for continued pharmacological research on the Saudi cultivar of T. foenum-graecum, highlighting its potential as a rich source of bioactive compounds with significant medicinal value.

Abstract
Mesalamine (MES) is a preferred therapeutic agent for managing various colon disorders, including inflammatory bowel diseases (IBD). However, conventional oral dosage forms of MES face significant limitations, which reduce their effectiveness in managing these conditions. To overcome these challenges, advanced dosage forms of MES are essential. Fenugreek gum (FG), a natural polysaccharide with non-toxicity, ease of synthesis, biodegradability, and biocompatibility, was selected as a key component for developing a novel delivery system. Calcium ion crosslinked MES-incorporated FG-decorated pectin microspheres (FG@MES/PM) were successfully designed for colon-specific drug delivery using an ionotropic gelation technique. The microspheres exhibited favorable physicochemical characteristics, including a particle size of 586nm, a polydispersity index of 0.348, an entrapment efficiency of 85.20±1.02%, and a drug content of 98.52±0.96%. Ex vivo mucoadhesion tests demonstrated strong mucoadhesive properties, highlighting the potential of FG@MES/PM to adhere effectively to the colonic mucosa. In vitro drug release studies showed a modified release profile, with 99.02±1.80% MES released over 24h. Release kinetics analysis confirmed that FG@MES/PM followed the Higuchi matrix model (R2=0.9867), indicating diffusion-controlled release. The drug release mechanism was characterized as anomalous (non-Fickian) transport, with a release exponent (n) of 0.563. Overall, FG@MES/PM demonstrated promising potential for colon-specific drug delivery, offering sustained release and enhanced mucoadhesion. This study underscores the utility of FG for developing advanced drug delivery systems targeting the colon. Future research should explore the broader application of FG and similar natural polysaccharides in designing efficient and biocompatible colon-targeted formulations to improve therapeutic outcomes for IBD and related conditions.

Abstract
Meat products consumption is rising globally, but concerns about sustainability, fat content, and shelf life. Synthetic additives and preservatives used for extending the shelf life of meat often carry health and environmental drawbacks. Seed mucilage, natural polysaccharides, possesses unique functional properties like water holding, emulsifying, and film forming, offering potential alternatives in meat processing and preservation. This study explores the application of seed mucilage from diverse sources (e.g., flaxseed, psyllium, basil) in various meat and meat products processing and preservation. Mucilage's water-holding and emulsifying properties can potentially bind fat and decrease the overall lipid content in meat and meat-based products. Moreover, antimicrobial and film-forming properties of mucilage can potentially inhibit microbial growth and reduce oxidation, extending the shelf life. This review emphasizes the advantages of incorporating mucilage into processing and coating strategies for meat and seafood products.

Abstract
The objective of this study is the development of innovative nanocurcumin-based formulations designed for the treatment and prevention of oxidative stress and diabetes. Nanocurcumin was obtained through a micronization process and subsequently encapsulated within biopolymers derived from corn starch and fenugreek mucilage, achieving encapsulation rates of 75% and 85%, respectively. Subsequently, the encapsulated nanocurcumin was utilized in the formulation of sugar-free syrups based on Stevia rebaudiana Bertoni. The stability of the resulting formulations was assessed by monitoring particle size distribution and zeta potential over a 25-day period. Dynamic light scattering (DLS) revealed a particle size of 119.9 nm for the fenugreek mucilage-based syrup (CURF) and 117 nm for the corn starch-based syrup (CURA), with polydispersity indices PDIs of 0.509 and 0.495, respectively. The dissolution rates of the encapsulated nanocurcumin were significantly enhanced, showing a 67% improvement in CURA and a 70% enhancement in CURF compared with crude curcumin (12.82%). Both formulations demonstrated excellent antioxidant activity, as evidenced by polyphenol quantification using the 2.2-diphenyl 1-pycrilhydrazyl (DPPH) assay. In the evaluation of antidiabetic activity conducted on Wistar rats, a substantial reduction in fasting blood sugar levels from 392 to 187 mg/mL was observed. The antioxidant properties of CURF in reducing oxidative stress were clearly demonstrated by a macroscopic observation of the rats' livers, including their color and appearance.

Abstract
Gleditsia fruits have been known as a valuable traditional Chinese herb for tens of centuries. Previous studies showed that the galactomannans are considered as one of the major bioactive components in Gleditsia fruits seeds (GSGs). Here, we systematically review the major studies of GSGs in recent years to promote their better understanding. The extraction methods of GSGs mainly include hot water extraction, microwave-assisted extraction, ultrasonic extraction, acid extraction, and alkali extraction. The analysis revealed that GGSs exhibited in the form of semi-flexible coils, and its molecular weight ranged from 0.018 × 103 to 2.778 × 103 KDa. GSGs are composed of various monosaccharide constituents such as mannose, galactose, glucose, and arabinose. In terms of pharmacological effects, GSGs exhibit excellent activity in antioxidation, hypoglycemic, hypolipidemic, anti-inflammation. Moreover, GSGs have excellent bioavailability, biocompatibility, and biodegradability, which make them used in food additives, food packaging, pharmaceutical field, industry and agriculture. Of cause, the shortcomings of the current research and the potential development and future research are also highlighted. We believe our work provides comprehensive knowledge and underpinnings for further research and development of GSGs.

Abstract
Gums are high-molecular-weight compounds with hydrophobic or hydrophilic characteristics, which are mainly comprised of complex carbohydrates called polysaccharides, often associated with proteins and minerals. Various innovative modification techniques are utilized, including ultrasound-assisted and microwave-assisted techniques, enzymatic alterations, electrospinning, irradiation, and amalgamation process. These methods advance the process, reducing processing times and energy consumption while maintaining the quality of the modified gums. Enzymes like xanthan lyases, xanthanase, and cellulase can selectively modify exudate gums, altering their structure to enhance their properties. This precise enzymatic approach allows for the use of exudate gums for specific applications. Exudate gums have been employed in nanotechnology applications through techniques like electrospinning. This enables the production of nanoparticles and nanofibers with improved properties, making them suitable for the drug delivery system, tissue engineering, active and intelligient food packaging. The resulting modified exudate gums exhibit improved rheological, emulsifying, gelling, and other functional properties, which expand their potential applications. This paper discusses novel applications of these modified gums in the pharmaceutical, food, and industrial sectors. The ever-evolving field presents diverse opportunities for sustainable innovation across these sectors.

Abstract
Temperature-responsive inks were formulated using k-carrageenan, fenugreek gum (FG), rose extracts, and sugar, of which the first two were used as the gelling agents. The interactions among components in these mixed ink formulations were investigated. Sol-gel transition and rheological properties of these inks were also correlated with extrusion, shape formation, and self (shape)-supporting aspects of 3D printing. Results indicated that incorporating FG increased inks' gelation temperature from 39.7 °C to 44.7-49.6 °C, affecting the selection of printing temperature (e.g., 0 % FG: 40 °C, 0.15 % FG: 45 °C, 0.3 % FG-0.6 % FG: 50 °C). Inks in solution states with lower viscosity (<5 Pa·s) were amenable to ensure their smooth extrusion through the tip of the printing nozzle. A shorter sol-gel transition time (approximately 100 s) during the shape formation stage facilitated the solidification of inks after extrusion. The addition of FG significantly (p<0.05) improved the mechanical properties (elastic modulus, hardness, etc.) of the printed models, which facilitated their self-supporting behavior. Low field nuclear magnetic resonance indicated that the inclusion of FG progressively restricted water mobility, consequently reducing the water syneresis rate of the mixed inks by 0.86 %-3.6 %. FG enhanced hydrogen bonding interactions among the components of these mixed inks, and helped to form a denser network.

Abstract
Globally, water scarcity in arid and semiarid regions has become one of the critical issues that hinder sustainable agriculture. Agriculture, being a major water consumer, presents several challenges that affect water availability. Hydrogels derived from polysaccharides seed gums are hydrophilic polymers capable of retaining substantial moisture in their three-dimensional network and releasing it back into the soil during drought conditions. Implementation of hydrogels in the agricultural sectors enhances soil health, plant growth, and crop yield. Furthermore, the soil permeability, density, structure, texture, and rate of evaporation and percolation of water are modified by hydrogel. In this review, hydrogels based on natural plant seed gum like guar, fenugreek, Tara and locust beans have been discussed in terms of their occurrence, properties, chemical structure, method of synthesis, and swelling behavior. The focus extends to recent applications of modified seed gum-based natural hydrogels in agriculture, serving as soil conditioners and facilitating nutrient delivery to growing plants. The swelling behavior and inherent structure of these hydrogels can help researchers unravel their maximum possibilities to promote sustainable agriculture and attenuate the obstacles propounded by our dynamic nature. The current review also examines market growth, prospects, and challenges of eco-friendly hydrogels in recent times.

Abstract
Fenugreek (Trigonella foenum-graecum L) galactomannan play an important role in the food and pharmaceutical sectors due to its attractive physicochemical properties. In this study, the changes of structure, properties and biological activity of fenugreek galactomannan (FG) during germination are analyzed by the activity and mechanism of endogenous enzymes (α-D-galactosidase and β-D-mannanase). The enzymes generally increased during germination and synergistically altered the structure of GM by cutting down the main chains and removing partial side residues. The mannose to galactose ratio (M/G) increased from 1.11 to 1.59, which is accompanied by a drastic decrease in molecular weight from 3.606 × 106 to 0.832 × 106 g/mol, and the drop of viscosity from 0.27 to 0.06 Pa·sn. The degraded macromolecules are attributed to the increase in solubility (from 64.55 % to 88.62 %). In terms of antioxidation and antidiabetic ability, germinated fenugreek galactomannan has the ability to scavenge 67.17 % ABTS free radicals and inhibit 86.89 % α-glucosidase. This galactomannan with low molecular weight and excellent biological activity precisely satisfies the current demands of pharmaceutical reagents and food industry. Seeds germination holds promise as a means of industrial scale production of low molecular weight galactomannans.

Abstract
For the drug delivery system, drug carriers' selection is critical to the drug's success in reaching the desired target. Drug carriers from natural biopolymers are preferred over synthetic materials due to their biocompatibility. The use of polysaccharide gums in the drug delivery system has received considerable attention in recent years. Polysaccharide gums are renewable resources and abundantly found in nature. They could be isolated from marine algae, microorganisms, and higher plants. In terms of carbohydrates, the gums are water-soluble, non-starch polysaccharides with high commercial value. Polysaccharide gums are widely used for controlled-release products, capsules, medicinal binders, wound healing agents, capsules, and tablet excipients. One of the essential applications of polysaccharide gum is drug delivery systems. The various kinds of polysaccharide gums obtained from different plants, marine algae, and microorganisms for the drug delivery system application are discussed comprehensively in this review paper.

Abstract
Researching on potential biopolymer sources with the aim of developing edible films with better mechanical and barrier properties has become innovative as it would be a key factor to minimize the use of synthetic polymers in food packaging. Therefore, different biopolymers such as galactomannan have been gaining attention recently. Fenugreek seed gum is a rich source of galactomannan which is minimally researched on its applicability in edible film making. The degree of galactose substitution and polymerization are the main factors that determine the functional properties of galactomannan. A strong and cohesive film matrix cannot be produced from fenugreek seed gum as its molecular interaction is weakened due to the high galactose substitution with a high galactose/mannose ratio, 1:1. Structural modifications of galactomannan in fenugreek seed gum will lead to films with the required mechanical properties. Hence, this review summarizes recent scientific studies on the limitations of fenugreek seed gum as a film forming agent and the specific modification techniques that can be applied in order to increase its film forming capability and performance.

Abstract
Fenugreek (Trigonella foenum-graecum L.) is a pharmaceutically significant aromatic crop with health benefits linked to its phytochemicals. This article aims to overview progress in using emerging technologies to extract its bioactive compounds and extraction mechanisms. Also, the trends in the applications of this herb in the food industry and its therapeutical effects were explained. Fenugreek's flavor is the primary reason for its applications in the food industry. At the same time, it has antimicrobial, antibacterial, hepatoprotection, anticancer, lactation, and antidiabetic effects. Phytochemicals responsible for these effects include galactomannans, saponins, alkaloids, and polyphenols. Besides, data showed that emerging technologies boost fenugreek extracts' yield and biological activity. Among these, ultrasound (55.6%) is the most studied technology, followed by microwave (37.0%), cold plasma (3.7%), and combined approaches (3.7%). Processing conditions (e.g., treatment time and intensity) and solvent (type, ratio, and concentration) are significant parameters that affect the performance of these novel extraction technologies. Extracts obtained by sustainable energy-saving emerging technologies can be used to develop value-added health-promoting products.

Abstract
The mitigation of wastewater exploiting biopolymers/natural gums-based composites is an appealing research theme in today's scenario. The following review presents a comprehensive description of the polysaccharides derived from biopolymers (chitosan, collagen, cellulose, starch, pectin, lignin, and alginate) and natural gums (guar, gellan, carrageenan, karaya, moringa oliefera, tragacanth, and xanthan gum). These biopolymers/natural gums-based composites depicted excellent surface functionality, non-toxicity, economic and environmental viability, which corroborated them as potential candidates in the decontamination process. The presence of -OH, -COOH, and -NH functional groups in their backbone rendered them tailorable for modification/functionalization, and anchor an array of pollutants via electrostatic interaction, hydrogen bonding, and Van der Waals forces. Further, due to these functional moieties, these bio-based composites revealed an excellent adsorption capacity than conventional adsorbents. This review provides an overview of the classification of biopolymers/natural gums based on their origin, different ways of their modification, and the remediation of dye-contaminated aqueous environments employing diverse bio-based adsorbents. The isotherm, kinetic modelling along with thermodynamics of the adsorption process is discussed. Additionally, the reusable efficacy of these bio-adsorbents is reviewed.

Abstract
Objective The present study aimed to investigate the lipid-lowering effects and mechanisms of fenugreek gum (FG), hawthorn pectin (HP), and burdock inulin (BI) on high-fat diet (HFD)-induced hyperlipidemic rats. Methods In this study, high-fat diet (HFD) together with fat emulsion administration were used to establish hyperlipidemia model. The biochemical indices were assayed after administration of FG, HP, and BI. Their effects were evaluated by factor analysis. Alterations of gut microbiota and short chain fatty acids (SCFAs) in the cecal were assessed to illustrate the mechanism of lipid lowering. Results The supplementation of FG, HP, and BI on HFD-fed rats decreased the levels of serum lipid and reduced the HFD-related liver and testicle damage. In the scatter plot of factor analysis, HP and BI were closer to normal fat diet (NFD) group in restoring the severity of hyperlipidemia, while FG and HP enhanced the excretion of cholesterol and bile acids (BAs). The levels of total SCFAs, especially butyric acid reduced by HFD were increased by HP. The ratio of Firmicutes to Bacteroidetes increased by HFD was reduced by HP and BI. FG, HP, and BI enriched intestinal probiotics, which were related to bile acid excretion or lipid-lowering. Conclusions FG inhibited the absorption of cholesterol and enhanced the excretion of it, as well as increased the abundance of beneficial bacteria. While BI restored the imbalance of intestinal microbiota. HP enhanced the excretion of cholesterol and BAs, and restored the imbalance of intestinal microbiota. It was also utilized by intestinal microorganisms to yield SCFAs. This study suggested that FG, HP, and BI possessed the potential to be utilized as dietary supplements for obesity management.

Abstract
Kaempferol and Myricetin alone have promising benefits on diabetes and related complications, yet the effectiveness of cotreating the two compounds on diabetes have not been studied. The existing investigation was to study the combined anti-diabetic effect of kaempferol and myricetin in Streptozotocin (STZ)-activated diabetes in rats. To evaluate the anti-diabetic activity, 36 Wistar rats were segregated into six groups; Normal, 50 mg/kg STZ-induced diabetes, and four (50 mg/kg kaempferol, 50 mg/kg myricetin, 25 mg/kg kaempferol + myricetin, and 5 mg/kg glibenclamide) compound-treated diabetic groups. The effects of co-treatment on parameters, glucose, insulin, lipid profile, liver enzymes, antioxidant biomarkers, and inflammatory cytokines were measured. The study revealed that combined treatment restored the assessed parameters including glucose levels, inflammatory cytokines, oxidative markers, and lipid and liver enzymes in diabetic rats. The results indicate that cotreatment of kaempferol and myricetin has a beneficial role against diabetes suggesting that cotreatment of these compounds can be used therapeutically in treating diabetes.

Abstract
Sandy soil has poor water-holding performance, making it difficult for plants to survive, which worsens the deterioration of the ecological environment. Therefore, borax cross-linked Gleditsia microphylla galactomannan hydrogel (GMGH) was prepared, and its practicability as a water-retaining agent was analyzed. GMGH exhibited fast self-healing performance (150 s, ≈100%) and a high swelling index (88.70 g/g in pH 9). The feasibility of improving the water absorption and retention properties of sandy soil was explored by mixing different proportions (0.1, 0.3, 0.5 wt % sandy soil) of GMGH and sandy soil. The results showed that sandy soil had a more porous structure after adding 0.5 wt % GMGH, and its water absorption index increased from 15.68 to 38.12%. In an artificial climate box, the water-holding time of the sandy soil was extended from 3 to 23.5 days, and the cycles of water absorption and retention were more than 10 times. Therefore, GMGH has broad application prospects as a potential water-retaining agent for desertification control.

Abstract
Mucilage-based flocculants are an alternative to synthetic flocculants and their use in sustainable water treatment relates to their non-toxic and biodegradable nature. Mucilage extracted from flaxseed (FSG) and fenugreek seed (FGG) was evaluated as natural flocculants in a coagulation-flocculation (CF) process for arsenic removal, and were compared against a commercial xanthan gum (XG). Mucilage materials were characterized by spectroscopy (FT-IR, 13C NMR), point-of-zero charge (pHpzc) and thermogravimetric analysis (TGA). Box-Behnken design (BBD) with response surface methodology (RSM) was used to determine optimal conditions for arsenic removal for the CF process for three independent variables: coagulant dosage, flocculant dosage and settling time. Two anionic systems were tested: S1, roxarsone (organic arsenate 50 mg L-1) at pH 7 and S2 inorganic arsenate (inorganic arsenate 50 mg L-1) at pH 7.5. Variable arsenic removal (RE, %) was achieved: 92.0 (S1-FSG), 92.3 (S1-FGG), 92.8 (S1-XG), 77.0 (S2-FSG), 69.6 (S2-FGG) and 70.6 (S2-XG) based on the BBD optimization. An in situ kinetic method was used to investigate arsenic removal, where the pseudo-first-order model accounts for the kinetic process. The FSG and FGG materials offer a sustainable alternative for the controlled removal of arsenic in water using a facile CF treatment process with good efficiency, as compared with a commercial xanthan gum.

Abstract
This study aimed to evaluate the antioxidant activity of free and bound flavonoid or phenolic compounds extracted from the sesame seed (Oltan and Yekta varieties) as natural antioxidants and to demonstrate the properties of nanoparticles. The total phenolic content (TPC) of Oltan was higher (864.70 mg GAE/100 g seed) than that of Yekta (629.23 mg GAE/100 g seed). Oltan took up higher amounts of free (516.86 mg GAE/100 g seed) and bound (347.83 mg GAE/100 g seed) phenolics than Yekta. Also, the Yekta variety exhibited lower amounts of free (45.89 mg CE/100 g seed) and bound flavonoids (21.51 mg CE/100 g seed) and the total flavonoid content (TFC) (67.40 mg CE/100 g seed). Chlorogenic acid was the major phenolic compound present in the sesame seed. In both the DPPH and ferric reducing antioxidant power (FRAP) assays, the highest antioxidant activity was observed in the Oltan variety. Free phenolics showed the highest antioxidant activity, followed by bound phenolics, free and bound flavonoids. Therefore, free phenolics of the Oltan variety were encapsulated in Portulaca oleracea and Trigonella foenum-graecum seed gums. All nanoparticles showed nanometric size from 236.1 to 680.7 nm, negative zeta potential from -35.4 to -18.3 mV, high encapsulation efficiency from 61.35% to 74.49%, and desirable polydispersity index (PDI) between 0.315 and 0.332. Higher release of phenolics and sedimentation rate were observed in phenolic compounds encapsulated in Khorfeh and Shanbalileh, respectively. The gradual release of phenolic compounds, as well as sedimentation rate of composite coating during 40 days of storage, demonstrated that nanoencapsulated phenolics of sesame within the composite gum coating could be used as natural antioxidants in food systems.

Abstract
This review aims to study the alternatives to conventional industrial starches, describing uncommon sources along with their technological characteristics, processing, and performance on food products. Minor components remaining after extraction play an important role in starch performance despite their low percentage, as happens with tuber starches, where minerals may affect gelatinization. This feature can be leveraged in favor of the different needs of the food industry, with diversified applications in the market being considered in the manufacture of both plant and animal-based products with different sensory attributes. Hydrocolloids, different from starch, may also modify the technological outcome of the amylaceous fraction; therefore, combinations should be considered, as advantages and disadvantages linked to biological origin, consumer perception, or technological performance may arise. Among water-based system modifiers, starches and nonstarch hydrocolloids are particularly interesting, as their use reaches millions of sales in a multiplicity of specialties, including nonfood businesses, and could promote a diversified scheme that may address current monocrop production drawbacks for the future sustainability of the food system.

Abstract
At present, there are still some problems for the emulsification of polysaccharides such as lack of green, efficient and industrialized methods, lack of systematic and in-depth structure-activity relationship, and need of expanding its application scope. The physical, chemical and biological methods for improving the emulsifying of polysaccharides, the emulsifying properties and influencing factors of polysaccharides and application in food were reviewed herein. It was pointed out that the future research should focus on the effect of physical-biological synergistic function on the emulsification of polysaccharides, the effect of processing process on the structure and emulsification mechanism of polysaccharides, and further expanding the application field of polysaccharides with emulsification activity to improve the quality of products.

Abstract
Plant mucilage is a renewable and cost-effective source of plant-based compounds that are biologically active, biodegradable, biocompatible, nontoxic, and environmentally friendly. Until recently, plant mucilage has been of interest mostly for technological purposes. This review examined both its traditional uses and potential modern applications in a new generation of health-promoting foods, as well as in cosmetics and biomaterials. We explored the nutritional, phytochemical, and pharmacological richness of plant mucilage, with a particular focus on its biological activity. We also highlighted areas where more research is needed in order to understand the full commercial potential of plant mucilage.

Abstract
Fluorescence probing was used to study hydrophobic interactions of galactomannan (GM) obtained from fenugreek gum (FG), guar gum (GG), and locust bean gum (LBG) at different M/G ratios. The I1/I3 ratio of pyrene changed from 1.73 to 1.29, 1.22, and 1.29 for FG, GG and LBG, respectively, as the concentration of GM increased from 0.01 to 8.0 g/L at 30 °C. The critical aggregation concentration of FG, GG, and LBG increased from 1.04 to 3.84 g/L, 1.15 to 3.73 g/L, and 0.94 to 3.63 g/L, respectively, as temperature increased from 10 to 70 °C. Addition of Na2SO4 and NaSCN increased the I1/I3 ratio in dilute solution, but reduced it in semi-dilute solution, whereas adding urea reduced I1/I3 in dilute solution but increased it in semi-dilute solution. These results indicated that the CAC of GM, polarity and number of hydrophobic microdomains were highly dependent on the M/G ratio and galactose distribution.

Abstract
An O-specific polysaccharide (OPS) was isolated from the lipopolysaccharide (LPS) of Pseudomonas donghuensis SVBP6, a bacterium with a broad-spectrum antifungal activity in vitro, particularly that against Macrophomina phaseolina. This latter is one of the most virulent and dangerous pathogens of plants, including soybean which is an economically important crop in Argentina today. The OPS was studied by sugar analysis and spectroscopy (1D and 2D 1H and 13C NMR) showing the following trisaccharide repeating unit: →6)-ɑ-D-ManpNAc-(1 → 3)-β-l-Rhap-(1 → 4)-β-D-Glcp-(1→. The crude LPS, the purified LPS and the O-chain were assayed for their antifungal activity against M. phaseolina at 25, 50, 100, and 200 μg plug-1. The results showed that the crude LPS best inhibition was at 200 μg plug-1, able to inhibit the fungus growth by about 45%, while purified LPS and the corresponding OPS, in the same condition, reduced fungus growth by 65%, and 75%, respectively. Furthermore, the purified LPS and OPS significantly reduced the growth of M. phaseolina already at 100 μg plug-1 compared to the crude LPS. The structure of the O-chain is unique among the bacterial LPS and this is the first time that both the antifungal activity of a bacterial LPS and its corresponding O-chain were described.

Abstract
Solar drying is a sustainable process that may impact the quality of dried food. This is because, pigments contained in food are sensitive to sunlight, and exposure to ultraviolet radiation can affect them. We applied biopolymer-based coatings on strawberry, from hydro-colloidal solutions of Opuntia ficus indica-mucilage, fenugreek, xanthan gum, gum Arabic, and guar gum to evaluate their potential use as UV filters for solar drying of food. Thermal properties and the optical transmittance, absorbance and reflectance of the coatings were measured to assess their influence on food-sunlight interaction. During the drying experiments, the moisture content, total anthocyanins (TA), and total phenolic compounds (TPC) were measured. Optical and thermal properties are influenced by the biopolymer-based coatings. Also, the optical properties are influenced by the coating thickness. The differences in optical and thermal properties influence the drying process. Differences exist in the drying rate for strawberry slices with coating, compared with those without the coatings. In general, the TA and TPC content in the product are better preserved under solar drying than in control experiments done in a drying oven. A partial transmittance of solar UV radiation is recommended to obtain increased TA and TPC contents in the dried product.

Abstract
Fenugreek gum (FG) was isolated from six different Indian fenugreek cultivars and studied for their functional, structural, thermal and rheological attributes. The highest yield (13.5%) was observed for cultivar RMT-365. All galactomannans depicted good water and oil holding capacities ranging from 2009 ± 5.5 to 2099.9 ± 2.5% and 523.5 ± 3.5 to 553.0 ± 2.0%, respectively. DSC thermograms of FG revealed the presence of one endothermic and one exothermic peak. For endothermic transition of gums from different cultivars, enthalpy change (Δ Ha) ranged from 234.2 to 351.8 J/g while for exothermic transition, Δ Ha values ranged from 72.0 to 102.1 J/g, much lower as compared with endothermic peak. The effect of variable shear rate on viscosity of 1% FG solutions showed their shear thinning behaviors for all the cultivars, whereby the viscosity decreased with increasing shear rate. Frequency sweep tests indicated typical viscoelastic fluid behavior for all the gum solutions. Increase in the magnitude of G' and G″ of FG solutions was observed with an increase in frequency. A detailed understanding of different chemical, functional and thermal properties of FG could surely enlarge the radius of its application and eventually aid in its utilization in different food, pharma and cosmetic products.

Abstract
Gleditsia sinensis, fenugreek and guar galactomannans (referred to as GSG, FG, and GG) were extracted from their gums and investigated using various techniques. Mannose to galactose ratios were 3.55, 1.11, and 1.65, respectively. The intrinsic viscosity of GSG was very close to that of GG, while that of FG was the lowest one. This was attributed to the influence of high galactose substitution of FG on the mannan backbone, which induced a lower chain dimension due to intermolecular entanglement. High degrees of substitution and high temperatures contributed to improving the solubility of galactomannan. Rheological behavior indicated that GG had the highest apparent viscosity, yet the power-law model could well-fitted the flow curves of GSG and FG, but not GG. Through morphological observations, the extracted galactomannans exhibited rod-like structure in deionized water and showed fibrous filament network structure after dehydration by freeze-drying. The thermal behavior was greatly influenced by the degree of side groups and Mw of galactomannans.

Abstract
In order to explore a novel type of agricultural water-retaining agent, borax crosslinked fenugreek galactomannan-borax hydrogel (FGB) was synthesized. The hydrogel was characterized by thermogravimetric analysis, FT-IR, XRD, and SEM. The largest swelling index of FGB (115) was higher than that of guar gum hydrogel (70) at pH 9. The water absorption capacity of sandy soil was studied by mixing the hydrogel with soil, then FGB was evaluated as a latent water retention agent. Results showed that the swelling index of sandy soil increased from 16.28% to 35.53% with 0.5 wt.% hydrogel added. The water retention time increased from 2 to 11.5 days at 20 °C and 60 % humidity. Furthermore, more than ten cycles of water absorption and water loss of soil-FGB were carried out at 50 °C at a relatively stable water retention capacity. This low-cost, environmentally friendly hydrogel has great application potential in agriculture for soil water conservation.

Abstract
The barley endo-β-mannanase (MAN) gene family (HvMAN1-6) has been identified and the expression of its members analyzed throughout different plant organs, and upon grain development and germination. The HvMAN1 gene has been found to be highly expressed in developing and germinating grains. The MAN (EC 3.2.1.78) enzymatic activity gets a maximum in grains at 48 h of germination (post-germination event). Immunolocalization of mannan polymers in grains has revealed the presence of these polysaccharides in the endosperm cell walls (CWs). By mRNA in situ hybridization assays, the HvMAN1 transcripts have been localized to the aleurone layer, but not to the dead starchy endosperm cells. These data suggest that MAN1 is synthesized in the aleurone layer during early grain imbibition and moves potentially through the apoplast to the endosperm where the hydrolysis of the mannan polymers takes place after germination sensu stricto. Hence, mannans in the starchy endosperm CWs, besides their structural function, could be used as reserve compounds upon barley post-germination.
