Abstract
The present study was carried out to evaluate the effect of dietary taurine (Tau) on performance, digestive enzymes, antioxidant activity, and resistance of common carp, Cyprinus carpio L., fry to salinity stress. Fish (0.97 ± 0.033 g) were fed on different taurine levels of 0.0 (control), 5, 10, 15, or 20 g/kg diet up to satiation twice daily for 8 weeks. At the end of the feeding trial, fish were stressed by exposure to 10 ppt salinity for 3 days during which fish mortality was observed. Fish performance was significantly (P < 0.05) improved by dietary taurine up to 15 g Tau/kg diet after which fish growth and feed intake were almost the same. Also, taurine supplementation significantly (P < 0.05) elevated activities of intestinal amylase, lipase, and protease resulting in an improving in feed intake giving better performance. Furthermore, Tau-stimulated antioxidant activity of common carp was observed in a dose-related manner, where activities of superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPx) were significantly (P < 0.05) higher, but malondialdehyde (MDA) value was significantly (P < 0.05) lower in Tau-fed fish groups than those fed the control diet. In salinity stress experiment, highest survival rate was observed at fish fed Tau-supplemented diets without significant (P > 0.05) differences over fish fed the control diet. It appears that taurine could be used as a feed supplement to confer better growth and health of common carp fry with optimal level of 15 g/kg diet.

Abstract
Fresh by-products of whitefish such as cod and saithe is processed to fishmeal (FM) on-board seagoing Norwegian trawlers. The aim of this study was to document the properties of whitefish FM (WFM) protein with respect to, physicochemical and bioactive properties. Analysis of the proximate composition of representative seasonal WFM batches show that the production is robust without much variance. The mean protein (61.9 ± 1.2), fat (8.9 ± 1.1%), moisture (5 ± 1.2%) and ash content (22.4 ± 0.8%), reflect the use of lean and bony raw-material. The WFM has a low content of free amino acids (0.7%) and biogenic amines (< 1000 mg/kg) that confirm the high quality and freshness of the raw material. Amino-acid analysis identified the presence of all nutritionally essential amino acids. The WFM physicochemical properties was comparable to soy-bean meal (SBM) by analysis of solubility, water-holding capacity (WHC), the emulsion stability (ES). Proteolytic degradation of the WFM was used to demonstrate the presence of bioactive peptides with inhibiting activity against angiotensin-converting enzyme (ACE) activity, in vitro. Taken together, WFM produced from fresh by-products is an excellent protein source with attributes of interest beyond the aquafeed-market.

Abstract
Safe utilization of fish by-products is an important task due to increasing fish consumption. It can provide new valuable food/feed and will increase the economical profit and sustainability of the fishery industry. NMR spectroscopy is a reliable tool able to monitor qualitative and quantitative changes in by-products. In this work the trichloroacetic acid extracts of salmon backbones, heads and viscera stored at industrially relevant temperatures (4 and 10°C) were studied using NMR. Twenty-five metabolites were detected and the possibility of salmon by-products utilization as a source of anserine, phosphocreatine and taurine was discussed. Statistical data elaboration allowed determining the main processes occurring during by-products storage: formation of trimethylamine and biogenic amines, proteolysis and different types of fermentations. By-products freshness was evaluated using a multi-parameter approach: the trimethylamine and biogenic amines concentration changes were compared with Ki and H-values and safe temperatures and times for storage of salmon by-products were proposed.

Abstract
The effect of dietary inclusion of soy protein concentrate (SPC) and simultaneous supplementation with taurine on the growth, hematology, blood biochemistry, and liver histology of totoaba (Totoaba macdonaldi) juveniles was assessed. Four isoproteic and isolipidic diets were formulated containing either 30 or 60% of SPC (diets S30 and S60), supplemented or not with 1% of taurine (diets S30T and S60T). A fishmeal-based diet formulated for totoaba nutritional requirements, without SPC and taurine supplementation, was used as a reference diet. Triplicate groups of 32 totoaba juveniles (average body weight 7.5 ± 0.6 g) were fed these diets for 45 days. Results showed that growth performance in fish fed S30, S30T, and S60T was similar to fish fed the reference diet. Red blood cells and hematocrit in fish fed with supplemented taurine in both levels of SPC (S30T and S60T) were similar to the fish fed the RD; the addition of taurine improved the state of hydration of totoaba. Plasmatic hemoglobin in fish fed the lower SPC level was similar to fish fed the RD. The mean corpuscular hemoglobin concentration in fish fed S30T was similar to fish fed the RD, taurine supplementation prevented the development of hypochromic anemia in this group of fish. Plasmatic albumin in fish fed S30 was similar to fish fed the RD. Plasmatic total protein and globulin concentration increased and AL:GLB (albumin:globulin ratio) decreased in fish fed the SPC-based diets despite taurine supplementation. The protein profile showed that taurine supplementation did not prevent a possible inflammatory process (increased globulins, decreased AL:GLB) in juvenile totoaba fed both levels of SPC. Glucose concentration was similar in fish fed S30, S30T, and S60T. The histological hepatic index was highest in fish fed S60. These results suggest that with an appropriate nutritional level, taurine may play an important modulatory role in the hematology and blood biochemistry status in totoaba fed SPC-based diets, contributing to the enhancement of an overall healthy growth performance.

Abstract
Ribbonfish (Trichiurus haumela) backbone is normally discarded as an industrial waste from fish processing. A method of developing angiotensin I-converting enzyme inhibitory (ACEI) peptides from ribbonfish backbone was previously optimized. The purposes of the study were to characterize the active peptides in the hydrolysate and to evaluate its in vivo activity. Ribbonfish backbone protein hydrolysate prepared by acid protease was fractionated into 4 fractions (I, MW < 1 kDa; II, MW = 1 to 5 kDa; III, MW = 5 to 10 kDa; and IV, MW > 10 kDa) through ultrafiltration membranes. Fraction I, showing the highest ACEI activity, was further purified using consecutive chromatographic techniques including gel filtration and reversed phase high-performance liquid chromatography. The purified ACE inhibitory peptide was determined to have a molecular weight of 317.25 Da, with a sequence of Leu-Trp and an IC₅₀ value of 5.6 μM. Systolic blood pressure of spontaneously hypertensive rats was significantly decreased from 181 ± 2.0 to 161.3 ± 2.3 mm Hg after 4 h of oral administration of Leu-Trp at a dose of 10 mg/kg of body weight. These results indicated that ribbonfish backbone protein could be used for development of antihypertensive agent.

Abstract
Salmon ovary outer membrane (SOM) is a byproduct of the salmon industry; however, the effective utilization of SOM for food materials and supplements is anticipated as the demand for fish and seafood increases worldwide. The purposes of the present study were to assess the chemical composition of SOM, the characteristics of SOM protein (SOMP), and its effects on serum and fecal biochemical parameters in mice. SOM contained high levels of crude protein (61.9 g/100 g) and crude lipid (18.9 g/100 g). The protein pattern of SOMP was different from those of fish muscle protein and roe; it was abundant in collagen, as calculated from the hydroxyproline content. In addition, SOMP exhibited lower protein digestibility during in vitro digestion analyses compared with casein. Male C57BL/6J and KK-Ay mice were fed a casein-based semi-purified diet or a diet with replacement of part of the dietary protein (50%) by SOMP for four weeks. Mice fed the diet containing SOMP showed elevated fecal nitrogen and mucins contents and reduced levels of serum liver injury markers and fecal ammonia. These results show for the first time that chemical composition of SOM, and SOMP, contain a resistant protein fraction and a large amount of collagen. Therefore, SOM is a potential source of marine collagen and functional food material for promoting the health of the liver and colon.

Abstract
The linearity, precision and repeatability of visible spectrophotometric (VSP) and high-performance liquid chromatography (HPLC) methods for analysis of inhibitory activity of angiotensin I-converting enzyme (ACE) were compared by using several inhibitors and Hip-His-Leu (HHL) as substrates. IC50 values (concentration at which ACE activity is inhibited by 50%) of 0.00206±0.00005 μg/mL for captopril, 192±4.53 μg/mL for soybean peptides, and 153±4.29 μg/mL for grass carp peptides determined by the VSP method, and these values were 1.07, 1.07, 1.18 and 1.44-fold, respectively, higher than those from the HPLC method. In addition, the inhibitory constant (Ki value) of captopril was determined to be 7.09 nM and 4.94 nM using VSP and HPLC method, respectively. These results showed that the HPLC method revealed a higher level of sensitivity and precision, suitable for assaying ACE inhibition activity of antihyper-sensitive peptides. In contrast, the VSP method can simultaneously measure several samples with simple operations, suitable for analysis of ACE inhibition activity of food protein enzymatic hydrolysates.
